What an incredible Valentines dinner experience for our first visit here. We enjoyed the salmon over couscous but the braised short rib was the star of the show. Lick your lips and the whole plate delicious!! Don’t skip on the focaccia. Our server, Julia, was very kind and attentive, but not overbearing. The atmosphere was unique, cozy and very clean. We will definitely be back.
This place is a true gem tucked right at the mouth of Big Cottonwood Canyon. The atmosphere is beautiful, modern yet cozy, with incredible mountain views and a warm, rustic vibe. The food was top-notch; everything tasted fresh and thoughtfully prepared. The cocktails were outstanding (you can really tell they distill their own spirits with care), and the service was friendly and attentive without being overbearing. Whether you’re stopping in after a day on the slopes or just coming for dinner and drinks, 8 Settlers hits the mark every time. Highly recommend the short rib and one of their signature cocktails or mocktails, they’re both unforgettable!
This place was amazing!! The short rib grilled cheese was fire, the pear salad was unforgettable, and the cherry and bright cocktail was to die for, and our waitress Lacey was the bees knees!!! She really made the experience rememberable!!! Definitely coming back, might make this my new go to for lunch every week!!! FANTASTIC 10 ⭐️
Sat at the bar and Jess, the bartender, absolutely defines the experience. From the moment you sit down, she’s warm, genuinely friendly, and makes you feel like a regular even if it’s your first visit. Her knowledge is next-level, and she doesn’t just make drinks, she crafts them. Every cocktail was perfectly balanced and easily some of the best I’ve had in a long time. She reads the room, remembers details, and brings an effortless energy that makes you want to stay for “one more.” If Jess is behind the bar, you’re in exceptional hands. She elevates Eight Settlers from a great spot to an unforgettable one.

My first visit here I dined in a refurbished jail cell with my Bestie for my birthday and it was fabulous! I also brought home a couple of bottles of deliciousness from the shop. The next time I came with another friend we tried several of the different appetizers and Veggie options and we both fell in love with the bourbon plus bonfire cocktail. Which is now my all-time favorite. You can sip this cocktail and feel like you are relaxed around the campfire sipping the best bourbon cocktail you ever had in your life! So today I came back to wrap up a successful and lovely and very busy weekend With a view of the mountains and the valley and to enjoy another bourbon plus bonfire cocktail and to try some new food items. The pear and Barata salad is heaven, literally. And the grilled braised short ribs cheese is ridiculously awesome. I got it with a side salad so I could feel virtuous however the truffle fries here are extraordinary but I had them yesterday! You’ll get great service from Charlie the bartender and Monica and Emma the servers. Today I tried the grilled chicken BLT and it was fabulous. And their french fries are magical FYI. I highly recommend this terrific restaurant!
I went for my bday and we had the amazing Bobbie for our server! She made us so much fun and was on point as far as her service goes too! Wish more servers were like her! The food was so delicious! We got the pork dinners and burger and salmon and all of it was 5 stars plates cleared! Thanks Bobbie if you ever read this! Shine on sista!
This restaurant was right next to our hotel, so we stopped in after we got back from a late soccer game. There was a wedding on the first floor, but we were able to get right into the second floor dining room. The service was great. Went with the servers' suggestions of the braised pork shanks and warm cookie dessert. My son loved his salmon. This was a good, convenient location, and I would eat here again.
We stumbled upon this distillery/ restaurant unexpectedly, and it exceeded our expectations. Cavan provided excellent service, the brunch was delicious, we were lucky to sit by the windows with wonderful views, the establishment had a cool, sophisticated old-fashioned atmosphere. I tried their Gin and whiskey produced on the premises. The Devil’s Gate Bourbon is pretty good, the 8 Year Rye Reserve was very well done and my favorite of their whiskey. I wouldn't hesitate to suggest this place.
This was an incredible dining experience for us! The service was fantastic, the food was INCREDIBLE, even the music was on point! The drinks were legit as well! We had the pecan crusted pork chop special, best chop I’ve EVER had, best mashed potatoes and gravy, perfect asparagus! My hubs had the hamburger and said it was the best he has ever had, amazing fries, we had the double chocolate brownie. Just incredible, this is our new spot for date night, can’t wait to go back!
First off it's a distillery-resto so for me, it provides that cool, inviting vibe. Upon entering the dining area on the upper floor, we were greeted warmly by the receptionist and were led to our table. Once seated, we were amazed with the view of nature as well as the neighboring establishments around it. Being there from around the sunset till dark was a good experience by itself. The restaurant including their restroom is super clean. Now to the food and service. I initially thought our server was very serious and doesn't smile but nevertheless, she was very professional and actually very accomodating. The food from appetizer, to the main dish and dessert is superb - presentation and taste 😋👌 Thank you, keep it up and we'll sure be back.
The food was very good and the server was attentive and pleasant. We had artichoke and spinach dip, I had tomato bisque and chicken Caesar salad. My husband had shrimp and grits. All were excellent. There were some interesting and unusual drinks such as Pomegranate Mule (very tasty) and we had carrot cake for dessert. The view from the second floor was excellent during the day but it's probably even nicer in the evening. The carrot cake was one of the best I have ever tasted - it had candied or crystallized carrot flakes on top. Great place!
Eight Settlers Distillery exceeded our expectations during a group brunch for our friend’s birthday! The decor strikes the perfect balance between modern and cozy, and the views from the second floor are absolutely stunning. I enjoyed the French dip sandwich paired with a virgin Bloody Mary, while my partner raved about the Blackened Chicken BLT. Our server was incredibly attentive, ensuring our waters were always refilled promptly. A wonderful dining experience from start to finish—can’t wait to return!
I’ve been to this place a few times, the first times were before the new chef and that has made a big difference. I am surprised that it’s not busier considering how great the food and drinks are… awesome bartenders too. #TY! Definitely worth a visit and great for a drink after skiing. Why people wait forever at porcupine when this is so much better of a venue and better food.
We went here and it was super quiet in the lounge/21+ area... this place is huge though, so I could imagine it gets really busy during winter. As for the food - these were some of the best shrimp and grits I have ever had... my other half said the burger was also amazing. The cocktails were fabulous (Old Fashioned and Smokey Sun), and our waiter was just a good guy. We got a couple bottles on the way out. Will definitely be back.
It was AMAZING! Signature cocktails were great! Our server Tyler was THE BEST! Extremely knowledgeable about the menu and gave us great recommendations, all the items we got were great. We got the burger, braised pork shank, and beef short rib. Someone at our table asked about about a recommendation between two items, and Tyler gave him a third option that was even better. Bar area is great!
Either the second best or best restaurant I've ever been to. Absolutely delicious. They've got an actual real cocktail menu, and the Wasatch Orchard is one of the best drinks I've ever had, so much so that I asked the bartender for the specs. Tart, savory, sweet, and botanical in sequential order. As an amatuer mixologist myself, it broke the 4-ingredient cocktail rule and still managed to stay balanced. Calamari was was flaky and succulent, came with a tasty southwesty-ranch and jalapenos. Burger was juicy and crunchy and tasty. The truffle fries were excellent. The bacon in particular was unusually good. The Garlic Brandy Cream Pasta was amazing, and I am so glad I got 2 entres. Shaved parm, fresh pepper, I did have to say no peas and no spinach but oh man, I loved it. Nitpicks (and I do mean nitpicks) -Despite being awesome, the multi-meat burged still just tasted like beef -They should serve their fries in a basket separately so the burger juice and sauce doesn't make them soggy -Calamari plate was too small for the whole table But seriously - hats off, well done. People consider me pretty difficult to please and I was blown away.
This is one of my favorite date night restaurants near the mouth of big Cottonwood Canyon. I’m not gonna lie. I highly doubt I will ever go to porcupine again after going here….. this time I had the special it was a short rib and it was SO TENDER AND FLAVORFUL. My husband had the pork shank, and it was equally tender and flavorful!!! it was such a satisfying dinner. Along with the warm house bread and the creamy delicious Brussels…mercy! To make it even better, they also have a dining area that is 21 and older. It has a nice sitting area and a bar. It’s the perfect kid free date night dinner! One more thing, when we have people come from out of town we like to take them here too. They even have a little store when you walk in where you can buy some of their whiskey. I highly recommend this place!
Our experience with Tyler was so great we had to go back. Food was phenomenal and Tyler and Charlie are the absolute best. They gave us recommendations for additional stuff to do tomorrow while we're still in town. Charlie got us a cucumber margarita with Vida Tequila. Amazing! One thing to note that disappointed us was Veronica's unprofessional and territorial attitude when we ask for Tyler. Tyler had already said it wouldn't be a problem and we even thought that we would go back out and come back if necessary to make sure we got the right spot. She had an attitude with both her coworker and gave poor attitude and service to us. She came back to the table after arguing with Tyler AT THE TABLE. They left to sort it out and Veronica came back and told us she'd be serving us and Tyler would only be making the drinks. We were not interested in that and again asked for Tyler and she told us no we should have asked for that earlier (we already did BEFORE she ever approached our table). So at that point we were willing to walk out of the building and come back and be even clearer if we needed to be. We were not interested in having Veronica serve us at all at that point. Luckily the bar was wide open where Charlie and Tyler were so we moved instead to get the service and experience we wanted and had already experienced. It would have been nice to be able to stay the table since we were a party of 6, but made the best of our experience. As a whole this restaurant and company are amazing, I cannot say enough. So nice we came here twice, but unfortunately Veronica's attitude is strong enough to leave a very negative impact on someone who isn't willing to stand up for what they're looking for.
Zero complaints from visiting Eight Settlers today. The food was out quickly. It was absolutely delicious too! The atmosphere is calm and warm. The service staff were soft-spoken, but very kind. The prices aren't too bad, either.
So this eatery was next to our hotel and we had been told good things about it. So we decided to try it. The decor is just awesome lots of thought went into the design and delivery of the theme and man does it work. The food was outstanding but we will try it again they were having some issues with Kitchen equipment so the menu was limited. The service was great with frequent check backs to see if we needed anything and that was good. Also love it when they have menu favorites so you can get a baseline feel for what’s good to eat. Extensive wine and bar options if your in the mood to try them. They are a functioning distillery so you can buy their brand of Spirits. If your in the Cottonwood area look them up. Well worth it.
Was roadtrippin to Lake Tahoe and decided to stay in the Cottonwood area. This eatery was next to my hotel and i could walk over so I decided to check it out. The decor is just awesome! The food was outstanding and there where so many options I wanted to try so I'll definitely be back here again if I'm in the area. The service was great with frequent check backs to see if anything was needed and that was great! Great drinks as well!! If your in the Cottonwood area look them up, you won't be disappointed!
One of my favorite spots in the Salt Lake City area. Great place for a date night, especially if you’re looking for a place with a view. The upstairs has a dining area with glass walls that look out at the mountains. In the summer the roof rolls back and creates an incredible ambiance. The downstairs has a huge bar area and the decor is immaculate. More of a laid back vibe. An excellent choice of house made Whiskey and Gin. Service was great, food and drinks were fantastic. If you’re in Salt Lake City and looking for a spot with a beautiful view of the mountains and a romantic atmosphere, this is the place.
Absolutely delicious!!!! The food it’s incredible and the building is stunning!!! You pay a little more but it’s definitely worth it! There are large windows everywhere that give gorgeous views of the valley and Big Cottonwood Canyon. The upstairs dining has a retracting roof and roll away side windows for a complete outdoor experience. I highly recommend this restaurant. The distillery is excellent as well. You can buy a few bottles to take home.
Google maps won't get you there. You have to drive up past the porcupine and hit the next street on the left. You'll figure it out eventually. Very cool building in an amazing location. The decor is spot on for the ambiance. We sat upstairs surrounded by walls of concrete and exposed steel. It gets pretty noisy and was difficult to hear our server behind his mask. Even though I'm making caution points, the experience was pleasant. The food was very creative. The soy reduction walnut brussel sprout appetizer was insanely delicious. Very cool place with an amazing menu. Would recommend.
Had the perfect Valentines date tonight. Our waitress Emily was great and offered advice on the menu. I had the flat iron steak and loved it. I don’t know why reviews are complaining about the HUGE amount of potatoes. I’ve been many places that don’t offer a side dish at all. Who the heck complains about potatoes? Drinks were fantastic. The GIN was on point. 👌
Second time eating here, sooo delicious! Easy parking & with two levels they always have room for me. Nights and weekends I’m sure I would need a reservation. Staff is so great. Have loved both servers we have had when coming here. Will absolutely go again! We ordered short rib grilled cheese (one was GF & the other regular) AMAZING sandwich Fries are battered and not GF but the other side was the pear salad and was delicious The brissel sprout starter was HEAVENLY. Rich, but we loved it
This is one of our favorite restaurants to come to, be it an anniversary or a random Tuesday. The service is incredible and the food has such wonderful and bright flavors. We came in today to celebrate a belated valentines and got Jess as server, she was so kind, attentive, and knowledgeable about the menu. This will forever be a staple for our household.
We had a group of 13 and got to celebrate a friend's birthday here. It was my first time dining at this establishment and I look forward to going back. It would be nice to sit closer to the windows (wasn't set up near windows for our group size) to enjoy the views. Our server was thoughtful which was impressive since our group was so big. I had the tempura cauliflower, pear and burrata salad (added chicken), and the Wasatch orchard cocktail, which was delicious. I did buy a pretty glass from the gift shop, too.
Been here a number of times! The blackened BLT is out of this world. And the corn dip!! Mountain views are a perk. But the main reason is the service. LACEY is THEE best. Fast, efficient, makes good recommendations, attention to detail. She’s a freaking expert and needs a raise. I’m a foody and so picky and she de-li-verssssss.
We were visiting from out of state and stopped by for a few drinks and light eats. Everything was delicious, especially the honeycomb signature cocktail. Our server Lacey was excellent!!!
What a delightful find. The food was divine, the drinks were delicious and the place is so lovely and comfortable. We had a great time and Amanda, our server, was very efficient and attentive! We'll be back!
I have always enjoyed coming to Eight Settlers. But Laceys service today, was extraordinary. I have literally never had someone fill my glass with enough water at any restaurant ever. It sounds simple. But its just always the case. And im usually fine with it, used to it. She was so attentive she filled my glass what feels like 10 times. Details matter. And every part of her service was top notch. I highly recommend visiting here! Ask for Lacey!
One of the best old fashioneds I’ve had. Delicious apple croissant dessert. Beautiful view from the patio. Staff was friendly and helpful with our baby. We will be coming back soon!
Love this place for a lot of reasons. Food is unique and delicious. Really interesting menu without feeling pretentious. The spirits are great. I’ve got a whiskey flight a few times and enjoy them all. Atmosphere is also wonderful. The decor, proximity to the mountain and the overall vibes are spot on. I hear they are adding a new location in downtown too. Excited to try that one.
Eight Settlers is an absolute gem! The food was amazing, the atmosphere was warm and inviting, and everything from start to finish was top-notch. A huge shoutout to Bobbie, who was an incredible waitress—friendly, attentive, and made the whole experience even better. You can tell she genuinely cares about great service. We’ll definitely be back and highly recommend Eight Settlers to anyone looking for a great meal and great vibes.
I had the salmon and it was good. It wasn’t anything amazing, but it was good. They seemed busier than expected, so we did end up waiting a while for ordering. I also ordered a soda when the food came and never got it. It felt like our server got pretty slammed with tables, so no shade to him.
The food and drinks were fantastic. (Not sure it's worth the price, very expensive entrees). However after getting our food we didn't see our waiter again until we flagged him down, long after we were done and ready for the check. One waiter walked by briefly to ask if we wanted another round, and no one ever refilled our water. We were sitted in the 21 and up section and it wasn't particularly busy. There was also a large group of guys who were very loud, disruptive and getting drunker by the minute. The staff seemed to be indulging them which did sour some of our dining experience.
A good restaurant, but disappointed about our request to sit upstairs with the view. The Brussel sprouts were quite delicious for an appetizer. I recommend the flat iron steak as well as the carrot cake for dessert. Hopefully next time, we can get that gorgeous view on the second floor!
I ate there twice. First experience was nice. Second not so much. First: Very busy, understandably because my food was great. A simple bowl of pappardelle with short ribs meet, but it was delicious. Not cheap but very good. Second: after a wait i was told that i would have to wait longer because they were overwhelmed. I had the pork rib and it simply wasn't good. Cooking pork medium does not work, and the slab of brown sauce was unappealing. Sting serving of lukewarm mashed potatoes and grilled vegetables as sides. Really not an enjoyable meal.
We were very excited to come eat at this place with a large group of us from out of town there to ski. Because I felt like I was getting a lot of blocked signals upon my phone call (nothing really positive ) I had changed my mind but my cocaptain of the trip wanted to go anyway. Our server worked really hard to turn things around for us, but the gist was that the 24 of us could not: a. Be seated with Mountain View’s Instead, we are seated on the opposite side of the building. b. Have separate checks (max of 4? Made things very complicated) c. Could only have one server. d. Had to be separated in a group of 10, another group of 10 and a small group of four. Besides all that, we were also told that they had a very large party of 80 above us. I was getting a little frustrated, so I’m sure I said “ OK, well we can’t be concerned with that !” AND One group of 10 got their food probably 15 minutes before the other table-Seemed like 20 minutes, but I don’t wanna exaggerate. The server did explain that some other large party order had gotten in before his second order was put in for us. Most of this mentioned so far is really the fault of the manager and their protocols set up there: If you already have a group of 80 and a group of 20, you probably should not add another group of 10? You should also be darn sure that folks are greeted with the utmost positivity and appreciation. And if you’re gonna separate us into three different tables, why not add another server or two? If you have the runners, why can’t they be servers? You guys have a long way to go on all of that. Other: I had asked for a bourbon drink that would not be sweet. I found the honeycomb very sweet. Which was recommended. :/ When asked how everything was, I mentioned that the drink was sweet and whoever had come by said yes, that Drink tends to be sweet.🫥 Somebody should’ve taken that off the bill. I did order and paid for another drink. Positive notes: Bacon wrapped dates were delicious! My pear salad with shrimp and friends burger was good. The room was set up with Waters silverware, etc., and look nice even if other things were not very good. Again our server tried really hard and they did have extra runners for food and drinks. Thank you for that! We did have one lady who is not even traveling with our group who did not pay the bill after everyone had given her money. So that’s def on us and that’s embarrassing. Fortunately, someone else covered for her though. The restaurant was consistent: We were greeted the same way that I was greeted on the phone. lol Not positive. Lots of blocks. I wish I would’ve trusted my instinct Because this did not sit well with folks. Final result is that none of us would go back there or recommend it. We had fantastic results at Bohemian Brewery and Miyazaka both.
We came for Christmas dinner. After booking and a day before our reservation they sent an email saying only a special Christmas menu was available. It was a pretty mediocre menu. When we arrived they were sold out of one of the four entrees available (filet mignon). The service was just ok and the whole experience was just unmemorable. Very expensive prices for an average service. This was my second visit and it was just as mediocre as my first. Ther was absolutely nothing special about this meal particularly since it was Christmas Day. Staff wasn’t really friendly at all. Just going through the motions Not a place I would recommend.
Food was not worth what we paid. Drinks came out plain no garnish or like in the photos. Mashed potatoes were like glue and fried chicken was a difficult to eat large glob of mostly fried breading. Cool atmosphere and location.
I’ve visited 8 Settlers four times over the past few years, and each time I’ve walked in genuinely excited because the place clearly has a lot of potential. Unfortunately, my experiences have consistently fallen short. It often feels like the servers, bartenders, and kitchen staff lack attention to detail and pride in execution. During my most recent visit, we waited nearly 40 minutes for food that I would describe as just “okay” at best. Burgers that were specifically ordered rare-plus/medium-rare arrived well done. A salad ordered with no nuts was served with nuts, and correcting that mistake took another 10+ minutes. We also experienced additional errors, including incorrect drinks being delivered to the table. When we pointed out the nut issue with the salad, the server told us it would be removed from the bill, but when the check arrived, nothing had been comped. Unfortunately, this has become a pattern for me at 8 Settlers. Despite its potential, each visit ends up feeling like a disappointing and ultimately costly experience.
They were “out” of the $40 steak frites, but had a “special” ribeye with Demi glacé, garlic mashers and broccolini. Didn’t mention the price, of course, which was $60. Three of our party of four ordered the special. We all agreed it was one on the worst steaks we’ve ever had. Terrible cut, low quality, cheap crap, way overpriced. It was about the same quality as my local bar that sells theirs for $10! Ambiance is cool and the service is great. I’d stop by for drinks, but never again on the food.
The story of this place is actually sad. Their lack of professional marketing and other operations for a building so amazing is a lesson in poor business management. I have eaten here 30+ times since opening and they are inconsistent at best. Mismanaged at worst. The fact that few people even know about this place is shocking. They do not use modern marketing techniques. Their menu is small with few selections being B or higher. They did away with their previously famous charcuterie board. Which is crazy as it was one of the best items on their menu. Especially in their bar. They do t use their best dining room upstairs except on busy nights. Which means they can’t formulate a way to operate it effectively. They also changed their carrot cake recipe, which was incredible, to something they would not sell at Applebees. No exaggeration. They run out of ingredients regularly. I’ve been told that the owner does the marketing and unless the owner is an incredible marketing company, that fact is causing a chain reaction that is leading to this place just limping by. I fear it won’t be open in a year. If you are reading this (owner or GM) invest in a real marketing company. Use an app. Reward frequent guests. Do all the things modern successful restaurants that are thriving do! The architecture does not match operations and menu. No wait on a Saturday night. Sad.
I hate leaving bad reviews. I ordered the steak at medium rare, and half the steak was *perfect*! The other half was… rare to blue. I’m a texture person, and I am proud of myself for not throwing up in front of my date. As my date mentioned, we are going to make sure to try other venues because this one did not meet anywhere near our expectations. Expectations are everything in the service world Staff was great. I would have got a better steak at IHOP
Two month ago I would have rated 8 Settlers food 5 stars. This was our family weekend brunch where we relaxed and splurged but used to feel good about it when we left. The last 3 times we have been there our questions about the menu changes were answered with “we have a new chef.” I can only think that this new chef is there to cut costs. Things have slowly degraded to IHOP quality or worse. The food seems thawed out. Menu items deleted and no special add ons (no salsa for your omelet or salmon for your salad). Even the drinks have changed to appear bigger, with the same amount of alcohol, to give you the appearance of value like Red Robin. I wish I would have made breakfast at home today. And worse … I’m sad to loose the spot we used to enjoy as a family. Please let me know if it goes back. So sad.
This is for all gluten free and Celiac friends out there - Sadly, we had a horrible disappointment at this restaurant recently. We had very special guests in town so I made a reservations. I'm quite mortified and won't feel comfortable coming back anytime soon. We've spent a substantial amount of money getting high quality drinks and food here in the past and over the last few years, and have always had great experiences, so it was a no brainer to go there with our out of town guests. Horrible, disappointing menu when it comes to your gluten-free guests. NO charcuterie anymore, no naturally GF appetizers, no naturally GF entrees (legit a really hard thing to see because it's devaluing me as a customer), which is mortifying when 2 of us are gf/Celiac and have eaten there safely many times. A huge change in their menu and not for the positive. My cocktail was barely touched as it tasted like cough syrup. That was honestly the worst cocktail I've ever had and I tried to get our servers attention several times to switch it out for something but was unsuccessful in getting his attention. My burger, which was the only thing I felt like I could even order safely, was almost inedible because it was so rare cooked and I don't appreciate how we were just blown off about my questions and concerns. We were never even asked how we would like our burgers cooked before our server just rushed away yet again. We had really talked up this restaurant to our guests. We were very excited to take them out for a nice meal and the out of towners they were really excited about what we had told them to expect. Because we were literally entertaining guests, I didn't feel like that was the time to talk to a manager because that would have been highly embarrassing, and I just couldn't get myself to do it because I was also so emotionally on the verge of tears cuz of how disappointed I was from the very beginning through the very end of the meal. I really hope they consider talking to the chef and making sure that they realize it's not okay to not have a naturally gluten-free option on your menu when you're coming to a nice restaurant and paying hundreds and hundreds of dollars for a nice meal. I felt completely unreassured about every single aspect of that meal and its safety, and I definitely did not come to get a burger. I came to get a really nice and elegant meal, the way I have at least five times in the past 2 years. Horribly disappointed and mortified. Will not be going back
New chef and food is now in the gutter. We have come here many times, and know this restaurant well because the food, atmosphere and friendly staff warranted returns. Unfortunately.. fresh potatoes that used to be seasoned, and cooked in olive oil are now basically O'reida freezer ready potatoes. Salmon crab cakes used to be hand prepared, now are freezer delivered, deep fry battered, grease things. At least the egg was actually poached. Quality down and price stays the same.. 18$ for freezer delivered crab cake? Maybe for a box of 12, not 1. Tacos disappeared from the menu.. no salsa... at all?? In the kitchen? None? What theme is this? Bring back the old chef!!!!!!
