Food and service just keep getting better and better. You can really tell that they care. Alex was our server for lunch and he was wonderful, very knowledgeable and genuinely kind. The food was absolutely delicious. My only suggestion would be to dial back the spice level on the glaze for the anticucho. We enjoy spicy food, but this one was a bit too intense and almost hard to eat. That said, the potatoes that come with it are sublime. The tacos al pastor were incredible, the ceviche was fresh and delicious, and the papa rellena never disappoints. All of this paired with the best view in Denver. It is hard to beat.
All of the food we tried here was fantastic. Highly recommend getting the crushed avocado dish, papa rellena, and the empanada. The cocktails were also delicious. Loved the decorations and the ambiance. Our waitress recommended great things to try and was attentive. Can't wait to come back in the summer and sit outside.
Went for the friends and family opening at the launch of Cimera and had an amazing time! The appetizers were delicious, especially the ceviche. A lot of diverse menu options that really highlight multiple different types of Latin cuisine. The Carne Asada was the best dish we tried by far, paired with a complex salsa and fresh blue corn tortillas. My only regret is that I didn't have a chance to try more potato dishes. Our service was a bit slow, but I entirely credit that to it being opening day. The staff was extremely friendly and competent, so I'm sure it's improved by now. Prices seemed fair for how high quality the food was. Super impressed. The atmosphere is so cool and the rooftop setting would be a beautiful place to watch a sunset. Go here before it's impossible to get a reservation!
This week, I had a delightful dinner at Cimera with a friend. The drinks and dishes we ordered were fantastic, and we thoroughly enjoyed the stunning ambiance, complete with large open windows that let in the beautiful scenery. Although I visited during the winter, I can’t wait to experience the rooftop bar when the weather warms up and the garage doors open. What we ate and drank: 🍹 GARDEN COLLINS (Vodka, avocado, cucumber, mint, lemon, manzanilla) 🥑 CRUSHED AVOCADO (Avocado, lime, pomegranate, egg, quinoa, jalapeño, pinto beans, tomato, spring onion, corn, queso fresco, red onion, cilantro, bacon, sesame seeds, & tortilla chips) 🐟 PERUVIAN CEVICHE (White fish, lime, red onion, chili, charred sweet potato, cancha) 🌽 ESQUITES (Corn, chili, cotija, cilantro) 🥩 CARNE ASADA (Bavette, chimichurri, salsa rajas, tortillas) 🥮 TART TATIN (Caramel ice cream)
I’m absolutely blown away by the entire experience. I’ve visited a lot of restaurants and had good food and great food, but this right here was absolutely exquisite. Starting with the decor, the aesthetics were completely perfect. They were great for photo ops. The vibe of the entire restaurant and even the downstairs lobby was not only cohesive, but it was mellow and inviting. It truly felt very peaceful. Don’t even get me started on the views. They were almost 360 views of the entire city. Now down to the food. I had the Horchata cooler. This was dang near a perfect drink for me. When I saw the description that had line in it, it had me a little bit worried to tell the truth. But the lime is what brought the drink to life. The flavors were so balanced, and it had just a very slight hint of smokiness to it. The only thing that I did not like about the drink was that it had a little bit of chalkiness to it. The bite that I chose to eat, was the pork belly small plate. Hands down in all the time that I’ve been reviewing food, I think this is the best dish I’ve ever tasted. It was smoky, a little bit sweet with the sauce, fatty but not overly so, and tender. An overall dynamic dish. I wish I could taste it for the first time over and over again. Whenever I have any friends or family looking for recommendation, this will 100% be it.
This spot is such a vibe. The food offers a creative, modern take on some of our favorite Peruvian classics, and everything we tried was exceptional. We sat at the bar with James and Pat, who crafted some truly outstanding Pisco sours. The service was great, welcoming, and inviting from start to finish. We’ll definitely be back regularly.
⭐️⭐️⭐️⭐️⭐️ Cimera made our last night in Denver absolutely unforgettable. From start to finish, we were treated to an incredible fine-dining experience that truly exceeded all expectations. Manager Brian went above and beyond to ensure everything was perfect, and his professionalism and warmth set the tone for the entire evening. Every dish was absolutely incredible—beautifully prepared, full of flavor, and thoughtfully presented. You can truly taste the care and skill that the chef puts into each plate. The bartenders, James and Pat, were phenomenal, crafting amazing drinks and creating such a welcoming and enjoyable atmosphere. James especially made our final night in Denver so memorable. His attentiveness, personality, and genuine passion for what he does truly elevated our experience and made us feel celebrated and cared for. We are beyond thankful to Brian and the entire Cimera team for their hard work, dedication, and exceptional hospitality. This was the perfect way to end our trip, and we cannot wait to return. Highly recommend!
Great food, awesome staff, shout-out to Howard, Pat,and Jason they gave us outstanding service. The empanadas and Papa rellena were our favorites. There's outside seating with great views of the city and mountains. It was so good we went every day we were in Denver.
Loved the vibe, service was excellent, and the food was a welcome flavor adventure. Everything was well conceived and executed. Will come back in the summer for the outdoor seating and amazing views. Gluten free menu was an extra bonus we appreciated.
From beginning to end, Cimera was top notch. Great service, delicious cocktails and food with as much flavor as you could ask for (especially for Denver!) Standouts: papa rellena, oxtail empanadas & al pastor tacos (caramelized pineapples, you say?!) Oh, and the view? Gorgeous. Sit outside, regardless of weather. You won’t regret it. We’ll absolutely be coming back for more. Highly recommend. 5 stars.
We were pleasantly surprised at how great our experience was, especially for a new restaurant. The menu is full of great options and is very reasonably priced. Adam did a great job picking the perfect bottle of wine for us and Brian our server was super attentive and helpful. Chef Geoff and his team really impressed us!

Absolutely a go to lunch spot. Parking is always easy, the views are wonderful. Ive been coming here since this place was built and the refit they have done on the interior is sooo nice. Really makes the space feel warm and inviting. Food is amazing! The pork belly, the beef small plate, and pretty much everything we had was a new taste and super good quality! Thanks Gene!
Overall amazing food and service! Brian, our waiter, was terrific! Only downsides were how unexpectedly spicy the tacos and ceviche were and our food took a bit longer to come out than we expected. Super accommodating to food allergies/sensitivities though!
While visiting Denver from Miami, we had the opportunity To dine at Cimera. We have multiple places to eat in Miami, which serve Pan-Latino food. It was nice to find a place in Denver which with ease made us feel right at home. The meal was expertly prepared, the service was impeccable (without the Miami attitude), and the views were spectacular. We were there in time to catch a beautiful sunset. We sat on the deck. The heaters were running and it was comfortable. Thank you Cimera For making us feel so welcome and providing a magnificent meal for our family.
Awesome vibe with city views! Great for date night. The presentation of every plate was instagram worthy and the taste was even better. Had a gluten free menu available as well for me with lots of options. Fish was so fresh and the guacamole is definitely a must have!

Beautiful view from the balcony of the city and mountain. The heaters made it nice to be out there even with a light chill in the air. Drinks were well put together without being too over the top. Food was awesome, my favorite was the papa relleno. Servers were very attentive and took great care of us.

You have to order the Papa Rellena!!! Shout out to Mile High Food Dude! He ate here and ate this, which is why we came here to check it out. The crunch on the croquette is phenomenal paired with the braised beef, omg! Best! Its crazy because the star is the crunchy potato croquette, the braised beef was secondary!
Cimera was a wonderful find. Its location inside The Source is excellent, and the rooftop setting makes it a perfect spot for sunsets on warm evenings. Our waitress was absolutely fantastic—great conversation, attentive service, and very knowledgeable about the menu. We shared the pulpo carpaccio and the carne asada, and both were outstanding. Portions were generous enough for two people. The drinks were well crafted and balanced, though a bit heavy on the ice. That said, it didn’t take away from the overall experience. Beautiful setting, great food, and top-tier service—highly recommend this place.
Since moving to Denver area from San Francisco, the food options have not been as exciting. Cimera was a wonderful surprise with a beautiful atmosphere on the top floor of the source. We ordered the ceviche, beef skewers, and pork entree and all 3 were excellent. The flavors and sauces were amazing and the meat/seafood prepared to perfection. Sangria was delicious. Our waitress provided excellent service and had great recommendations. Would return!
We had an amazing dinner at Cimera! The restaurant is stunning, with breathtaking views of the city. Every dish we tried was simply delicious. We started with the Papa Rellena, Empanada, and Esquites, all of which were incredibly flavorful and the Papa Rellena was especially unique and flavorful. For our entrees, we enjoyed the Noodle Saltado and Salmon Adobado. The beef in the Noodle Saltado was incredibly tender, complemented by a sauce and vegetables that added a delightful depth of flavor to the noodles. I highly recommend for anyone looking for a fantastic meal with a view!
My husband and I came to Cimera for a date night and were blown away. The rooftop location at the Source Hotel has a beautiful view of downtown Denver, which immediately sets the tone for a really special night. The food was outstanding. Every dish felt thoughtful, well-balanced, and full of bold, layered flavors. You can absolutely taste the influence of the chef’s time living in Peru – it adds such a unique and memorable depth to the menu. Nothing felt overdone, just really well executed and exciting to eat. Add in the great atmosphere, friendly service, and that skyline view, and this is an easy recommendation. A fantastic spot for a date night or a celebratory dinner – we can’t wait to come back.
My husband took me here for my birthday, and we had such a great experience. The atmosphere was cozy, the view was beautiful, and the food was truly authentic Peruvian. The ceviche was fresh and delicious, the pisco sour was perfect, and the pork belly anticuchos were hands down the best! Wow! we just sat there enjoying every bite. Ana was an amazing server and made us feel so well taken care of. The piña colada cachanga for dessert was the perfect ending. Definitely recommend!
What an amazing restaurant with an even more amazing staff! I stayed at The Source Hotel this past weekend with one of my friends. We landed around 7:30 PM and were excited to see Cimera was open until about 11 PM - perfect for dinner and drinks before a night out. We were seated and had Paige as our server, who was an absolute delight. She is caring, attentive, hospitable, and knowledgeable about the menu, all things that take a great dining experience and make it excellent. Not to mention the food is out of this world. I love Peruvian food and was impressed with the chefs' execution of classic and unique dishes. Our experience was so great that my friend and I came back to Cimera our second night and sat at the bar, to be helped by both manager Bryan and James. They echoed the same elevated service Paige demonstrated the night before, with a high level of professionalism that made my friend and I feel like valued clients. If you're staying at The Source, this place is a no-brainer, but I encourage anyone in the RiNo district to give this place a try. The food, service, and atmosphere will have you hooked.
11/2/25 We had an absolutely amazing dinner at Cimera with our family, everything from start to finish was outstanding. We began with the octopus carpaccio, ceviche, and steak tartare -- each dish was fresh, flavorful, and beautifully presented. For our entrées, we shared the whole roasted bass and carne asada, both perfectly cooked and full of incredible flavor. Our server Paige was wonderful -- warm, knowledgeable, and genuinely passionate about the menu. She guided us through the dishes with great recommendations that made the night even better. The hibiscus margarita was both stunning in presentation and delicious to taste -- a must-try! To top it all off, the sunset views of the mountains and city skyline from the rooftop were absolutely breathtaking. It was the perfect backdrop to an exceptional meal. We can't wait to return again soon!
Everything was incredible. Standout dishes: 1. Filet Con Hongos (still dreaming about it) 2. Papa Rellena 3. Crushed Avocado. The service was great, the portion sizes were larger than I expected, the atmosphere is lovely, and they gave us some complementary bubbles for my girlfriend's birthday. 5 stars all around.
The food was delicious! My N/A cocktail was the best one i've had in denver. It was the mango punch! The pork belly skewer melted in my mouth. I can't wait to take more friends here.
i don’t know what @destiny nave is talking about but this place is awesome. and honestly i LOVE the host stand. in particular, Melissa… phenomenal. She can do anything and will do her best to make sure you are happy. Cute too. Make this woman the face of the company.

Our server, Donny, and the other staff made this dinner for my daughter's 21st birthday a huge hit. The food was excellent, the rooftop is amazing, and Donny hit it out of the park. Since we were a bit party, he had recommendations for family-style dining ready when we arrived. This made it so easy for us. Really stellar service.
The staff and atmosphere were great. Awesome views of downtown Denver, great art through out the restaurant. Great cocktails. We enjoyed the bass with yucca and noodles saltado. The skewers were good portion sizes but weren’t a standout item. Though the side of local bi-color sweet corn on the steak skewers was surprisingly delicious. Warning: the shrimp tacos are extremely spicy and it wasn’t clear on the menu or by the staff.

Food was good, but variable…. The best thing we had was the chicken + the beef skewers (called something else on the menu)…. Staff was exceptional and the view and decor was ++ fun for a double date would definitely go back if I was looking for a unique meal and vibe-y photos.

Fantastic food and views! The ceviche and beef anticuchos were spectacular! The view was amazing! I'd like to go back in warm weather when the patio is open as the noise level was a bit high and hard to have a conversation. The service was the only concern. It was a bit slow and sporadic. Perhaps adding more staff for the busy holiday season would help make it more consistent.
Cute vibes, but the service doesn't match up. Maybe we just got someone on a bad day, but our server dragged our dinner out to over three hours, not because we were leisurely enjoying food, but because she couldn't be bothered to remember drinks or orders and kept having to go back and forth. Multiple times we'd flag her down to order a glass of wine, only to have her return 15 minutes later, sans wine, and then be like "oops forgot the wine", disappear, and eventually show back up... It would have been whatever if the food wasn't so grossly overpriced and soooo lackluster. I think a main food group in the restaurant is hard boiled eggs? Multiple small plates did NOT list egg on the menu, but then showed up with huge hunks of plain, boiled egg inside. The only thing we actually enjoyed was the Esquites corn and the noodle dish (which was way more peppers and onions than noodles).
The atmosphere here is truly spectacular, the views are stunning and the décor is beautiful. It’s the kind of space you immediately want to love. I don’t enjoy writing critical reviews, but I’m sharing this with the hope it’s helpful, because this restaurant has so much potential and could be something really special. Service was pleasant overall. Our server was kind and attentive, though they weren’t able to offer many recommendations or guidance when it came to the menu, which would have been helpful given the range of dishes. The biggest opportunity for improvement was the food. We ordered the tuna tiradito, ceviche, cheesy potatoes, and the Yucatán fish. The ceviche was excellent and easily the standout of the meal. The cocktails were also very well done. That said, some of the other dishes missed the mark for us. The tuna tiradito had a stronger fishiness than expected, the cheesy potatoes felt underwhelming, and the Yucatán fish (pricey main dish ~$60+) arrived as a build-your-own taco presentation, which wasn’t clear from the menu. The flavors overall were quite bland and didn’t fully deliver at this price point. Overall, this is a beautiful space with a strong foundation.
Maybe for Denver it's considered good food but Cimera is just...mid. It wasn't bad, just not a place I would ever recommend. I was there with my bf and we tried three different drinks. The tamarind caipirinha had no tamarind flavor which was disappointing. The guava negroni sounded interesting but it was not a well-balanced drink. The horchata cooler was yummy though. We split tacos al pastor, ceviche, and empanadas. The tacos were fine, but i've had a lot better tacos for half the price. The empanadas were a total miss. $15 for two tiny little empanadas that lacked flavor and the pastry was greasy and borderline soggy. It also came with a green sauce that tasted like...nothing. The restaurant is well decorated and nice rooftop vibe. Almost makes me wish it was more of a bar/lounge than restaurant. Edit: I read some of the 5 star reviews and a lot of them look fake or incentivized. Because saying "the service was easily the best we have ever had in Denver" is wild.
Expensive and disappointing. The smashed avocado had a ton of ingredients but somehow still lacked flavor. Desperately needed salt. The tuna dish was just fine. Potato croquette was by far the best thing. We also got the carne asada which is definitely not worth the $42 for its size. Decent flavor but pretty tough. Also came with tortillas which were very undercooked and also cold. Vibes were great and the space is really cool but overall a sad experience. Service was also just fine. $161 out the door
I’ve enjoyed dining here before, but I was surprised that some dishes jumped significantly in price from one day to the next. The ceviche went from $19 to $25. That is more than 30%. Just crazy. It leaves a loyal customer feeling a bit undervalued or caught off guard, which I’m sure isn’t the intention. A little transparency or gradual changes might help customers feel more respected and keep us coming back.
The very tall gentleman (I think food runner?) made the experience great from the moment we walked in. Everything else was disappointingly mediocre. The food is tasty but nothing that stood out or wowed. Cool concept but felt a little off on the execution. Biggest disappointment I think is being seated where you can barely see the views and city lights, considering we were excited for a rooftop restaurant.
Poor service. Clearly lack of training and attentiveness. Menu is interesting. Food comes out only okay. Prices are very high. Not worth it. Get a manager in that can actually show someone how this place should be run and it could be very good.
We had high hopes for this spot, and while the evening started off well with delicious small plates, the experience went downhill from there. The biggest issue was the timing; we waited a very long time for our food, and it was frustrating to see a couple who arrived after us get served their entrees first. Unfortunately, the main courses didn't live up to their presentation. My Noodle Saltado was extremely salty, and my partner’s Whole Roasted Bass tasted quite fishy and not as fresh as you’d expect for the price. When I mentioned the saltiness to our server, he did offer to remake the dish, but given how long we had already waited, I didn't want to risk another hour of sitting there. It’s a beautiful space with a great vibe, but the service and food quality definitely need improvement.
Ladies beware! This is not a pick up site😡 Ruined my experience! I got off the elevator and it looked pretty hip but👎 The bartender (picture) was creeping me out trying to hook up with me. Do your job and don't get friendly when I showed you I wasn't interested. My friends were like what the hell is this guys problem. My friend Ryan pointed out a bald guy working here was hugging I guess the chef in the back which was a little weird too. Keep your touching away from the kitchen. Been all over the world having some awesome experience but this was pretty juvenile not sure who was in charge but again I could never waist my time and money there! Food was average maybe a better experience if I wasn't hit on when I paid good money for a room and experience. I have over 500k followers on instagram and definitely will put the word out over employees that are out of control. Here's the kicker! This bartender did not charge me for two drinks and cmy friend Ryan and Sasha noticed when paying their bill and was overcharged for 3 drinks we never had
Unfortunately, though the presentation of the food was beautiful, the food, drink, and service were not. We spent about $180 (with tip) and left feeling really disappointed with the overall experience. If the food had been decent, I could’ve overlooked the service, but unfortunately, both missed the mark. Service was very slow. We arrived around 7 p.m. and didn’t leave until after 9:30, and not because we were lingering. There were long gaps between each course, and by the time dishes came out, most were lukewarm. I’m not sure if the issue was the kitchen, our server, or a mix of both, but it definitely affected the meal. The food itself was also underwhelming. The papa relleno was the best thing we had but even that was only lukewarm. The ceviche didn’t taste fresh, the pork belly skewer was oddly smoky and chewy, and the steak, though presented beautifully, was so tough I couldn’t finish it. Drinks were okay but watered down (possibly from sitting too long). They were simple - which can be great when done well - but there wasn’t anything memorable about them. I had really high hopes for this spot, but the experience was a letdown overall. Even setting aside the slow service, the food just wasn’t good. I’m honestly confused by all the amazing reviews because they don’t reflect the experience we had at all. I honestly feel bad writing this, but I think the restaurant needs to know that the food just isn’t good right now, hopefully they can make some improvements.
Came here Saturday night for my birthday, and the experience just did not come together. The reservation was made ahead of time and noted as a birthday, but there was no acknowledgment of it. Things felt off right away when the host opened with “Can I help you?” instead of a welcome or checking for a reservation. Service never really found its footing. Our server seemed checked out and disengaged most of the night. Drinks were fine but pretty light. We were told to order everything at once so they could course it out. We ordered the tuna tiradito, al pastor tacos, esquites, and a ribeye. The tacos were the best thing we ate. Even then, they were dropped with no explanation, while the same dish was described in detail to the table next to us. The tuna tiradito was disappointing. The tuna was cut very thick, tasted fishy, and the sauce made the topping soggy and bland. The esquites were okay but nothing memorable. The ribeye was where things really fell apart. It came out in a skillet that was handled with towels, but both the skillet and the steak were cold. The runner nearly knocked our drinks over while placing it down, and the sauce was poured tableside before we realized the steak was cold. When we asked about it, the solution offered was to reheat it in the broiler. For a $69 steak, that is not acceptable. We declined, and it was comped. Even after that, the overall vibe stayed disconnected. The manager sent us off with a generic goodbye like nothing had happened. We were hoping for a fun birthday dinner and left disappointed.
