Menù fisso con ottimi piatti, tutti curati e particolari con la tradizionale cucina piemontese rivista con originalità , carta dei vini completa e per tutte le tasche, ottima proposta di dolci. In 4 e con una bottiglia di buon dolcetto abbiamo speso 36 euro a testa, consigliato!

Google mi chiede se alla trattoria Salvetti sia cambiato qualcosa dall'ultima visita. Se è cambiato qualcosa è stato sicuramente in meglio. Sempre eccellente come trattoria di cucina tradizionale di Langa. Piatti della tradizione in una versione attualizzata che li rende ancora più apprezzati

I had lunch at Da Salvetti with a group of friends on a weekday. We chose the tasting menu, a small aperitif, four appetizers (veal with tuna sauce, Russian salad, creamed cod, and toma cheese with amaretto and warm syrup), two first courses (rosemary agnolotti and hazelnut tagliolini), one second course (roast or pork tenderloin), or cheeses, and dessert. We drank Barbera d'Alba. They also provided homemade digestifs. Everything was excellent, the service and location were attentive. We had a great time, highly recommended.

This trattoria was a real discovery. For a Saturday lunch, we chose the tasting menu. Two appetizers, two first courses, a second course, and a cheese selection, all of which were excellent. The portions weren't excessive, but just right to keep you from choking on the first course while still allowing you to leave the table feeling very full. The dishes arrived at a perfect pace; the wait wasn't interminable, but there was enough time to digest the previous course. The bread and breadsticks were also excellent. Another noteworthy feature was the absolutely excellent service: prompt, friendly, and without being intrusive. I also have some special dietary needs these days, which were accommodated immediately and without any problem, offering alternatives and precise reassurance and explanations before I could even ask. The price was perfectly in line with the offerings.

The many restaurants in the Langhe, Roero, and Monferrato regions always evoke emotions that remain indelible in the memories of food lovers. The Alta Langa, like Extremadura in Spain, add a unique poetic touch. Not only because of the raw materials that this challenging land provides sparingly, but I believe in restaurateurs and chefs like Clelia, who have passed down their expertise in historic establishments and have stoically resisted the whims of fashion and the difficulties of reaching them. Today, thanks to quality tourism and an awareness of the gastronomic culture that values authenticity, they are enjoying a wonderful moment. It's fantastic on a summer evening, driving along the hairpin bends and ridges that lead from Dogliani first to Belvedere and then to Murazzano, arriving at this corner of paradise. The beautiful stone-paved piazza, the well-kept old houses, and especially the Trattoria Salvetti, open your heart. The smiles they give you when welcoming you confirm that you made the right choice when booking. The restaurant has limited seating and is packed, and those who haven't made a reservation ahead of time won't find a seat. Homemade bread and breadsticks, a glass of Alta Langa to accompany a fantastic appetizer, while we await the beautiful array of dishes arriving from the kitchen. We chose a white wine from Roero and a fantastic Nebbiolo produced by the great Massimo Martinelli in the hermitage of Vicoforte. The traditional appetizers arrive, with that touch of lightness that great chefs know how to impart. Then the inevitable first courses, strictly homemade, tagliatelle flavored with lavender from nearby Sale Langhe (which has nothing to envy of the renowned Valensole plateau) and dreamy plin. We reluctantly forgo the second course, which we will try on our next visit, for a fantastic selection of local cheeses and a small lavender-infused dessert for those with a sweet tooth. Finally, the pleasure of being able to personally thank Clelia for this unforgettable experience, as we were describing in the car, carefully and cheerfully navigating the many hairpin bends on the way back.

I had dinner here with my boyfriend and we had a wonderful meal. We called at the last minute to check if they had seats, and they welcomed us, even though it was already past 9:00. The service was excellent and very fast (the waiter was extremely kind, helpful, and exuded a positive vibe), and the food was delicious. This place was a pleasant surprise.

Truly divine! The review in the Slow Food Guide (which is somewhat reductive) describes home-style cooking, with a fixed-price menu (excluding wines), good by the Langhe standards, albeit high. We found a much more refined offering, grounded in tradition and local produce (with some Ligurian inspiration, from cima to brandacujun, presented in local versions), enriched by unconventional innovation, a sensitive and delicate flair, and a mastery that reveals the sensitivity of a robust culinary culture. The initial offering of the local Moscato is accompanied by a sampling of local cured meats and warm "frisciulin" (fried bread rolls) filled with Murazzano toma cheese. The appetizers: stuffed saccoccia (like a cima) with a hard-boiled egg sauce, warm chicken salad (amazing), warm stockfish and potato tart on a chickpea cream (inspired by Ligurian brandacujun, but with a story all its own), Parmesan tart with artichokes, wrapped in a very thin, crispy pastry, accompanied by an artichoke and parmesan cream. The first courses: square ravioli (very small) with rosemary-flavored mountain butter, followed by tajarin (thin as capellini) with hazelnuts. The crescendo of courses reached its apotheosis with the ravioli, a rare example of harmony and elegance of flavors, both combined and distinct, the pasta and its Piedmontese meat filling, the scent of rosemary not browned in butter, which retained its fragrance. Unfortunately, I had to pass on the main courses to make room for dessert, while Diego chose the lemon rabbit with vegetables, which was equally delicious. A worthy conclusion was the delicate rum pudding and the house laurel digestif: another triumph of aromas! The restaurant is intimate and refined, the service is courteous and friendly, and the bill is very reasonable for the quality of the dinner (€68 for two). Chef Clelia is a true champion, possessing the wisdom of someone with solid roots and profound culture, which she expresses with talent and creativity, but without any concessions to passing trends. This should be noted, to fully understand the definition of "home cooking" as a high and not reductive value.

"trattoria" solo nel nome, in quanto è un ristorante di livello dove nulla è lasciato al caso, provato per il menù degustazione davvero soddisfacente, ottimo il "tonno di maiale" il vitello tonnato come una volta, i tagliolini al burro d'alpeggio con nocciole, ma soprattutto la selezione dei formaggi. buona la carta dei vini e il servizio

Ho bevuto del nebbiolo (del 2014) voto 9.Una cucina leggera di qualità superiore, le portate sono diverse dal solito rimanendo nella gastronomia piemontese. Bravissimi, anche nel servizio. 20/08/2017 Oggi 23 dicembre 2017 ho assaggiato il menù invernale veramente ottimo. 27/08/2018 come sempre la cuoca ha una professionalità notevole, bravissimi con la scelta dei produttori dei vini. A mio parere ho trovato una pecca, in quattro pranzi in un anno il menù dei secondi non è cambiato e in un locale che come prerogativa è la professionalità dovrebbe offrire qualcosa di diverso

Trascinato dall'entusiasmo della mia accompagnatrice, che era stata qui anni fa, trovandosi benissimo, abbiamo prenotato per un mercoledì sera di fine giugno, con la speranza di uscire soddisfatti e sazi. Non è stato così, purtroppo. 3 antipasti freddi e uno caldo, tagliolini al burro di alpeggio e lavanda, riso nero con fonduta di formaggi, scelta di secondi fra roastbeef, coniglio e ruota di formaggi. Buona l'insalata di bollito, anonimo tutto il resto. Ma, soprattutto, due primi senza un vero sugo piemontese, langarolo... Il burro di alpeggio non pervenuto... In poche parole una delusione, sotto tutti i punti di vista. Quando ci è stato chiesto: "Volete vino?". Abbiamo risposto "Sì, certo. Cosa avete?" "Due formati, 375 e 750". "Sì, ma di cosa?" "Barbera, dolcetto, nebbiolo..." Non un menù, non un prezzo, non una lista. Alla fine 83€ in due. Serata sbagliata, speriamo sia stato un caso ..
