The freshly sliced sirloin at Haidilao was excellent. The beef was very fresh, thinly sliced, and had great marbling, so it cooked quickly and stayed tender in the hot pot. The flavor was clean and rich without being greasy, and you could really taste the quality of the meat. Definitely one of the best beef options on the menu — I would order it again without hesitation. Our waiter Tony was very friendly and provided good service.

I'm a haidilao fan! food is always good - from soup base to the fresh meat cuts! My favorite is their snack bar, this time we got to snack on corn salad, kelp, and spicy oyster mushroom salad!! Also don't order too much as they have an amazing variety for desserts! bonus. they have a 9pm happy hour where if you order a la carte it's 31% off!

Haidilao is my go-to spot whenever I’m craving hot pot with great service and a pleasant environment. I recently tried their new fresh-cut beef sirloin, and it was incredibly tender and delicious. I also love the wide variety of side dishes and the self-serve dessert options. We arrived around 5 pm and there was no wait.

They were even open on Christmas Day, which was awesome. They offer an all-you-can-eat option, which is great if you want to try a variety of meats and sides. Service was super friendly and attentive, everything tasted fresh, and I loved being able to customize the broth and sauces. Great spot for groups and I’d definitely come back.

We’ve been coming to Haidilao Seattle almost every 1–2 weeks since they opened their all-you-can-eat hotpot, and it becomes our absolute favorite spot. Wenjie and her amazing team make every visit feel special. From the moment we walk in, Wenjie greets us with a warm smile and helps us settle. The tables are always spotless, the food is consistently fresh and delicious, and the service is attentive without ever feeling rushed. We also love celebrating birthday here! Hai Di Lao lives up to the hype in terms of its excellence and the robot delivery is a fun touch. The food itself was good, though I found the broth a bit lacking in flavor compared to what I was hoping for. One thing to note: Please be mindful of cross-contamination with the raw ingredients, as I wasn’t careful and ended up with food poisoning. They do give out complimentary candies at the end, which was a sweet finish. Overall a decent experience, but I personally prefer Qiao Lin for hot pot.​​​​​​​​​​​​​​​​

You don’t have to wait long at all! I absolutely love hot pot, especially when winter arrives. We always get the quadruple pot with four different broths: one classic spicy 🌶️, one rich chicken and pork belly soup, one seafood-flavored broth, and the fourth is just plain water (perfect for milder tastes). If you want to ladle some broth to take home, just turn off the power. and let it cool for about 10 minutes so it’s not scalding hot. During winter, we go almost every week! Their snack bar is amazing — unlimited appetizers, fresh fruit, all kinds of snacks, and a huge variety of dipping sauces that you can mix however you like. It’s the best!

This was my first time in a hot pot experience, and oh boy was it interesting We really didn't have any idea what we were doing. Just off of vibes, we decided to split into four broths (between two people) - one was a mala-style broth, one was a spicy & sour broth, one was a thai coconut-style broth, and lastly there was a mushroom broth. Just on the broths itself - they really did pack the flavor. The Mala broth was so unbelievably spicy it ended up being mostly left over. It was like a ship full of chilis shipwrecked over the top - with the way the chilis were floating on top the entire time. Obviously, all the broths are constantly being heated the entire time, which means you have to wait a few minutes after ladling them into a bowl before its safe to interact with without burning your tongue (don't ask me how I found out) (side note: be very careful with your eyes. I don't want to talk about it) My favorite of the broths was probably the thai coconut-style, as it wasn't too spicy while having some sweetness as well. After ordering the broths, we ordered a few things to be placed inside. Two meats - a normal beef and an a5 wagyu shoulder, three noodles - dancing, egg, and instant, and a few vegetables - like bok choy and mushrooms. The vegetables and noodles are something you put in at the start and leave for a while. Then, after some time, you take them out and put them into your bowl along with the broth, where they've absorbed a lot of the flavors. Funnily enough, I think I liked the vegetables the most - specifically the mushrooms. They cooked really well and took upon a lot of the broth's taste, and eating something solid felt very nice. I didn't like the noodles as much because it kind of felt like eating plain noodles. Since you don't really eat it with any meat or additional things, and the broth doesn't come with it in the same bite, it's like eating lightly coated and wet noodles. Not my favorite The meats are different in that you dip them in for a minute or so (which you can combine the time across multiple broths) and then eat them after its cooked. While this was interesting, you realize quickly that it's not actually that much meat because all the slices are so thin. The wagyu especially tasted really good, but since it was in such small pieces, you get one bite of the meat by itself and thats it - it takes a few minutes to get another bite. What also happens with this is you run out of meat by eating it at the very start - so the rest of the meal is mostly just noodles and vegetables. These did absorb the flavors well though I quite liked the concept of the sauce bar, where you mix all these kinds of different sauces together in a self-serve format. It was really interesting to try and experiment with combinations, and see how noodles/vegetables tasted dipped in it Per person, this ended up costing around $80. That's a lot. We did order a good amount of food, and technically you could be there drinking the broth for a long time, but it's not something where you really feel like you ate *that* much. This brings me to my main issue with the style of meal. It's just a lot of effort for not a lot of solid food. I like places where you get the food, you eat the food, it fills you up, and you're happy. This takes over an hour - and I get that its meant to be a social experience, but it feels like a third of the time is fishing food out of the broth, a third of the time is waiting for it to cool down, and a third of the time is mostly drinking the liquid from the broth. Overall, this was good for a one-time experience, but I don't think I'll be trying hot pot again anytime soon. 7/10

It was super disappointing. We ordered the all-you-can-eat option with a 90-minute dining limit. Even though we were seated right at 11 a.m. when they opened, the service was extremely slow. By the time we finally received our soup and meat orders, we only had about 60 minutes left to eat. It felt like a total waste of time. On top of that, the all-you-can-eat menu was very limited.
