My go to spot first breakfast because it is also in walking distance from where I live. The people work here are nice and patient with my broken Spanish on ordering my tacos. The Tacos here are great and the price is reasonable for breakfast.
Amazing texture, flavor, and authenticity. I was recommended to come here for an afternoon bite by a good friend who was right about this place. The staffs are friendly and welcoming while the Barbacoa is something to crave for once leaving Guadalajara. This is one of the hole-in-the-wall spot you may want to check out while in town.
Could not get more authentic than this. Meat cooked under the ground, beautiful and friendly people serving food in a setting that speaks culture for itself. Too good to pass on!

Gamboa sells Hidalgo style lamb that is wrapped in agave leaves and cooked in an underground pit. They have great cuts of meat and even some exotics like blood sausage. Make sure to get a a bowl of consume. The atmosphere is humble but you are here for the food, not for furniture.

Gameros Barbacoa, is always great for cold weather mornings, the place is not the best atmosphere, but it's suited for Mexican standards street foodish. Always ask for more meat and less fat and a consome.
This place open early in the morning and close late afternoon or sometimes noon . Food is good . Soup must try. Lamb is delicious.
