Highly recommended trattoria. Located in the hamlet of Campiani in the municipality of Collebeato, a town in the Brescia hinterland, on a lovely hill surrounded by greenery. The simple yet refined atmosphere meets the expectations of a diner seeking a good, rustic trattoria. The food amply meets these expectations. Solid recipes rooted in the local area, but with a few thoughtful excursions into Italian culinary culture. The ingredients are of good, if not excellent, quality. Service: efficient and punctual. Bill: fair given the current price increases. Positive notes: ample parking, pleasant walks nearby, dogs welcome.

Ci sono stata ieri per cena, carne ottima, personale molto competente. L’unica pecca si sentiva tantissimo il caldo sotto la tettoia, magari si potrebbe pensare di mettere dei ventilatori. Grazie

Ottimi gli antipasti sia quello della casa super abbondante che la toma fusa con funghi e tartufi che il carpacci di Angus meno entusiasmanti i fiori di zucca. Poi ottima la carne la mia preferita la costata polacca servite con patate fritte con la buccia. Servizio super preparato, ma un po' lento e qualche intoppo sulla sequenza delle portate.... forse il pienone...

Se cercate un mix di cucina tipica Bresciana e rivisitazioni in chiave moderna, questo è il posto giusto. Un mix perfetto tra trattoria e ristorante di alto livello. Qualità delle materie prime davvero ottima, servizio al tavolo impeccabile con attenzione particolare nei confronti delle gerarchie del galateo oltre alla gentilezza. Il locale all'interno avrebbe bisogno di qualche ritocchino ma vi è comunque un ottimo atmosfera. Sicuramente in primavera si possono apprezzare anche gli spazi esterni con un bel panorama. Dolci ottimi! Posso assolutamente consigliato.

The food is well-cooked, but the plating is a bit sloppy. The quality of the meat is evident, and the informal atmosphere is pleasant; even the veranda area is a pleasant mix of formal and informal. Good value, although I find it slightly more expensive than other restaurants of the same type: 2 appetizers, 2 main courses (a tartare and a ribeye), 1 dessert, 1 sorbet, 1 water, and 1 glass of wine: €100. The same amount would have been spent at slightly higher-end establishments. In any case, an evening enjoying meat at this "trattoria" can be a pleasant experience.

This restaurant is outstanding, the food, the service,the ambiance is all worthy only complaint is - ditch the frozen fries they are yuk they have no relevance to the wonderful meals you are serving 😋

Trattoria Merlo offers a charming location, reached via a scenic road offering views of much of Franciacorta. The service is excellent: the staff is attentive, knowledgeable, and happy to recommend dishes. The restaurant offers a good variety of dishes. The Merlo appetizer, the tagliolini with black truffle, and the meat (especially the tomahawk) are highly recommended.

Enjoy your lunch; we had a wonderful time. There's still a bit more to go for the fifth star, but it was definitely an excellent lunch. We came here to celebrate my birthday, two months late, after enjoying an aperitif at a local winery. Long live Lombard food, long live the traditions that this place respects and promotes. It's a shame about the rainy and foggy day; we'll be back in the summer to admire the scenery.

We ordered a mixed antipasto, various types of cold cuts (nothing special). I would have liked to try some cheese, but there wasn't any. The polenta with mushrooms and porcini mushrooms was good. The lamb chops were also very good. At one point, I couldn't cut the veal fillet because it was too big and bloated, so much so that it seemed undercooked inside. I didn't finish it. The outside dining room is very beautiful and warm, and the windows create a lovely atmosphere. The young man, I think the owner, who took our order was very kind and knowledgeable.
