Even with a bustling crowd, Don Bolos squeezed us in at the bar for a delicious meal. The friendly service added to the charm of the restaurant's rustic ambiance. While they specialize in Mexican cuisine, I opted for a juicy Don Ribeye Burger that hit the spot, and my wife raved about the Ceviche Tatemado. Overall, a great experience!

We had the most amazing dinner tonight at @donboloss . Hanging out with friends or date night. You must try. [Edit] had brunch today. It was amazing. Ashley was very attentive and did a great job. Brunch served on both Saturday and Sunday.

Remarkable, authentic Mexican, with superb fresh ingredients and a seasonally rotating menu. The owner/chef came out and described his concept for the menu, which is a representational tour of cuisine characteristic of the various regions of Mexico. Everything I had was so well executed and artfully presented (photographic evidence attached), and I must have eaten half the menu. I've had so many empanadas, but the Oaxaca Cheese Empanadas in homemade fried blue masa were so light and crispy and flaky, perfectly contrasted with the rich, gooey cheese and mushroom interior ... I've never had anything like them. The whole menu, though, is designed with that same grounded inventiveness and balance of flavors and textures. I sat at the bar, and Jenny and Luz were so friendly and helpful and attentive, I couldn't want for anything. I might not be able to make it back here again, but of all the restaurants near Odessa/Midland, this was worthy of being my one shot. Oh! For those who like to celebrate, you'll love what happens when a table orders the special flight or a birthday ... let me just say the pyrotechnics might not even be legal in my home state. ;)

My husband Decided to come here after grabbing a few groceries, and this place did not disappoint! The atmosphere was great, the food was delicious, and the service was fantastic! During our meal, my husband's blood pressure starting dropping, the staff was attentive and brought him a Gatorade(which has sodium) and later came back to make sure he was alright. Truly appreciate the staff for being thoughtful. A great staff makes a huge difference, and having delicious food is a plus! We will be back! P.S. try the cinnamon crunch French toast! 😋

I have been here a hand full of times now. Not gonna lie I am pretty signed that we have such a cool fresh place that feels out of place in odessa. Music plays at a perfect volume where you can both have a great conversation or enjoy the tunes. The staff is always friendly. I don't know what a 24 dollar burger taste like but this is a mighty tasty burger! My dates plate was actually the highlight of the night. She didn't know what to expect from a cold steak. Paired with and an exquisite sauce it was too die for! Will definitely be a return customer.

Service was great. It was our first time there and we weren’t sure what to order so the waitress offered to let us sample some stuff. You don’t get that type of service these days at restaurants. Ordered the chicken and carve asada tacos which were good along with the chips and guacamole. Not only was everything delicious but they don’t skip on the portion size. We paid $18 for guacamole and we definitely got our monies worth. We will be back! The only down side is the space is a little small. Other than that everything was great.

First time at this restaurant, the experince was fabulous with the exception that the desert took a very long time and then the chocolate cake was dry. Will definitely try this restaurant again, excited to try the rest of the menu.

The service was great, the food was really good. Don't care too much for the fried sushi which doesn't mention it anywhere on the menu. It's a bit pricey, but my argument is that it was only two of us & they charge us a gratuity fee which wasn't mentioned as well. So our waitress got $40 tip.

Don Bolos is a beautifully designed restaurant with a Tulum-inspired aesthetic that creates a pleasant and inviting atmosphere. The service was excellent—staff were attentive, friendly, and professional. Unfortunately, the food did not meet the same standard. The ribeye “chicharrón” was essentially just fried meat in oil, lacking both flavor and the expected crispiness. The coffee tasted old, which was disappointing, and the tres leches dessert was average at best. It’s a lovely spot to enjoy a drink or a relaxed ambiance, but the culinary experience could be significantly improved.

Pa Va

Atmosphere and service were right on, top notch. The food unfortunately had something left to be desired. The presentation of the food was very good, nice size platters and good size portions. However, the quality of cuts of meat were lower grade with thick gristle making it hard to chew. Perhaps it was an outlier or bad day. Maybe, the ambience and everything else lifted up my expectations with the food. I would be willing to try again but with lower expectations and perhaps an easier dish. Sometimes it’s better to have lower expectations and be pleasantly surprised than vice versa. I understand it’s a new establishment, I’m wishing them the best and hope they continue to grow and thrive.

We went last night and wasn’t impressed with the screaming child all night. My food was cold and my boyfriends was hot. Didn’t make sense. The waitress was super nice and so was the hostess. But I can’t recommend a place that’s so pricey that allows children to scream the whole Time! Also check food temps before bringing the food out.

Waited 25 min for nachos with canned cheese. We were the only people in the restaurant. The food was mid. 35$ for 3 sodas and poorly curated nachos is not great. The waitress was annoyed when we didn’t want to order food. We will not be back for the high end cost for the dollar tree experience.
