We are long-time Austin residents (>25 years) but had never been to J Carver's until last night. The experience top-notch. The setting and ambiance was very cozy. Our waiter was incredible and extremely knowledgeable and helpful. The food was outstanding. Everything we selected from the menu stood out as exceptionally tasty and well prepared. The center-cut steaks were perfectly cooked, tender and not overly salted (as can often be the case in steak restaurants). We finished by sharing the Belgian chocolate cake which was phenomenal. We all agreed that we highly recommend this restaurant and would definitely go again.

We went on New Year's Eve, made a last-minute reservation, and it was a wonderful experience. We enjoyed oysters, meat, and an amazing potato side dish. At the end, we ordered an enchanting drink—had four of them—and we truly loved it.Guilty Pleasure 🥳

Went here for my wife’s birthday and had a great all around experience. Greeted upon entering and politely seated immediately. Server was excellent, he was serious and wasn’t intrusive. We ate 6 oysters first. Perfectly shucked and beautiful. All accompaniments were on point. Next we had the hamachi crudo. It was Smokey sweet and sour. Great balance. Then we had the bone marrow. This is the dish I will crave and will bring me back for another visit. Thankfully they gave us warm moist towels after this dish because we were covered in meat butter. Before we got our steak they had us select our own style of steak knife. I thought this was a fun twist in the experience. Our entree was the porterhouse medium rare. Cooked perfectly and Smokey from the wood grill. Our sides were the baked potato gnocchi, mushrooms, and fried oyster with bernaise. For dessert we had the bananas foster bread pudding. All good! J Carvers is great for special occasions I would highly recommend.

J Carvers is my favorite restaurant in Austin. It’s on the pricy end but everything is worth it. They have fantastic wines to select from & all the martinis are FANTASTIC. I love the escargot- often overlooked, the baked potato gnocchi is to die for. & the service is TOP. NOTCH. This is the perfect spot to celebrate a special occasion, and every time my friend visits— we make time to dine in! Reservations are hard to get, so book in advance. & be prepared to have your mind seriously blown.

Chef James Dalton delivers a top-tier dining experience. Service was impeccable—prompt, warm, and attentive—and the cuisine was simply exceptional. Standouts included the appetizers, the signature “Godfather” cocktail, and a perfectly cooked 40 oz tomahawk steak. Dessert impressed just as much. Dining with friends elevated an already memorable night. This restaurant earns my highest recommendation.

We were so impressed and my husband immediately scheduled a business dinner there a few days after. I also wanted to say a huge thank you to the team for preparing the most delicious plain white rice and bread to go for me as my first real meal post emergency surgery.

This was our first time to dine at J. Carver’s. It was amazing. Ryan, our server, made the entire experience memorable. He was very patient as we asked questions. We were celebrating my mother’s birthday, which did not go unnoticed. The had a card and cake for her. Everyone, including the valet staff, was very nice. We will be returning.

The Food was delicious, we shared two massive Tomahawks and a bunch of sides and some starters including the homemade garlic bread, bone marrow, hamachi and oysters. All were of really good quality and prepared to perfection. Our waiter was very helpful in picking our food and even recommended the steak to be cooked to a certain temperature which we would have done different but definitely did not regret listening to him as they turned out perfect. Cozy atmosphere, pretty dark generally but the tables themselves were well lit.

J Carver is our go-to for a special night out! The food is phenomenal! One of the few places in austin with true caviar service! The lobster bisque is delicious and I almost always choose the Dover sole! Portions are very generous! And the staff is fantastic - very alert and quick to make sure everything is perfect.

AhhhMazing. So we check this place out because we got a recommendation from a local earlier that day. Excellent date night experience. Though it won't come cheap, you get what you pay for! We enjoyed everything! Recommend that you make a reservation. We reserved the bar seating and I'm glad that we did. The bar chairs were tall, padded, and vintage. Really comfortable. Plenty of room for our drinks and meal. We were there on a Sunday night. It was lively and full, but not loud. Upscale, 50s steakhouse vibe. Dark and romantic. Huge wine list. Steaks are aged and made to order. Oyster bar too, which we ordered a variety from. LOVED! From sweet and soft to salty and briney and somewhere in between. Their horseradish reminds me of the horseradish at St Elmo's Steakhouse in Indianapolis. You will be well cared for here. The owner of this place, also owns Red Ash. He has staff that have worked for him for over 10 years and say they always will. That is very telling. It's a great place. Highly recommend.

Returned to J Carver's yesterday after about a five-month hiatus, and the experience was absolutely flawless from start to finish. Jake at valet remembered us immediately, even though we arrived in a different car from our usual—that kind of recognition speaks volumes. The hostesses graciously ushered us to the waiting area while they prepared our seats at the bar, which is where we always prefer to sit. Seeing Jessie and Tate behind the bar was like reconnecting with old friends. Jessie makes an incredible passion fruit tequila spritzer, and yesterday she added a special touch with fresh passion fruit for garnish. They were attentive as always, anticipating our drink needs and keeping us informed about menu changes and specials. I even noticed the new knife selection they're using—small details that show their commitment to excellence. The Wagyu ribeye special was nothing short of exceptional. When I asked about modifying the risotto, they happily substituted a wild mushroom risotto that paired perfectly with the steak. My wife's shrimp was excellent, and we started with a steak tartare that set the perfect tone for the meal. What truly sets J Carver's apart is how everyone creates this warm, graceful atmosphere. Keri is clearly running a top-notch establishment where attention to detail is remarkable; they even remembered my preferred temperature for steak without prompting. This is truly one of Austin's premier dining destinations—exceptional food and drinks, of course, but it's the way they make you feel so genuinely welcome that elevates the experience to something special. The Voice Over Closet

One of the best dinners I have had in a very long time. We celebrated our anniversary here, and they had a beautiful card and rose for us. Our waitress was phenomenal. She explained everything so well which made the dining experience that much more elevated. They were very accommodating of my pregnancy and advised me of alternatives for me. Along with our wonderful steak and the delicious creamed corn, we ordered the escargot which were in puff pastries and were excellent! They also gifted us with complimentary cocktails and, in celebration of our anniversary, a free dessert! It definitely came with a price tag so be prepared for that, but it was well worth it and we hope to be back!

We arrived a little earlier than our reservation, and thankfully they were able to seat us almost an hour ahead, which was great. The service was excellent, our waiter was attentive and friendly throughout the evening. 100 points for him! That said, I did feel the pacing between courses was quite slow. The escargots were delicious, the Caesar salad was very good, and the center cut steak was flavorful, although the portion seemed smaller than expected. The fries, on the other hand, were outstanding! One really fun touch: you can actually choose what type of knife you want to use for your steak, which is different and cool. What I do think needs attention is the dress code. This is a high-end restaurant that promotes a business casual environment, yet several tables around us had guests wearing baseball caps during dinner, and at one point a man came in wearing denim shorts and a hat. In my opinion, that shouldn’t be acceptable for a restaurant that presents itself as fine dining — it takes away from the overall elevated experience that J Carver’s is clearly trying to offer.

I held high expectations for the place, but it’s not good for my first visit. I asked for a medium well New York steak, the outter layer is overcooked while the inside is still rare. The waiter never dropped a single smile to us and constantly asking if we are ready with a poker face. I don’t know if he was having a bad day or if he doesn’t like us or if it’s just the vibe of the place to be serving like that, we didn’t feel welcomed at all. Fooled by the good rating.
