I visited Toluca, and based on recommendations, I went to this place to try the barbacoa, and what a BEAUTIFUL food, service, and quality they have! 😍 We tried the pancita (I call it menudo), the barbacoa, the barbacoa tacos, and the café de olla! I would definitely travel 5 hours again for a dish like that!!!! THANK YOU to Mr. Manolo and his family 🥰❤️, I'll be back soon!
It's located in the 16 de Septiembre market in Toluca. Saying it's the best of these dishes would be a fallacy. There are so many to try, so many styles. But it's definitely very good. I would describe it as a Toluca-style pancita. It's comparable to lamb pancita, which has a lot of epazote. It seems to me that this pancita has a guajillo chili from Chilaca, which makes it unique compared to other places. The use of this chili is very typical of the Toluca region in chorizo. This gives it a regional personality. It's worth trying as a worthy representative of Toluca pancita. Good service, the place is clean, I would only say that it needs some handmade tortillas and a marranadas sauce made with onion, serrano ham, charred tomato, and garlic. Pfff, it would be perfect.
Very rich and recommendable everything
The pancita was very delicious, although I give it three stars for service because the tortillas were lukewarm-cold, even though you have to pay for them separately, but the food was very tasty.

If it's been more than 25 years since my mother started taking me here to eat pancita, that's an understatement. It's truly delicious and incredibly tender. It has just the right amount of spice and is always delightful. Arriving early is a must because it's always packed. Highly recommended :)

The barbecue was delicious, definitely one of the best I've ever had. The tripe was also very tasty and a generous portion. The prices were reasonable, and we will definitely be back.

The pancita is good, the bread is charged separately. There are two sizes, small and large ($80). They also sell barbacoa tacos. Overall, it's good.

A very traditional place. People call them "Las Panceras" (The Panceras) of the market. They've been around for years, and the pancitas are exquisite.
A market-style pancita, nothing special, good flavor and good quantity, the bad thing is that they sell you the bread or tortillas separately
The food is very good, but I prefer sauce and the sauces are terrible, they taste like jam... Hahaha
Excellent food, I just wish they had more space. Sometimes they keep us waiting, and although it's not a long wait, it's uncomfortable for both the arriving and the already-stayed diners.
