About 10 days ago, I went with a group of friends to dinner at Taverna San Martino in Saluzzo. It's a small restaurant in the city center, seating about 30 people, very bright and welcoming. To avoid confusion, we chose the tasting menu. Appetizers: Fassone sausage, marinated egg, and hazelnut oil. Caponata, crispy bacon, and corn crumble. Tarte Tatin, onions, and Toma cheese fondue. All were noteworthy, especially the sausage, which was AMAZING! Fresh spaghetti sautéed in a Sciacca anchovy and cream sauce, garnished with wild garlic gel, was spectacular, but a little heavy to digest; but it was worth it. For the main course, bite-sized Brut and Piedmontese Fassone beef buns cooked at a low temperature with vegetables, Taggiasca olives, oregano, wild fennel, white wine, and a touch of tomato: they melted in your mouth. I never eat dessert after a big dinner, but this time I tried my wife's (panna cotta served on a red fruit coulis and garnished with basil gel) and I have to say it was worth it! All topped off with an excellent dessert served at the perfect temperature. Final verdict? Go there, it's worth the trip, and Saluzzo is also a beautiful town worth visiting.

I stopped at this restaurant for dinner while passing through Saluzzo. Trio of appetizers (Fassone sausage, marinated egg, and hazelnut oil; caponata, crispy bacon, and corn crumble; porcini mushroom beignets and Grana Padano fondue); Fassona entrecote; and for dessert, shortcrust pastry with Chantilly cream and ramasin. I frequent the Langhe and various areas of the province, and this is one of the places I'll definitely return to. Excellent Piedmontese cuisine and quality ingredients, all topped off with courteous service.

We happened upon this taverna for lunch and had such a great time, so much so that we returned for dinner. The service was courteous and attentive. Excellent traditional dishes with a wide selection for every course. We tried appetizers, first and second courses, and even desserts, and everything was delicious. The wines were also excellent. Prices were in line with other restaurants. The place is nice and not too big, making it a great place to chat with colleagues about work. Highly recommended for both lunch and dinner.

A place that literally enchanted us, so much so that we returned the next day. A warm and welcoming atmosphere, friendly and attentive staff, and the delightful owners and their husbands pamper guests with stories of their local products. The menu offers several options, all carefully crafted with skill, and all of this is excellent value for money. Bravo, bravo, bravo!

A happy day and lunch on Easter Monday 2025 at a restaurant I found almost by chance while surfing the web. I chose Taverna San Martino in Saluzzo, which exudes a clean, simple elegance, unpretentious, and therefore effective. Warmly welcomed, we were ushered into the spacious dining room with well-spaced tables, featuring a pleasant, minimalist table setting—fabric placemats; a few silverware items changed with each course—and lunch could begin. After choosing and serving the wine (which, however, should always be served to the right of the diner, except in cases of force majeure), the chef offers an excellent welcome entrée—focaccia with Cantabrian anchovy tartare and parsley sauce with dry butter—before moving on to the delicious appetizers that veer from tradition to explore new horizons: this is especially true of the lamb speck with Tête de Moine cheese flakes, pear jelly, and lemon zest; but the other appetizer we tried, the Moscato-marinated trout with purple cabbage and mustard mayonnaise, was also on par. After a wait, perhaps a little too long, even considering it was a holiday, we moved on to the first course—the surprising and flavorful asparagus agnolotti, caramelized parmesan, and dried cornflowers—before moving on to two second courses that meaningfully explore the rustic simplicity of Piedmont and Saluzzo: mountain cheeses accompanied by three classic and appropriate sauces; and the tender morsels of brut and bu-n Fassone beef, cooked at a low temperature and accompanied by a Barbera sauce that recalls, yet reinterprets, a signature dish like braised beef. We concluded with four desserts, all equally elegant and some truly innovative: profiteroles with Chantilly cream; sweet soup with apricot jelly, cornmeal crumble, and nougat flakes; foamy tiramisu; and finally, panna cotta, to which Szechuan pepper lends a delightfully aromatic, yet not at all spicy, nuance. The bill was proportionate to the food and the wine that accompanied the entire meal, chosen from a not-so-extensive but quite comprehensive menu: in our case, a 2023 Ruchè di Castagnole Monferrato DOCG Bersano, with a complex bouquet despite its youth. Tried on April 21, 2025. Recommended and worth trying again.

Delicious and traditional food, excellent quality. Wonderful wines, several from local/piemontese wineries. Hosts are the best. The place is cozy and quiet.
