Bbq is great we both had potatos and they were perfect bbq is a tiny bit spicy too which we loved. Will be going back again. We had the pulled pork potato and a chopped brisket.peach cobbler and banana pudding is a must have.
Great little Texas BBQ spot! Ribs, brisket, and chopped brisket were all legit, and the sides were tasty. Fast, very friendly service, and cozy little dining area. Also a very clean patio area with picnic tables and shade.
Overall, great spot with great BBQ. I am very biased as I love my “off the beaten path” BBQ spots! We had a large group and the Large Family Pack was good but we did end up needing a little extra. They said it could be for 8 people and we had 10 so we knew we were pushing it. We tried a large mix of brisket, chicken, ribs, regular sausage, and turkey. Everyone agreed that the meats were great! For the sides, we tried the green beans, okra, fries, mac-n-cheese, potato salad, and coleslaw. The group favorite were the green beans. I really liked the potato salad and fries too. For me, the mac-n-cheese was too soupy. Still good but probably not a side I would get again. If you choose to visit, I hope you enjoy!

Short report for those wondering: Positive atmosphere, lean brisket is not dry and pairs very well with their delicious bbq sauce, cobbler was yummy, Cole slaw and potato salad were good, clean place, friendly staff. Long version: Drove all the way from very south Austin with the dogs to enjoy some brisket. They have outdoor seating so we can sit and enjoy our meal with the pups. One of the staff came out and greeted the pups and gave them a treat 🥰 Thank you so much! I love that 🐾 When I went in to order she was so kind, the kind of person I could probably chat with about nothing for hours, not that she was chatty but that she connected with me and that’s amazing! She asked if I wanted ice cream with my cobbler and her face expression made my heart smile basically all it took was a face expression to say “girl, it is soooooo good with ice cream”” 😆 The cook asked me if I wanted it warmed up too, so much love into the cobbler 🥰 I ordered a lb of lean brisket so I can share with the pups. I have found some places lean brisket can be dry but they have mastered the balance, great job with the brisket! It fell apart nicely and pairs so well with the delicious bbq sauce. Now of course the cobbler was the first thing I ate, I should have got 2 because it was great but not really because then I would have been in food coma by the end of the meal. The Coleslaw and potato salad were your basic side, they were good. I ate em all up. When it comes to mac n cheese I have a high bar set and it’s very hard for me to love anyone’s mac n cheese, I was grateful tho that the noodles weren’t mushy. I’m so happy everything went well! The place was inviting, clean, friendly, and had positive vibes all around. I will for sure be back.
We drove out from west Georgetown. Enjoyed the food and atmosphere very much and without the lines of some in town places! Will be back! We had the brisket, ribs and turkey and all tasted great! The slaw is vinegar and not creamy which I preferred. Didn’t think to take pics of the food.
Exceptional barbeque, friendly and fast service and seating inside or out. My husband had the two meat plate with pinto beans, Mac and cheese, Jalapeno sausage and brisket. They asked how he wanted the brisket and I believe offered 4 different ways. I had the Baked potato with chopped beef and it was a nice size with plenty of toppings. Yummy and large enough to bring some home. Their barbeque sauce is flavorful and I heard later that you could ask for the hot version. We'll be back!
Everything about my stop today was great. The staff are very polite and responsive. The pork ribs are amazing and I had my food in seconds.
I am from Los Angeles, and a friend from New York were traveling through Texas and decided to stop by this place to have some pork ribs. Guys, I am telling you, these ribs the amazing!!! Also recommend some fried okra. This is a family owned place where we would definitely stop by next time we are in Texas!
I went to visit my daughter in her new hometown in Texas. They wanted to take me to eat at a local BBQ spot, not a chain restaurant. They did their research, talked with locals, and found this nice little place. It met all the Southern requirements of good BBQ: small location, individually owned, indoor and outdoor seating, cartoon pig on the wall, and great food. I tried the Baker with Meat. A baker is a gigantic potato filled with brisket, green onions, and cheese. It was delicious, filling, and made all my taste buds happy. I'm sad I only had enough room for the baker and none for the pie, they had a lot of great choices. When we go back again, I'll be heading to my new favorite spot.
The best breakfast tacos I have had. Chorizo / beans / bacon cheese on grilled tortilla!! Dipped in homemade hot sauce! Then I had the chopped baker with smoked jalapeño cheddar sausage! Lots of places offer loaded baked potatoes, but this by far is the best one! Homemade bbq sauce completes the baker!

Stopped by the first time today to eat here. I'm super picky about my BBQ and thought I would give it a shot. I'm so glad I did! That was one of the BEST brisket sandwiches I've ever had! The service was superb and super friendly!
The staff is super friendly and the food really good. We have the pork ribs and brisket. We'll definitely go back next time we're in town.
I must say their smoked turkeys where a win with the family. We bought two smoked turkeys for Thanksgiving, they were a big hit. Very good, moist, and tender. Looking forward to going back.

Excellent. Since the owner responded to my review personally ( which is great) I have to edit my review slightly. As a truck driver, I'm in all 48 Continental US states. I get around. There is nothing more inspiring than to see a small business do it right. No business is perfect. The staff is friendly, professional with some Texas charm and a sense of community. The place is clean. It's obvious this place is working their butts off to keep the lights on and serve their customers. And, the food is excellent. A breath of fresh air. I hope this business becomes a franchise so the rest of America can experience great food and customer service. Thank you.
I came in with my wife for a last minute order for my Christmas Eve dinner and as I walked in I saw how busy they were with a big line and didn’t think I’d get out fast but once I got to the register Carlos changed all of that for me and my wife. He was the most polite cashier and they way he gave direction to the other workers while they were slammed and not letting them get flustered was very impressive. He made sure everyone before me got their orders out fast and I was surprised with how smooth my ordering process was with him and how he made me and my wife feel comfortable the whole time we had to wait since there were a few big orders before us. . I had family come in last minute and needed to find something quick to feed them. Thank you Hill Country Smokehouse for being open and providing great BBQ for my family’s Christmas Eve dinner. I will be back again, definitely!

Brisket was lean and moist. Thought it was good. Small little place very nice clean friendly service We would for sure come back here (Bertram) for bbq. Easy access beans were ok.
This place was really hyped up by my friend and I'm sad to say it was a disappointing experience. The restaurant itself is really charming with that local smokehouse decor we know and love in Texas. The staff is very friendly and the guy ringing us up was very patient with our indecisiveness. We really appreciated that. However, the brisket was extremely dry. The ribs were dry and a bit hard as well. Not falling off the bone like I would expect. The mac n'cheese was pretty lackluster. It tasted like it was from a box. Now I must say - the fried okra was awesome. Made fresh and tasted great. Green beans were fresh as well. Kudos there. I'm hoping we just came on a bad week and got unlucky. Thanks for the good service though. If I come again and it's as good as my friend said it usually is, I'll happily change my review. Also, there's a lot of styrofoam and plastic in use. Please use real cups and plates! It's better for the environment.

Brisket didn't have hardly any seasoning but it was tender n then told d server 3 times to put sauce on d sandwich, then I get down d road n guess what no sauce
I've tried this place several times and they clearly don't understand the point from the flat on a brisket. I've ordered moist brisket from the point several times at this place and I end up getting dried out jerky from the flat. Never again will I go here for BBQ.
