We went to the DMV next to the restaurant and the owner here was prepping for service in the outside smoker area for the next day. Me and my 2 daughters told him how good it smelled and he offered to make us burgers since they were closed that day.. Opened the doors for us and Gave us 5⭐️ service and chatted about his business. Literally the best smash brisket burger we’ve ever had!! The flavor and texture were out of this world, the meat was crispy on the outside and so juicy and tender on the inside.. branded bun and cheese were perfection as well!! He also gave us bam nana custard pudding that was equally incredible!! I can’t wait to drive 45 min to Tullar to eat there again!! Iv raved to everyone I know to eat there!! Best BBQ in DFW!! They greet you like they have known you your whole life when you walk in! the place is spotless! I love the outside sitting area beside the place, super cute! Ribs fall off the bone! And the plate was so full of food! I had to save some for later. Potatoe salad was phenomenal! I love the Hatch Mac! Get the lemonade it’s sooooo good! I got a 3 meat plate because I wanted to try different things and I’m so glad I did! Bonus: this place is family owned. I started ordering Hill City Chop House for thanksgiving a few years back and the family loves it. Brisket and smoked turkey. Both are hits! I have since used him for catering, and every time I couldn’t be happier. Their brisket is always phenomenal. I have trouble eating any other brisket as they simply do not compare to Hill City. I can’t wait for the grand opening so I don’t have to wait for a special occasion to enjoy Hill City Chop House’s delicious bbq!

They update their menu according to what people are enjoying so that may change periodically but the meat stays the same! We've eaten a lot of BBQ and this place is worth it! Atmosphere is great. Owner, Dustin, was very welcoming and friendly while he sliced up our meat. ***check their Facebook page before heading there. Went on 7/6 and they were closed so they can spend time w family. Understandable but an inconvenience-We drove 30 min to get fed but didn't check FB before and arrived to locked doors. No sign on the door either.

I can't say enough about this great little place in Tolar, Texas!! I hadn't tried their food truck but soooo glad we stopped here last week!! The juiciest brisket, awesome jalapeño sausage, ribs and I promise you will not leave hungry!!! I can't recommend this gem enough. Come earlier though, when they sell out they close the doors. I don’t write many reviews, but I felt I had to this time. If you are ever in Granbury or Stephenville and you don’t stop here for lunch you are outside your mind. The smash burger is the perfect size, and it might be the best burger I’ve ever had. The banana dump cake will blow your mind. I’m not a “foodie”, but I ain’t skinny. You can take my word for it.

While visiting my aunt in Granbury we decided to try Hill City Chop House. It did not disappoint. We enjoyed the brisket, jalapeño sausage and ribs. I also really liked the beans. They are a little spicy and very flavorful. I was very happy to get Texas BBQ since I now live in Florida.

Hill City Chop House is amazing! This is my favorite BBQ spot in the area. I've gotten the plate with multiple meats and two sides both times I've been here and the price is more than fair for the amount of food they serve. The brisket is phenomenal and the Hatch Mac is to die for. The BBQ sauce is also really tasty and tangy. The owners (or pitmaster?) are really friendly and they have great service. Anytime I have someone visiting me, I recommend we go here. The only downside is their hours are only open for lunch Thursday-Sunday, but I suppose if someone dined in Heaven every night then Heaven's cuisine would lose its luster. Is that saying too much? Probably, but it's still worth a visit!

Hidden gem and my 2nd favorite BBQ place in Texas!. Truly delicious hometown BBQ and sides. Brisket is tender and delicious, not overly fatty, nice smoky flavor. All of the other meats we tried were on par. Sides are good with some unique choices, and the pickled onions are excellent. Staff is super friendly. Nice outdoor breezeway seating area in addition to indoor seating. No ridiculously long lines or wait time, and prices are an excellent value, especially compared to so many overpriced and overhyped places in Fort Worth. We drive from Fort Worth to eat here and will continue to support this place!

Hill City Chop House is my favorite place to stop for a meal when I’m in the area. If you’re looking for a beautiful day outside of the city, take a drive out to Glen Rose to see the wildflowers, and stop by Hill City for some of the best BBQ in Texas. Don’t skip out on the beans!

Everything was great especially the wagyu sausage I have never had sausage that was this level of moist and buttery. Worth the drive wherever you are coming from.

Service is always great, they greet you with a warm welcome, help answer any menu questions, and often come by the table to make sure you have everything you need and a top notch experience. The food is made fresh, every day, and they WILL sell out so get there early, or try something new! You will not be disappointed!

WOW!!! What a BANG for the buck!! Had the brisket, sausage and pulled pork combo. It was more than enough for lunch. Planning on leftovers for dinner and maybe even lunch tomorrow. The Elotes and Hatch Mac reminded me of the street vendors in old El Paso - spot on spicy and delicious.

We were warmly greeted as we arrived & made to feel very welcome. The customer service throughout our entire visit was amazing! As for the BBQ/sides/desserts - Everything we ordered/ate was over-the-top delicious. Hands down the best ribs and brisket! We highly recommend this restaurant! My husband and I own a Diesel Mechanic shop and we bring our guys here almost every single Friday to feed them lunch. We only have an hour for lunch and they always have time to be so full they don’t want to work anymore and then still have some extra time to spare to do other things. We have been coming here for nearly a year and the food and staff are always consistent. Our guys love it and the fact they also add limited items to the menu for holidays or just really wanna add something for a bit to change it up. Wholesome food and wholesome owners. Only good food survives in Tolar and they are still going strong!

Our first visit was this past week and we’re already looking forward to our next. The best BBQ in this area by far. We opted for a combo plate so we could try a variety. Everything was fantastic. Prices were also very reasonable for this type of food. 3 meat combo with two sides was more than my wife and I could share with quite a bit left over to take home. And all the workers were great as well. The genuinely seemed to care and wanted to make sure everyone was happy. If your a fan of food Texas BBQ you really need to give this place a try.

The frito pie was amazing, covered in great chili! The atmosphere and service was very good. Very friendly clientele, almost like a big family dinner. Only negative was those with us got brisket quisdillos and potatoes salad. They said the potato salad was good but needed more seasoning and the brisket, while very good was a bit dry. The banana pudding was heavenly! Overall though it was a wonderful experience and would highly recommend. Well worth the drive!

The house made sausage had nice flavors, and pronounced black pepper, which I enjoy. The regular mac and the hatch chile mac were both just fantastic. The corn elote was spicy and I suspect might have had just a touch of cayenne thrown in there. We sat outside in the semi-covered open air space next door, and it was a great place to enjoy our lunch. This is a solid 5 star BBQ place. Now, I live in Fort Worth, and have lived my whole life with Angelo's as the standard, later Railhead and more recently Heim and Terry Black. I even served on a team for a number of years making and serving brisket and sausage and beans. I feel like I am qualified to say "this is really good BBQ". Hill City is easily in my top 3 of all Texas BBQ that I have traveled to. I will continue to support them, and look forward to many more trips. Thanks guys!

Great people who are starting a new family and people you really root for in life and business. Go check them out if in the area or make a nice drive on a weekend.

We made the mistake of getting here a little late and several of their meats and sides were sold out, however this gave an opportunity to try some different things. First time trying smoked bologna and didnt disappoint. Frustrated to see customers walk away but this is Texas BBQ for ya - get in early or leave hungry. Dustin and Nicole are rocking it. Crew was friendly and efficient. Don't sleep on this place.

Hill City Chop House catered our wedding reception/party. To say that their food was loved by all of the attendees would be understating it. The food was absolutely outstanding! And Dustin and Nicole were the best, most pleasant people you could ask for. The guests loved them as well as the food and service that they provided. If you are looking for catering, this organization is the best. It's why they have won, and continue to win, so many awards in state and national competitions.

Debating whether the drive is worth it? Stop thinking and go, it’s 100% worth the trip. The brisket is perfectly cooked, with that flawless, tender flop true BBQ fans appreciate. You can tell the owner truly takes pride in making sure everyone leaves happy.

Sliced brisket was good. Didn’t care for sauce as it was too thin and made the sandwich too soggy too quick. Didn’t care for their onions. Would rather have had a choice of regular uncooked onions.

Real tasty Brisket, but the Turkey is better, great flavor, moist and tender .. the pickles/onions/jalapeños that come with it are amazingly good. We'll be back .. 😎

Some legitimate BBQ out here! Brisket is really good, pulled pork is excellent, ribs are tender, juicy, and flavorful, smoked bologna is the bomb, sausage, turkey and sides are excellent, including amazing beans, killer hatch mac n cheese, and the deserts! OMG! Oh, and check that brisket smash burger! So good! Open until they sell out, so get there early.

It comes with pickled onions, jalapenos, and pickles. I do not like pickled things and neither did my friend. Would have like to had an option to have plain onion and jalapenos. The potato salad had the consistency of mashed potatoes. It was all good food except what I mentioned.

Good brisket. Liked the spicy beans. They lost us with the sauce. Way too much chili pepper or something in the sauce. Super friendly couple own it. Love their passion. BBQ business is really tough in Texas. Hope they can survive.

Brisket was tough chewy too much fat. Hatch Mac was good to go. Tater salad not bad. Sausage cheese jalepeno was good. BBQ sauce nothing to write about. The Rojo soda is awesome. Note this place has nothing fried.

Drove from the other side of Granbury, and they had closed early. Businesses need to understand the importance of sticking to the hours they set. It can cause huge inconveniences when people take the time to drive all the way out only to find the doors locked when they should still be open.

Well, was really looking forward to finally eating here for lunch. Stopped on Friday at 1245 and they were closed when everything said open until 2. Oh well, maybe I'll try again in a few months when we're back in the area.
