Rodeado de 3,400+ botellas diferentes de tequila, este restaurante es una pecera de cristal dentro del antiguo cuarto de máquinas de la Hacienda, cuyos muros se mantienen intactos. La cocina es del más alto nivel, una verdadera experiencia de clase mundial. Algunos vegetales y hierbas los cosechan de su propio huerto elevado (foto). El servicio excepcional, cada detalle está ultra cuidado. Incluso hay una sala privada disponible para total intimidad. El menú degustación cuesta $2,500 MXN por persona (sin vino) ó $4,000 con maridaje. También puedes pedir a la carta y hasta tienen menú infantil. Además, pet friendly. Volveremos encantados!

Muy lindo el lugar, la comida excepcional, la atención del personal de lo mejor, desde que llegas te reciben y te invitan a probar las bebidas, el lugar es una hacienda y dentro está el hotel y el restaurante. Me tocó ver un venado. El rango de precios es aceptable, por persona 1000 pesos aproximadamente.

No le pongo 6 estrellas solo porque no tengo forma. Excelente servicio desde la bienvenida. Menú de degustación de elevadísimo nivel. Altamente recomendado.

El Restaurant está en lo que era el área de máquinas de la hacienda. Modernizaron los espacios y quedó un ambiente super agradable. Los platillos están muy bien presentados y preparados con especias cultivadas en la hacienda......una delicia.

Una experiencia extraordinaria, el lugar es arquitectonicamente hermoso. La calidad de los alimentos y bebidas es exquisito. El servicio excelente. Y en conjunto de elementos que hacen una experiencia memorable. Rango de precios por persona entre 1000 a 2000 pesos. Con consumo moderado de bebidas.

El Restaurante se encuentra dentro de la propiedad del Hotel Chable Spa. tiene una colección de 3700 tequilas exhibido. Es cocina de Autor y excelente platillos. Fusiones de comidas internacionales y Yucateca. hermoso lugar excelente atención. Al llegar a este lugar te dan un tour con su explicación de la hacienda y restaurante.

Pedimos la degustación con maridaje. Excelente experiencia. Los sabores, las combinaciones de texturas y la originalidad de los platillos. Me encantó! Además la selección de maridaje quedó perfecta con los alimentos, mis felicitaciones al chef y Daniel nuestro mesero nos trató excelente!

This was the launch of The Residences at Chable Costalegre - a private event, where Chef Luis Ronzon showcase cuisine inspired by the coast of Jalisco - the menu was exceptional (as all of the chef's work). I loved this dinner, not only because I work with the branded residence but because it was a perfect example of how rich and diverse Mexican cuisine is.

Amazing restaurant with delicious food! We tried the tasting menu and while it is pricey, it was very good! My favorite is the pumpkin soup! If you are in the Yucatán you definitely need to check this place out! The service is very fast and the pacing is on point, we didn’t wait too long and weren’t rushed. The tequila collection is very impressive! I’m not a tequila person, but I was still impressed.

Although it's 45 minutes outside of Mérida it is definitely worth the drive. The restaurant is beautiful, set inside an impeccably manicured parcel of land. They grow their own herbs on site. The service is outstanding. If it's your first visit to lxi'im your waiter greets you at the parking lot and escorts you to the restaurant giving you a brief history of the property and the restaurant. From beginning to end the of your meal service is excellent but not intrusive. Food was unique, blending flavours that were new but based on traditional recipes. They also offered vegetarian options! Excellent wine list as well. Thank you, we will return 🤎

This restaurant was fantastic and so STUNNING. The dishes are so creative and delicious. Going to this restaurant was such a wonderful experience. The tiradito and sea bass were the favorites. We drove from Merida and night and it was easy enough to get there and park, just leave with time since it is far. we came for dinner but we need to come back during the day as the hacienda seems beautiful. We had a gluten intolerance and they were very accommodating.

Excellent! This one word is the best summary for this restaurant. This is a true dining experience. About 20 minutes outside of Mérida, you will find this magical restaurant, located on the grounds of the Chable resort. This is our second visit, almost a year apart, and the waiter remembered us! First of all it is not JUST about the food, which is world class, simply world class. It is about the experience of getting there, the arrival at the front gate, being greeted by courteous guards of Chablé hotel. Once passed the gate you drive slowly through the meandering road flanked by a perfectly manucured yes still very authentic landscape to the restaurant parking. There you are greeted by a lovely lady that walks you along the path to the actual restaurant. Along the way she educates you about the origins of the Hacienda and give you the back story of buildings. The restaurent itself is simply stunning and is just the perfect environmental partner to the cuisine. On that front, i will say this: it is an experience you must immerse yourself in and I would strooongly recommend that you let Jorge the sommelier guide you and maybe even choose, especially if you are a group of 3-4 ppl. You can share some plates, which i would recommend since you really need to try everything haha. And if you dare, as him to pair a Liqueur with your appetizers instead of wine, the Mezcal he paired with mine was just sublimeZ You will get to sample his recommendation before choosing. All the amuse bouche were perfect and on point. The meal itself was, and yes it’s gonna sound cliché, an experience for the soul as much as the taste buds. The flavors are just soooo familiar and foreign at the same time. Every bit is a discovery of a new world, and with the wine paired, this could be my last meal. Keep space for the deserts and a glass of veeeery old Sherry, it’s a must. Well, that me. dont ‘t think about it Just Do It!

Wow! This place is amazing! The food/service was 4 out of 5 but you can not beat the ambience (5 of 5 on food for the region but internationally 4 of 5). The grounds however are so tranquil! It totally transformed our trip. With or without kids this place is It! We can not wait to repeat- and we will for much longer (staying at the realest for sure!)

Certainly one of the best meals I had in Mexico, and one of the most beautiful locations. Chablé Yucatàn is pure beauty, attention to details, luxury but also nature and authenticity.. essentially a paradise on earth which the most incredible vibe! And Ixi’im is a gem in this paradise, that will satisfy all your senses. We tried the tasting menu and some mezcal drinks, and loved every bit. Would revisit a hundred times.

Stunning setting with amazing service. All of the tasting menu dishes were gluten-free (or can be made gluten-free). Sadly the overall quality of the tasting menu and wine pairing fell short of my expectation. Maybe a la carte was the better way to go? What I liked 😋 - Amuse-bouche (hoja santa taco with guacamole) was simple & refreshing - The spice flavor in the peanut mole from the second course was unique & delicious - The third course (squash cream) has an interesting blend of creamy & crunchy textures - Chocolate tamale is 🔥 a twist on chocolate lava cake, but better! Misses 😞 - Courses 4 to 6 (all the main dishes) were average. - The wine pairing was generally too sweet for my liking. Considering that we hired a taxi to come here just for the dinner and then take us back to Merida, it was a disappointing meal. Though the dining experience itself was very cool as you are sat in a thoughtfully restored building and surrounded by one of the largest tequila collections in the world. If you simply want fine dining in Merida, there are better and more conveniently located options.

Honestamente, no hemos disfrutado del restaurante por varios motivos. No solo falta mantel en la mesa teniendo en cuenta el precio del cubierto sino que además hemos comido con música alta en disonancia con los platos servidos. Menú mal expresado y mal balanceado. No puede ser que nos traigan tacos de jaiba seguidos de tacos de lechón sin manifestar en la carta que el lechón, supuesto plato principal, se sirve también con tortillas. Raciones pequeñas, caro.

Las porciones no son de acuerdo al precio de los alimentos, creo que si quieren cobrar caro, perfecto!! Pero que sea equitativa la comida, en si decepción!!!

Spectacular setting and service, but the Tasting Menu made me SEVERELY ILL. We ordered the Menú de Degustación (Tasting Menu) con maridaje at 4 pm and enjoyed the flavors at the time. Unfortunately, the aftermath was severe. We finished dinner at 8 pm. By 5 am (exactly 9 hours later), I woke up with severe cramps and heavy watery diarrhea. The timing and symptoms match foodborne illness perfectly. It is heartbreaking because the experience felt so high-end, but the illness that followed was severe and debilitating. For a fine dining price, food safety should be guaranteed! I hope the kitchen reviews their food safety protocols.
