Our group of 4, had an incredibly tasty dinner here, on 1/19/26. Jonah, our Booker Wines host, reserved a table for us, at 5:30pm, at Hatch Rotisserie & Bar, a popular downtown eatery in Paso Robles. This was definitely a good idea, because their long & slender eating space, fills up, in the bat of an eye. Our server was polite, & very attentive, checking with us at least 4 times, until we'd figured out what to order. I wasn't particularly famished, when we arrived here, because we'd just eaten scallops & a crudite's platter at Daou Winery, during our 2:30p.m. Tasting. After eyeing the Hatch menu, I chose something on the lighter side- a 1/2 Rotisserie Chicken. Before this came out, my partner & I split a Blue Cheese Wedge. I was underwhelmed by the wedge salad, which I felt, for the price, needed more bacon, & perhaps some Balsamic & some whole mini tomatoes, on it. Our best friends ordered the Hot Skillet Cornbread- light, with crispy edges, along with a slightly sweet flavor. The server uncorked a bottle of Booker 2016 Vertigo, which our friends had purchased earlier, in the day. After a few minutes & sips, our conversations around the table shifted a bit, to the wilder side of things. Good food takes time, so by the time we'd finished our delicious wine, all 4 Main Courses arrived, to our table. They all looked spectacular! My 1/2 Rotisserie Chicken must've been Arnold Schwarza-Chicken, with huge plump pieces of crispy-skinned chicken. The first taste was a revelation- Wood-smoked BBQ flavor, with a masterfully-cooked succulent & tasty meat, inside. I loved my meal. My partner chose Monday's Daily Special: Chicken Pot Pie. There are 7 fine meal choices, changing every evening. She loved her dish, commenting on the perfect crust, & deliciously creamy filling inside, filled with large chunks of chicken. Our friends chose Shrimp & Grits, & Grilled Skirt Steak, respectively. Each of them loved their meals, which looked as impressive, as they tasted. The Daily Special, as I mentioned, changes each day, & I missed Fried Chicken-one of my favorites, by 1 day. Another of my favorites, Prime Rib, was offered another day, so perhaps research this, if you're craving something special, that's not on the regular dinner menu. Definitely make reservations for dinner, at The Hatch Rotisserie & Bar. They offer an impressive list of alcoholic drinks here, which none of us sampled, this time. Also, there's no corkage fee, should you decide to bring in one of your favorite Paso wine bottles. I gave The Hatch 4 Stars, for Atmosphere, simply because this is a small space, with tables laid out closely together. Everything else about this restaurant, I loved!
The roasted chicken was perfect! Crispy skin; moist, and a hint of wood smoke. I’m from East coast area (we know our chicken!). Also ordered the a daily special entree dinner including salad, entree, and dessert (bargain). Service was attentive, friendly and welcome. We visited off-season, and mid-week.
On our first night, we tried to eat here, but they were closed for a private event. So, we went to Della’s, which was a great choice. On our second night, we finally came in and had the meatloaf, which my husband absolutely loved. I also had their special steak and fries, which were incredibly delicious. The portions are generous, and their sauce has the perfect amount of kick. I’ll definitely be coming back!
Food never dissappints. Friend chicken and the cornbread are a must. But you can only get certain items on certain days of the week so be aware of that. Also it gets pretty packed at dinner time so Def try to get reservations. We lucked out and got a seat at the bar which I prefer anyways. Moody atmosphere for dinner ❤️
Went here with a large group and had an excellent experience. The waiter suggested allowing the kitchen to select our food and they did an excellent job. Good variation, excellent flavors, generous portions. Wine list was a bit underwhelming but nice cocktails and great atmosphere. Staff was very accommodating and attentive. Would definitely return.
First time here and was very impressed. Went with a bunch of friends and tried a little of everything. The fingerlings and brussel sprouts were my favorite starters. I got the Hatch burger and added the bacon & fried egg, it was SO good! Of course had to try some of the rotisserie chicken as well and was amazing as expected. Definitely will be back to try more of the menu
Suuuuper delicious rotisserie chkn🐔 Also good steak and fries as well.🐮🍟 The chicken comes with a side of drippings that was quite tasty. All things rotisseried and grilled go well with booze and The Hatch Cocktail list delivers with bourbon based drinks that blend and cut the fatty proteins content quite well. Servers are nice and check-in timely when beverages need refreshing. Definitely book reservations in advance as demand is high. Dinner is dimly lit yet audibly lively. Top pick when looking for American dinner fare in Paso after a day of tastings.
Normally I would just rave about the food and say you have to see this to believe it. But this time I'm going to have to say you have to come here to experience it. It is a unique environment. The little restaurant next door belongs to the same owner. And it is also amazing. We went there for our appetizer before coming to the hatch. I don't need to say much more than all the really good reviews are accurate and anyone who gives a negative review probably is just a negative person. The atmosphere is upbeat friendly and inviting. I would call it trendy but it had this feeling of laid back yet trendy. Kind of interesting The kitchen is just to the side of the bar and you can watch everything being done. The bar has an amazing supply of alcohol if you're one of those people who indulges. I am not However as the designated driver I can tell you that the people consuming alcohol were thoroughly pleased with the quality and quantity of the drinks. Most times I won't just say come down and experience it for yourself. But in this case, come on down and try it for yourself My recommendation is the burger. The chips that are served with it are made in the restaurant and they're amazing. What homemade potato chips should taste like thin lightly salted with sea salt apparently because it tasted so good. Come on down to the hatch and maybe I will see you there. Because this place is one that I will come back to more than once.
This is an absolute MUST visit in Paso Robles. I knew it was going to be good but I was more surprised and impressed than I could have imagined. We sat at the bar, and the drinks that they put together and design are really unique, tasty, and tasteful. The service was fast, they have an open kitchen where you can see all the food being made, and they have a really cordial wait staff. The food, however, was absolutely incredible. Probably the best burger I have ever had in my life - cooked to perfection - and what I really enjoyed was that The Hatch had a unique take on all the different dishes they make. They took traditional classics, added a twist, and made them VERY well, and I couldn't have been happier with my experience. And make sure you get the dessert - you'll want to make sure you try everything on their simple, but delicious menu. Can't wait to go back!
The food quality is ok, service is very good, our waitress was super nice. We ordered the streak frites, medium rare and medium but both were close to well-done. When we asked they made a new one
The Hatch is a well known restaurant in Paso Robles. First impressions were it is a small restaurant with a row of seats, tables and a long bench seat. Tables are cramped and not much space offered between diners. Our servers were great but the hostess seated a couple right next to the 4 of us when there were plenty of open seats not on top of current diners. They were nice people but she did not need to cram them in next to us. As a starter we ordered cornbread as well as the mushrooms and they were spectacular. I ordered the rotisserie chicken and my wife the chicken pot pie. The rotisserie chicken was very smoky and the texture was rubbery. My wife found the chicken pot pie to be dense, a bit dry and she barely ate much of it. It was her birthday and we ordered a butterscotch pie for the table. She really liked her spoonful but I thought it was like butterscotch pudding which is not a favorite of mine. This is a tough rating for me. The starters were outstanding as were our servers. The main dishes were a miss and the hostess was not on her game. Because I feel generous I will give The Hatch 4 stars. It is worth a revisit.
We’ve been meaning to try The Hatch forever and finally got an early dinner reservation at 5:30 PM. After wine tasting all day, we got hungry early and walked over around 5 PM thinking it wouldn’t be an issue but nope! The restaurant was already packed. The hostesses were super apologetic that they couldn’t seat us right away. I noticed Della’s next door with a full bar and our hostess mentioned they share the same owners, so we hung out there until our seats were ready. A little later she came to get us and sat us at the bar, exactly where we wanted to be! I really love the vibe here. Yes, it gets loud and lively, which might not be for everyone, but I love that whole energy. It’s intimate and fun at the same time. Chandler, our bartender/server, was fantastic. He was busy but still on top of everything and made us excellent cocktails. For Starters we ordered: Grilled Maitake Mushrooms: As a mushroom lover, this was EVERYTHING! These were clean, earthy, nutritious, and prepared perfectly. Believe the rave reviews, they’re so soooo good! Hot Skillet Cornbread: Delicious! Warm, comforting, and my boyfriend is still salty Chandler took the skillet with the last slice he was saving for “dessert.” LMAO. For Entrees: Pan-Seared Trout: 10/10. Perfectly cooked with incredible crispy skin. Instant meal inspo for us! Would absolutely order again. Half Rotisserie Chicken: My boyfriend’s order. Flavor was great, but the chicken was a little on the dry side. The two sauces it comes with complement the dish perfectly though. Pro Tip: Make. A. Reservation. This place books out for a reason! It’s easily one of the most popular restaurants in Paso. We had an excellent experience all around. Amazing food, great service, lively atmosphere. This is an easy favorite and absolutely lives up to the hype!
The Hatch was recommended by a number of locals, so we knew we had to try it. Sommer made our dinner so delightful - she was helpful and gave us time while being attentive simultaneously. The bar and restaurant were bustling for a Friday night (so a little loud) but service and food timing remained excellent throughout the meal. The Friday special was prime rib (until they run out) so naturally we ordered one. We got the Brussel sprouts to start which were sweet and flavorful but a little overcooked (needed to be more crispy). The grilled bass was a sizable portion but just a touch dry, and the prime rib was under done (asked for medium rare and it was definitely rare. To be fair I KNOW how hard it is to get the right temperature on the right slice of a limited quantity of prime rib, but still…). Overall, decent meal, great cocktails, and the staff was great.
Fun place to dine for casual fare. Service was wonderful and attentive and we went at the height of dinner! We had made a reservation in advance based on other reviews and had zero issues getting seated. We went for the fried chicken which was cooked well. It was juicy, nice and tender inside however we were underwhelmed by the batter. The hot sauce it comes with was SPICY and added a nice zing to the chicken. We agreed that the batter in the fried chicken was more of a taste preference thing, we tend to like a lighter batter. The shrimp and grits was delicious and creamy and the cocktail menu had some fun choices. We also tried the pork belly which was tasty. Hatch is a cute spot, in a good location with great service.
Loved the location, ambiance and staff. The vibe is energetic and upscale fun. The drinks were outstanding. I was a little underwhelmed with the food. My rotisserie chicken had soft pale skin. Not crispy and golden like I expected. The burger was salty and too crispy. But maybe it was just an off-night. We will go back next time we’re in Paso to try again.
TLDR; While I liked the overall vibe of the restaurant, between being cold, and the food not being great it just felt like it was a bit meh, and I don't need to go back any time soon. Service - Was very slow, it took 10 to 15 minutes for a waiter to show up at our table as well as the tables around us. After we finally placed our order the food came relatively quick. Food - We had the rotisserie chicken which is available daily, they also have rotating specials throughout the week unfortunately the chicken was overcooked and dry and the meager sauce portions they give you wouldn't have helped it anyway. We also ordered the broccolini and both thought it had too much of a smoke flavor. The brussel sprouts were tasty, and enough for two or three people to share. The portions generally seemed generously sized to share. Ambience - We went in the winter and every time the front door opened a breeze blew into the restaurant. There was a curtain installed inside, but it did nothing to help and was left open by everyone. Everyone was wearing jackets because it was so cold. They really need to do something to keep the cold air out in the winter.
We've had a few meals here. We love Paso and enjoy the restaurant. Our cocktails were solid, not exceptional. And our server didn't know them well. Chicken and meatloaf were good, the latter a bit dry and the former a bit underdone for my tastes. My wife wanted a glass of cab, but they didn't have anything. That's a miss for wine country in my opinion. We settled for blends, which were good, but the pours were quite meager for $20.
One of our members really wanted to try out so we went. Food is overpriced and not special. Rotisserie chicken was cooked too long so the meat really broke down no need to chew...and the pickled cabbage didn't go well with it. Burger without veggie. Bass was cooked perfectly for my plate and glad they substituted fingerling potatoes for broccolini. Tarts were OK but the crusts were delicious. Service was ok.
Food was not very good, especially for the price. One piece of the chicken I ordered was way undercooked and raw in the middle. Otherwise is was just kind bland. The shrimp and grits had a weird sour flavor, the meatloaf was bland as well. Got one sparkling water and the bill was $165 for 3 people. Yikes. You’re better off going to Costco. Service was great tho.
