Pollo Fiesta has been serving the people of San Luis Potosí for almost 40 years without interruption. It's the oldest roasted chicken business in the city. And if it's lasted that long, there must be a reason. It has the distinction of being the only business in the industry that maintains the tradition of the authentic Sinaloa-style roasted chicken recipe, the original one. None of the other local chicken businesses do. On the contrary, they change the recipe as they please, and what happens, happens. They open, last a few months, and then close. They fade into history without a trace. Others, like the ones we already know, don't sell chickens; they're more like pigeons! Overpriced and of dubious quality. Some taste like nothing, others are over-seasoned—in short, nothing good. To them, you're not a person, just another customer.
