My wife and I had a fantastic dinner here. I had the bison burger which was great and she had the squash risotto which she also raves about.

While traveling for business and having not enjoyed the provided lunch I decided to try a nearby place. I was very hungry and didn't want anything complicated so I opted for a burger and truffle fries. Before the burger we ordered the chicken lollipops. These were splendid. The chicken was perfectly cooked with a bit of a crunch. They were laid on a sauce that had a hint of wasabi. Now, I'm not generally a fan of wasabi but this was simply amazing. The sauce and toasted sesame made every bite special. As for the burger... you won't find a better burger. Everything about was delicious from the melted cheese to the potatoes bun it was good from tje first bite to the last.

We had both breakfast and lunch at this place. The food was great, and the service was amazing. I love that they have different settings for different groups—whether you're just hanging out with friends or meeting with colleagues, there are spaces that suit your needs. When you arrive, make sure to let them seat you; otherwise, they might miss you, and you won't receive proper service.

Order from Restaurant week Menu was amazing food. Service was excellent and personable. I also had the lamb sliders and Bison Philly on another visit. The Philly was the best I ever had. The lamb sliders had lots of taste. I thought it was a little gammy for me, but I think some people would love this. Definitely, eating here is a unique experience and highly recommended.

Randomly ate here with my mom, younger special needs sister and a friend. The staff was very nice and accommodating. They were attentive and friendly. The food was very good as well. Our server Nada was amazing. She had great recommendations and was knowledgeable. She made sure we had everything we needed and made our experience very memorable.

Jorge was fantastic. He was an incredible server with a great personality. He made us a dip that we put our French fries in and I can’t stop thinking about it. Wonderful experience.

Very nice place inside the Hyatt Regency CO hotel. We liked the peaceful vibe and the upscale design. The food was very fresh and tasted great. They have kids menu with a good choice for the little ones. We had a good time!

Had breakfast at the Former Saint during our stay at the Hyatt Regency in Denver. The breakfast buffet and service were both great. The restaurant is large and nice done, we loved the experience!

I thoroughly enjoyed my evening at Former Saint! Thanks to Nada, our fantastic server, I was guided to try the restaurants best dishes. The brussel sprouts were the best I’ve ever had, the Bison Ribeye was incredible and the Mac & cheese will make you melt. I would have this dinner ten times over. Thank you Nada for your hospitality, I look forward to returning in the future!

Fabulous dining experience. Great views of street level Denver (including the blue bear), personable wait staff, trendy atmosphere, and incredible food. Highly recommend the prime rib steak and fish and chips. Perfect portions and big sides. I'll be coming back to check out more of their share-ables, like the elk carpaccio (pictured), and their cocktails!

Incredibly accommodating for dietary restrictions or general food requests. I needed bland, plain food after having some stomach issues, and Kimberly (am/afternoon) and Lacey (evening) were excellent advocates on my behalf to communicate my specific requests with the kitchen staff, and everything turned out perfectly exactly as I ordered, off menu. They were kind, patient, sensitive, knowledgeable, flexible, non-judgmental and extremely accommodating without complaint or annoyed attitude. Very much appreciated!! (FYI: online the menus say morning and noon, but "morning" (AKA breakfast) ends at 11 and "noon" (AKA lunch) starts at 11 am. They still accommodated my needs despite the time of day but the menu online could be clearer regarding times menus are served.)

Went there for Mothers Day brunch buffet. Prime was cooked great! The seafood table had all kinds of good stuff but the poke was very good. Deserts were very cool and delicious. The wife and my kiddo loved it. We will be back!

Our server Nada was very friendly and out-going, and went out of her way to give us great customer service. I did like the taco pastor, just wish there were bigger portions of it with my meal. Nada invited us to come back for dinner the next night, and we will definitely be coming back based on our experience so far. Other customers walking in all smiled and waved to her, so it seems a lot of people have had a good experience with her, and this type of service keeps business coming in for a restaurant.

I had the roasted chicken for dinner, and it was really good. It is literally half a chicken. So, I suggest sharing. Steven was my server, and he did a wonderful job. He was friendly and attentive and did a great job describing menu items. It was $50 for my entree and a glass of wine. So, it’s a little pricey but worth it. I will eat here again.

Absolutely fantastic in every way possible. Bang for buck value can not be stated high enough. The kind and polite nature of the staff was un real, our party was in full cosplay and we where not treated any differently. The saint has customers for life now. This is clearly a hidden gem as it was totally empty peak con.

I have to make sure the two people that helped me in my dire hour, get seen. Mya and Janet. I had been sick for days, unable to keep anything down due to a stomach condition. Still traveling for work, when I ended up at the Hyatt, I was exhausted and finally hungry. My family had no issues finding food on the menu, but after so many days of nothing in my stomach, I was nervous to eat anything too heavy. When I explained my situation to my server Mya, she sprang into action. She disappeared to the kitchen and came out with our chef Janet, who was holding a big hot bowl of fresh Chicken Noodle Soup. I could have cried. It was perfect. Delicious and so fresh. She even brought it out ahead of my families meals, knowing how hungry I was. It was not only thoughtful and considerate, it was exactly the balance of healthy food I needed. Besides my amazing experience, the Bison Burger my son had, he said he's ruined for any other burgers now. And the Bison Prime Rib was a cool cut to try. Excellent flavor. The potatoes totally hit the spot too. Thank you both again. We'll be back next year and remember you fondly!

After a few mixed experiences in Denver, we went here with no expectations. I have to say it has been one of the best dinners I have had since I have been in the US. The scallops were fantastic, the lamb shank delicious. We had a great night. Thank you everyone!

While attending a conference at the convention center next door, a group of us came here for lunch. They were pretty busy, but still able to get us seated in about 5 minutes. They offer a lunch buffet which isn’t huge, but it’s definitely adequate and much easier for them to keep up with than those typical huge buffets. I tried the buffet and it was solid. The food was fresh and tasty. My wife tried the Cubano and she really liked it, she especially liked the fries that came with it. Service was pretty decent and so was the décor. Overall, it’s a nice choice for lunch!

This environment is such a refreshing place to dine off a busy business district. Muna is the kindest sever you could ever encounter and the salad was honestly one of the best I’ve had in a long time after dining all over Denver. Fresh, thoughtfully prepared and I love that you can see an interactive kitchen where your food is being prepared.

Went here tonight for the first time and had an amazing experience. Maya, our server, was attentive, knowledgeable, helpful and friendly. I ordered the bass dish and was incredibly impressed at how flavorful, fresh, perfectly cooked and light the food was. My appetite hasn't been great but I completely cleaned my plate. My sister's ordered two different chicken dishes that they loved and a side of Mac n cheese to share. I was flabbergasted at the size and quality of the side dish (I also tried a bite), for 10$ it was more food and better tasting than you can get at supposedly 'cheaper' dining places. With gluten sensitivity where I can only eat very small amounts of gluten there were still tons of options I wanted to try. Will definitely be back to sample new things!

Do yourself a favor if you are here in Denver, go here for dinner and and make sure Trevor is at the bar. He’s a master of his craft and super engaging at the bar. He shares tips that he’s learned and makes incredible cocktails. The chinchurri ribeye is an amazing steak. This place will be a go to of mine whenever I’m in Denver.

Pretty basic hotel breakfast buffet. I do think it's a little more expensive than what's served. Service was great and fast and atmosphere was good for breakfast. Quiet and spacious, you're not cramped in with others and some other places I've been.

I stayed at Hyatt Regency Denver at Colorado Convention Center, so I gave it a try breakfast buffet here. Price was reasonable ($26) for the quality and quantity of foods they offered. I've been to over 60 hotels since last year and the service from this place was one of the best. Ms. Jordyn checked on me many times even though she was so busy. She responded quickly for every request I asked her. I always try omelet bar, and this one had a very busy but one of the best omelets so far. My favorite was pastries. They were so tasty and had lots of sorts of it. They were not cheaply made ones.I would highly recommend this buffet to anyone to stay at the hotel. The only reason I am giving 4 stars is seeing fruit flies at the food serving area.

The food at breakfast was pretty decent. Had an omelet station, fruits with lots of berries. Eggs, bacon, sausage, avacado toast. No cereals or oatmeal. Light fluffy croissants and pastries. Jordan, Michelle and Fidel all the staff were very nice. Lunch was a buffet done especially for ACS and it was ok the other day however strange combos. The soup was coconut lentil. Salad toppings were salmon, chicken or bbq tofu. For $18 for lunch it was decent just not spectacular. Globalist breakfast is the buffet which is very nice.

Former Saint is the closest bfast buffet to the convention center. The space is nice and bright, open and clean. The selection of food covers the bases with an omelet station, typical hot items, and fresh cold items as well. A good place to fill up before any long day of conventioning. Good value that will run abt $25 (hopefully on a per diem).

Had lunch here while attending a conference at the convention center across the street. Super crowded but we were able to sit quickly. Our meal came quickly as well and it was delicious! I had the seasonal greens salad with grilled chicken and it was very very good. It had blackberries, pine nuts, watermelon radishes and snow peas. The dressing was equally as tasty.

A great find at the corner of 15th & California directly across from the Colorado Convention Center. The kitchen is visible in the back left as you walk in. The restaurant is accessible from the street and from inside the hotel. The dining room is very large with high ceilings, a great place to have happy hour drinks. The tables I sat at we're along the windows that face the street. They had cute couches that you use to sit at the table. They're cute, but not practical, hard to eat at the table. The chicken biscuits were phenomenal. My favorite part of the meal. I got a burger for the entree and it was mediocre. Overall this place is great for the price and a good place to use to pregame before a show at the DCPA.

I came here with a friend for restaurant week and we left so full. They give out huge portions for each of the selections so by the time our entrees came we barley touched them. Overall the food was definitely the best part and we started with the pimento cheese and crackers with celery ( the crackers were amazing ! ) . Then I did the elote coquette's which were good but I wouldn't order them again and my friend got the quail and waffles with the waffles tasting like stuffing made inti waffles which was surprisingly good. For entrees she did the elk and I did the bison hanger steak both cooked perfectly. I enjoyed mine a little more for the flavors and the fries it came with were to die for ! The only negatives were the okay service and the ambiance. It was loud even with the place being half full and with the massive high ceilings it didn't feel intimate . You could also see where they served buffet breakfast from where we sat so it was a constant reminder it was a hotel.

The ambiance in this restaurant is wonderful. Its upscale enough to be a great date night place, while being inviting enough to bring in a family with small kids. The lights and open kitchen really elevate the space and make it a nice place to hang out it. The service is also wonderful - the people there are accommodating and kind and patient, but bring out food quickly and check in frequently. However, the food itself could be better. We got the fried eggplant and the mushroom ravioli, which tasted amazing, but were very small portions, especially for the price. (fried eggplant was $30 for ONE PIECE of eggplant). On the other hand we also got sides of mac and cheese and parmesan risotto, both of which were huge, (bigger than the entrees) but truly tasted like they had been made out of a kraft/kroger grocery shelf box. I also wish there were more vegetarian options -neither of the soups was vegetarian which was a little disappointing. Though we didn't have any drinks, the menu looked amazing. I would definitely come back here for drinks and to chill with friends or family, but I will not be coming back here for the food.

Since we were staying in the attached hotel, my colleague and I ate here twice. Both times she had minor issues with her food (higher level of spice than expected, doneness of meat not as requested) but my vegan dish was excellent. It's a nice atmosphere and the service was reasonable.

The restaurant itself is beautiful, and the full view of the kitchen from inside the lobby really elevates the atmosphere and overall experience. Unfortunately that along with the beer were the best part of the experience. We started out with the charcuterie plate which had a nice variety of cheese, salami, and some nice artisanal bread with a very heavy layer of garlic paste on top. The garlic on the artisanal bread overpowered every other flavor, so realizing we’d have all this leftover cheese and meat, we asked for some bread to-go, minus the garlic spread. We were told it would be an additional charge which we thought was fair. Then the bread came and it looked like the bimbo brand you get from the grocery store. We also ordered the local bass and scallops. Both were presented beautifully but both lacked butter, and truly any seasoning. Another unfortunate realization was that the beautiful summer squash, as well as the bass and scallops we were looking forward to were all undercooked and under seasoned.The floor manager walked around and seemed to be focused on making sure everyone was where they needed to be, and we felt he should be more focused on guests reactions to their meals. This meal was our one splurge for the trip and we left so hungry we returned to our room and ordered a pizza. I absolutely do not recommend coming here if you’re hungry or enjoy your food cooked correctly.

We had a large group of people for a business dinner. The half of the options that we received from the menu were underwhelming. The beat salad was the only appetizer that stood out. The main fish dish (picture attached) was dry and unpalatable. The service was relatively quick and attentive.

Hyatt Regency is a high-end hotel. This big open area restaurant almost feels fast casual. Food was above average, but our server disappeared and bounced around a lot. Despite having many other servers, passing our table and couldn’t seem to like anyone down, our server made a few mistakes that were noticeable, but for a fast casual business lunch near the convention center. It was OK

The atmosphere and service at Former Saint Craft Kitchen and Taps were good, but the food was not enjoyable to me. It lacked flavor. I stayed at the Hyatt where this restaurant is located so it was convenient to eat here during the convention I attended but there are definitely better options within a 5 minute walk from the hotel.

I had a simple breakfast here - oatmeal, eggs on the side, with coffee - and wasn't impressed. The toppings on the oatmeal were sparse and the staff seemed unhappy. (The Sam's No.3 diner down the street was much better, at a lower price.)

Please don't pay their ridiculous prices. I would not have eaten there if the hotel hadn't given me credit. I got the Benedict with trout cakes and my colleague got poached eggs, bacon and toast. All of our eggs were not hot enough and the whites were still runny. My roasted potatoes were under seasoned (needed a lot of pepper to counter the bland potato centers). I would have sent it back, but it took so long to come that we didn't have time. It looked pretty on the plate, but not worth it.

This review is based upon simply trying to get a reservation for Thanksgiving Dinner. It was our family’s tradition to have Thanksgiving at Altitude Restaurant at the Hyatt in Downtown Denver before Covid. Five phone calls to the Hyatt, going through their AI answering bot, and two calls to the Front Desk (personnel were very polite and tried to be helpful- but had no information), and finally getting through to the restaurant itself, the person answering said Former Saints was closed on Thanksgiving. The amount of effort I put into trying to get back the tradition for my family is proportionate to how many wonderful, and delicious memories we have made at Altitude and that hotel. Christmas, birthdays and even a wedding! But now not being able to get basic information along with the restaurant being closed for Thanksgiving? I am so disappointed in Hyatt. This is not what I expected as a long time guest… I hope they are able to return one day to what I have come to expect as the Hyatt standard of excellence. For now, very sad… looking for a new Thanksgiving venue to celebrate with family.

The food was over priced for small portions. The quality was far below what I was expecting. The waiting staff was adequate but failed to give a good explanation of any of our 3 entrees. We all felt that the expectation of what we would be getting didn't match what we actually got. The one burger we had was also cooked well done instead of medium rare. We will not be returning.

Clean, and service was good, but 1)the parking was expensive ($10 after the $20 discount from validation) 2) the food and drinks were quite expensive 3) the food wasn't very good. I didn't finish my meal, nor did my wife.

This is conveniently located in the hotel but if you can avoid it there a lots of better restaurants very close by! They try to be fancy and upscale but the service was bad and so was the overpriced food. The waitress tried in the beginning but then went MIA…well she was busy with complaints from almost every table around us so i felt bad for her but the food was just not good.we had gnocchi and they were so dry and not fresh at all.I tried to eat them but gave up.The bison steak was very bland and way undercooked.we complained and were not charged. Very disappointed dinner for a place that seemed like a good choice .

In town on business with a party of 11. Called ahead and made reservations for 7pm. The party arrived promptly at 7. The server took 10 minutes before coming to the table to greet us. It took another 10 minutes after that to get water. We ordered non alcoholic drinks which took another 10 minutes. I had to ask another waiter where our waiter was at, which she never said anything to our waiter because I watched her until our waiter finally made it to our table. The restaurant was not busy. I counted 10 tables empty just in our vicinity of the restaurant. 50 minutes in, drinks were not refilled and I asked for bread or something to keep the party from walking out. That never came. A hour later, the food arrived. Food was decent but nothing to make this stand out from some of the other restaurants in the area. Small portions for the price. Had to send the lamb dish back. Forced to tip 20% because of the size of the party. I highly recommend you find somewhere else to go, regardless of the number of stars. Thanks for the food headache and the bad impression from my team with making the reservation at this restaurant.

I ate here 2 nights out of necessity. No one in my party was impressed with any of their dinner meals. Drinks were fine. Bread pudding, however, was pretty good. I recommend avoiding it if possible.

Wanted to love this place and was excited to try with my friends for restaurant week but had an awful experience. Service was slow, steak was served rare when ordered medium, we finally had to flag someone down to get dessert & our check. Cherry on top was after having waited 20 minutes for a box a manager takes my bison prime rib (that I had taken 4 bites of) and tossed it without asking and then argued with me about how much steak had been left on my plate. Finally came back with a different to-go box of meat (not my own leftovers). The service and order error I would have let slide but the rude manager was unacceptable to me and I will not be back.

Food was really poor. Did not match beautiful interior. Everyone in our party had stomach pain after eating here. And the flavor was very bland. Smash burger was not a smash burger, just 2 small thin round patties.
