Breakfast was awesome.
Very upscale dinner restaurant. Older wealthier crowd. Great for a romantic dinner for 2. I wouldn't recommend it for parties and definitely not the place to bring the fellas for game night. Very long and expensive wine list and a full dinner menu with all the food groups. Steaks are their specialty and they have promotional posters throughout the accompanying Hilton hotel boasting of their chefs experience. Which although I can't vouch for seemed believable.
Pretty standard steakhouse fare. Quality ingredients, nice wine selection. Would have given it 4 stars but the service from the staff was stellar.
We had an 'after wedding" brunch for 27 people, the Capitol Chophouse was a perfect place. The food was terrific, chef and staff were very friendly and super accommodating. I thought price was very reasonable, almost all of our guests went with the buffet -- so easy for every to get what they want and no wait for food. Staff to organize everything were responsive and helpful beforehand too. We had a lovely room to ourselves in the rear of the restaurant. Perfect!
Ate our Thanksgiving dinner her. The food was beyond wonderful. Seasoned perfectly,cooked to perfection. Will definately be back next year.

If you are looking for a nice, pricey restaurant for a date or just really good food, AVOID THIS PLACE. I was really unimpressed. The food was good, but not fantastic- and when you spend 48 bucks on a steak (not including sides or tips or drinks- JUST a 12 ounce piece of meat) it really should be fantastic. The sides we ordered were good, but not great. They gave us rolls before dinner, and they were pretty mediocre. The salad was just a salad. There was nothing about this meal that made it better than anything you could get somewhere else for 1/4 the price.
Really great food. The best steak I have had for a long time and a great selection of wine to match food. Most excellent service too.
High quality food and excellent service - even for large groups. Definitely one of Madison's more expensive offerings, but not unreasonable for the quality.

I've ate at the Chophouse several times for both brunch and dinner. The food is consistently good, especially their brunch menu which features ingredients from the weekly farmer's market. The service is below average, especially for the higher than average prices. This used to be one of our frequent brunch spots, a hidden gem with bottomless mimosas for $15. Come back this year for the opening of brunch season and bottomless has run dry. Two watered down mimosas will run you $20. Slow service and now you can't even forget about the fact that waiter doesn't know the menu over the course of several drinks. If this were a food network show, Capitol Chophouse would be CHOPPED. Ted Allen shakes his head with mild discontent.
My husband and I are in Retail now but we were not when we got married in December. So to get away for our anniversary on Dec 3rd was difficult and we were so looking forward to a great meal out. We had been to the Capital Chophouse in Milwaukee and loved the experience. We were very disappointed in our experience at Capital Chophouse in Madison. The Badgers were playing the playoffs that night and the restaurant was quiet. We had made a reservation and they new it was our anniversary. They started off our romantic evening by seating us by the doors to the kitchen area. Then the waiter forgot to put in our appetizer. My husband ordered their steak that was on special and it was absolutely nothing special. I have cooked better prime ribs in my own oven. I love seafood and had amazing seafood at the Chophouse in Milwaukee and was looking forward to great seafood that night. My options were salmon or scallops. Very limited. I had the scallops that were to have an apple cider sweet and sour sauce with it. The sauce was literally a caramel sauce very much like what you would dunk your apple slices into. Again very disappointing. I am a great cook and do not mind paying the price for a meal cooked and presented more professionally than I can do at home. Unfortunately, that is not what I got here. I did absolutely love the special salad that we had, but it is kind of sad to say that the salad was the highlight of my meal! The waiter did comp us our drinks for the mistake of the appetizer, so I would not be writing this if that were the only problem of the evening.
We were excited about having steaks for dinner. The host was great. Very attentative and checked in as we waited for out of town guests whom arrived a few minutes late due to weather. We were seated immediately after they arrived. Our server came to our table right away. She took our order then we barely saw her. Our experience was all kinds of awful. One friend was served a cocktail with a side of someone else's lipstick on the glass. Finally an hour and 20 minutes after being seated and order places we got our food. Another girl brought it out. Still hadn't seen our server more than maybe twice. One friend ordered the rositto. It wasn't cooked fully. My boyfriend's steak was ordered medium rare. There was no red not blood remaining on his plate afterwards. Not to mention it was almost black when served. My friend asked for another drink, and when it was served we asked for the bills. 20 minutes passed as we still hadn't received the bill and had to ask the host where our waitress was. Finally at 945, we were able to leave. Overall, was not expecting this horrible of an experience. Food preparation was sub-par and service was not exceptional. We will more than likely not return. Not worth the price for the experience. *no photos were taken.
I wanted more from this place. We had a group of four of us and 2 steaks were overdone, one was fine, the scallops were unevenly cooked, and the lobster tail was overcooked and chewy. For the price, I was really expecting better things. The staff was friendly and facilities were clean, but there are better options around the square for the price you pay.
Well ugh what to say.....the frat house was anticipating bottomless mimosas for about 3 months. Went opening day only to find out they took it off the menu. Needless to say our enthusiasm dropped once we heard that. The GIANT cinnamon roll did satisfy this yetti's appetite.
Absolutely Terrible. I had high expectations for a restaurant of this price point. Wow, was I disappointed. I have had better food and service at McDonald's. We had drinks in the bar first, and the bartender made a mistake on one of the drinks in our party, nicely came by to apologize, and ignored our empty glasses. 10 minutes later we were able to hail her for another round. Then, on to dinner. Our bread arrived 90 seconds before our food, but note we waited 60 minutes for our food. The appetizers were overly salted and gross. My steak was literally rotten, and that didn't even warrant an apology. The prime rib my partner ordered was almost as bad as my rotten steak. The service was slow and non-existent - we waited again forever for a drink, much less the bread. The chowder was ok, but for your money you are better off going to Outback. At least their chowder is hot, tasty and their service actually exists.
The escargot tasted like it had been sitting in the tank for ages, very disheartening. The entrees showed up, and looked like a buffet style meal and tasted worse. At almost 40.00 per plate, I wouldn't have paid 10.00 anywhere else. Very disappointed as we have had great meals there in the past. The response was it's their slow time and apologize for the food. That said, customer service was great in the hotel and restaurant. May be our last time trying them for dinner.
Breakfast is same old buffet you get eery where... Runny instant eggs, oats with a crust on the top, sausage that was more grease than meat... Dinner was even more disappointing. Super over priced for the quality. Rib eye undercooked. Prime rib over cooked and served floating in some sauce that tasted like liquid smoke that killed any other flavor. ... Service was not good either... If you stay at the Hilton, do yourself a favor and walk up the street to tempest or one of the other restaurants in the area...
Very pricey for what you get, and there is no consistency - must depend on what kitchen staff they have that day. Up until recently, a lunch salad always came with a cup of soup. Now they charge $8.00 and call the same size soup "a bowl". The quantity and quality differ vastly every time I get lunch from there, which I will pry not be doing any longer. $23.21 is a grossly over inflated price for a lunch salad with chicken, and a small cup of soup. And it's hit or miss if they include a cookie and plastic ware. Used to love getting lunch from here, but it's just not worth it anymore.
My husband and I should have known the food would be awful when the place was practically empty on a Saturday evening. Both the ribeye and prime rib were pretty much flavorless. Would not recommend.
Worst brunch service ever. No one offered any direction to buffet, no coffee service. We were completely ignored. Terrible
The food is just adequate, but the worst part was that the service was indifferent.
