We have been waiting to try Franklin's for years and it did not disappoint! We got there around 8am on Sunday morning and were between 25-30ish people in line. Around 10am a staff member came through and talked to each party to get an idea of what they would be ordering and took time to have friendly conversation with each guest. Once the doors opened, the line moved at a steady pace. We got to the counter about 11:30 or so. A staff member helped ensure we found a seat once we had our order. The food is pricey, but that is to be expected with world class BBQ. We only ordered meat and waters, no sides, and paid just under $100 for the two of us. The best thing was by far the beef rib, but you need to get there early if you want one because they are in high demand. And, they only sell them Friday, Saturday, and Sunday. The flavor was amazing, especially since not a lot of extra spices are used to rub the beef. You just get really good beef flavors. Additionally , I would definitely recommend trying the espresso BBQ sauce. It was sooo good! We will definitely return it we ever make it back to Austin! Other things to note: they open the doors around 9:30 for people to come inside and buy merch or use the restroom, there are chairs available for anyone to use if you don't want to stand before they open but they are well loved, pets are welcome outside, but not inside the restaurant.
Went in with high expectations as everyone talks so highly of this restraunt and how hard it is to get in. Went on a Thursday around 11 and line was out the door to the steps in the Texas heat. They do have a cooler with water out there for you. Line moves well and they do come around letting you know what's still available and what do you think you'll have. You order at counter and it's maid right in front of you. There is limited seating but turnaround is good so we found seating immediately. I had a brisket sandwich, delicious! Love Texas BBQ. Had a side of coleslaw, I could eat that all day. I highly recommend this amazing place. Great food and amazing service. Its a must try.
Got there at 6am and was first in line this morning. Its all part of the experience. Waiting in line. Talking with the other customers was awesome. Went quick to be honest. The employees came out before 9am and explained the process. Super super nice and professional. Got to meet the owner and founder. None other than Aaron Franklin. What a national treasure he is. Pitt master royalty. Humble and hilarious. It was a pleasure to meet him and his whole team. The food was melt in your mouth delicious. The bark on the beef ribs and the brisket was smoked to perfection. The pulled pork was juicy and seasoned on point. Every bite was a new and exciting flavor bomb. To say that this was the best bbq I have ever had is an understatement.
Must try and worth the wait! Brisket and beef ribs were my favourite by far. Get there early! We got in line at 10am (they open at 11am) on a Friday and got seated at 1230pm. Don't over order, because meat sweats are a real thing. Limited seating so come early or they actually run out of meat.
If you're reading this and you are wondering... Yes, it is really good! Yes ,you will have to wait in line. Minimum an hour if you are verrryy lucky. Yes, you need to get there before they open if you want to make sure they don't run out of what you want. To minimize wait time. Go during the week! We tried their brisket, sausage, ribs, potato salad and beans. Their brisket and ribs very easily the best I have ever had. Beans were very well seasoned and they have pieces of brisket as well. The potato salad I could have done with out. It was a bit bland in my opinion. Wish they had more sides than just beans, coleslaw and potato salad. That's really their only downside in my opinion. Eating space inside is limited. They have a few tables outside as well, but it looks like most people take their food to go. We went there on a Tuesday and got in line at 10:20am. They opened at 11am but we didn't make it to the ordering counter until almost 12:30. For sure must try at least once!

I got there at 8:30 AM, met a baton-twirling Olympic family, waited 2.5 hours, and feasted on brisket, ribs, and sausage that made my taste buds do cartwheels. No sides this time, just meat. Sixth stop on the Top 50 Tour and one of the best so far. Y’all, this was my third pilgrimage to the smokey temple of brisket known as Franklin Barbecue in Austin, and this time, I was ready. First time I came? Door said “Sold Out.” Second time? I showed up around 11 and had to wait a long time. This time? Well, like any true Texan, I learned, adapted, and showed up at 8:30 in the morning like I was camping out for Willie Nelson tickets. There were already 20+ pit disciples in line, folding chairs out, coffee in hand, BBQ dreams alive. And let me tell you, waiting was half the fun. I met a fantastic family from Pittsburgh whose daughters were in town for the junior Olympic baton twirling championships. That’s right, Olympic twirlers and Texas brisket: the kind of cultural mashup that makes America great. By the time the doors opened at 11, the line was buzzing like a brisket-scented bee hive. Took about 45 minutes to reach the counter, where I was greeted like royalty, especially when they saw my bright orange “50 Reasons I’m Not a Vegetarian” shirt. Not only did I get my passport stamped, they stamped the shirt, too. That’s how you know you’re at a legendary joint. I went full carnivore: • Brisket (bark so rich it should have a trust fund) • Ribs (peppery, juicy, and falling off the bone like they were trying to hug me) • Sausage (snappy, smoky, jalapeño-kissed magic) No sides. No distractions. My wife, the Side Dish Queen, wasn’t with me on this solo meat mission, so I went full Lone Star Lone Wolf. Just me and a tray of smoked glory under a humid Texas sky. The food? Peak Franklin. I don’t know what dark sorcery Aaron Franklin is summoning in that smoker, but it works. That brisket could end international disputes. The ribs? They didn’t just fall off the bone, they stage-dived into my mouth like it was a rock concert in ‘78. The staff? BBQ angels. The atmosphere? Electric. The meat? Transcendent. Stamp #6 collected. 44 more joints stand between me and BBQ immortality. My cholesterol may file a restraining order, but my soul is happy. Some folks wait in line for sneakers, some for iPhones, I wait in line for brisket, because I like my smoke low and slow, just like my Saturday mornings.
Among the best barbecue’s in Austin. The meat is very soft and cooked to perfection. However, highly recommend reaching within the first 2 hours of opening to ensure you have the full menu available as they tend to run out. I had the brisket , pork ribs and the jalapeño cheese sausage all of which were yummy. They also give free pickles lol . You also get to buy their goodies and proprietary spices at the store which is great! The seating and service could be better so as to avoid long queues. Also if a place consistently runs out, it’s a good sign the food is good but also a sign they can do better to ensure someone coming within their ‘open hours’ is able to enjoy full menu.
Went on a Wednesday and arrived around 9:45 am. We brought lawn chairs but they had some for people to use and there is plenty of shade. You can go inside and use the bathroom while you wait. Once the doors opened at 11 am the line kept moving along. We sat down and started eating by 11:55 am. The brisket is amazing and everything else was delicious too. If you're going to be in Austin and you love BBQ then definitely check it out.
Be prepared for some of the best BBQ you’ve ever had. We got in line at Franklins at 10:00 and didn’t make it to order until about 12-12:30 but it was well worth the wait. To start, the staff has to be some of the friendliest AND HAPPIEST staff I’ve ever come across. So much so it made my group and I question how much fun it is to work there. You can truly tell they enjoy what they get to do! I ordered the brisket sandwich and pinto beans and this brisket was Smokey, flavorful, tender and juicy. The pinto beans had a nice spice to them, but were just a little bit too watery, but even that couldn’t stop it from being a 5 star meal.
Worth the Wait! No wonder Franklin was the inspiration to many around Texas. Everything was perfectly executed and even though we visited a dozen of other BBQ places in Texas they did have the best brisket and pork ribs. We were 7th in line and our only wish was that Aaron stayed a little longer to welcome us but we understand business is business! The remaining staff was very friendly and welcoming.

Sixth stop on the Texas BBQ culinary tour. Today is the day dedicated to what is considered a BBQ monster here in Austin (and beyond) “Franklin,” whose books are also in airports. There is a wait as there is in all the places where there is very good food in the United States. There is a wait and the line is long. It is 11:30 in the morning and so I don't want to overdo it. I order half a pound of brisket, half a pound of pork ribs, a quarter pound of turkey and as a side I get the usual potato salad. The brisket is very tasty, savory and peppery; really well smoked, fatty, juicy, melts in the mouth. The pork ribs are exactly the way I like them, with a more tenacious bite than the ribs eaten at other barbecues, and they have a pronounced peppery flavor that drives me crazy. The turkey is good, with a nice smoky hint, nice and moist (which is then the real difficulty of cooking turkey) with a nice consistent bite. The potato salad, perhaps, is the only thing that didn't convince me or, at least, doesn't reflect my taste so much. The potatoes almost seem to be blended rather than mashed; it is almost a cream. Fortunately, the taste is very pleasant with the presence of the gherkin flavor very pronounced. The sauces and in particular the Espresso BBQ sauce deserve a mention. The service is not the quickest also because there is only one person at the meat cutting. The setting is very spartan even for an American barbecue with a space outside as well. The bill maybe a tad more expensive than other barbecues I have been to so far but it was definitely worth it.
Tastes as advertised. If you ask me, would I wait 2-3 hrs for this? No, but there not many things I would wait 2-3 hrs for in terms of dining. Is it the best bbq I’ve had ever? Yes. By a large margin? No. If I had to redo it, wouldn’t get the turkey. Just ribs and brisket. I pre ordered the 5 lbs ahead of time to go so didn’t have to wait in the line. Great experience and would do it again. Just make sure you have enough people to crush all the food.
Absolutely worth the wait! Waited in line for about an hour on a Sunday. Ended up trying the brisket, pulled pork, sausage, and beef ribs. Best brisket I have ever had. The pork ribs were literally falling off the bone while you ate it. All the employees were wonderful and very engaging. It was our first time there and after our experience we would definitely go back for more.
"As an update on my revivew, They have reached out to refund me what I paid extra", The food is actually quite good. The brisket was exceptional and the potato salad was nice and creamy. However, I was disappointed with the checkout experience. The cashier prompted me to tip based on the entire bill, which included merchandise, without clarifying that the tip would apply to the total—not just the food. As a result, I ended up tipping over 50% of my food order. In my opinion, that was a bit of a shady move. I’d advise others to double-check what they’re being charged for at the counter. Later they have reached out to correct the overcharged amount they refunded excessive amount on the same day. This is really an outstanding customer service.
We started queueing at 8h30 am for a saturday lunch, and it was worth the wait ! We ordered a bit of everything and it was all delicious, the best barbecue I've ever had. The most tender brisket, fall of the bone (giant) beef rib, moist turkey, great juicy jalapeno saussages ... The pecan pie was great, pretty large with generous filling. And the service was very good, people were very helpful and friendly.

The Meats: Textbook Perfection Brisket: The true test of a pitmaster, and the cook on this brisket was perfection. The smoke ring was deep, the moisture was flawless, and the flavor was unparalleled. The only minor complaint we could muster was that the bark was a little salty for my personal taste, but that is such a minor issue in the grand scheme of this flawless meat. Jalapeño and Cheddar Sausage: This was a standout. It was the best double grind sausage we've had in ages, boasting an excellent casing and snap. The cheese was awesome, oozing out in perfect pockets. Yum! Pork Ribs: the spare ribs were stellar. • The Ribs had a perfect pull, awesome flavor, and an excellent bark that were "fall off the bone" tender. Turkey: Sometimes, the unexpected is the best part. This moist turkey was thrown in for free, so of course, we loved it, but all kidding aside, this was the best smoked turkey I’ve had in a long time. It was incredibly tender and juicy, showing the same level of care as the beef and pork. Verdict This is more than just a meal; it’s a commitment to excellence. From the perfect brisket to the snappy, cheesy sausage, every cut is masterfully executed. If you are willing to embrace the wait, you will be rewarded with an experience that puts this establishment squarely in the conversation for the best BBQ on the planet.
Aaron is the best and it shows. The food and friendly service are great. I’ve been coming on and off for years. Main down side is the 2+ hour wait and they routinely sell out of items in the first hour or so. The hype is worth it, but it has become more of a tourist spot to me. Hard to be a loyal/returning customer when you simply don’t have 2+ hours to wait in line. I’ve never regretted coming and if you’ve never been, make the time. I do wish there was a way to be a little more friendly to families and regulars who love the food, but can’t carve out that time.
We ordered ahead so don’t need to queue. I never had BBQ this good - whole different level. The pulled pork was incredible and the brisket was melt in your mouth. Highly recommend

Arriving at noon, I found myself eagerly anticipating a delicious meal as I navigated a 2-hour wait before finally sitting down to enjoy my feast at 2:10 PM. Let me start with the star of the show—the brisket. It's truly a melt-in-your-mouth delight, incredibly juicy and full of flavor. While the meat near the skin can be a bit chewy, it’s so well seasoned that it’s delicious even on its own—no sauce needed! Then there are the pork ribs, which are nothing short of spectacular; they fall right off the bone with the slightest tug and are perfectly seasoned, making them a highlight of my meal. Now, about the sausage—it was the only disappointment. It had a chewy texture, and the flavor was lacking. The skin was tough, making it less enjoyable. However, I can confidently say that the brisket and ribs more than make up for this minor letdown. As for the service, the staff were incredibly friendly and upbeat, each one eager to share their knowledge about the menu. I did notice that they seemed a bit overwhelmed with the crowd, and perhaps adding another cashier or meat cutter would speed things up since the line was fairly long. The atmosphere of the place is charming, with a lively yet manageable noise level. The decor has this nostalgic vibe with its well-worn walls adorned with stickers and marks from visitors of the past, though many of those marks get painted over, leaving only the memories of those who visited before us. Get there early! Arrived at 1:30PM & it was about an hour wait - unfortunately, didn’t get to try everything…probably saved me from a bigger coma than I’m already in :) Best brisket I’ve ever had! Pork ribs & sausage are delish (was hoping for jalepeno). Slaw was good as well. Get yourself a Jester King beer, Coke, or big red while waiting!
My husband and I took a trip to San Antonio. We decided we wanted to take a day trip to Austin and I knew I really wanted to try the famous Franklin Barbecue. I had no interest in spending hours waiting in line, so I was happy to see that I could place an online order. The big downside is is a very large minimum order. I didn't really want to spend $225+ just to try it, but it was better than waiting in line. They also force you to tip (10% minimum I believe) for a takeout order which is a little frustrating. We ordered: - 2 lb Brisket (sliced) - 1 lb Ribs (sliced) - 1 lb Pulled Pork - 1 lb Turkey (sliced) - 1 Jalapeno Cheddar Sausage Link - Bourbon Banana Tart - Ruby's Dang Pie Our order also came with an entire load of white bread, pickles, onions, and BBQ sauce. They definitely don't give you enough sauce for the amount of meat, but they were happy to give us more when we asked for it. The meats are all great, but the brisket is definitely the star of the show. I love that they provide all of the other things with it so you can make a little sandwich or taco. The pies were both really good too. Overall, the food lasted us for probably 4 meals (2 people). I wish we had gotten more variety with some sides, but none of their sides sounded very good and I read that they're pretty mediocre. They have picnic tables outside that we ate at (we brought our own plates and utensils). All in all, I'm glad we got to try it. I wish the logistics were easier, so I don't really see myself coming back. I definitely think it's worth trying if you're up for the hassle.
We had to check it out when we arrived in Austin! The wait was about an hour - we grabbed a beer inside and enjoyed while waiting. We had brisket, pulled pork, and jal sausage (so yummy) and coleslaw. Well nothing was left! So tender, nice flavor and smoke! Definitely check it out - but I wouldn't wait if line is 3/4hr wait.
What an absolute banger! We arrived approx 08:50 and were 16th in line. The joint then opened at 11:00 and were ordered at 11:22. Was it worth it? You bet. The best flat (lean) brisket I have had in Texas with a nice balance of salt, pepper and smoke. The turkey burger was a cracker too.
Incredible BBQ, worth the hype and the wait! Tip, go during a Longhorns home game during the first half, the wait was about an hour instead of the typical 2-3 hrs. I’d give the taste the slightest edge over la barbecue, but la barbecue gets the edge on presentation and sides. I had brisket and pork ribs, I would have gotten a beef rib too but they were sold out before noon.
Got in line at 11:15 and sat down at 1:00. This was a Sunday so I expected a lot longer wait. There are people that come by the line periodically and tell you what's still available. There is a person inside that will write down what everyone is getting and will give you an estimate of it will be available. You can order less than a pound. I believe the minimum is a quarter pound for in person orders and 5 pounds for online orders. The beef ribs ran out by the time I got to order. Brisket was very good. It was very flavorful and tender. This is what I was looking forward to and it didn't disappoint. Pulled pork was really good. It had a lot of flavor. Turkey was good. It's hard to make turkey so they did a good job. Jalapeno sausage was very good. It had lots of flavor and good spice. The sauces hit the main styles and go well with the meats. Potato salad was a little too much mustard but it's a different style than I'm used to. Cole slaw could use more flavor but also attributed to different style. There's nothing wrong with either of them. We finished both of them. Definitely worth trying at least once.
We had a great experience. We went on a rainy Friday to try and avoid an extremely long wait. We got into line at 12:15PM and make it to the front at 1:30PM. I didn’t think it was too horrible. A staff member came by twice to let us know what they ran out of. Once we got to the front of the line the staff were very kind and answered all our questions. The brisket was AMAZING! Truly melt in your mouth. Pulled pork sandwiches were so tasty. Pork ribs were good. Regular sausage and potato salad were only okay in our opinion. Glad we finally experienced Franklin BBQ after living in Austin for 4 years!
Food: The hype is real! One of the best meats I’ve had, although the brisket was the clear winner. Meats were so flavorful and cooked perfectly! Service: Expect a line and for it to go slow but it’s def worth it! We got there an hour before opening and there was already a line. Atmosphere: Both indoor and outdoor seating suitable for large parties. Very casual ambiance. It’s also common to sit with people you don’t know as there’s more people than tables, but everyone is pretty friendly and you get to meet people from all over the country.
Pre ordered our food for a pick up and felt pretty smug skipping the massive line. Ordered the brisket, pulled pork, ribs and both types of links, pint of potato salad & coleslaw for health. Dessert we ordered the key lime pie, coconut & pineapple & pecan pie. In summary the brisket and coconut & pineapple pie 10/10. The 2.5 lbs of meat served the 4 of us for 3 meals! Spicy and Espresso sauce are great!
We focused our trip to Texas on BBQ, and of course Franklin Barbecue was our top priority — and it did not disappoint. We pre-ordered our food, so we didn’t wait in the iconic three-hour line. There is a five-pound minimum for pre-orders, but that definitely wasn’t a problem for us. We ordered the brisket, pulled pork, and two kinds of sausage. All of it was top-tier BBQ. The brisket was tender with a beautiful bark. I was surprised that it was sliced with the grain rather than against it, but it was still incredibly tender. The pulled pork was flavorful and perfectly shredded without being mushy. I was also happy to learn that the sausages are prepped and smoked in-house — you can absolutely taste the quality and care in the flavor. To top it all off, we were able to meet Aaron Franklin and even take a tour of the pits. He was incredibly welcoming, and seeing the pits up close was such a cool experience. The best Texas barbecue experience hands down. Great variety, smoked and cooked perfectly. Line up is part of the experience, we showed up before 8am on a Thursday and were first in line. About 40 people in line by 11am. Got a quick tour of the smoke room and chatted with the pit master on duty. Smells amazing anywhere near it.
We went Wednesday morning to wait in line & of course the food was worth it. The brisket was well seasoned & moist even with flat cut. The ribs were fall off the bone & tender to the bite while the jalapeño cheddar sausage really sealed the deal with its snapping sound & running juices from every bite. The inside area is really clean & organized so when get your food & drinks you have easy access to the utensils & bbq sauce area. Not my first time here but definitely not my last.
I waited 2.5 hours on a Tuesday which annoyed me BUT let me tell you… it was worth while. Ordered spare ribs, brisket, pulled pork and sausage with a side of beans. Every single item was delicious! Brisket was melt in your mouth amazing. The ribs were tender and juicy! The beans were so freaking delicious!! I wish I would have told the person preparing our plate to not add bbq sauce to the pulled pork but to be honest it was fine. I’m just not a fan of BBQ sauce. The best part of the experience was Esme, she was just an absolute sweet heart! It was very nice to be able to just chit chat with such a wonderful person!
We came sceptical of the hype we were proven wrong. Arrived at 9.15 on a Thursday morning 8th in line, fold out chairs are provided you can use the toilets and order a drink. Served promptly after opening at 11 eating by 11.15. It’s not hype its well deserved praise, the brisket beautiful but the stand out for us was the pork ribs.
It’s worth the wait! We got there on a Friday end of September at 9 am and got our food around 11:40am. The line itself is an experience you’ll remember! The barbecue is really good which I recommend trying a little bit of everything. You can get beverages while you are in line which makes waiting a bit more fun.
Franklin lives up to all the hype . Definitely one of the best BBQ place one has to visit when visiting Austin. I preorder my Briskets, pull pork and Ribs 2 weeks before my visit to Austin,as I did not want to miss out on the food. When we got there there was a line up outside the restaurant . For pre order go to the back of the restaurant for the pick up, the people working at the preorder were so friendly and polite . If you want to dine in , I would say the wait would be about 1-1.5 hours before you get a seat , that because the restaurant is not very big , The ambience is casual , pub like Price point :If you pre order online the minimum order is 2 lb for each meat , you’ll end up enough for 4-5 person . So it’s better to order at the restaurant that way you can order as much as you want .It’s pricey but worth it Food: The brisket is amazing, it’s melts in your mouth . The ribs so tender it’s falls off the bones and the pull pork is so very good, it’s soft , tender and not sweet which is perfect they give you the bbq sauce on the side .the coleslaw and the potato salad is really good too . Do not miss going to Franklins .
Brisket was the best I’ve ever had. The pork ribs were amazing as well. Pie was yummy! Rootbear refreshing. Staff were fantastic and helpful in other recommendations around the city. The wait was ok for being on vacation but not something we’d be able to do if this was our regular go-to joint.
We came to Austin for Maroon 5 concerts. Also we won't missed a chance to taste bbq tasting. So Franklin was the right ✅️ picked. 30 mnt earlier coming, there was long line up already. Still long line up even after entering the restaurant. But it was so worthed with delicious, juicy BBQ. Everything was so good. Western style ambiance is so dominant adding with the music. Employees was so friendly and helpful. Highly recommend for BBQ lovers.
Ding Ding Ding!!!! This has got to be the best Bar-B-Q in Texas!! Founded by Aaron Franklin, it's celebrated for its high-quality, salt-and-pepper-seasoned brisket and other meats like pork ribs, sausage, and turkey, all smoked over post oak. The restaurant has received numerous accolades, including a James Beard Award, and is considered a must-visit for barbecue enthusiasts. It was worth the wait….stood in line for 1 1/2 hours to get brisket and sides,they ran out of ribs…. But it’s ok,that’s why I will visit time and time again until the cows come home….🤣🤣 If you are ever in Austin,this is a must have!! Grab your lawn chair(light as possible)….it will be a wait! Everything is cooked with care and love!! I wish they would open a location in Dallas,Tx… Love,Peace,& Hair grease Family! This place definitely lives up to its reputation. The brisket melted in my mouth and the pulled pork was a taste of heaven. The turkey was nice and buttery but kinda tasted like a Pringle? Anyways everyone was super nice and met a few new friends in the line as well. We got here at 9 am on a Wednesday and were the third people in line. Even if the line is long it’s definitely worth trying!
Excellent meat but it's questionable whether it's worth a 1.5 hour wait. Queued at 10:20am on a chilly winter Thursday and got my food at 11:40am. $38 for 1/2 lb fatty brisket, one large pork rib, and one sausage link. Not bad. The brisket and sausage are excellent (sausage low key the star of the show; I like that it's sweet). Pork rib is good but I wouldn't get it again. A downside of BBQ is the meat cools off super quickly so it's significantly less tasty 10 minutes into eating it. The BBQ sauces are really good. The vinegar and espresso sauces are great and unique, while the classic is the best overall. Playing excellent old school outlaw country music on the radio while waiting in line. Staff super friendly. Lots of street parking in the area. I think overall I might prefer Terry Black's for their beef rib.
My friends and I took a trip down to Austin specifically to finally check this place out. The customer service was BEYOND incredible. From the lady getting a count of which BBQ you wanted while waiting in line, to the lady helping us wrap up our leftovers properly. Every single associate was beyond friendly, cheerful, loving and helpful. That in itself made the experience for us. Then you get to the food. And the BBQ speaks for itself once you taste it. By far the best BBQ I've had in the 15 years of being in the great state of Texas. This place is definitely worth the wait and experience. Make sure you let the staff know you want a tour of the smokehouse once you're done with your food. Such an awesome way to see the whole process. And meeting Aaron Franklin himself the night before topped off the whole excursion. All 6 in our group were beyond thrilled and pleased with Franklin Barbecue.
Finally got to check out Franklin BBQ after passing by so many times and always seeing those long lines out front. I’d been curious for a while and wanted to see if it was really worth the hype—and honestly, it is. A few friends and I went on a weekday, got there about 30 minutes before they opened, and there was already a small crowd waiting with foldable chairs, chatting and hanging out. The wait wasn’t bad at all. The brisket was ridiculously tender and flavorful, the ribs had that perfect smoky bite, and the sausage was juicy with just the right kick. Everything we tried was legit. Pro tip: if you're going with a group, definitely get a quarter or half pound of each meat instead of a full pound of anything. The portions are bigger than you'd think, and it’s easy to overorder. This way, you get to try a bit of everything without wasting food—or feeling like you need a nap afterward. All in all, it was a great experience. The food lived up to the reputation, the vibe was chill, and I’d totally go back again. If you’re in Austin and haven’t been yet, Franklin BBQ is one of those places you should try at least once.
As foretold, we made friends in line and the three hour wait zoomed by in a blur of laughter, shared foodie stores, and anticipation for the main event: Aaron's Brisket. We set out on this BBQ journey to find that unicorn brisket and I have to say we've found it! The cherry on the top was the man himself, on-site who even came to our table to check on us and share some kind words. He invited us to tour the pits which we did and afforded us an opportunity to ask some questions about their process and to snap a few photos. Bring a chair and some good stories to share, you won't be disappointed!

What can you say, best brisket in Texas! I’ve been here 2 times, yes you have to wait inline but it’s part of the experience! The cost is higher, but the quality will not disappoint! The brisket is the show stealer, juicy, great flavor and wonderful! It’s best to get here early find parking and enjoy the whole experience.
I flew in from NorCal just try this place out. I got there at 0700 on a Saturday morning, and there was already 10-15 people in line. When they finally opened at 11, there was easily 150 people waiting. The food is 100% worth the wait, and 100% worth the trip. The brisket, turkey, and ribs were truly the best I’ve ever had. It was SO GOOD!
Great experience! Came for an early Tuesday lunch and only had a short 15 minute wait. The brisket was the best I’ve ever had, so moist and delicious, even the lean cuts. The coleslaw was fine, nothing too fancy, but the brisket stole the show. Absolutely worth the trip, I’ll definitely be coming back.
Visited Franklin's Barbecue couple days ago. Joined the line at 12:30... Got served after 1.5-2 hours and they were on their last Brisket... It was the most amazing cut of meat I have ever had the chance to try. It was tender and the ends with the rub were tantalizingly salted. Before Franklin's I had been to Micklethwait (after a failed attempt to visit franklin's led to the dreaded sold out sign) and Terry Black's. The brisket at Franklin was the winner. Micklewait was close but Franklin was def more juicy/fresh/ tender. The potato salad at Micklewait was better. Terry Black was a will do in a pinch but not as good as Franklin or Miklewait. Back to the review, They legit had sold out of everything else when I got to the front of the line: sausages, turkey, ribs etc. The staff would come out and announce that xyz was sold out and people did not budge in the hopes of trying the brisket and so they stuck around till the end. The line itself is an experience. Nobody was upset or sad because the staff kept coming out with updates and were super nice and friendly. It kinda felt like the line for an iphone 6 except it was for brisket. People came here directly from airports with their bags and some left from Franklin's to the airport. Amazing and friendly staff PS: Try some Big Red with your order. Compliments the food and delish. Also if you want some rub or sauce buy it at the store and not outside at the airport cause its like 3x as much at AUS airport :)
We came all the way from Florida to try this BBQ. Waited in line for almost 2 hours and it was worth the wait. The meat was all incredible. The sauces are delicious. The beans and slaw were great. The potato salad was not my favorite but it wasn’t bad. The atmosphere and service was really great. I highly recommend giving this a try. Get there EARLY! They ran out of some stuff while we were in line but the brisket alone made it all worth it.
On my bucket list as the most famous BBQ restaurant in the world! Got there at 8am on a Sunday and was 14th in line. The Line gradually grew very long and they do run out of food so I highly recommend getting there early! I tried several meats including brisket, beef rib, pork ribs, regular and jalapeño sausage and turkey with beans and slaw! The brisket is as good as advertised and a must try, and the other items were delicious as well. I had leftovers that blew my socks off it was so good! Definitely worth a visit, glad I got it knocked off my bucket list. Austin was great! Wonderful time spent enjoying the city!
Not going to lie- never thought I'd go here. I am not a "wait in line to eat" person. I figured it was all hype. We were in the area today and it was later in the day so we thought- wonder if there is a line.... So we went and there was not. We got the brisket sandwich, the pulled pork sandwich and the pork ribs. Everything was outstanding. The brisket in particular. It was honestly some of the best brisket I have had. I liked the thick slices- not sure I have ever had it like that. Love/d it. They have 4 sauces you can experiment with as well though honestly nothing needed it- I used it on the potato salad. Picnic tables outside / covered and an inside. Everything was fantastic. Everyone that works there was very friendly and nice. 5 stars for sure. Well deserved.
I lived in Kansas City for 10 years so I’ve had a lot of good barbecue, but I had to go to Austin for a business trip. I landed at 9:45 AM and had the morning off, so I decided to venture into the Franklin Bbq line. I arrived in line at 10:15 on a Thursday and it was still pretty deep. They open at 11 AM and I actually didn’t get my food until 1145. Totally worth it though. Time went by pretty quickly. Brisket is like nothing I’ve ever had before. Pulled pork was great too. Highly recommended.
Amazing experience. Easily best brisket I’ve ever had. We only waited 40 minutes, must have been bad weather. I’d wait for it again. Bring a small cooler with beer and some friends. They dipped most or all of the meats in beef tallow right before serving, never had that before but it made all the meat appear so succulent and fresh.
Franklin Barbecue truly lives up to the hype. The brisket is hands down the best I’ve ever had—tender, flavorful, and absolutely worth trying at least once. They even provide camping chairs for guests waiting in line, which is a nice touch since we waited about an hour and a half. They had already run out of the Dino ribs by the time we ordered, which was a bit disappointing, and the selection of sides is limited. That said, the quality of the meats more than makes up for it. For me, this feels like more of an “experience” visit—something to do once for the tradition and the story. With so many fantastic BBQ spots in Austin, the long wait may not be worth repeating, but Franklin’s is still a 5-star establishment in its own right.
Group of 10 of us went. We got 5lbs of brisket, 12 ribs, 4 links of sausage and we ate it all. It was amazing!! The ribs were on par with the best I've ever had if not the best. The brisket was absolutely perfect. We got there at about 12:45 on a Sunday and waited about an hour to order. Periodically someone came through the line to ask what we were planning to order and giving a status on what was still available. Next time I hope to try the turkey and maybe some of the desserts. Been on my bucket list for a while. Everything it is cracked up to be. Brisket was fantastic. The beef rib was amazing. I was pleasantly surprised by the pork rib! Maybe not what they are known for, but it was delicious! Everyone was amazingly friendly and helpful. One of the staff even offered us a tour of the pit room to see where all the magic happens. Those smokers are something! Had a great time in line as well. Lot's of friendly customers to keep you company while you wait.
Arrived Friday am around 9:45. Brought our chairs and started waiting. A staff member was selling local beer so I tried the large which was very tasty. Around 11 the line started to move and then another staff member came out to the line and informed how long the wait is based on your approximate position, ours was 2 hours. She also took a soft order prepping your expectations like how much 2 ribs weigh, how much brisket you might like etc. The wait is long but ultimately worth it. The BBQ is awesome so juicy and flavorful. All in all a must try.
We've experienced Franklin a couple times before -- once during COVID for a to go order and once when we won a private dinner experience through a blood donation (still one of the coolest wins ever, unfortunately we didn't win this year, lol). This time, we were actually on our way to try a different BBQ spot when we noticed there was no line?? It was only 30 minutes before opening. This was right before the big freeze at the end of January, so everyone was huddled inside the patio trying to stay warm, but the vibes were still laid back and friendly. One thing we absolutely LOVE about Franklin is how they handle the wait. Doors are open before service starts, you can use the restroom, even grab drinks while you wait. That alone is elite level hospitality in the BBQ world. They also had someone walking around asking what people were thinking of ordering so they could gauge inventory, which is genius and helps manage expectations before you even get to the counter. Service was super friendly across the board. Everyone seemed genuinely happy to be there and wanted to make sure guests were taken care of. What we ordered: * Turkey - Moist and lightly seasoned, letting the meat shine. Simple and done right. * Beef Rib - Massive, tender, incredible smoke and bark. Surprisingly needed a little extra salt (yes, I said it ), but once we added it? WOW. * Brisket - We didn't think it would taste that different from the beef rib, but texturally it absolutely was. Melt-in-your-mouth tender with beautiful bark and the perfect level of seasoning. * Jalapeño Cheddar Sausage - Great snap, LOVED the gouda flavor * Pork Ribs - Fall-off-the-bone tender, smoky, and honestly some of the best we've had. We grabbed some bubbles (basically prosecco) while waiting and a Roadhouse beer. Alcohol prices are on the higher side, but the convenience of being able to sip while you wait, especially since we stopped in last minute, makes it worth it. We did forget to order the sausage initially, but it was super easy to walk over to the drink counter and add it without standing in the full line again. Also appreciate the free bread, pickles, onions, and sauce setup. It's the little things. Only slight hiccup: when it was time to line up for opening, they ask guests to honor the order of arrival. Unfortunately, people are people and not everyone follows the honor system. But that's not on the staff, they can only do so much. Overall, incredible food, thoughtful hospitality, and a super smooth experience even on a cold morning right before a freeze. Franklin continues to live up to the hype, and we'd absolutely go back.
Was in Austin for work and got a chance to try Franklin. Really wanted to see if it was worth the hype. I arrived around noon on a Thursday and it took 1h10 to get my food. Be prepared to wait. Seems like if you arrive after 1:30, wait is shorter. The brisket was amazing, very tender, not dry. Sausage was great, a lot of flavors. Bbq sauce were great as well. The spicy one was my favorite, just the right amount of spice (not too spicy). Sides were good/ok. Nothing special. Special mention to the key lime pie. Yummy! Worth trying at least once imho!
Not wanting to stand in line for hours was top priority, so we placed a to-go order and ate at one of the two benches by the to-go trailer in back. There was a 5 pound meat minimum so it ain't cheap to do it that way. No sides ordered, so I can't review those, but the meats were all top notch. Best brisket, turkey, and jalapeno cheddar sausage that we tried on a BBQ mecca type trip to Austin and Lockhart, TX. The flavor of each item was rich and delicious. The sleeper of the meats was the shredded beef brisket. That on a sandwich (bread provided) with the pickles and jalapeno and the espresso bbq sauce was phenomenal. They need to sell the espresso sauce in the bottle like the other sauce flavors.
THIS is why I picked Austin for this leg of my trip! While there can be up to a 3 hr wait, only about a dozen people were in line when I arrived (40 min before opening). I saw in an interview once, Aaron said winter is a good time to come to minimize the wait. I got 1/4 pound of everything and both sausage styles. This was hands down the best bbq I've had! I got to chatting with Taylor who gave me great info on the place as well as other recommendations for while I'm in town. She also hooked up a behind the scenes tour with one of the pit crew, Mattie. He is an awesome dude and I greatly appreciated his time! While it was all delicious, my top 3 on the plate: the jalapeño sausage, the turkey, and of course the brisket (in that order). Best bbq brisket I ever had. I have never had good brisket, unless I cooked it myself, until here. This meat was like butter in my mouth. He has converted me to brisket. I got to meat (pun intended) the man himself, Aaron Franklin, who was about as nice as a person can get. He was so gracious to take a picture with me. I actually stayed an extra day just to try it, and I am so glad I did. Just remember to show up early, like 2.5 hours early.
First time visiting this restaurant but had a recommendation from a friend. I had the pulled pork sandwich with a side of potato salad..everything was tasty. The pulled pork was juicy and tender and they had several sauce options you could apply..next time I'm in town will definitely need to try the brisket. You can't go wrong selecting this place.
Is it worth the wait? Absolutely!! I was first in line arriving at 6am. The line atmosphere was fun and vibrant meeting all the people sharing a love of BBQ. The wait went super fast too. We ordered everything on the menu and it was all amazing! And I mean perfect amazing. Its crazy they can pump out so much food everyday of such a high quality. Could not fault it. The best brisket you are going to have probably in your whole life, Franklin BBQ is second to none. The consistency of the meat, the portion size, the service and the experience of waiting in line just to have a slice of this magnificent food makes it a must do experience in Austin. I don't think it's that wise to arrive very early... However you can go at around 10 and wait in line for about an hour and still get some brisket. (We went on Saturday). Everything about this place is great! Don't miss it.

After years of reading about and watching Aaron Franklin’s techniques, I made it a priority to stop by during a Texas trip, and it did NOT disappoint. The brisket is the star of the show—tender, juicy, and bursting with flavor. The bark was absolutely perfect, delivering that smoky, caramelized crust I’d dreamed about. It’s everything you’d expect from Franklin’s mastery and more. The surprise standout was the jalapeño cheddar sausage, which took second place among the meats. I’m not even a huge sausage fan, but the gooey, cheesy goodness that oozed out with every slice was unreal—pure deliciousness! The turkey, pulled pork, and pork ribs were all fantastic, tying for third. Each one is absolutely worth ordering, showcasing the incredible range of Franklin’s craft. I only tried the potato salad as a side, which was solid but not the best I’ve ever had—still a great complement to the meats. I grabbed two pies to go, and I’ll update this review once I dig into those. For now, Franklin Barbecue is a must-visit for any BBQ lover. The hype is real, and it’s worth the wait!

After years of anticipation, the day finally came to purposely fly in from overseas, and stand in line for this legendary place! However ….. seems I built my hopes higher than the reality. Tender brisket for sure, but taste / rub / smokiness was unfortunate well below expectations. Sides were so so. Great atmosphere and service, but given this experience, I don’t think I will want to stand in line for another 4 hours any time soon. Got the T-shirt though 😊
If you want some BBQ, be ready to commit! Is it worth it? Absolutely. We arrived at 8 AM on a chilly Thursday, and we weren’t even the first ones there! Keep in mind, Franklin’s opens at 11 AM and serves until sold out—and when we left at 11:45 AM, the line was still out the door. If you’re planning to go, weekdays are definitely your best bet. We ordered just about everything on the menu: brisket, ribs, sausage, pulled pork, turkey, potato salad, pinto beans, and pie! All that came out to around $200, but we probably overdid it (pint-sized sides weren’t necessary). At least we had enough for two more meals! The restaurant itself is small, with seating both inside and outside. Arriving early is key—not just for guaranteed food, but also for parking and a table after you order. Everything is homemade, and my favorites were the ribs, sausage, and turkey. The brisket was great, but ours was a bit too salty for my taste. Even though doors officially open at 11 AM, they let us in early to warm up, grab drinks, and browse the store. If you’re thinking about making the trip—go for it. Just be prepared for the wait, because Franklin’s is an experience all on its own!
Finally made it here since I looked this place up back in 2019 and came onto my bucket list. It was late in the day when we arrived (2:30) as they close at 3:00. Totally expected them to be out of most things but surprisingly they still had plenty of brisket, which was what I came and wanted the most. I ordered 2.5 pounds, to me it was good, but I expected more. I know that sounds probably ungrateful but I can make a pretty decent brisket myself. I enjoyed the experience and the staff was amazing but I just expected more out of the brisket.

This place is all about the brisket, eat it while it is hot and tender. The pork ribs, sausage and pulled pork weren’t stand out but still enjoyable. Not a big fan of their sides like cole slaw or potato salad and the only thing i may reorder in the future is their pinto. Queues can be as long as 2 hours even from 11am and while the queue becomes much shorter at 12.45pm, they may run out of meats so be warned.
Franklin Barbecue fully lives up to its reputation and is absolutely worth the wait if you’re serious about great Texas BBQ. The brisket is the clear standout—perfectly smoked, incredibly tender, and packed with deep, rich flavor without needing sauce. The sides are simple but done right, complementing the meat instead of distracting from it. Despite the long lines, the experience feels well-organized, and the staff keep things moving efficiently. For the $20–30 range, the quality is exceptional, and it’s easy to see why Franklin Barbecue is considered a must-visit for barbecue fans.
Drove to Franklin from Houston on a Tuesday morning in January. Got there 1 1/2 hours before they opened and there were about 30 people in front of us. Between the weather being perfect and meeting some nice people in line, the wait was not bad. Wish I could say the food made up for the long drive and wait but we were a little disappointed. The brisket was just okay. The pork ribs were tender and the rub was excellent, but again, not what was expected from all the online hype. The jalapeño cheddar sausage though, now that was superb. Just the right amount of cheese and spice. We got pints of the coleslaw and potato salad. Both were underwhelming but we plan on seasoning the leftovers at home so it won’t go to waste. With all that said, this is not meant as a bad review in any way shape or form. It is very good barbeque. Our expectations were high with what we saw online, and we have better options that are much closer to home. If you are in Austin and want good bbq, then I would definitely recommend checking them out.
Franklin’s BBQ was definitely moist, tender, and super filling the flavors live up to the hype. The brisket especially was rich and juicy, and you can tell everything is smoked with care. That said, the experience itself has a few drawbacks. The lines get long, and once you’re inside it feels a bit cramped with not enough seating for how busy it gets. The menu is pretty limited on sides, and the price is definitely on the higher end. Parking is also tight, so be prepared to walk a little if you go during peak hours. Overall, though, it’s still a solid Austin BBQ spot worth trying at least once especially if you want that classic “Franklin’s experience.”
