We had such a wonderful experience here! From the moment we walked in, the hostesses and waitstaff were incredibly attentive and friendly. The service truly made us feel welcome and well taken care of. The food was outstanding. The baked brie had such a surprising and delicious combination of flavors—completely unexpected and absolutely perfect. The green chile hominy casserole was unlike anything we’ve ever had. It was comforting, flavorful, and so unique that we’re going to try to recreate it at home (though I’m sure it won’t come close!). And the bread and butter pickles—wow! I didn’t know pickles could taste that good. They were perfectly tangy with incredible flavor. To whomever picked up our tab, we cannot thank you enough. Your generosity will always be appreciated, and we will absolutely be paying this forward. Overall, an unforgettable dining experience. We will definitely be back!

We thoroughly enjoyed our evening. We started with a few cocktails and the deviled egg and bread and butter pickles apps. The short rib entree was incredible. Great wine selection. We enjoyed a new to us bottle of red Caymus. The butterscotch pudding dessert was our favorite and a perfect ending to our evening. We will be back to try other menu items. Our server was attentive and knowledgeable on all menu items.

It's fine dining. The food is really good. It's just a bit fancy for us.. I got the quail with a whipped blue cheese, not a fan of the beets. along with a side of polablano Asiago soup, the hubby got a southwest Ceasar salad with a fried chicken breast. fall apart chicken, which was very good.

Went for Sunday brunch, our first visit. Parking lot was huge, and we easily parked. Upon entering, we were promptly greeted, asked if we were a walk-in a reservation. We were a reservation and we were promptly seated. The main dining area joins a very luxurious bar and part of the kitchen is visible from every seat. The kitchen was busy the wait staff were attentive And the atmosphere was right out of a 1970s movie. The background music was spot on for the atmosphere and was not the typical cowboy country western genera typically heard in Stephenville, Texas. I chose the huevos rancheros. The wife chose the eggs Benedict. Halfway through our meals, we changed plates to be able to experience each other’s choice. Did not disappoint. Both plates, the eggs were cooked to a perfect medium rare. The biggest surprise was the smoked asparagus. The prettiest presentation was by far the eggs Benedict with the whipped hollandaise sauce, which isn’t traditional, but still was delicious. Our server could’ve been a little bit more attentive to my wife’s empty water glass, but if that’s the worst thing that happens all in all I’ll count to win. After breakfast, we were invited to tour the interstate Inn, which is the newly remodeled motel that is attached. I recommend visiting the bathrooms in the main lobby of the hotel for a nice surprise. We will be back.

Absolutely beautiful southwest mid century modern restaurant. Food is artistic, creative, and delicious. Service is excellent. We went on Saturday for dinner and came back again today for brunch because it was so good. See yall again soon!

This was our first, not our last visit to Chef Pyle's restaurant, The Seeker in Stephenville, Texas. We were celebrating our anniversary and it was exceptional, from the custom-made menu to the free dessert. Now it's the in-between that made this place shine. We ordered the cheese board for an appetizer, some made from some local diaries, not sure if all were but it was delicious! A whipped Bleu cheese spread with some delectable brined watermelon, olives, and truffle honey that would taste good on cardboard!! Then, the ribeye... Honestly, I love some good cow! This was the best we have had since moving to the area five years ago. We are big city transplants from the DFW area that houses some of the best steaks around. I mean, it is Texas. I would put Chef Pyle's steak against some of the best in the Metroplex. I do believe you could have cut it with a fork. They do provide a semi-serrated knife but I think the butter knife would have sufficed for this cut of beef. It almost melted in my mouth. Also, must tey the Shiner Bock bread baked in the can, who would have thought about that?? Chef Pyle!! Delicious moist, dense bread that is a must have for bread lovers such as myself. A free dessert to celebrate us? Yes!! Heaven and Hell cake consisted of Angel and Devil's food cake with a chocolate ganache and peanut butter powder. The perfect combo! The Banana Creme Brulee Tostada was my favorite! The crunchy creamy texture would appease any palate! Chef Pyle made us feel special on our anniversary even providing personalized autographs on our custom-made menus. We will return, not just for a special occasion but we love good food and great service! This is a well-oiled machine when it comes to quality and value. Highly recommend! Can't wait to try brunch!

The Sea Bass and the Ribeye were exceptional! We took dessert to go. Our waitress, Skyler was TOP NOTCH!! Service was first class! We will be back to try brunch! Loved the whole dining experience 🫶

We went to The Seeker for brunch. It was Father’s Day but also our 13th wedding anniversary. They made us feel extra special with specially printed menus, just for us. The meal was delightful. The decor was fun and unique with a modern/vintage charm. It was a lovely meal and we were delighted when chef Stephan Pyles stopped by our table to greet us. We will be back!

This Mother’s Day, we had the pleasure of dining at The Seeker in Stephenville, Texas—a culinary gem that’s truly raised the bar for fine dining in this charming town. To top off an already special occasion, we were greeted at the door by none other than Chef Stephan Pyles himself, which made the experience even more memorable. His warm welcome set the tone for what turned out to be a fantastic brunch. For starters, we shared the truffle fries, which came with a surprising and delicious hint of lemon. They were crispy, aromatic, and downright addictive—an upscale take on comfort food. Another unique highlight was the iced tea. This wasn’t your average Southern brew—it was a custom blend from the chef, infused with subtle notes of vanilla and chocolate. It sounds unconventional, but it worked wonderfully. The flavors were smooth and unexpected, making it one of the most memorable sips of the day. The standout dish for me was the fried quail paired with banana pecan waffles—a delightful twist on a Southern classic. The quail was perfectly crisp on the outside and tender on the inside, and the waffles were rich, nutty, and just the right amount of sweet. I also couldn’t get enough of the blueberry lavender lemonade cocktail. It was refreshing, lightly floral, and beautifully balanced—not too sweet, just right. From the atmosphere to the thoughtfully curated menu, The Seeker offers a refined yet inviting dining experience that’s hard to find in small-town Texas. We’ll definitely be returning— and telling friends and family to do the same. A true standout meal with a personal touch from a legendary chef. Five stars.

Our first time here. We had a group of 12. The decor, the service and the food were excellent!!! We sat by the window, next to the large garden. Servers were out there gathering tomatoes, etc. So cool. They're attached to a retro hotel with a great pool and courtyard area. Make a weekend trip out of it!

I got nothing to say but great things. We were staying in the Inn Nextdoor and made reservations here. Before eating we took advantage of their great happy hour. Great prices and fantastic bar tenders! Hands down one of the best margaritas I’ve ever tasted. No crappy mix, just made fresh homemade. The food was amazing. I got some shrimp tacos and they were delicious. I recommend giving it a try. I don’t see how it could disappoint!

I am a truck driver and don't find many gems like this place. The steaks are exceptional, cooked and seasoned to perfection. I love that their menu changes every 6 weeks so you have different options every time. And the fact they locally source many items(with a backstory to the local business) is the special touch. Every time I am able to, this will be my pick in stephenville!!! And when I put how much I spent, it is because I splurged, enjoyed at least 3 cocktails and took a desert home for later..... so don't let my cost scare you!

We had an amazing time at this restaurant! The deviled eggs were absolutely incredible—perfectly creamy with just the right kick. I had the tenderloin, and it was delicious—tender and cooked to perfection. My husband went with the ribeye and couldn’t stop raving about it. The vibe of the place was fun and lively, making it a great spot for a night out. We'll definitely be back!

Stopped for supper. Great atmosphere. 3 of us. We ordered ceviche taste of all three. Each was amazing in flavor and presentation. The popcorn accompaniment added to the experience. 2 of us had the short rib plate and 1 had the salmon. The meats and accompaniments were wonderful. Finished by sharing heaven and he'll cake. Kenza as our server was knowledgeable, professional and wonderful to chat with. Priced for quality but worth it for the experience. I highly recommend eating here. Food was excellent, perfectly cooked as ordered, and dishes were all very well composed. Drinks were very good as well, barstaff and servers were excellent. Service overall was really nice, very personable and helpful without ever feeling overbearing. I don't necessarily understand why a place this good is in a small town, but I'm happy it's there! Will definitely be returning.

You gotta come here, it's Simply a GREAT destination for a Cocktail with AMAZING appetizers, Ahi Tuna with Popcorn! Our bartender, Keely and every staff member were hands down the best in service. The dining area is relaxed and lighting was dimmed slightly for a more intimate experience. Chef Pyles can be seen leading his crew in the open kitchen or mingling in the dining area ensuring a great experience... THIS IS HOW YOU RUN A CLASS RESTAURANT. Will be returning again for dinner... with friends.

A Hidden Gem on My Drive from OKC to San Antonio At first, I was skeptical—“Minimal Texas?” You’d think those two words don’t belong in the same sentence. But The Seeker proved me wrong in the best way. I was immediately taken aback by the warm, professional service that’s pure Texas hospitality. My girlfriend and I had a wonderful time at "The Seeker" in Stevensville. We ordered the ceviche sampler, the quail, and the sea bass. I had an old-fashioned while she had the white Cadillac. The service was outstanding and the food was delicious. The quail had a broad spectrum of flavors with the peaches elevating the dish. The sea bass was soft but it had a golden sear that contrasted beautifully. The ceviche was exquisite. Though it may seem simple, the complexity of each of the ceviche dishes was mind-blowing. We highly recommend this restaurant.

Absolutely In love with this place, the chefs made us feel so special. They all came to introduce themselves to the table. Our server kaydie was amazing so attentive, and so kind. The hosts were wonderful, I live in burleson which is south of Fort Worth. My brother goes to tarelton and I can’t wait to visit him again and try it. I had an expresso martini was a 10/10, my appetizers were amazing and so tasty. Don’t even get me started on the yummy salmon. I can’t wait to come back!

Traveling from Colorado and came here for brunch and the food was spectacular, Emmy was our server she took great care of us and was super knowledgeable, she took us to see the hotel area and we got a full tour. Overall the experience was amazing and such a cute place! I highly recommend if you are in the area.

This is a MUST stop if you’re visiting Stephenville! I would also recommend the attached hotel (The Interstate Inn) but let me focus on the restaurant here. Food is very tasty. A bit of everything you would enjoy - good mix of creativity but comfort for someone looking for a great fun dining experience, a little upscale, but super casual and comfortable. Service was super friendly. We’ve made friends with the bartenders and several of the wait staff after repeated visits. We’ve had dinners and tried brunch today. So many great recommendations from the menu but should try the Shiner Bock beer biscuits (some of the truly best I’ve ever had). Short rib, fried chicken, truffle fries, too many great things to mention. We have enjoyed everything we’ve tried. Price is very reasonable. Exceptional value. GREAT bar! Wonderful cocktails and super fun bar staff. They employ a lot of students and we were treated very warmly with every experience. Especially Nicole, Sherrie and Sawyer at the bar, but they’re all simply amazing. Make reservations especially at times you expect would be higher traffic (weekend nights, game days, etc).

We were in town for the LeAnn Morgan show and got the last available reservation for Sunday brunch. It was great… our server was amazing and the food and cocktails did not disappoint. The atmosphere is great, so nice to experience something that you can’t just find anywhere! The atmosphere, music and retro vibe was refreshing. We are planning a girls trip back to Stephenville and going to stay at the “retro” remodeled hotel Interstate Inn next door. If you’re ever in Stephenville make a reservation and give this one a try, it’s a MUST!!

Wonderful evening at The Seeker started with a perfect Cucumber Collins that was refreshing, relaxing and delicious. The tomato gazpacho was smokey with capers and I think maybe finely diced cucumber and a compressed watermelon cube topped with the leaf of an herb I thought was mint, but I thought it also tasted of anise. It was a spectacular little green leaf. The Southwest Caesar was encased in a stiff web of parmesan that my husband put on its side to unroll which worked really well. The salmon was matched with okra fritters and black eyed peas with raw strings from the snaps placed on top to look like a pea plant! The fried chicken was very substantial and came with a biscuit, butter, a small jar of sweet pickled cucumber and onion, a tiny pitcher of a nice, spicy thin brown gravy, mashed potato tots, and at the end a thoughtful towelette rehydrated at the table. The service was stellar and we felt very pampered. The atmosphere is very comfortable and sophisticated. We aren't fancy people but we didn't feel intimidated in any way and got to enjoy a fancy place with fancy food and wear something other than our usual jeans and tee shirts. The value and quality is truly remarkable. We didn't have room for dessert but will try smaller starters next time. We're so happy to be able to enjoy this wonderful restaurant in our hometown.

Love the mid-century modern look, our server was attentive and informative on the food, and the food itself was delicious and plentiful. We ordered the queso, the spare rib, fried chicken, beer bread, brussel sprouts, potatoes, and mac n cheese. We also had the Heaven and Hell cake for dessert. The food was flavorful, wasn’t dry (always an issue with fried chicken), and overall was just delicious. We loved the sweet and salty range in the food as well. We will be back and I encourage others to try it as well!

Food and drinks were okay, but pricy for what you get. I had chicken and friends had steak. I've had better chicken, cheaper, and the friends said same about the steak. Service was very good, but overall, I had a meh experience. Won't be going back.

The food and service were at the level of 5 star and the lighting and people in shorts and sandals was a turn off. Because the lighting was so bright it had a dinner feel so people were louder than the radio. Once the sun went down the mood was less crazy and more fine dinning. Our waitress rocked and we never had a dirty plate or empty glass and the manager was on point. He noticed my mother didn't like her salad because of the spring mix and gave her a dessert so "she wouldn't leave hungry"

Drove to Dallas to try the new restaurant. I am a Stephen Pyle fan. The cocktail we tried, the White Cadillac, was great! Not much of a menu for appetizers. We tried the hells eggs and they were nothing special. Had the ribeye for entree, which was a disappointment! The steak and pinto bean ragout was stone cold. We filled up on biscuits, which were delicious, and took the steak and ragout home. Had it the next night and it was a very nice, marbled piece of meat - well seasoned. The ragout when hot was excellent. In retrospect, we should have said something. But service was not speedy. The coffee was excellent. The apple cake was decent but not special. Glad we drove there, but probably won't go back.

Our second time to this restaurant for brunch. The brunch menu is limited. I hope they plan on changing it seasonally. The first time my burger had everything I asked not to have and when they gave me the replacement it was rare to uncooked. Today both orders of bacon we received were not just overcooked but burnt. My husband ordered a cup of decaf and didn't even drink half of it saying "I expected better from a restaurant like this. Conversely, the watermelon pickles are my favorite and the blueberry pancakes are my son's favorite! I hope they are busy enough as they weren't full either time.

Ate there for wedding anniversary. Both had salmon which was excellent as was mashed potatoes. Server very cordial. But experience was harmed because of noise level. Very loud. We sat a few feet across from each other and had to practically yell to hear each other. Not the upscale atmosphere expected.

My husband and I celebrated our 10 year wedding anniversary here. I loved how easy it was to make a reservation and the personalized touch of the menu. The place is decorated very nice, but the restaurant is LOUD. I’m talking, yell at your partner loud. If I’m going to spend some money and have a fine dining experience, I would like to not scream across the table. Our waitress even apologized and told us that she felt like she was yelling at us (because she was… she had to). Our appetizers and main entrees were okay. My husband ordered an old fashioned when we were first seated. He didn’t get his drink until right before our dessert. I will say our waitress apologized profusely and even comped our drinks. We just did not enjoy our experience, so we probably will not be back any time soon.

At THE SEEKER in Stephenville, the Brussels sprouts are truly outstanding—crispy, flavorful, and expertly prepared. Unfortunately, the main cut fell short of expectations, resembling something closer to a frozen supermarket selection. The melted cheese lacked the richness and depth familiar to a Mexican palate, leaving much to be desired in overall flavor. However, the customer service, particularly from the Manager and the Bartender, was exceptional and added a touch of warmth and professionalism to the experience.

Personally I think they missed the mark on the decor for Stephenville TX. As for the food, they have some tasty stuff but they are out to lunch when it comes to gluten free. They have a gluten free menu they gave to use that had all kinds of stuff on it that clearly was not gluten free. When you have a restaurant this day and age and all the food allergies in the world you better have your kitchen and staff dialed in. These folks are not!! Aside from that if you like sauces on your steaks and presentation over taste, this is the place for you.

We were so excited to have an upscale restaurant in Stephenville. This time of yearvwith foaling season we can't get too far from home. We were very disappointed. The food and service were mediocre. You can't come to a beef producing area and throw a steaknom a bed of pork and beans. Ourvgobto place in Hico outshines this placr.9
