We chose this trattoria with the desire to savor traditional cuisine, and our expectations were more than met. The paniscia was excellent. You can sense the experience and passion for a job that encompasses an art. 👏👏 Bravo!!!
I returned for lunch with friends at this trattoria in Vespolate, where we've always had a great time. It's a family-friendly atmosphere where chef Carla is always a pleasure to work with and a delightful lady. The food is all good, and the paniscia is top-notch. The staff is kind and friendly, and the quality/price ratio is excellent. I highly recommend this trattoria.
The best trattoria in the province for its ingredients, service, and friendliness. The owner, besides being an exceptional cook, is incredibly friendly. Highly recommended.
Excellent trattoria in the center of the town of Vespolate. I stopped for lunch and ate an excellent paniscia (typical dish of the area). The place is small but you have the possibility of eating outside in a beautiful courtyard. The service is youthful and very friendly. The proposed menu is very valid and the prices are super! A trattoria that I highly recommend!
Everything we ate was DELICIOUS! From the cured meat appetizers, the plin pasta with stew, the paniscia, the bread, and even the wine. Everything was excellent!!! The wine list features typical local Piedmontese wines. The entire menu is based primarily on traditional local dishes. The staff is polite and friendly. I can't wait to go back!
After a somewhat stormy start, lunch proceeded smoothly. The waiters were both very patient and friendly, always smiling (which is no easy feat considering the type of work they do). A family atmosphere, where even the cook and the owner sit down with you ✨ The food is really good, I hope to return soon.
We're in Vespolate, on the outskirts of Novara, very easy to find. You arrive at the traffic lights, turn left, and you're there. We found Mrs. Carla's cuisine truly delicious; the Paniscia was very good. We will definitely be back to try other Novara dishes; now we're waiting for the frogs. Informal atmosphere and punctual service, very friendly and kind; they willingly interact with customers. We're in Vespolate, on the outskirts of Novara, very easy to find. Visited during Paniscia Days. The paniscia was good (even allowing for a second helping!) and flavorful. Tender Ganassino cheese. Interesting desserts. The table setting features refined white dishes. Good wine selection. The girls were friendly and helpful (not a single man in sight...). (Mrs.) Carla loves to chat with guests and explain her recipes. We'll return to try other dishes (frogs, snails, oxtail stew, etc.). (Only question: why are wines and grappas so "biased" toward the upper Novarese area?)
One of my all-time favorite places. The kingdom of paniscia, it gets better every time I return. The wild boar fillet with pears and plums is the path to heaven. The friendly, welcoming staff makes me feel right at home. It's a shame I live so far away. I hope to return soon to enjoy your cuisine. THANK YOU
The name of this trattoria says it all. It's not a Michelin-starred restaurant, nor is it a romantic spot, but it's recommended for those who want to savor good, authentic food and those seeking the flavors of yesteryear, cooked with passion. A place where you immediately feel at ease. The prices are affordable. For those passing by, it's hard to spot from the outside because it's so discreet. Reservations are almost a must. The menu changes daily and is presented on a blackboard, without prices. Unless you have special dietary requirements, it's best to ask the three charming ladies who run the trattoria for recommendations on the daily specials and their pairings. The house wine is a lightly sparkling Barbera, but you can also order wine by the bottle.
An excellent family-run trattoria, with a welcoming and friendly atmosphere and carefully prepared, high-quality dishes. The mother in the kitchen shows all her love in traditional dishes, revisited with passion and intelligence. Her daughters welcome you with warmth and professionalism, offering advice on dishes and pairings. Absolutely fair prices and an excellent value. Highly recommended.
Paniscia numero uno! Antipasti affettati buonissimi, bagnetto delizioso e dolci top. Vino ottimo.

Traditional dishes, beautifully experimental desserts. This is a place with simple yet refined cuisine, family-run and matriarchal, with courtesy and warmth taking priority. We came here on a Sunday for lunch, and it was a pleasure both to arrive, crossing the countryside with its flooded rice paddies, and to sit there, chatting about the locals and asking "How are you?" The only flaw is the lack of a wine list, but the house wine isn't bad.
A casual trattoria with traditional cuisine, a family atmosphere, and high-quality cuisine! You immediately feel welcome; the chef is very hospitable and enjoys chatting with guests, even revealing little tidbits about the dishes. Traditional yet refined dishes; I recommend the appetizer with a platter of cured meats and cheeses to share. The desserts are very good and beautifully presented. If you go on the weekend, it's best to book in advance.
Local mom and pop place that serve typical dishes of the area. If you're looking for down home cooking, this is the place. If you're searching for nouvelle cusine, look somewhere else.
This week, Watson and I are investigating the Vespolate area: the case in question is "La Trattoria del Popolo," a historic restaurant in the lower Novara area run by three women: a mother, daughter, and granddaughter. The restaurant is also a bar, so don't be put off by the inquisitive looks of the patrons who greet you upon arrival. As always, we arrive very early, so we're the first to dine. We're seated in the small room to the left of the entrance, which, unfortunately, isn't accessible. Owner Eva is quick to join us and tell us about the restaurant and the week's specials, followed by her mother, Carla, the elderly cook who still excels; her mother's granddaughter, Veronica, serves the tables with simplicity and courtesy. We order an appetizer for two: typical Novara cold cuts such as salame della duja, fidighina, goose salami, smoked loin sliced, gratinated onion, etc. For my first course, I choose the ravioli with Carla's sauce, while Watson prefers the plin with a brown sauce (a roast gravy). For my second course, we both try the polenta with bruscit (a soupier version of the Borgomanero tapulone). We both finish with the same dessert: a revised version of strudel: flambéed with brown sugar and powdered sugar, but without the pastry. We pair our dinner with a bottle of Nebbiolo Ramale di Torraccia del Piantavigna, a Francoli wine, and two bottles of water. We finish with two coffees. The place is simple but welcoming; the table is set with paper napkins and tablecloths, but tasteful despite its minimalist appearance. The appetizer is ordinary, but tasty. Both the ravioli with Carla's amazing sauce (we couldn't get the recipe from the chef) and the plin are excellent, although neither is homemade. The tapulone is good. The polenta is a bit bland. The dessert is delicious in flavor and spectacular in preparation. The coffee is well-made, but it's not my cup of tea; I prefer a sweeter blend. The Nebbiolo is decent. The place is clean, and there's plenty of parking on the street outside the restaurant, though access requires climbing a step, making it difficult for wheelchair users. We spent €89 for two: considering that the weekend menu costs €35 and includes a ¼ glass of wine and an appetizer, as well as a first and second course, and given that the Nebbiolo cost €23, the dinner wasn't exactly cheap for a place with furnishings, finishes, and plating worthy of a working-class club. The dinner, however, is tasty and authentic; a little less would make it more enjoyable.
Qualità del cibo abbondantemente sotto il livello di trattoria. Peccato perché il locale sembrava accogliente e con cucina casareccia. Unica nota positiva che il prezzo è molto basso. Comunque non vale la pena tornarci.
