Unity also shapes prices In Chiapas, Mexico, the Ts'umbal Xitalha' Cooperative transformed organic coffee farming into the cultural and economic heart of their community. Why should the price of coffee be decided on Wall Street? One of the many questions about speculative economics that lack a logical answer. The fact is, the farmers of the northern Chiapas rainforest had grown tired of the situation: coffee, their livelihood, didn't allow them to live with dignity. In 2001, they decided to organize themselves as the Ts'umbal Xitalha' Cooperative. Now, the coffee would belong to those who truly worked for it. At first, they didn't know how to do it. Yomol A’tel, a cooperative promoter, gave them the push they needed to fit perfectly into the value chain they were developing: organic coffee farming, gourmet coffee processing, and a value-added store. With only 22 producers, they didn't back down. Soon, they occupied a large part of the production space within the solidarity economy chain. Sixteen years later, it was no longer just about coffee: now it was also about honey and soap. Today, 244 families live and work in the cooperative. Not another sack of coffee was sold under the authoritarian dictates of New York. In time, they incorporated machinery, without losing the traditional, self-managed rhythm of planting. And something more: they were able to recover 90% of the land that had been taken from them by foreign industry.

It's a small but quite pleasant and welcoming place, the service was very good, I totally recommend it. What I didn't like is that it's on the side of the main road, there's dust from the transport, but other than that, very good, the facilities are very good.
