You have got to eat here when in downtown Hillsborough ,NC. The people the food the atmosphere and the drinks top notch. Definitely will be back to try something else. I had the taco salad and my spouse had the steak fajita s. I was kinda thinking I would get the same Ole food but not here. Totally different from other Hispanic restaurants. Hope you enjoyed your dinner as much as I did.
We love the interior decoration and style. Birria tacos and guac were super fresh and delicious. My son loved the chicken taco with rice and dessert Flan. Service was very fast and clean, and the place was kid-friendly. I also saw a local sheriff dining there, which is a good sign. I'm glad we took a ride from Chapel Hill to try something else.
Your restaurant was a lovely, welcoming, bright respite in between errands this afternoon. Thank you for having gluten-free and dairy-free options that are simple and delicious. I enjoyed your salsa and chips and the grilled fish tacos on corn tortillas. The renovated interior is very nice; clean and bright. The service was thoughtful and expedient.
The food was amazing. There was plenty of space and the servers were nice.
We had the Enchilada Verde and Steak Fajita Bowl. Both were delicious. This was our first time visiting, and we will be back.

I just tried this restaurant for the first time got the chicken fajita with salad and both were excellent especially the hot sauce which is made in house not too hot but excellent flavor!

I went when they were not busy so the service was great! I was seated right away because there was no wait. I checked to see if they had low carb options and they do. Pictured is the chicken fajita bowl. It wasn't too spicy for me and I can't take the spicy stuff! The waiter was friendly and checked on me a few times. The only thing needed is a way to "drown out" conversations around you. Since there was no crowd, the conversations seemed to echo.

Colorado Burrito is our favorite local for Mexican food. The food is always fresh and yummy. We haven't had anything we didn't like! I love their grilled chicken - the spice seasoning is so good - rich/fresh/not spicy. My husband is a huge fan of their burritos - the TriColor Burrito is a great mix of flavors and the presentation is always great - and it it HUGE - it doesn't come with sides...and you don't need them! :-) A recent discovery is their Bean Dip starter - it is some fantastic refried beans with layer of queso on top! Fantastic! The service is quiet - they don't chat much - which is fine - they are speedy and attentive. The restaurant is clean - the lights in the dining room are quite bright - so if you are looking for a lil chill time with your partner, request a table in the bar area.
So here's the scoop: A friend and I visited the Hillsborough Riverwalk and decided to grab lunch afterward. The options seemed slim, so we decided to give Colorado Burrito a try. As visitors from Raleigh, we didn't expect anything fancy, but that would soon be our biggest mistake. Colorado Burrito, BLEW US AWAY!!! The host was very kind, and the establishment was absolutely adorable! The decor is fun and beautiful, and the natural sunlight from the big windows was giving all that it needed to give! We were served tortilla chips and delicious salsa immediately after sitting down, and our drinks came soon after. I asked if they served Birria tacos since I didn't see them on the menu. Our waitress told me she would need to ask the kitchen staff and returned promptly with a 'yes'! We had just enough time to finish our first big basket of chips and salsa when our meals came to the table. My immediate reaction after just seeing my plate was borderline emotional. Yall.... this food looked like it jumped right off of a magazine😭 and it smelled just as delicious. After the first bite of my tacos, I literally JUMPED UP and did a praise dance!!! It was my first time trying Birria from a restaurant and could easily tell that recipe came from someone's grandma! I was making such a big fuss about my plate that my homegirl tried it for herself and she pretty much didn't want was on her own plate after the first bite lol Every single bite of that food was outrageously delicious! When the waitress came back to check on us, yall, I literally got up and HUGGED HER! And told her to send that hug to the cooks in the back! CUZZZ HONEYYYY!!! That food sent me into worship!!! To the staff at this incredible establishment, I applaud every single one of you. From the service to the food to the atmosphere, 10/10! This has officially become THE STAPLE restaurant for TACOS in our lives and hopefully many others in the future!
I have been eating Colorado Burrito since Jesus first opened the location behind Waffle House (was closed due to the area being bought out). After he moved the location to mebane on 70 I began driving there every week just to get their burritos. Can't say enough about the new location; It looks great and the food is awesome. Extremely excited for the new location.
If you happen upon this place, you must try the chimichanga. It is not your usual chimi. It has rice, beans, pico, chicken, and other stuff. It was so good, I ate way past being full, just because I couldn't stop! The staff was very accommodating also. Five stars!
Sorry to start off with kids fare but the ACP for the kids is always a hit! Good food, good service, convenient location! We always love coming here and have not have disappointed!

My mother claims this place has the BEST Taco Salad in town! The kind waitress is sweet and gives excellent service, the food is fresh and hot, and prices are reasonable. Decor is colorful Mexican decor. Give it a try; you’ll be glad you did!
We’ve only been once but we’ll definitely be going back! There were 6 of us eating and everyone was happy with their food. The atmosphere was great too - cute Mexican place that was quiet and comfortable. Highly recommend!
Looking for a Monday spot? Say less. I was traveling and (desperately) needed a pick-me-up, and when I tell you everything - everything was closed but Colorado Burrito was my light of hope… The soup? Wow. The grown-folks cocktails? On point. We were the only people in the place, which made it feel like our own private gem. Honestly, this spot deserves to be packed every night of the week. Sadly, big back - me - didn’t take pictures, so go for yourself.

¿Buscando un sitio para un lunes? ¡Dicho y hecho! Estaba de viaje y necesitaba (desesperadamente) algo que me animara, y cuando te digo que todo estaba cerrado, Colorado Burrito fue mi salvación… ¿La sopa? ¡Impresionante! ¿Los cócteles para adultos? ¡Perfectos! Éramos los únicos clientes, lo que lo convirtió en un lugar muy especial. La verdad es que este sitio debería estar lleno todas las noches. Por desgracia, no saqué fotos, así que ve y compruébalo tú mismo.
Nos encanta la decoración y el estilo del interior. Los tacos de birria y guacamole estaban súper frescos y deliciosos. A mi hijo le encantó el taco de pollo con arroz y el flan de postre. El servicio fue muy rápido y limpio, y el lugar era ideal para niños. También vi a un sheriff local cenando allí, lo cual es buena señal. Me alegro de que hayamos viajado desde Chapel Hill para probar algo diferente.
Stopped here for lunch and placed a to go order, put food came quickly and was plenty hot even after we got home. The food was great and the portions were definitely what I expect from a Mexican restaurant! I was a little surprised at the prices though. It seemed expensive for what we got

The food was good but it took a long time to get it. There was only one other table of people in the restaurant so it wasn't because they were really busy.
A returning Hillsborough establishment. Standard tex mex fare, with good, friendly service. Maybe a buck or two more than you'd expect, but hey, it's downtown. What sets it apart is that it's open on Mondays and Tuesdays when basically nothing else is.

I love the decor. Very friendly staff. The kitchen fixed an adult order instead of kids' chicken tacos,but they apologized and only charged for the child's plate. The salsa could use a little more spice it was bland,but my grandchildren loved that it wasn't spicy. Overall, it's a good choice.
Really enjoyed the food here... The atmosphere is much more authentic and enjoyable than the old location. My only complaint is that we felt very rushed, and because we came in only forty minutes before they closed, there were at least 3 things they couldn't give us. I feel like they should provide their menu items a little closer to closing time or close earlier.

This restaurant moved into the site of a former Mexican restaurant- the problem being that it's been at least 5 years since The Colorado Burrito bought this space and I believe a few years prior that the old restaurant closed. The decor/ decorations though, have not changed, which raises questions about what else has not been changed since the restaurant reopened. The food is okay- it wasn't to my taste, a bit flavorless, and I felt the portions were small but other people may really enjoy the taste. There isn't a lot of close parking, so do plan to make a short walk to the restaurant.
Ate here tonight for the first time. Burrito was very good. Salsa was extremely watery. Had a good flavor but no substance to it. I want salsa that has some substance to it.
Everyone there was very nice and kind. The food was okay but very expensive considering portions. Queso was meh guacamole good and torta was also good.
Not my favorite Mexican place. Food is kinda bland. You are brought salsa and chips upon arrival and with some orders, you get more chips. That doesn't make sense. Alcohol is not available.

4 of us passed by for dinner on Friday night. The place was extremely quiet at 7pm, but there was lovely service from the waitress. We had a range of dishes, and found them all to be ok although big portions! Nothing special, I'd recommend other Mexican places over this one, but it is fine.
Average looking Mexican food joint. Nice enough bar staff. Very average food (there were three of us and everybody's food was just ok). Not seasoned enough. Not hot enough. Chips weren't fresh. Salsa wasn't in any way interesting or spicy. Bottled beer was almost warm. Most likely won't be back.
My husband and I have tried this place twice now and we will not be back again. The food always seems to come out cold and the service is slow. The second time we went, both the salsa and the queso dip were severely watered down. Now whenever we want Mexican food in Hillsborough, we just go to Pueblo Viejo. So much better!
The service was slow. My kids were naughty. The chips were thin and crispy and awesome. The queso was better than average. I ordered chicken enchiladas verdes (with green sauce) and I was able to eat it all. It helps that I was hungry. I'm sure that the salsa recipe could not possibly be that bad. More likely, someone didn't feel like following the recipe that day and just threw some tomatoes in a bucket. They charged me $8 for each of my kids for a little bit of hamburger meat in a single tortilla. My kids don't eat interesting tacos with lettuce and cheese. Just a bit of hamburger. And some ketchup. I wasn't expecting to pay $16 for that. Then I asked for two orders of the "salad" that comes with the lunch entrees, it's just a bit of lettuce with some sour cream and Pico. I ordered it without the Pico so it was just shredded lettuce with sour cream in a 4 oz cup. That cost me $4 each. Paying $24 for less than $1 worth of kid food guarantees that you won't catch me in there until it changes ownership again.
The reason I gave 3 stars is because of the 4% surcharge for credit card use. The average processing fee is 1 - 3.5%. I may return only if the surcharge is reasonable.
This place was hyped up to me and honestly I know a truck in town does a better burrito for a sit down restaurant it needs updates to the menu and the facility

Stopped by here on Saturday for a quick lunch..won't be making that mistake again. The cheese dip was basically water. We ordered a lunch size taco salad, taco bowl,ACP kids meal. 3 drinks 1 beer. Food took 30 minutes to arrive it was okay nothing special or great. When we ordered we were asked if we wanted shredded chicken or grilled..we said grilled asked if I wanted sour cream and avocado on my salad said sure.. our bill was $88! For lunch! We were upcharged for the chicken x3 the sour cream and avocado, no mention of this during ordering these items weren't special requests or additional items we requested. It felt like a total rip off. I would have expected a bill that large at much nicer establishment but this was a total rip off the food was definitely not worth the sneaky price tag. $88 for Mexican food during lunch? 2 adult's and 2 kids? Never again.
The food was bland, the beans (on the side of steak fajitas) were cold, the margaritas were weak and tasted like Fresca, the decor was blah boring sterile. I thought I should have stayed home and taken a nap. Very much a snooze of a restaurant. The steak fajitas were hot and fairly good, and the guacamole was good, but everything was very expensive for getting zero bang for the big bucks. The server was very nice, but there’s no redemption for the boring food. Pass.
I want to like this place but... the food is mediocre yet priced at a premium...and they charge extra for 1oz of hot sauce.. HOT SAUCE. Full disclosure: she gave me one [1 ounce] cup of sauce and when I asked for a little more she informed me there would be an upcharge. Who charges extra for hot sauce? I can only imagine the price of retail restaurant space in Hillsborough but honestly, if you nickle & dime your Customers you won't have any. The waitress was very helpful and friendly and she was also sympathetic yet unyielding about needung to charge for hot sauce ..after I'd already purchased an entree. There are much better places over in Durham for the same price.. and they don't charge extra for trivial amounts of sauce. [*note: the entree did not include hot sauce, I had to ask] All in all: very disappointing
The food was decent, the space was cluttered but, in a fun way, service was forced and nonchalant. As in tossed a menu on the table and pointed to it while walking away. My main gripe is with the 20% auto gratuity for a party of 1. There were no signs up or anything in the menu that says all check are auto grat. If they had charged me the price on the menu I would have tipped closer to 50% so I guess I saved a few bucks lol.
This restaurant was a true disappointment. The service was really bad, I actually had to stand up twice to get the servers attention. I also ordered a dish after asking the server if it was spicy, which she said it wasn’t. The dish was too spicy for me, so I returned it, which they did take back. I ordered a California burrito, which was the driest burrito I have ever eaten. At the end of the meal I was charged for the first meal that was too spicy instead of what I actually ate. I gave it two stars only because the decor is lovely. But I won’t be going back.
I had lunch there a few days ago. It has been several months since I'd eaten here. I had chili rellenos with rice and beans. I have eaten at Colorado Burrito from since it was at Daniel Boone Plaza, out to HWY 70 and back here to Churton Street. It has always been authentic, delicious and filling. Something has gone terribly wrong. The atmosphere seems to only mimic authentic Mexican ambience, the painted chairs and paper flags seem a mockery. No one other than the waiter acknowledged I was there. The place was nigh on funereal. As for the food, the flavor and spice was missing, the beans were soupy and the rice was dry. All was lukewarm at best. I took half my meal home, despite the servings being just over half the expected amount, because of the flat taste. As leftovers for the next day, which I spiced up myself, the rellenos tasted like spiced up blandness. The waiter was nice, but over-worked. The prices are a third higher than I would have preferred. Sadly, I think I'll not return. Fiesta Grill on HWY 54 is better all around, and 2/3rd closer, with better authenticity, owners who greet you with a smile, tremendous servings, flavors that you can taste from the parking lot and bring home on your clothes, and all this for a lower price.
Took us 50 minutes to get our food on a day where they were not that busy. Table next to us was very upset with their food. Ours was below average. Waitress never checked on us. Probably generous to give a two star.
The atmosphere is the same as the prior business with no change in appearance.. I ordered a double meat chimichanga for $16 ($2 more than regular chimi). They said they don't use black beans plus your main dish doesn't include any sides... Not sure if the cook was inexperienced but all the food including the Taco salad had no flavor. The worst Mexican meal I've ever had. My double meal was actually half and the picture shows proof of that fact. I've never given a bad review but this one had to be posted. Prices are very high compared to what others have posted with menus. Half a scoop of guacamole cost over $8.
Horrible 1st experience.....sat at the bar ordered cheese dip and chips, cheese dip was cold. Waited forever for bartender to take our order and ended up taking it to go. I ordered an ACP with tortillas...was charged for tortillas and didn't get them, also my ACP had no cheese on it and it was on the side....I've never had an ACP with cheese on the side..not impressed at all with service or food and spent $65 with tip for a dinner I don't even want to eat because it's not correct and don't have tortillas....Do not recommend and I won't be back ....poor service and food....I will be calling tomorrow and expecting to be refunded as my food wasn't even close to $20 value especially without tortillas...subpar at best as even the chicken isn't of quality 🙄
The food portions are for kids not adults…. We paid 50 dollars or more for our food and this is all we got… also asked for cheese dip and they only give you a sauce cup of cheese dip just won’t never eat there again you definitely don’t get enough food for the price

Yuck... go somewhere else. Plenty of better options in Hillsborough for decent Mexican food! After several tries, can't figure out how they are still open.
Well we arrived at 7 pm on a Saturday night. We were the only party in there. No Mexican beer on tap, watery salsa, extra charges for little things, mediocre food, and we waited 1 HOUR for our food (again, we were the only people in there).
The worst Mexican food I ever had. I believe Mexican is like breakfast you just can't mess it up...boy was I wrong food was all most not edible.
There were only two tables occupied when we came in. After 30 minutes waiting we still didn't have our food so we walked out. We were told there was a backup in the kitchen.
They have really gone down since they opened. Our food was barely warm and bland.
Truly insanely overpriced, awful food made from stale, bottom of the barrel ingredients. The food seemed literally bought from the frozen food isle of the grocery store with cheap ingredients all around. We wanted to love them, to give them a fair chance by ordering our favorite food items. Unfortunately it was flavorless, dry, and actually stale in some instances. From the chips to the chicken in the main meals, tortillas, fries and cheese quesadilla for our toddler, mix used in the margaritas- the meal read as expired food and cutting corners on ingredient cost. This food wasn’t made with love despite the $100+ cost for the 2 adults and under 2 yo. There were all kinds of up charges for items that come standard at other restaurants- it was a real nickel and dime situation. We were left to sit there unattended (there was only one other couple in the restaurant in the entire hour we were there), eventually going to the hostess after waiting for forever the get our check to end the experience. We were overcharged from listed menu prices but didn’t fight them because we didn’t want to push our toddler’s bedtime. We really had so much hope but unfortunately the meal fell flat!
By far the worst food I’ve tasted in a long time. I should’ve known to leave when the salsa tasted like water. I ordered a steak chimichanga and it was extremely bland. It didn’t taste fresh or seasoned. For a while, I was convinced that I had COVID and lost my sense of taste. I thought that maybe some hot sauce and queso would make things better but I couldn’t get the attention of any waiter. They only checked on me once I put my napkin in my plate. I paid in cash (because there’s a surcharge for debit and credit) and left. The taste of watered down steak remained in my mouth for hours to follow. I highly don’t recommend!
We were long-time patrons of Banditos, this restaurant's predecessor, and were so glad when Colorado filled the vacant spot in downtown Hillsborough. We had regularly gotten takeouts from their Mebane location, and so we knew how great the food was! However, things have changed. We weren't pleased the last few times we dined there, but it had been a while, so we wanted to try again. Sorry to say that we won't be returning after tonight. No comparison to their food at the Mebane - or former south Hillsborough - locations. Bland salsa, tasteless chips, overcooked veggies...nothing nicely seasoned or special. Oh, and the worst margarita ever! Obviously others agree, because there were very few diners, especially for a Saturday night. All so disappointing and a loss for Hillsborough.
If i wanted a snack i would have went to Burger King and had it my way. The food was bland the owner had to make sure we were ok after putting us in the back of the restaurant, racism still exists until this day I’m glad I have my own restaurant I treat people the way i want to be treated, we had people staring at us, lol but they took the money after over charging.
I was truly amazed by how bad this place was. It is on the bottom of my list of all the Mexican restaurants, especially when the bill was over 40 bucks for lunch specials for 2 people! Never again, especially when there are so many better Mexican places. There is no reason for not doing better!
