We had the opportunity to visit Quinta Brava for a cooking class this week. The team were absolutely wonderful, providing a free hotel pick-up, as well as drop-off after. Upon arrival at the farm, we had an opportunity to plan and discuss the day, and to visit the market to see where the local ingredients are purchased daily. Throughout the day, we had the opportunity to learn about Oaxacan cuisine and what makes it so special. We had the opportunity to cook and to try so many unique dishes and flavours. This is a must-do for anyone who is passionate about food.
My wife and I attended through an Airbnb experience. We loved it. Working with Jessica was seamless and travel to try property was easy. Miguel was a stellar host and chef He was funny and engaging and extremely well read on all types of Oaxacan cooking. The menu was developed in real time with a really fun group of fellow participants, then the class walked to a charming local market and then Quinta brava’s own home farm to source the ingredients. Food prep was instructive and hands on. We loved learning the techniques but also the un-learning process. Chef Miguel focuses on intuition and creativity over strict rules and the resulting meal was unique and very much our own. The staff was excellent. They worked very hard and picked up the slack for us participants as the afternoon went on. Highly recommend this experience.

I learned so much from Miguel today regarding the rich history of Oaxacan food. Plenty of opportunities for hands on and ability to adapt the activities to suit all skill levels. The menu was designed to suit the interests of the group. Would highly recommend for anyone who is in Oaxaca for a short period of time and looking to immerse themselves in the food culture. Lasted approximately 7 hours in total, though couldn’t believe how quick the time flew! Thanks again!
We had a really wonderful day with Miguel’s group. Definitely the best cooking class I’ve ever taken given how comprehensive and hospitable the whole experience was from the pickup from our hotel by Rafael to even the friendly and adorable dogs at the property. It really felt like being invited to a friend’s home to share their love for cooking and good food. You’ll really come away from the experience with a good appreciation of the delicious Oaxaca cuisine as well as a full belly!
One of the best days I've spent in Mexico! Miguel is friendly, knowledgeable and so happy to share and create an unforgettable experience. He went above and beyond to curate the day for me. The menu was tailored to suit me as a vegetarian, what I wanted to learn about and how to translate it back to my home kitchen. And the food! Everything was so delicious and packed with flavour. Cannot recommend highly enough.
My brother and I signed up for the cooking class after looking at a lot of options online. Simply put, we made the right decision. Starting with picking us up at our Airbnb in the morning, everything slowed smoothly and professionally. The class takes place at the most charming little urban farm filled with ducks, chickens, dogs and gardens. I went into the day with apprehension due to some high maintenance eating restrictions and Chef Miguel not only worked around those when choosing the menu, but never made me feel like the odd one out. I would highly recommend this experience regardless of your cooking skill level. And be sure to get some of the chocolate before you leave, it was like nothing we'd ever tasted before. Highly recommend taking a cooking class with Chef Mike at the Quinta Brava! It was definitely a highlight of our trip to Oaxaca. Chef Mike welcomed our group to the Quinta Brava where we had the privilege to cook outside in an open air traditional Oaxaca kitchen setting. We cooked a 3-course meal and it was delicious! The colors, the flavors, the history and culture behind it —incredible! Chef Mike made us all feel at home, and shared his around the world wealth of knowledge. Such an unforgettable experience. What a wonderful experience to be able to take a cooking class from Quinta Brava! We met Sioux Chef Esteban and he did a fantastic job! He is personable, knowledgeable and fun to be with! We learned how to cook sauces, mole and a soup! We also made a nice desert! We ate and laughed together while making new friends at the cooking class! It was also great going to the market and buying all the fresh ingredients we were going to use. I can’t wait to make the recipes that we learned and incorporate this into my kitchen. Also, thank you to Monica and the rest of the staff for always making sure we had everything we needed!
Absolutely incredible experience with Miguel!!! The attention to detail on this course is beautiful. We made tortillas from scratch, memelas, tetelas, empanadas, quesadillas, 4 types of salsa, sopa de rancha, 2 types of mole, tamales and a plátano desert!!!!! Endless amounts of delicious food and mescal in a gorgeous place. Miguel also kindly sent everyone all the recipes and tons of recommendations after our day together. It was a gorgeous introduction to traditional Oaxacan cuisine and culture with a super friendly, patient and charismatic host. Gracias!!!
Amazing day from start to finish. Miguel talks and instructs with so much knowledge and passion. We were really involved in all the cooking and made to feel at home. The setting is superb with an open kitchen and loads of animals. Couldn't recommend this highly enough! A huge thanks to Miguel and all the team!
Amazing experience! Miguels home has a humongous and beautiful outdoor garden and its just super chill to just be there. Add awesome food, stories from miguel, cooking class, market tour and friendly animals, its a cant miss activity in oaxaca. We stayed from 9am to 4:30pm. Long day but super chill and you will stuff yourself w great food that you will help make.
We took a cooking class here and we chose this place compared to the many other cooking experience options because of the great reviews they had on Airbnb and also because of how well Miguel described his place. It's a massive outdoor space with an outdoor and indoor kitchen. He has dogs and cats and chickens on the property but each space is well designed so you can escape all the wildlife or dive right in. Miguel is the star of the show, from his stories to his personality and experiences. A great person to know much less to get a private cooking class from. We ended up there with a woman from Lithuania who was living in NY. And Miguel had someone pick us up from our place in Jalatlaco and also drop us off. We cooked so many dishes and walked to the nearby market and walked to the nearby place to get everything ground up - what an experience. The atmosphere was fun and you can tailor it any way you want. Clean bathroom, places to lounge, some mezcal, and so much knowledge. I've been to cooking classes where it's like a bootcamp, this was like a private oasis. You really learn about ingredients, the history, and how a professional chef like Miguel learned his skills and how he thinks about flavors. You don't just meet Miguel there, your money supports the person who drives you, his sous chef who has been cooking longer than I've been alive, the person who is there doing a workaway gig, and the other people who help run the space. That makes me feel great.
This was our best ABB experience ever! Our host Miguel, "Mike" is an absolute delight. His outdoor dining property is beautiful and brimming with joyous life. His food is clean, fresh wholesome and tasty. Quinta Brava is an experience not, under any circumstances, to be missed!

This class was everything. The best day of our honeymoon in Mexico. We had so much fun and learned a lot. We felt like a part of the family, the outside kitchen is heaven. Would come back anytime.

Miguel's teaching method is exactly what we were looking for. He shows you methods and processes that you can take home and actually apply in your own kitchen. We also really appreciate the point he makes about enjoying the cooking and preparation instead of rushing through the process. This time can be an opportunity to connect with your family and those around you. As for the food, it was amazing! As was the market they take you to to buy the food you'll be preparing. What a beautiful space and neighborhood! Since being home we've found that a cast iron griddle on top of our wood stove works great for roasting vegetables for salsa, making all things Maseca related, and for finishing quesadillas!! Thanks for sharing these skills with us. We make fresh tortillas almost once a day now. This was a major goal of ours.

Excelente lugar para pasarla pasarla muy bien con la Familia, hicimos la reservación y nos sorprendimos que fue para nosotros solos, la atención fue de primera de parte del personal y la reseña del chef del concepto del restorante fue excepcional, sin duda vamos a regresar. Muy recomendable

The cooking class with Chef Miguel was incredible it really exceed our expectations. Everything was really well organised, he welcomed us in his beautiful home in Oaxca, with an amazing garden were there are cultivating all the Erbs and vegetables. The energy in the group was really positive and he gave us a extremely accurate overview of the Oaxaca cuisine, how was invented with all the difference influences from all over the words, how the ancestral way of cooking from the prehispanic colonisation mixed with all the trades and the result is an amazing cuisine, special one coming from the important of people together to share moments in cooking and eating together, which we loved since is part of our culture too. Cooking is not just a moment in your day is the special moment of the day!! We were able to cook with his expertise supervision and Jose' and Vicky the first Mole of our life!! Thank you Chef Miguel! Definitivamente una de mis experiencias favoritas en mi corta visita a Oaxaca que le recomendaría a toda persona enamorada de la cocina mexicana y oaxaqueña. Miguel no es sólo un gran chef sino también un gran anfitrión e instructor de cocina. Todo empezó con la recogida al hotel que él organizó. Después de conocer su historia y seleccionar nuestros ingredientes recogimos algunos de ellos frescos en su huerto y el resto salimos a comprar al mercado. De ahí cocinamos todo y comimos increíble. Excelente experiencia, además de aprender a cocinar, ciertos platillos típicos (salsas, cierto mole, postre deli de plátano,etc.) te hacen sentir como en casa. El chef y todo el personal, súper educado, respetuoso y atentos. Una experiencia que vale la pena vivir si vas a Oaxaca.

We had the coolest experience! Jose took care of us the day of the cooking class and Pedro Assistent him in the kitchen. The place is outstanding, a bit hacienda a little outside the city. They take care of everything that day. Once we arrived, we decided what to cook that day and then went to the market to shopping the last ingredients. We prepared a little brunch snack (empanadas) with self made tortillas and fillings and after the lunch which was a soup, some meat with mole and rice and a dessert. The day was so special and we would totally recommend it.
We loved our cooking class at Quinta Brava! It’s a full experience, going from 9am to 3pm, starting with welcome coffee and snack in their beautiful garden. We discussed what we would make before heading to the market to buy what we needed. We appreciated how hands on the cooking was: we got to grind masa on the metate and press our own tortillas and cooked empenadas and tetelas on the comal. We made the most delicious squash blossom soup and almond mole! We even made a plantain dessert. This was one of the best meals we ate while in Oaxaca. They also shared all the recipes so we can try making it again at home. I highly recommend Quinta Brava if you are looking for a full cooking experience while in Oaxaca.
My wife and I, along with our 6 year old son spent the day in the company of Chef Miguel, his team and his family, which included 3 beautiful dogs. It was interesting, engaging and informative. The way the day was hosted meant it never felt like a class, more like a gathering of old friends you hadn’t met yet. Our son, being the only child there was included for as long as he wanted to be and allowed to enjoy the lovely garden space and placid dogs when he had had enough. I couldn’t recommend this highly enough. xx
Loved our cooking class and the owner is awesome and very knowledgeable of all spices and method. A very chill environment and makes it feel like we are just cooking at their home and learnt all different types of cooking method. Highly recommended to spend half day here enjoying the local vibe.
I really enjoyed my class with Mike, and took away a lot more confidence and tips for back home. We even decided the menu around what I liked, and also what ingredients I should be able to find in Australia. I ended up being the only one there due to some late cancellations, so I got the opportunity to do the whole thing in Spanish which was great for my practice! I loved how we went to the garden to pick stuff, then walked out to the local market to buy things which we didn't have. It was a great experience. In the end, I got to sit down and enjoy the meal with the whole family which was great given I was travelling solo. I looked at a few different tours, and I'm really glad this is the one I ended up picking.
La MEJOR comida class! I booked with them because of their attractive and detailed agenda/experience listed. Additionally, they're inclusive to all travelers, which being 2025, all businesses should be. The entire experience from booking to return transportation to my hotel was beyond AMAZING! I was humbled, honored, and felt at home for the entire day (just over 6 hours)! Chef Miguel and his staff are wonderful! The class is personalized, tailored to the guests, which is refreshing. I love how Chef Miguel let me take the reins and prepare all the dishes, with help from staff. As a private Chef, this has been hands-down la mejor cooking experiences! I would give 10 stars if possible. I recommend everyone interested in taking a cooking class, regardless of experience, book their class when in Oaxaca! Their rancho and cocina are the real thing! A definite MUST do in Oaxaca!
This was an incredible experience. Miguel was a fun, lively, flexible, knowledgeable guide on our journey through the cooking history and culture of Oaxaca. The food was also delicious! My personal highlight was the mole sampling. We had 9 different moles in front of us and sampled each one. Afterwards we made empanadas and everyone was able to chose some of their favorite moles to include in the empanada. Awesome! Miguel's team is also great: Making the booking was easy. Hotel/ AirBnB pickup was very convenient. The kitchen support were friendly, patient, funny, attentive, and good teachers. Can't recommend highly enough.
Miguel and his team are amazing - can’t recommend them enough!! We had a great time personalizing our menu for the day, and we learned a lot from Miguel along the way, cooking an incredible meal. Definitely come hungry. If there’s specific things you want to learn, be sure to mention them so that Miguel and his team can incorporate it into the menu as much as possible. Miguel’s property is a beautiful oasis and a great location to learn to cook traditional Oaxacan food.
A 5 STAR EXPERIENCE - we've been here and there and all around and this is an all time favorite city travel experience. We entered the day not even being fans of traditional mole and walked away loving and understanding so much more about Mexican food and cooking. And, yes, fell in love with almost all 8 of Miguel's fabulous moles in additional to the other delicious course we help make. I'd just be repeating what everyone else did about how lovely Miguel and his people are, the ground gorgeous and the Cute dogs an added plus. Read the details from other reviews. Such an inspiring local working family and that an honor to get to cook and play with them for a day. Try not to schedule something right after this tour. It's way more fun and relaxed to go with Miguel's flow. We'll be back someday.
This was a great experience! I had been traveling around Oaxaca with friends and I stayed a few days extra, so I was looking for something fun to do as a solo traveler. In my cooking group I found someone else from Seattle (where I’m from), so we immediately connected. Chef Miguel and all the staff were friendly and welcoming. We got to choose what we wanted to cook, with some direction from Miguel, and I appreciated the flexibility and kind of go-with-the-flow approach. Miguel has a wealth of knowledge about Oaxaca’s cuisine and I learned so much about its history. Not only was the food delicious and abundant, but I also feel like I could repeat some of the recipes at home. The kitchen is located on a beautiful property with Miguel’s adorable dogs. I highly recommend this cooking class.
Miguel and his staff were extremely nice hosts. They picked us up in Oaxaca City. Then with a coffee & chocolate & Quesadilla we got to know each other and we discussed the dishes the group was interested in. So we picked the Menu. The whole day with the group, and Miguel + Diego all the others was awesome from start to finish. We went to the local market and his own garden to pick up the food which we prepared. Instructions by Miguel were superb. The menu we agreed on was to make our own tortilla flour and then make tortillas and Memelas. Therefore, we made 4 different Salas and could taste 8 different kinds of mole. Also, we prepared Cochinita pibil and al pastor as meat, which was simply heaven. We also made a typical sopa. The menu finished with a delicious banana stuffed desert. We could have a beer or mezcal at any time. The day started at 9 am and ended at 5 pm. So, 8 hours of pure joy and happiness. A MUST do in Oaxaca.
Had the best day of my vacation here. Miguel is very knowledgeable about Oaxacan cuisine, and has created a lovely experience for his clients. It is an immersive hands on friendly experience. He got to know our interests, created a menu together, took us to market to purchase ingredients, and then expertly and attentively coached us while we made tamales, tortillas, moles, salsas, pastor tacos, pork rib soup, corn meal cakes, He can accomadate vegetarians and food allergies. Beer, mezcal, agua frescas all provided. Loved it !
If you love food and cooking, this is a great way to spend a day! We had a great time with Miguel and his team! He introduced us to the world of Oaxacan cooking. For starters, we learned how to make tortillas, tetelas, empanadas and memelas. And how to create a huge variety of salsas from the same ingredients by changing preparation methods. We also tasted 9 moles and cooked a 4 course menu, including making adobo sauce and the best tacos al pastor I’ve had yet! It’s a hands-on experience, Miguel and his team are great hosts - and the garden where you will spend the day is beautiful.
DO NOT LEAVE OAXACA WITHOUT TAKING THIS CLASS! I am disappointed that I cannot give 6 starts for this review. After a week in Oaxaca that can only be described as a heavenly gastronomic experience, I took Chef Miguel’s class on my last day there. My hope was to bring back the techniques of Oaxacan cooking with me to Boston. After touring their herb garden and the local market, he and his assistant, Chef Esteban, patiently walked us through the process of making tortillas & mole from their base ingredients. We made 4 batches of salsa, each with tomatoes that were cooked by different methods. This allowed us to sense firsthand the effects of roasting, frying, boiling and grilling on the taste of the salsa. All participated in the prep and cooking. We had a fried tortilla soup that was to die for. Though I did not have a bad meal in Oaxaca, our home-cooked lunch of pork ribs & chicken with three different mole sauces was clearly the BEST meal I had on my trip. We even made our own dessert, but I don’t want to spoil all the experience for you. TAKE THE CLASS. I have just returned, and am searching for ingredients in my local Latino markets so that I can continue the journey launched for me by Miguel, Esteban and Casa Brava. Buen provecho!
We had a very good time with Miguel. While we came with little expectations ended up to be the best thing we did in Oaxaca, maybe whole Mexico. We got a mole tasting, did 4 salsas in 4 different ways, learned how to do real tortillas, in an old fashion way and with corn flour. But that was all just the start. We also did Empanadas and similar things, which names I've forgotten, we made our own mole, we did a banana based dessert and cooked an easy soup. Whatever we asked, Miguel had it there and shared with us. We basically could drink and eat as much as we wanted. But beware: This class is meant for people, that want to COOK! So if you're into culinary adventures that you prepared yourself, that's the place to be. Per person we payed 2000$ - a high price, but worth it!
Miguel and Jess were absolutely incredible. I had come for the chocolate class while two other guests were there for the cooking class. They were kind enough to combine the two classes after checking with us so that we could all learn everything together. Miguel’s passion for food is evident and I learned a tremendous amount through his cooking style. We took a trip to the mill, the market, and made some really incredible dishes with a few key ingredients. The family was so welcoming and kind and made our group feel like we were old friends. Finally, I had the pleasure of riding Rafael who drove us to and from Miguel and Jess’s home. Rafael was a joy to be around. He was excited to practice his English and patiently teach me some Spanish, and shared a lot about his love of Oaxaca on the drive. All together it is one of the best experiences I’ve had in Oaxaca and I can’t recommend it highly enough for anyone traveling in the region.
We had the most wonderful time at Quinta Brava. Miguel is an excellent host and teacher. He really makes sure you get the most out of this experience by editing the menu to include items that you are most excited to learn about. The food is fantastic, whether you are a meat eater, or (like me) a vegetarian. Miguel knows how to bring out the beautiful flavors of every dish. Estella was a joy to spend time with, helping us in the kitchen and guiding us through the market. And the property is gorgeous. We started the day being picked up from our Airbnb in Centro and went 15 - 20 mins out of the city to Miguel’s lovely property surrounded by fruit trees. After a quick coffee and choosing the food we’d make we headed out to the market to pick up what we needed for our meals. When we returned we got into cooking and started making tortillas for empanadas. Next it’s time for salsa, soup and the Mole. Last but not least we made plantain de moletes - this was our favourite dish. Of course eating the food after we made it was a huge highlight and was enjoyed with mezcal and fresh fruit water. An incredible experience, Miguel and Estella were fantastic hosts, so warm and welcoming (despite our lack of Espanol). Visiting the market with Estella was great fun and cooking with Miguel was brilliant, so much information to absorb and recipes to take away which are super useful when learning in a new environment, with different and new ingredients. The location is also beautiful, we would highly recommend visiting Quinta Brava.
