Un restaurante muy pequeño, con pocas mesas. Es importante reservar. Buena atención y buena comida, si te gustan los mariscos y el pescado te va a encantar. Postre delicioso.

Excelente, la calidad de la comida y el servicio. El mejor sushi tradicional de aguascalientes. El marisco se sentía fresco, el wasabi era realmente wasabi y los sabores eran excelentes. A pesar de que aguascalientes tiene una comunidad japonesa grande su comida en este ámbito deja mucho que desear, sobre esto Biwa es la excepción y realmente nos gustó mucho

Tienen cervezas “japonesas” 😂 pero hechas en mexico, italia, usa… solo la saporo si esta hecha en japon… la comida muy rica

Gran lugar. Probamos el omakase y fue fantástico. La frescura de los ingredientes es increíble, así como las recomendaciones del chef. Uno de los mejores sushis que he probado.

El mejor sushi que he comido en Aguascalientes, excelente sabor, diseño, menú, excelente servicio por parte del personal, muy bonito el lugar, aseado y estético. Volveré muchas veces.

The food and the experience were delicious. There are only a few tables, but the service is excellent. Reservations are recommended to guarantee a table. The air conditioning is a bit cold, so I recommend bringing something warm.

FANTASTIC sushi restaurant, and in my opinion, the best restaurant in Aguascalientes. The food is not entirely authentic to traditional Japanese cuisine, but I think it's more innovative. Their delicious use of butter, truffle, spice, and lime/lemon reminds me more of Peruvian Nikkei cuisine. They try to source as much locally from Ensenada and the quality shows. We had the longest Omakase option and it was all wonderful. The only slight exception was the miso soup served at the end which didn't taste right to me. It lacked kombu (to prepare dashi), used firm tofu rather than silky tofu, and I think perhaps the miso available didn't have the depth it usually should have. These are probably due to sourcing complexities, but really if the miso soup is the only issue then we're just being extra picky because we loved the restaurant so much. They also prepared a handmade-mochi ice cream for dessert which was FABULOUS.

It's a small place. It reminded me a lot of food places in Japanese anime. The food is delicious. We were lucky to get a table without a reservation. I recommend making a reservation. The music... could be improved; it breaks the charm of the place, and is actually distracting and out of place.

DELICIOUS, worth every peso. They do the famous Ronqueo del atún very often; you have to keep an eye out for them on the fishing nets. The "ronqueo" (tuna ronqueo) refers to the traditional, artisanal butchering process of this fish, where the different parts of the tuna are carefully and manually cut to obtain pieces with varying degrees of fat. This technique allows for almost 100% utilization of the tuna meat, obtaining up to 25 edible parts.

Finally (and excuse my "whitexican" attitude), but a place like this for omakase was long overdue. The place is small but very cozy, with that sophisticated vibe that tells you it's going to be good. The service is 10/10. And the food is simply amazing. Fresh fish prepared to order, spectacular nigiri, and the best part is being able to pair it with a nice cold sake or a beer. The omakase is a multi-course menu (I chose the 15-course option) and it's more than enough to try everything and leave satisfied; they elevate it with each dish they serve. I'll definitely be back. Comfortable place, the food was just okay and the staff was just okay. I wouldn't go back, though; they do offer a different kind of experience. The restaurant next door is very noisy and doesn't allow you to enjoy yourself properly.

I visited on a Saturday evening around 6pm. It appears to be a sister restaurant of BIWA in San Luis Potosí, and the menu was very similar. However, the Aguas Calientes branch had a limited selection of sake, and I could only choose to have it poured into a small cup (I think they also have tokkuri) from a 180ml bottle or a 1.8L bottle. I ordered the omakase B and a beer, and after a short wait the beer arrived. Not long after that, the salad arrived. It was topped with seaweed and fruit, and I ate it, thinking that it was just like the one in San Luis Potosí. Next came the salmon collar and sashimi, but perhaps due to my age, the oiliness of the salmon gradually made my stomach feel heavy. The negitoro (fatty tuna), salmon roe, nigiri (sushi rice balls), miso soup, and dessert were all delicious, but for an older person like me, the combination from the collar to the nigiri was too oily. Overall, I felt that the San Luis Potosí sushi was better balanced, but there may be issues with procurement, so I can't make a hasty decision until I've visited a few times. In any case, this is a rare sushi restaurant in Aguascalientes. The service from the staff and the atmosphere of the restaurant are both excellent, so I hope you will also patronize it.

The food was delicious, the concept 10/10 but the waiter's service left much to be desired, even so we left him a 15% tip and he didn't even say thank you, there were 8 of us and we expected better service.

Pedí una almeja y no me la sirvieron y había una mesa con gente gritando bastante desagradable

Pésimo servicio, tenía una reservación confirmada y 15 min antes me avisaron por mensaje que tuvieron un error que no tenía reservación. Que si quería llegara hasta las 9:00pm, cuando ellos cierran a las 10:00pm. Llame al teléfono de las reservaciones y colgaron mis llamadas 3 veces, cuando llamé de otro teléfono si contestaron la llamada. No vuelvo a perder mi tiempo.

La comida estuvo excelente, la atención del mesero tiene muchas áreas de oportunidad, pero en un día de “ley seca” claramente no nos indicaron que no podían vender bebidas alcohólicas pero al llegar otros comensales a ellos sí les vendieron.
