If you’re in Palenque and want to eat like a local, Tacos Estilo Coleto is a must. This spot is super popular with the locals—and for good reason. I ordered a taco de chamorro (a rich, flavorful pork stew), a taco adobada (classic al pastor style with that perfect smoky-sweet marinade), and a pirata (a cheesy beef quesadilla that’s as indulgent as it sounds). Every bite was delicious and full of authentic flavor. No frills, just great food, fast service, and a laid-back atmosphere.
