Fajita Republic is our favorite place to go in puerto Vallarta for food! The staff remembers our names and is always quick to give hugs when they spot us walking by. The food is fantastic and we are always treated so friendly. As a whole the staff makes your entire experience a fun time with jokes, fun dancing and just a good uplifting time! They are very easy to find as they are right on the Main Street of Zona Romantica! Highly recommend! One of my favorite entrees is the Chimichanga and it’s big so definitely enough to bring some home as well!

This place is incredibly chill. We grabbed seats at the bar, and Santiago instantly turned a good night into a great one. The pork shank was outstanding, served on a flaming plate that made the whole bar stop and stare. The shrimp tacos were unreal, easily, according to my wife, ‘the best tacos I’ve ever had.’ Both the ginger margarita and the passionfruit margarita were fresh, bright, and exactly what you want on a warm PV night. Put this spot on your must-visit list when you’re in Puerto Vallarta.

We had a great time at Fajita Republic in PV! The service was excellent — the servers were friendly, attentive, and really made the experience. Highly recommend the queso fundido as an appetizer; it was delicious. The only issue was with the manager. While he was nice enough, he made a few unpleasant faces when we asked about a cash-pay discount, and he clearly didn’t seem happy when we said we were just ordering drinks and appetizers instead of full entrées. Despite that, we enjoyed three appetizers and more than six drinks, and the rest of the staff was fantastic. Overall, a good spot with great servers and solid food.

The Repuplic makes you feel like you are family! Santiago was spectacular. He went above and beyond as a waiter and bartender. The food is fresh and tasty and always on point. Try the fajitas. They are amazing! The bar is fun and the atmosphere is excellent. The crew always look clean and have the coolest matching shirts. You can tell this place loves their employees as is really shows. The service and food is so on point! Everyday walking back to our place we were greeted with high fives which made us very happy! The margaritas are massive and delicious, some of the BEST in Puerto Vallarta. I highly recommend the spicy margarita. The corn kernels as an appetizer were so good! Perfect spice and chips. I had the surf and turf, which featured a mouthwatering garlic sauce and a tender juicy steak cooked to perfection. My companion had the shrimp, fish, and sausage fajitas which were perfect! To top off the experience we had the churros with ice cream! I'm not usually tempted by churros but these were fabulous! I can't recommend this place enough for food,service, and drinks!

On my very first trip to Puerto Vallarta, I found myself wandering the charming cobblestone streets of Zona Romántica when I unexpectedly stumbled upon Republic. From the moment I walked up, the warmth of the staff made me feel like I was being welcomed home. I wasn’t pushed into ordering anything specific, nor did I feel rushed—just genuine care that I had a wonderful meal. Little did the team know that the friends I was visiting were already loyal customers, yet the kindness and hospitality they showed me—just a stranger off the street—was exactly the same. That speaks volumes. The food? Absolutely delicious. Beautifully presented and full of flavor. From the crispy, golden fries to the sizzling fajitas and all the scrumptious bites in between, every dish was a hit. The drinks were generous, refreshing, and a little too easy to keep ordering! A special shoutout to Fernando, Jorge, and Andrea—thank you for making my first dining experience in Puerto Vallarta so memorable. Republic is an absolute must-stop for anyone visiting Vallarta. I’ll be back again and again.

We were created by a very friendly server who provided excellent service. Had several people check on us throughout the meal. Food was the best we've had in Mexico. I had the shrimp cheese tacos and a potato cheese chicken dish. Both were amazing if you are on a diet I don't recommend cuz we kept eating long after we were full.

This is a fun place! The staff is a great group, just a lot of the right culture and personality here! A meal included some free sides and condiments that were great. A spicy ginger margarita, yum! Mahi Mahi fajitas were delivered in a show and pretty good. I can recommend a creole or blackened seasoning to add some spice to the fajitas.

I have been coming to Puerto Vallarta for over 10 years, own a vacation home here and I know the restaurants here and many are very good. I usually eat local types of foods but often crave Canadian style as well. I randomly stopped in this restaurant three years ago maybe four and I was so impressed with not only the food but the service. It was absolutely stand out and I’ve stopped numerous times since, including bringing along family and everyone asked to go back. I find myself this year on a very short for myself two week trip here and it’s my sixth time here. The staff are absolutely friendly, playful, accommodating. I couldn’t really ask for more and the food is always spot on! Never once have I been served something that wasn’t. Besides the food being great, the pricing is great too, but right from my very first time here I noticed and was accommodated in ways. Many restaurants don’t do. For example, was here with my mom and she loves dogs and seen a dog sitting somewhere else and they have to be in that spot and so the waiter just casually said come on. I’ll move you over there. They recommend great things and I think Jorge is the head waiter or a boss but man does that guy keep things rolling for everyone! To say highly recommend seems average. There’s something here for everyone and the staff are unreal. Go and try it.

Fuimos a este lugar para cenar, es familiar y el ambiente es muy agradable. Pedimos diferentes platillos para compartir, pero el que más me gustó fue el de costillas bbq, las recomiendo mucho. Las porciones son suficientes y la relación con el precio es muy justa. El servicio fue excelente y las personas son altamente atentas. Lo único que no nos convenció fue la poca iluminación del lugar y que el volumen de la música era alto, por lo que la comunicación se complica un poco. Muy recomendado.

La comida es buena, aunque no espectacular, y no es carísima, sobre todo considerando su ubicación. El servicio es bueno y parecían alegres y enérgicos. Los vendedores se acercan si te sientas afuera, lo cual es un poco molesto, pero bien. Además, está al lado de una calle con tráfico, lo que puede ser molesto. En general, estuvo bien y lo recomiendo. Ideal para quienes no son mexicanos. Food is good, although not amazing, and not terribly expensive especially considering where it is. Service is good and seemed happy and energetic. Vendors will approach you if sitting outside which is a bit annoying but fine. Also beside a somewhat busy road which can be disruptive. Overall it was good and I would recommend. Good for non Mexicans.

Fajita Republic is now known simply as Republic. We've been coming here for years now. ATMOSPHERE: This is a very cool looking restaurant that would fit right in, in any major US city. Dim lighting, funky & cool beehive-shaped sconce lighting abound with a mix of industrial decor, medium height table tops, a small bar, and huge, sea glass buoy-looking lights smack dab in the center of the restaurant above a multi-seater round. Gorgeous! MENU: Traditional Mexican with American influence. I'd usually take pics of the menu, but the paper was so big and the lighting dim, so it wouldn't have worked. If I pass by again, I'll try to snap a pic of the sidewalk menu. FOOD: The house "bread" were 2 cucumber spears and 2 radish sticks sprinkled with a reddish salt. Nachos No, it's not the expected mound of chips with the usual toppings. These were 12 individually topped chips, with thick layers of refried beans and gooey cheese, no meat, surrounding a pool of sour cream, a damn delicious homemade guacamole, and scoop of fresh pico. Great for 4 to share. Highly recommended! Guacamole & Chips The most delicious guacamole I've ever tasted, lives here. Fresh, smooth, creamy. It's served in a huge paddle-like wood spoon over a romaine leaf. Oddly, the app comes with only 6 tortilla chips. Just ask for more, and they'll bring out a huge paper cone of the goods. Another highly recommended dish! Beer Shrimp 12 big pieces of succulent shrimp were perfectly deep fried in a super tasty and savory beer batter that really didn't need any dipping sauces. But, it did come with ramakens of chili mayo, plain mayo, and cocktail sauce. The center of the plate featured half of a baked potato skin with a thick layer of cheese, possibly a mix of cheddar and havarti. Highly recommended. Fajita Presidente The fajita dishes are literally set on fire in the middle of the restaurant on a tray rest. The plate comes to your table mildly sizzling. This version featured tasty slices of chorizo sausages and tender steak, with lots of white onion slices. The tortilla shells were soft and nicely toasted with a few visually appealing and palate pleasing burn marks. Yup, highly recommended. Queso Fundido I was expecting a pot of liquidized cheese but the Gouda was simply melted in a skillet and came with flour tortillas & pico. Very good. Steak Bandera The angus steak was insanely tender and flavorful and topped with melted cheese, with sides of Mexican rice, guac, and refried beans. Really a tortilla-less fajita dish. I loved it. Fish Oaxaca The melt-in-your-mouth fish was very, very moist and almost too flakey, but I loved it. It was sautéed with shrimp and onions in a deliciously buttery Sherry-like sauce then possibly steamed. My only gripe is that it was served atop a piece of tin foil which as you know doesn't work well with a metal fork coming into contact with it. Instead of trying to preserve my dish right side up, I just dumped it upside down on my plate in order to not have metallic forkfuls of food. The portion was a bit small but so was the price. Highly recommended. Fish Bandera Good overall flavor with tasty shrimp but an overload of cheese on top of the fish. SERVICE: Everyone was friendly and professional. They checked on us often and kept neighboring tables spic and span. OVERALL: Beautiful ambiance, great food & service, nice menu, fair pricing. Yes!

Excellent location and atmosphere, especially if you like to watch people walk by when sitting on the outdoor patio. The food was disappointed. For three people, we had the fajitas. One chicken and one steak and we shared. We expected an experience out of this world like we had experienced a few years ago when I was undercover with my children. It was quite a show from the staff in 2023. This year they seemed 🥱 bored! The skillet was not hot. I believe the food was all pre-cooked and when they brought it 20 feet away from the table, they poured some tequila and heated the skillet! The food was still cold and dry, and the toppings were very minimum. Ok fajitas but not hot.🔥. After we expressed our experience with a different waiter named Fernando, we noticed the change for the other guests sitting in the restaurant and it seems they made changes on the go for a better experience for everybody else. Skillets came out steaming as you could see the smoke from the hot dish. But why do they rush and why did we not get the same experience. So many place here in PV that serve fajita’s that we probably will not return as they are only looking to flip tables. Expensive, 2 fajitas and 2 drinks at $1050 pesos, over priced for the quality.
