This was my second experience at Saint Florian, and both visits have been exceptional! On today’s visit, my boyfriend and I enjoyed a delicious lunch and fantastic cocktails which certainly helped us make the most of a raw and rainy Saturday afternoon in Hudson. I feasted on the fish and chips, and he enjoyed the chicken strip steak. Both meals were fantastic!! We will definitely be visiting again soon!
Every dish was a solid hit. NY strip steak was cooked perfectly to medium rare. I could tell that the steak was very quality from the delicious juicy fat. Every bite of the caesar salad was a perfect bite of textures and flavor. I personally loved how the waiter was very patient and informative about the food. Def worth the visit!!
Long story: Nestled on Warren Street in the sleepy town of Hudson, NY is Saint Florian. While Hudson has a vibrant foodie scene it did not have the special mix of what Saint Florian is serving (both literally and metaphorically!). When entering the historic former fire house we were warmly greeted by staff. The bottom floor is rich with wood, a large bar and tables for more casual dining. Up a beautiful wooden staircase to the second floor you’ll find another sizable, zinc topped bar and cozy seating. The decor is comfortable and playful, including many little nods to the building’s fire house history. The menu changes seasonally and specials are offered nightly. The menu is protein centric without being a stereotypical steak house. It offers something for everyone, literally. Vegetarian, vegan and gluten free foodies will all be satisfied with offerings, here! As a long time vegetarian I am often left with salads as a main course or need to modify menu items to suit my diet. Saint Florian was a welcome reprieve with a variety of choices for me. The menu does not overlook the vegetarian or vegan diner. More than not overlooking us, Saint Florian is catering to us! Our table shared the mushroom croquettes appetizer special along with the fried mushrooms and steak tips. The other diners with me reported that the steak tips had excellent flavor and texture. The mushroom croquettes made from locally foraged mushrooms was certainly a highlight- even to the omnivores at the table! The fried mushrooms were crisp and the horseradish sauce to dip them in was stellar. Each dish is elevated using lesser know/unique ingredients to level them up. For example black garlic was used in the steak tips and nutritional yeast was used in a buttermilk sauce that the mushroom croquettes were placed atop. Main courses we ordered included the fish and chips (fried cod and French fries) which were not only a large portion but were reportedly delicious. The main vegetarian item was a roasted cabbage. It was crave worthy! The quartered roasted cabbage sat on a puree that added sweetness and depth to the roasted quality of the cabbage. Chopped nuts played well with the warm roasted vibe while the fresh dill brightened the dish. For dessert we ordered lemon crème brûlée along with a scoop each of coffee dark chocolate and peach with sumac ice cream. All were wonderful but the coffee ice cream had us floored. It was the best ice cream I’ve ever had and I really am not a fan of coffee flavored foods. The texture was beyond words- silky, creamy, mousse-like. The cocktails were unique with fun twists like smoked honey. A nice wine list is available as well. Service was attentive, well paced and friendly. It added to the experience and made everything super comfortable. The best word to describe our experience at Saint Florian is thoughtful. It was clear a lot of thought and love was put into every choice made from the design of the physical restaurant to the design of the menu. Short story: The Chef/owner has created a restaurant that hits all the marks for what I enjoy when dining out: good portions, well priced for what is received, welcoming/comfortable environment, vegetarian menu items, well trained staff, good cocktails and of course excellent food!
Went there the other night. The space has been reworked better than I thought possible from the old barbecue place. Seats are spacious, lighting is warm, and everything seems really thought out. We started with the pickle plate and the shrimp. The pickle plate was fun, and the shrimp cocktail looked like it was plucked straight out of Rick’s Café Américain. Had a couple of glasses of natural wine. They definitely have a good buyer because, for a sub-hundred bottle list, they’ve got a bunch of low-allocation hitters. We had a bottle of Riesling with the fried chicken dinner. The chicken itself was super juicy and sweet. It wasn’t served with a dipping sauce, but I’m guessing that was intentional because the chicken really stands on its own. We had mashed potatoes and gravy and a warm, bacon-spiked coleslaw as well. Service was good—casual yet refined, with a vibe kind of like Bernie’s in Greenpoint. Definitely a top 10 upstate spot right out of the gate.

The staff was so wonderful and clearly really happy. The food was amazing and service was flawless. We had a ~beautifully~ cooked steak and a fresh and zesty endive salad. The desserts are to die for. Great wine selection. 10/10, felt so welcomed and cared for. Thank you!
The best meal I’ve had in a long time. Great drinks and perfect Prime Rib. The skate cheeks and mushrooms were huge standouts as well.
(2025 Dec) Love this place. Service staff was v friendly. Had a few drinks and had the apple cider crème brûlée (was here with my son). Was good. Met some frequent customer one of whom was a volunteer firefighter who had work in the same spot (it was an old fire station). Showed us the tire marks. There you go - history and good company and friendly staff - all you need in a good bar. There was a 21st birthday party and the crowd swoon in at 9 - just as the lovely lady bartender promised. 😄
Absolutely outstanding. One of the best meals I’ve had in a while. The steak was cooked perfectly and everything from the salad to the sides were great. We celebrated my birthday and the team did so much to make sure everything was special. Will be returning!
We were so impressed by Saint Florian - highly recommend! The meatloaf and steak with fries made the perfect meal on a cold, snowy night. The waiter and bartender were both so welcoming and friendly throughout our meal. Would definitely add to your list when in Hudson :)
We held a family dinner at Saint Florian for my mother's 90th birthday. Most of the group were hardened NYers with high expectations. Rob helped us reserve a private room and pick a menu including drinks and wine. We wanted to get this right for a special birthday and accomplished this objective. Thanks Rob and crew.

Had lunch for the second time last week here. Saint Florian is one of the truest examples of a "neighborhood gem" that my wife and I have ever stumbled upon. Absolutely perfect place for lunch with a great atmosphere, well crafted cocktails, and even more expertly executed food offerings both savory and sweet. Already planning two more meals here next month, one lunch and one dinner upstairs. Still thinking about their signature burger, clarified cosmo cocktail, the warm chocolate tart as well as the peach + sumac ice cream! The restaurant also offers up happy hour and late night deals as well as some nightly dinner specials on Mondays and Wednesdays.
Headed to Saint Florian with my husband. He got the 32oz porterhouse; cooked to PERFECT medium rare. The Caesar salad - impeccable. I had the Branzino; flawless. Highly recommend the creamed spinach. Thank you to the Saint Florian team for the hospitality! We will be back soon.

We also got a hanger steak ordered medium, the middle/thickest slice was blue raw and smelled like raw meat. Its understandable due to its shape it may be a bit undercooked in the center, but I do think the chef should understand that meat should be cooked until the thickest most piece reaches a certain temperature, which in this case it clearly did not. The buttered sauce it came with was delicious though. One last thing, the fries were extremely salty, after one or two I was done. Wait staff and bartender were very nice and friendly.

Not what we expected from the pictures we saw online. The burger was thin and small. No lettuces, tomatoes, fries. It’s like what you would get from the kid’s menu. We told the server our opinion and she said we could have ordered fixings on the side. Perhaps dinner menu would be better, I hope?

The food was delicious and the server was very nice but they were out of 4 menu items (including something we had already ordered). The server also forgot our drinks twice, and remembered once our food was already out.
I’ve been dining at Saint Florian since they opened and have watched the restaurant evolve over time. It’s only fair to let a new restaurant figure itself out before writing a review. I also don’t think it’s necessary to write a review for every single experience, but this experience kind of really stuck with me. I was celebrating my birthday and really wanted a steak, and with limited options in Hudson I was curious to see their steak game as I never tried before. The first thing that struck me was the prices, they have seemed to creep up considerably over time since they opened, however, the quality of the food has not changed. The next thing was that I was with my family and there were no kid friendly options anymore as the burger is now lunch or happy hour only. This is a huge miss seeing as how there are so many kids in Hudson. We don’t like being high maintenance but asked if they could do the burger since happy hour just ended a few minutes prior. The server (who was great BTW!) said ‘the chef has strict rules on menu changes’ and said he couldn’t even ask. Ok, fine, we got the mac and cheese instead. It was $21 for dry cavatappi that appeared to be premade and reheated as it had an off putting refrigerator odor. We asked to make sure there were nothing on the top (little kids don’t like green stuff!) but the server regretfully said they can’t make any changes. This is a weird red flag. I tried to order the hanger steak but with the bearnaise on the side, and was told there could not be any changes so I ordered the $68 18oz ribeye which I was happy to see was not bone-in as nobody likes paying for bone weight. Unfortunately the ribeye was much tougher than it should have been and seemed like it was either cooked from cold holding or had been frozen and improperly thawed. Super disappointing for a $68 steak, especially knowing that it wasn’t high quality locally sourced meat to start with. We (tried) to order the Waldorf Salad, but they wouldn’t do the gorgonzola on the side (this is pretty insane). The self seriousness of this place was really starting to annoy me, as every great steak house in NYC is HAPPY to make minor changes for a superior guest experience, this is what makes a great steak house. Instead we got the simple salad which was fine for mixed greens at $16 but the dressing was not emulsified and was too oily. The Whole Branzino had a char/gas note to it and was slightly over cooked. $42 for a smallish fish with no sides or additions looked a little sad on the plate. Still hungry. We ordered three sets of fries because the food was starting to fail the group and the fries are just ok, but filling, but could be much crisper. Cocktails and drinks were good, wine list has vastly improved over time. Service was very nice and competent but it seemed like they couldn’t do their job as well as they could because they were forced to say no to so many simple requests. We ended up ordering less drinks and no dessert because we wanted to go get ice cream because we were still hungry. Disappointing enough to not come back. Note to ownership: stop taking yourself soooo serious, Hudson needs a great local elevated tavern with a very similar menu but with more appropriate prices for the quality of the product. And seriously consider removing ‘no’ from the service lexicon. You had it right in the beginning.

The Diet Coke was flat and when I told my waiter he tried to fix it at least but, I chose not to continue because at this point my experience was going down hill. Sometimes you’re better going to a small hole in the wall and the food is better. As for the rest of the meal no bread and butter while you wait for your food. The waiter pushed a glass of wine when explained if no specific red was available then a soda would be ok. But people make mistakes sometimes so It’s ok. Honestly as 36 year veteran cooking and owning a restaurant I know what is fair and what customers want. I could contribute more about my experience or post a video but I don’t see the further need to explain that this is one of those places where you don’t want to go. This place is not worth the money. Some of the food we ordered was tasty, but the portions were very small. The appetizer was a skimpy amount, and my vegetarian hash was a pitiful amount. It looked like an appetizer. When I asked if I could have bread to accompany my meal, the waiter told me "We don't have table bread" and asked if I wanted to order something else. No. But my husband didn't like his overpriced fish and chips, so I ate part of it. As we exited I told waiter guy that the prices were too high for these small portions and he didn't apologize. He actually seemed arrogant. I dont recommend this place.
The food didn’t taste bad but the portions were tiny for such an expensive meal. One person I ate with ordered a cold brew and the waiter came back with hot coffee 💀 They didn’t have bread at the table which is weird especially for a restaurant that charges so much money for their meals. The waiter was ditzy and rude and didn’t apologize when we questioned why the portion size was so small. We were polite about it too, but the waiter wasn’t. I don’t know why this place is highly rated online. They also didn’t have any non dairy milk option if someone were to order coffee. 95% of restaurants always have at least one non dairy milk option; it’s 2025…… For a place with such a high rating and expensive meals, I expected better portion sizes and friendlier atmosphere and wait staff.
Rudeness at the intake turned out to be a blessing because we didn't actually eat there. My partner, my service dog snd I were "greeted" by a fellow whose first words were "Only service dogs allowed." When I showed him my dog's documentation, he gave me an incredulous look and asked the one question the A.D.A allows: What service does your dog perform?" I explained, and he questioned me further, so I said, "You've had your one question." He said to wait. Another gentleman came over and said, "No dogs inside," and I told him that we had already had this discussion. He said "Good, then you know you can't bring the dog in." I explained again about the service dog.He then asked me, "What service does your dog perform," and I answered again. He told us we'd have to wait for a table. While he was discussing seating options with a foursome who'd come in after us, my companion said, "I don't want to eat here," and we left. I've been disabled thirty years, and this is only the second time I have been treated this rudely. Congratulations, "Saint" Florian.
I'm sure this place is lovely - the vibes and food look incredible. We were super excited to dine here, but due to a family issue, I had to cancel my reservation - and cancelled 34 hours in advance - they do not list their reservation policy on the restaurant's website. I was charged $180.00 for a dinner, that I never had. I reached out to the restaurant to explain the situation and was met with the most condescending manager who acted like I was a complete idiot and refused to do anything about it... The standard across NY is 24hrs in advance avoids a charge.. so to be so hateful about it is kinda crazy. I'm sure this place is lovely - the vibes and food look incredible. We were super excited to dine here, but due to a family issue, I had to cancel my reservation - and cancelled 34 hours in advance - they do not list their reservation policy on the restaurant's website. I was charged $180.00 for a dinner, that I never had. I reached out to the restaurant to explain the situation and was met with the most condescending manager who acted like I was a complete idiot and refused to do anything about it... Rudeness at the intake turned out to be a blessing because we didn't actually eat there. My partner, my service dog snd I were "greeted" by a fellow whose first words were "Only service dogs allowed." When I showed him my dog's documentation, he gave me an incredulous look and asked the one question the A.D.A allows: What service does your dog perform?" I explained, and he questioned me further, so I said, "You've had your one question." He said to wait. Another gentleman came over and said, "No dogs inside," and I told him that we had already had this discussion. He said "Good, then you know you can't bring the dog in." I explained again about the service dog.He then asked me, "What service does your dog perform," and I answered again. He told us we'd have to wait for a table. While he was discussing seating options with a foursome who'd come in after us, my companion said, "I don't want to eat here," and we left. I've been disabled thirty years, and this is only the second time I have been treated this rudely. Congratulations, "Saint" Florian.
The food didn’t taste bad but the portions were tiny for such an expensive meal. One person I ate with ordered a cold brew and the waiter came back with hot coffee 💀 They didn’t have bread at the table which is weird especially for a restaurant that charges so much money for their meals. The waiter was ditzy and rude and didn’t apologize when we questioned why the portion size was so small. We were polite about it too, but the waiter wasn’t. I don’t know why this place is highly rated online. They also didn’t have any non dairy milk option if someone were to order coffee. 95% of restaurants always have at least one non dairy milk option; it’s 2025…… For a place with such a high rating and expensive meals, I expected better portion sizes and friendlier atmosphere and wait staff.
This place is not worth the money. Some of the food we ordered was tasty, but the portions were very small. The appetizer was a skimpy amount, and my vegetarian hash was a pitiful amount. It looked like an appetizer. When I asked if I could have bread to accompany my meal, the waiter told me "We don't have table bread" and asked if I wanted to order something else. No. But my husband didn't like his overpriced fish and chips, so I ate part of it. As we exited I told waiter guy that the prices were too high for these small portions and he didn't apologize. He actually seemed arrogant. I dont recommend this place.
