Quite possibly the best dinner experience of my life. The service was definitely the best I have experienced (thank you, Daniel!) and the food was delicious, beautiful, special, and humble, from start to finish. The super talented and admirable chef even kindly took a moment to meet with us 🩷
I came to Levadura de Olla for a solo dinner on my last night, and it was the perfect way to close out my trip. The ambiance is beautiful, warm, moody, intimate , and the service was genuinely some of the best I had in Oaxaca. My server was kind, attentive, and even offered me half portions so I could try more dishes, which I really appreciated. The tomatoes were the star of the night. Each variety had such distinct flavors and textures that it felt like a tasting experience in itself. The tostada was another favorite, full of life and layered with flavor. The warm corn bread at the end was soft, delicate, and the perfect finish to the meal. The dry pozole was good but didn't wow me compared to the other dishes, it reminded me more of a pasta with sauce than a traditional pozole, but still enjoyable. Drinks were solid but not memorable. Overall, this restaurant is a gem -- beautiful atmosphere, thoughtful food, and a must-try at least once while in Oaxaca.
When our friends recommended this place all they said was “you’ll love the food and the creativity of the flavours and combinations”. They forgot to mention that this place has a Michelin star And a well deserved one. We had a fantastic meal with great recommendations for food and drinks and dessert, very wondrously explained. Advisable to make a reservation much in advance, but if you are 1-2 people you may just luck out and get a spot after a bit of a wait All of the food was locally sourced and had either a strong pre Colombian origin, or was ceremoniously important, or was a reinterpretation and combination of delicious flavours. And as a vegetarian I did not have to resort to default basic options because they have an excellent vegetarian and vegan selection We got the Native squash in white pipián and mint to share: the pipián mole was absolutely delicious! For the mains we had the confit pork rib, the shrimps in guava mole (again such an excellent mole), and the yellow mole with roast cheese and chayote root which was such a fantastic combination of flavours For dessert we went for the Nicuatole with a gorgeous prickly pear ice cream, which was excellent in flavour and texture. And the Chocolate with a mezcal sauce that was bittersweet and delicious A definite recommend!
An outstanding experience from start to finish. We dined here during our time in Oaxaca, and it was without doubt one of the highlights of our trip. I had the full degustation menu, which was beautifully thought out, balanced, and deeply satisfying from beginning to end. Every course showed care, precision, and a clear culinary vision. My wife chose a few à la carte dishes, and they were just as impressive — perfectly executed and full of character. The service deserves special praise. Despite the restaurant being full and incredibly busy, the team worked in a perfect, almost choreographed flow — calm, attentive, and highly professional. It was honestly one of the most impressive service experiences we’ve ever had. The space itself is also stunning: elegant, welcoming, and thoughtfully designed, adding even more to the overall experience. This is a restaurant that truly understands hospitality, rhythm, and excellence. A must-visit in Oaxaca.
Top 3 meal we had in Oaxaca during visit in the fall of 2025. Standouts - Tomatoes with beet puree - 14 different varieties of tomatoes, snapper wrapped in Hoja Santa, Barbacollita Tamales with corn grits, avocado leaves, pork and chicken topped with a perfect mole. Cocktails were top notch. We decided they had the best tortillas in Oaxaca (which says A LOT). Service was as good as the food. I can't wait to return!
Wow what a special place! It was fully booked but I was traveling alone so I was able to snag a table. The staff is really lovely and know their stuff. It really felt like they had a lot of pride in their offering which was great to see! The food was so uniquely delicious! I want twice and tried two different dishes each time and each dish was an experience. The vibe of the space is also quite lively and warm.
We had a fabulous experience dining here on our anniversary. We thoroughly enjoyed each of our courses, the focus on local Oaxacan traditions and flavours was such a beautiful way to celebrate living here. The dishes were all incredible, I would be hard pressed to choose a favourite and I would love to try more of this spectacular menu. We will definitely be back, especially when friends and family visit as this is such a fabulous way to experience the culinary traditions of Oaxaca.
A highly recommended restaurant in Oaxaca. We managed to get a last minute reservation for 4.30. I loved the vibe of the place as well as the food and the cocktails (I had the one with corn whiskey, lime and passion fruit). For a starter, I shared a selection of local tomatoes - about a dozen varieties. For a main, I had tamales with mole. Last but not least, I had a rich chocolate dessert and cafe de Olla.
Just had dinner here and didn’t even realize it was a Michelin-rated restaurant! I happened to see that it was mentioned from a few people online and I booked it solely based on the fact that it had many vegan options. I was immensely surprised how veg-forward the menu is, and coming in with no expectations, I was blown away by the tomato dish. What a ballsy move for a chef to present a dish based on just tomatoes and beets, but on closer inspection it’s not just a simple tomato salad, it’s 14 varieties of endemic tomatoes of Oaxaca. If people don’t appreciate how complex this dish is (and how the back can easily goof up such a simple dish), then they shouldn’t be dining in this restaurant. The yellow mole was understated and beautiful with the delicious chickpeas. The squash dish was delicate and still had depth at the same time with its puréed base. Alex was our server and he was very enthusiastic and knowledgeable in answering our questions. The whole restaurant was very comfortable and we felt very relaxed with the hospitality. After dinner we had the privilege to get a tour of the back kitchen and after viewing the various rooms, and reading some of the reviews, I’d have to say that people who write shallow google reviews of this place do not understand the work involved in keeping a kitchen this pristine. I was beyond honoured to have also met the chef who’s a woman! Kudos to her for representing amazing Oaxacan cuisine and thank you for displaying vegan options and showing off the delicious seasonal vegetables Oaxaca has to offer.
From start to end it was a great experience. We liked the unique decor of the restorant so much. The tomatoes showplace was so impressive. Never seen so many tomatoes together. The dishes were all tasty. We had tomatoes salad, fried Quesadillas with fish and mole shrimps. Our waiter was very informative. He spoke really good English. The chocolate dessert and the burnt Milk dessert were both soo good.
Simply food was amazing! All the dishes ordered were way beyond expectations. Perhaps, this is why they achieved a Michelin star while the sister restaurant in CDMX couldn't. Unfortunately, the server wasn't as attentive as I anticipated. He spoke fluent English but I felt like a tape recording was playing at 1.2X speed. He did his job, but most customers will expect a little more from waiting staff. We ended up in a typical courtyard-style dining area. It did the job but didn't wow us. Certainly, a power outage in the middle of the afternoon didn't help. Overall, I highly recommend you visit this restaurant. You won't be disappointed, and make sure you bring cash just in case of a blackout. 😊
This restaurant is something different in the culinary world of Oaxaca, and you can feel it as soon as you walk in. The food is great, with elaborate and profound tastes. Their dishes are surprising, which make this place stand out above other more standard restaurants. The serving is also very beautiful and meticulously thought of. They have a great variety of vegetarian and vegan dishes. Service is terrific, very attentive, waiters are very professional and ask about allergies and special requests regarding ingredients. Oaxaca has great street and market food, but in the restaurant category this was our best experience.
Levadure de Olla 1 Michelin star so big expectations and high hopes! The entrances to the restaurant was decorated with old school cooking methods, corn, cacao, and various things that are found in Oaxaca cuisine. Excellent start. They have a beautiful table of endless variants of tomatoes, absolutely breath taking! When seated you’re started off with some tostada which was the best one we’ve eaten so far! And some delicious in house salsa Roja. Excellent snack! I personally came here for the famous tomato dish. (Jitomates nativos Oaxaquenõs, pure de betabel y vinagreta de frutas) And for the first time ever in all My reviews this is the first 10/10 dish. Beautiful presented, acidic, sweet, savoury. I couldn’t stop eating I almost ordered a second plate. The beetroot puree stunning and paired perfect with the variety of tomatoes. Some tasted like fruits, some were more ok the umami side, some gave different textures. I’m gonna think about this plate for a long time… wow We also got the Tamale ( Tamal de requesón) 9.1/10 Once again everything on the plate played a part and paired perfectly! Very thoughtful and showing oaxacas mole in a delicate way! Visually stunning as well. Huge recommend, and not unreasonably priced.
The food and especially the service was outstanding. We actually felt like someone was hosting us at his/her home and not like a random guest at a restaurant. We received explanations to all dishes and never packed anything. Also the Ambiente is very nice due to the patio. Would definitely come back when visiting Oaxaca again.

We ordered the Tamal de Requesón with Flor de Calabaza (squash blossoms), Tamal de Gueza with beans, Mole Amarillo de Chilhuacle, the Oaxacan Tomato Salad on a bed of beetroot purée, Tepache de Piña y Guayaba, and Café de Olla. The Tamal de Requesón was fluffy and very tasty. It was served with two great moles (Negro and Coloradito). However, I wish they served more mole, as the tamal absorbed the sauce quickly and the dish dried out. The presentation of the dish with the squash blossoms was very aesthetic. Unfortunately, after a few bites, I found a small live worm in one of the blossoms. The waiter immediately replaced the dish and removed it from the check, which I appreciated. However, one staff member repeatedly said it wasn’t a big deal because the worms are edible and the flowers are organic. While that may be true, I don’t eat worms and didn’t expect them in my dish. The handling of the situation left a slightly bad impression as it felt like the waiter was being dismissive. Other than that, the service was pretty good. The Mole Amarillo was excellent; rich, flavorful, and comforting. The sautéed cheese “steak” elevated the dish, and the chayote paired beautifully, making it hearty and satisfying. It almost tasted like a curry. The Tamal de Gueza was very disappointing. The thick, gooey bean sauce didn’t properly hydrate the dry tamal pieces, and the dish tasted bland and uninspired. The standout was the Oaxacan Tomato Salad. The vinaigrette, variety of tomatoes, and beetroot purée worked beautifully together. It may sound simple, but it’s a must-try. That said, I wish there had been more beetroot purée, and I could’ve done without the Roma tomatoes, which weren’t as flavorful as the others. They also served free salsa and tortilla chips. The latter were quite unique as they were lighter than most tortilla chips (which I really liked) and the salsa was also really good. The tepache drinks were underwhelming, as the fermentation was barely noticeable. The Café de Olla, however, was good, and I appreciated that it was prepared in traditional clay pots. I loved the rustic interior and the unique ambiance!
I was sooo excited to come here, especially after seeing that they have so many vegan options. Unfortunately, other than the Oaxaca native tomato dish (which was delicious and very creative), my husband and I found the rest quite bland. We also ordered the Native squash dish where you essentially made your own taco. I found it strange to have to cut the squash and build the taco ourselves and it felt the dish needed more texture as it was all soft. The tamales also tasted undersalted and dry. We asked for extra of the beans which they did kindly give us, but it felt like a big ask. They gave us complimentary nachos and salsa at the beginning, so we kept asking for more salsa to add to the other dishes. I don’t usually leave negative reviews but for a Michelins star place I expected far more flavour and I felt the reviews (even when filtered to those who ordered vegan) were quite misleading. The waiter was friendly and recommend dishes. The service was fine but quite slow and we had to ask for more water three times. Ultimately, I wouldn’t recommend this restaurant if a friend were visiting Oaxaca.
Poor experience. Michelin guide seems like a scam… In short, the menu had an overall boring flavor. Some dishes were better than others but it didn’t feel like a special experience whatsoever. The restaurant itself doesn’t have an upscale vibe/ look. It’s very clean and down to earth, which is fine to me and should probably represent the Oaxacan lifestyle, however some kind of colour or ambient, would’ve been nice. Especially after seeing very boutique like restaurants in the city. The menu is not the most expensive one but still doesn’t feel like a Michelin star, whatsoever. I was very disappointed incl. my friends.
En el bar que está en la primera planta te atienden de lo peor, la verdad tuvimos una pésima experiencia, al parecer por no ser extranjeros. Pedimos la primera cerveza y se tardaron mucho, después nos querían mover a otra mesa para que nos personas se sentarán dónde estábamos al final compartimos mesa. Pedimos la Segunda cerveza y jamás llegó mejor nos levantamos a pedir la cuenta y nos fuimos lo único bueno es el grupo que estaba ese día
El servicio fue pésimo el anfitrión me trato de muy mala forma , no recomendaría venir aquí hay más lugares y con mejor servicio. The personal was awful,the host treat us in a very bad way, it depends on the humor of the host I will not recommend this place there are better places with good attitude

We went there and first it was a positive view. Then we ended up paying the bill, which was not what we expected. They palm uff on our tequilla shots; they made us pay twice as much as their menu card said. We were very disappointed. I really don’t recommend this place.
