As a foodie and world traveler, what immediately stood out was the warmth of the welcome. A wonderful hostess truly sets the tone, and here, hospitality feels intentional and genuine an essential part of the experience, not an afterthought. The cocktails were playful yet thoughtful, each one reflecting a clear narrative. I deeply appreciated the intention behind them; try the milk punch as a welcome drink! That same storytelling carried through the menu, where the local terroir shines with clarity and confidence. The journey of dishes felt grounded in Baja’s identity. The local fish and clams ingredients rarely exported were a highlight, offering flavors that can only be understood in their place of origin. Diego has a special gift for complementing ingredients without overworking them. Every plate invites you to slow down and truly savor, even the vegetables, which are treated with the same reverence as the proteins. A standout for me was the white tuna with white coriander delicate, expressive, and beautifully composed. And then there is the setting: sweeping views that make time feel suspended. I highly recommend arriving around sunset even if it feels early because the light transforms the experience into something quietly unforgettable. This is cuisine that asks you to pay attention, to taste with curiosity, and to connect with the land. Gracias! Will be back

The place is magical, both for the views and the delicious food. The four-course tasting menu we tried was incredibly complete! The dishes were very generously portioned, and each one had a unique flavor. The chef goes out of his way to ensure you have the best experience, taking into account any food intolerances or dietary restrictions. Definitely a place worth visiting and enjoying.
For me, Diego Hernandez offers the best culinary experience in Valle de Guadalupe in 2025. The tasting menu is crafted with care, using excellent ingredients and demonstrating great discernment. The wine pairings are perfect, without being over the top. It's worth going now, while it still feels intimate and authentic.
An absolutely wonderful experience. My wife and I have been visiting Valle de Guadalupe for 21 years and this ranks among the best meals we’ve ever had in El Valle. We dined at the chef’s table and I would highly recommend it. More so than “precision”, the professional staff of the kitchen operated gracefully. The sequencing and timing of our courses was perfect. Brian was an amazing guide throughout the experience, and his wine recommendations were particularly spot on. Ingredients were beyond fresh, visually stunning, and immensely flavorful. This operation is slightly under the radar as compared to some other destinations in the valley, but won’t be for long. It’s quite possible that this will become the premier dining location in the valley.
The culinary experience, featuring top-quality ingredients and excellent service, is unparalleled. A beautiful, spacious place, perfect if you want attentive and personalized service. The dishes are delicious; I highly recommend the hiramasa ceviche, the beets with lamb, and the ribeye steak—it's absolutely divine! The freshly baked sourdough bread is simply sublime. A highly recommended option for a memorable evening. Hooray for Chef Diego HB for his initiative!
Diego is already well-known for creating impeccable experiences and unforgettable dishes, but I was excited to hear he'd opened a new restaurant that was entirely himself. The inspiration for the aesthetic, I'm told, came from the white linen establishments he'd frequented as a child...places that he considered to be of the highest echelon in dining, and ultimately what drove him to become a chef. And years of creating and learning in different kitchens, which varied from luxury to after-hours haunts, show in the cooking itself. The tasting menu is refreshed daily, with Diego masterminding every new dish and executing each with an elite staff in the open kitchen. Speaking of, the entire team on the floor also offers a well-rounded experience to guests, attending to their every need attentively and with a natural informality that makes you feel at home rather than somewhere stuffy, uptight, which can generally be associated with this sort of quality. Lastly, I've learned that every one of those plates served at your meal has a backstory which Diego imagined up not as much for the guest to hear but to experience through every sense: tasting, seeing, smelling, feeling, and, at times, hearing. Perhaps I'm biased because he is a friend (of many, not just mine). But had we not been acquainted, I would no doubt feel the same about my dinner. From flash-fried beet & greens to "chocolate" clams drenched in cheese to an ice cream tart draped in a strawberry gelatin sheet covered in edible flowers. All paired well with wines selected by their sommelier. Well done. Looking forward to another opportunity to travel through the Valle and eat at DH Restaurant.

From the moment we arrived, we were enveloped in a unique atmosphere, a perfect blend of rustic elegance and a deep respect for the natural surroundings of the Valle. The restaurant's design, harmoniously integrated with the garden from which many of its ingredients originate, creates an intimate and authentic environment, ideal for a romantic dinner. Every dish we tried was a work of art, a celebration of Baja's fresh produce. The tasting menu took us on a journey of creative flavors, surprising textures, and impeccable presentations. Chef Diego Hernández's passion and mastery were evident in every bite, highlighting the quality of local ingredients with innovative techniques. The wine pairing, carefully selected by the sommelier and co-owner, further elevated the experience, introducing us to a jewel of the region's wines. What a breath of fresh air to witness the triumphent return of this titan of a chef to The Valle. His newest iteration, Diego-hernandez meets if not exceeds the storied Corazon de Tierra. We thouroughly enjoyed our experience. The dishes were ingeniously created in a manner to satisfy yet amaze with artistic brilliance. Service was executed flawlessly with graciousness and professionalism. Located in the Museo De Vinos, the interior boasts rugged stone walls as magnificent vistas spill out onto the verdant vinyards. I can not wait for a return visit. Bravo Chef.
We happened to drive by on our way to Bruma. We were looking for some wine and maybe tacos. Instead we found a special place. The menu was so interesting and the service was impeccable. Highly recommend!
It was a surprise that our dinner reservation was on the 2nd official evening of opening to the public. This after a couple weeks of trial menus. The Museo del Vinicula houses the restaurant with a panoramic view of the Valle de Guadalupe. The well designed interior compliments the multiple course offerings. George graciously and capably accommodated non-alcohol pairing with the courses. The service was good, but overshadowed by the imagination of Diego Hernandez excellent menu preparations. Each course was a unique surprise. The serving sizes were just right. Cost pp was between $ 100-200 USD. Next time, we will bring a party enough to enjoy the ‘Chef’s Table, if we can wait that long for a reservation. Can not wait for a second visit. Thank you Diego, Family & Staff
Fine dining finally at Valle de Guadalupe! what sets Diego Hernandez restaurant apart from all others in Valle, is the fine dining experience. The restaurant has all the amenities of a fine dining restaurant without losing the Valle feeling, surrounded by beautiful vineyards the views are majestic, sunset time is breathtaking, Instagram worthy! Ambience is sophisticated, but very welcoming, staff is extremely attentive and friendly. Definitely a high-end place well-worth the money. Diego's cuisine is innovative and delicious with high quality ingredients, it's a gourmet experience. The presentation of the dishes is impeccable and beautiful (Instagram worthy content). I don't drink alcohol but the mocktails were delicious and beautifully presented, you don't need to be a wine lover to truly enjoy the experience, there is so much more than just wine in Valle. Valle is one of those places where you disconnect from hectic life and reconnect with nature and oneself.
Dining at DH Restaurant was a delightful experience from start to finish. We enjoy everything about our visit, the dishes were beautifully presented, the staff attentive and the ambiance was perfect (we where sitting at the chef’s counter witch was a plus). This restaurant is a MUST if you plan to visit Valle de Guadalupe.
Chef Diego Hernández is one of the legends in the valle. The cuisine and concept of this restaurant are exceptional. Look for many more great reviews to come and I am lucky to have been one of the first people to try it
Beautiful setting with solid service, though the Valentine’s menu felt overpriced for the experience. The meat and garden salad were highlights, but the overall flavor profile leaned too sugary for my taste. Our visit coincided with a special Valentine’s Day menu, which might not reflect the restaurant's everyday standard, but it left us with mixed feelings. On the positive side, the meat was delicious and the garden salad was incredibly fresh—even with a "tiny friend" found among the edible flowers, which we didn't mind given the farm-to-table nature. The drinks were tasty and the variety was appreciated. However, the specific flavor profile of this menu relied too heavily on sugar, which wasn't quite to my liking. While the service was good, the experience was dampened by a mandatory service charge included in the bill; I personally prefer having the autonomy to decide the tip based on the service received. While the location is stunning, the high price tag didn't fully align with the culinary execution this time around. I'd be willing to return, but next time I'll definitely opt for the Chef’s Menu instead.
Pretty expensive for what it is. Very interesting and tasty food options on the 10 course tasting menu we tried. Creative dishes that were pretty impressive but some were not that great. Maybe 5/10 dishes truly impressed, including the cheese foam, buckwheat, and a vegetable platter Very slow pacing for courses, we got seated at 6pm and left about 4 hours later at 10pm. The service is great and the hostess is very knowledgeable, fluent in English and hospitable. The restaurant setup and placement is a bit odd on the corner of a museum. We dined at night so maybe during the day the view of the wine valley is more compelling.
