Hemos estado a una degustación de quesos con marinaje,y la experiencia ha estado genial.La presentación de cada tipo de queso,la explicación de los vinos x parte del dueño ha sido un maravilla.Ni que decir que al que le guste el queso,debería de ir.

Simplemente espectacular. Muy acogedor, muy buen trato y muy buen producto. Además, les hicimos una propuesta de platos para maridarlos con un tipo de vino diferente (blanco, tinto y oloroso), y supieron recomendarnos perfectamente para mejorar la experiencia. Por lo que... ¡dejaos aconsejar! Eso sí: "la tabla de quesos" es obligatoria.

Es un sitio muy agradable, la atención que te ofrecen es de 10, intentando que la experiencia sea diferente y a tu gusto. Los quesos espectaculares, voy de vez en cuando. Por poner algún "pero" la carta de comida no es muy extensa y las cantidades son algo justas para el precio, pero en general es un sitio muy recomendable solo por el ambiente, el vino y los quesos.

Una noche redonda con Marcelo Increíble experiencia. Tras elegir un vino tinto natural, Marcelo nos preparó una selección de quesos deliciosa, cada uno mejor que el anterior, con explicaciones cuidadas y muy profesionales. La ensaladilla fue de las mejores que hemos probado: cremosa, equilibrada y con un punto de sabor perfecto. Las endivias al horno con zanahorias y queso en la base ,estaban espectaculares: combinación suave y sabrosa, con una cocción impecable. Servicio atento, tiempos perfectos y gran relación calidad-precio. Volvemos el próximo mes en cuanto estemos en Madrid. ¡Totalmente recomendado!

Ir a la Carbonera es una experiencia en la que el espacio y el tiempo se suspenden. Durante lo que dure tu comida o cena, la vida se vuelve más hermosa. Quesos con historia, vinos buenísimos, toda la comida exquisita y un servicio incomparable. Se toman el tiempo de contarte la historia de los quesos que te sirven, logrando hacerte viajar a cada lugar de origen… Sin duda, es un lugar único y encantador que conozco desde hace muchos años. Lo encontramos de casualidad y seguro que volvemos! Un sitio muy acogedor y una atención muy muy buena y atenta. Pedimos la caponata, las albóndigas de cordero (que estaban brutales y llevan una salsa muy original), una tabla de quesos y tarta de queso de postre. Todo muy rico. Solo una sugerencia a nivel personal: a la tarta de queso le faltaba algo de textura cremosa. En la boca se descomponía demasiado a mi gusto. Ahora, se nota que lleva mucho queso (punto a favor). Sin duda repetiremos. Comida riquísima con una carta reducida pero muy bien hecha.

One of the top places I’ve been to this year. The menu is very innovative and everything we had was mouth watering. The green beans al dente was served with a pea pesto and was almost like a pasta dish, garnished with goat cheese and cecina. The caponata was super tasty and was served with cold chicken-a bit unconventional but it really worked. And the smoked tongue with leek and cauliflower puree was thinly sliced like a carpaccio made my taste buds sing. For dessert we had an apple gel with whipped blue cheese and a butter cookie, a cheese and fruit dish to die for. Service was terrific and the red wine they recommended was spot on. Wish we were staying longer in Madrid so we could go back, and I’ll definitely return next time I’m in town.

What a gem. Why is this place not rated the best in Madrid? Why are there not six stars? La carbonera is the end of a treasure hunt, the pot of gold at the end of the rainbow… the place you want find magically when you are looking for an experience! First: incredible welcome, exceptionally nice and attentive staff and an amazing wine selection. As starter we got the four cheese: you probably feel drawned to more, but portions are substantial so if you are 2 people 4 cheeses is enough. The cheeses are INCREDIBLE and come with nuts and fruit. DO NOT SKIMP on the bread, do not for a moment think “I’m not gonna pay for bread”: pay for the bread coz this, in and of itself, is a dish. The basket is full of crunchy, chewy and nutty goodies that marry the cheese perfectly. As a main dish I got the bacalao, which brought me back to my childhood for its creaminess and softness, and which is paired with a beautifully fresh fennel and beetroot salad. I cannot even begin to express how perfectly balanced this dish is! My partner got the cherry tomato and burrata tarte tatin. I know: we have all seen it on Instagram, thought “oh cool, looks easy”. Well, it isn’t. La Carbonera chef perfected it to the point that if someone told me they invented it I would believe them!!! The last bit was the chocolate and orange tartelette was spectacular and so complex in flavours and textures. Overall this was an absolutely magical experience! We will definitely be back!!!

Brilliant cheeses, food excellent - I found it a shame that everything we ordered (except for the cheese) was spicy as I can’t have more than two mouthfuls, but before the heat kicked in I could appreciate those two mouthfuls were really delicious. Service was exceptional, explaining the cheeses and wine in such a professional way. Definitely to repeat! Hopefully I’ll find some things in the menu that won’t be too spicy

This restaurant is a must for any food lover. The service is top class. The atmosphere is astonishingly cosy and welcoming. The food was some of the best we have tasted. Served in a tempo that allows you to savour every bite of the amazing dishes. An absolute supreme experience!

We had the exquisite surprise to have real experts serving us food. Our waitress took time to explain the story of every single one of the height cheeses that were on our plate and helped find the best food and wine pairing. I can’t believe how good the food was, worthy of a gourmet restaurant at a very decent price. The overall atmosphere was super pleasant and the 3 waiters made us feel at home. I strongly recommend this restaurant to anyone who has the chance to spend time in Madrid.

My favourite brunch place, a very fair price (20 euros) excl. Drinks, which can be had for 3,50 (mimosa, Vermouth(excellent!), blini). Our waiter was kings, funny and knew his stuff, mentioning the ingredients of each dish and the provenance of each cheese without a stutter. Although the menu presents the dishes well, be sure you are hungry because it is a lot of home made / artisanal food. Especially the butter which is full of character as it is artisinally made in the north of Spain stands out for me. It is used in the desserts and sweets as well and it just adds a touch of taste that even if you were to make everything yourself you would not easily replicate. Truly my favourite brunch place, a no-brainer and worth a 30 min detour! Thank you very much for having us!

Estuvimos cenando una tabla de quesos, un pastel de carne y las sardinas ahumadas. De postre la tarta de chocolate. Todo muy rico y una selección de quesos maravillosa. Maridamos con un vino blanco y dos tintos diferentes. Un sitio recomendable.

Veo muchas reseñas que mencionan los 40-45€, pero cuidado: ese es el precio por persona. Pagamos 90€ por una tabla de 10 trozos de queso (para compartir entre dos) y 3 copas de vino para cada uno. Me parece un abuso, ya que la "cata" solo consiste en que te digan los nombres del queso y del vino, sin más explicación técnica o maridaje real. Además, se hace en medio del servicio de cenas, con todo el ruido. Mi consejo: Ven y pide una tabla de quesos normal; ahorrarás dinero y la experiencia será la misma.

Worst cheese place ever, don’t go to this place unless you want to be hugely disrespected by the serveur and to be not able to get your food due to her talking to other people for a LONG time right next to your food. The serveur pushed me when I entered the place saying it’s 10 mins left until the last order time - so I hurrily ordered my food, it came out very soon and sat in the bar table. I knew it was mine, the serveur stood right next to my food but did not stop talking to customers, making me wait for quite a time and making another customer taking picture of my cheese plate. When I asked her colleague to come and bring my plate in order not to disturb her conversation, she suddenly came to me saying that she has to finish conversation about artisan cheese with her customers asking me to wait for another few minutes. I told her I’m unhappy to wait although my food was sitting there for a long time, and told her that I respect her cheese story but she has to respect the cheese that I ordered too. Although her customers said okay to her, she kept resisting to come to me with cheese so I had to leave this place feeling seriously disrespected and neglected. Dear serveur, please do not forget that you have to serve every customer with respect. Why was it so difficult to come to me when I told you multiple times that I feel unhappy being disrespected? Hope you learn from this experience.
