An Unforgettable Culinary Experience at Revel – The Hythe Hotel, Vail During our recent visit to Vail, we had the pleasure of dining at Revel, nestled within the elegant Hythe Hotel. From the moment we arrived, the experience was nothing short of exceptional. The highlight of our evening was the Colorado Fitch Ranch Filet Mignon, a masterpiece crafted by Chef Ed and his talented culinary team. This 6oz prime filet was served Oscar style, adorned with delicate crab, velvety tartiflette, charred corn purée, and crisp asparagus. The presentation was stunning—each element thoughtfully placed, creating a visual and gastronomic delight. The filet was cooked to perfection, tender and flavorful, complemented beautifully by the creamy textures and fresh, seasonal accompaniments. A glass of red wine completed the pairing, elevating the dish to a truly luxurious experience. Equally impressive was the service. Our bartender Jason mixed cocktails with precision and flair, setting the tone for a relaxed and enjoyable evening. Kevin, our waiter, provided attentive and knowledgeable service, ensuring every detail was taken care of with warmth and professionalism. The restaurant is cute! Nick and Dylan behind the bar were great. Couple of items came out from the kitchen missing things but the bartenders handled it well. I’ll be back for the wine list, drinks and service. Food was okay.
Had a wonderful meal at Revel tonight :) Started off with a few cocktails all of which were perfectly balanced. The Gothic Line was particularly good. Had the lamb , elk and beef. All very delicious and large portions. Service was on point. I was weary after some of the recent negative reviews but this place was excellent and we will be back ! The atmosphere is fantastic, very modern and clean. This would be the perfect place to come for a laid back apres of you’re not into the loud dive bar scene. Was surprisingly chill this evening. This place deserves to be fully booked .
Revel was a perfect spot for us to cozy up for dinner after a day on the slopes! We were staying at the Hythe which made it even easier, it’s a great choice for dinner in Lionshead. Atmosphere echoes a “hotel restaurant” vibe, but food and service (thank you, Mark!!) are 5-stars. Prices align with most vail restaurants too!
Great dining experience! The restaurant offers delicious food, particularly impressed with the fresh fish and meat. The service is top-notch - staff are friendly and attentive. The ambiance is charming, especially with the beautiful view from the windows. Definitely recommend this restaurant for a cozy evening and enjoying a great lunch or dinner.

Our waiter was phenomenal; he was so patient. The food was delicious and timely. There were three of us at dinner and we tasted one another's food. Everything I tasted was delicious.
Beautiful decor, delicious food and wonderful service. We celebrated my fiancé’s birthday and the staff (including the floor manager) was both on top of it completely and even gave us a dessert. We loved it here and hope to come back in the future.

Excellent breakfast bar - truly one of the best hotel breakfasts I’ve had. The space is also perfect for a workday while traveling and I was very comfortable working there for a full 8 hours. George from the Revel staff deserves a special shoutout as he was the most kind and thoughtful person as I went through a tough moment
We had a wonderful dinner, the food was excellent and the experience was made even better by Damir, our wait person from Kotor Montenegro. It turns out that we had all visited there earlier this year and just added more fun to chat about such a lovely place!! We shared some plates last night and each one was incredible! Service was friendly and prompt. One of the best meals I have had all year! We will be sure to be coming back.

I've tried the smashburger, the steak sandwich and the French dip. All of them were delicious! I'd say the French dip is my favorite so far.

Our recent visit to this restaurant was nothing short of exceptional. Chef Scholly was absolutely amazing—his dedication to providing the very best food and service was evident in every moment of our experience. From the beautifully crafted dishes to the thoughtful pacing of the meal, his attention to detail truly set the tone. What stood out just as much as the cuisine was Chef Schoeller’s incredible personality. He brings a genuine warmth and passion to his work, and it elevated our entire evening. It’s rare to find someone who not only masters their craft but also makes every guest feel personally cared for. Our experience was, without question, above and beyond. Our server Jonathan Kevin was warm and friendly and took such good care of us. He had a true spirit of hospitality, which made us feel at home after a long day of traveling.
I came looking for a steak, and found an amazing filet mignon. Everything was delicious. The bartenders were friendly and engaging. The beverages were spot on. Lovely place
The food is outstanding. Our kids love it so much we eat here almost every night while staying at the Hythe. Geovanny is the best server. We’ve eaten here more than 5 times, and he is by far the best. Cheers!
We saw other reviews of the artichokes that were unfavorable, however we tried them anyway… and we were soooooo glad that we did. They were grilled to perfection, super tender on the inside, and were delightfully seasoned. We saw negative review about “too much oil” on them — not sure what that person was smoking! They were drenched… in delicious melted lemon butter, and topped with sea salt and pepper. The red pepper aioli they came with was also fabulous. We were between happy and ecstatic with everything we ordered. Definitely better value than many other restaurants in Lionshead Village.
Our server Sal and manager Steven prepared us for the best six course meal I have had in age! I highly suggest the beet salad and short rib dinner plate. Also the cocktail they made called the Butterfly Effect was quite effective.
One of the most stunning interior designs. Super friendly, patient staff. We had to wait a bit long for the food, but it came out absolutely delicious. I got to sample the trout, chicken, and shrimp salad and all were beyond excellent. It seems like past hitches in service have been worked through. I strongly recommend!
The food and drinks here were amazing. We had the NY steak grilled cheese and the lamb shank. Sadly our server was pretty off her game. I could see other servers being way more attentive, while ours was missing most of the time and dinner took well over an hour to be served. Otherwise it was a great experience and I would definitely return and hope that this service experience was a fluke.
We were staying at The Hythe and decided to try the hotel restaurant. The staff were so nice and professional. We had Thomas and he was just the best--very friendly and checked in on us just the right number of times. The food was very good rounded out a very exciting vacation week. Would definitely go back next time we're at The Hythe!
Our entire experience was excellent. The atmosphere was quiet and relaxing. Our service was exceptional. Jonathan was honestly the best waiter we've ever had- he had over-the-top hospitality and was very friendly. The Mastercheif Edwin Scholly was also very hospitable and friendly, telling us his story and sharing his best recommendations. Last but not least, the food was outstanding! Each course was delicious. My family and I loved the whole experience. 5 stars for everything.
Overall good experience. The breakfast at Margie’s Haas was exceptional, the most delicious egg benedict with salmon I’ve ever had. The breakfast buffet was 5 star as well, very good selection with their gluten free muffins. Dinner was okay, ordered sandwiches, salad and wings. The bruschetta salad was pretty good, the rest of the food was just okay. They were very busy at the time, so the service took forever, it was Christmas Eve. But because we stayed at the hotel and we had nothing else to do it did not bother us. We enjoyed the live music. Cocktails. Did not like their selection at all, I feel it was all 40+ focused. Nothing light, each cocktail had hard liquor. I wish they had at least Aperol Spritz or something lighter for younger people 😅 who doesn’t drink 🥃 whiskey

We had room service and it came within 45 minutes. The food presented well but there wasn't a portable table provided so it wasn't a comfortable setup...you have to eat in bed if there is more than 1 person eating. The burger, soup, and kids spaghetti were really good. The burger was simple and tasty. The kids spaghetti included 2 massive meatballs.
The decor is beautiful. The food is decent, however my soup came out cold- it took forever to arrive so I didn't send it back. The service is terrible.
Ate lunch here, pumpkin soup was meh. The roast beef sandwich and burger were good. Skip the grilled artichokes, too much work and butter was everywhere. Pricy for what you get but convenient for first day if staying at the Hythe. Not a repeat for us.
The cocktails are excellent but the food was overpriced and not the best quality. I suggest going there for cocktails only.

Chic, updated, open dining atmosphere with lots of options for formal seating, lounge or bar. It’s laid out well and is very euro in terms of interior design. The food and the service fall completely flat. I ordered the meatballs, pickled wings and salad and was not impressed. The meatballs were dry and hard-fried and the chicken was also dry (no sauce), no “pickle” at all to me. The salad was your standard airport salad just in a nicer plate. Overall the vibe is great for sexy, chic drinks and apps. Go elsewhere for your meal.
The decor is really beautiful and the food is great, however, the service is really slow and disorganized. First the starters and drinks took forever, after waiting so long for the main course again, they forgot to bring one of our dishes and our server, nowhere to be seen. And a few other things like they didn’t clear out the plates after out appetizers and our table was crowded with piling plates. Even though the food was good I don’t think I’ll be coming back here again unfortunately.
Avoid at all costs. Nice people, but awful food, extremely slow service, and $50 for a very tiny bowl of quinoa, squash, and chicken
Regretting taking the recommendation of the Ritz concierge, we waited for 10 minutes to get water and 20 minutes to be greeted by the waitress, another 15 to get our drinks and a total of 45 minutes to actually place our food order ! Food was hit or miss- mostly miss. Under done NY Steak sandwich, 3 soups were lukewarm and none had soup spoons. And who serves sparkling water with no ice and a warm bottle? Raclette cheese had no way of staying warm and so the cheese hardened and was not edible. We noticed many other unhappy guests suffering from the poor service and food. So disappointing
Worst dinning experience of my life. After an hour of waiting for bread bowl that costs $8 it was cold bread from a bag. After that they brought a charcuterie board with a cockroach. If thats not bad enough the manager did not have the nerve to even come to the table. Worst experience of my life. I have been served better food at Waffle House. This was not the servers fault, the manager nor the chef never came to the table to address the issue, they should both be fired
Skip this place. Service was disjointed and uncaring. Food mixed. Bread service w pesto excellent . Artichoke starter very greasy and no little plates to share unless you ask. Have to ask for water refills. French dip tasty by very greasy. Dip is heavy and not enjoyable. The power food bowl is best item. $13 extra for salmon had a big serving. But over cooked
The menu is creative and enticing. Sadly there were mistakes with each dish making them very hard to enjoy. The artichokes were drowning in oil. I was able to pour off 6 Tbsp of oil from half the appetizer. The salmon was over cooked. I had ordered rare and I got well done, plus. The brussel sprouts were undercooked, so too touch to chew. The focaccia bread and pesto was delightful. Unfortunately there were so many service mistakes: -the web said 25% off today, which we confirmed with the hostess, then we were billed full price and somehow the waiter, hostess and manager couldn’t figure out how to fix it, so we waited a long time to get a corrected bill -the waiter was very quick, hardly said a word other than “yep” or “sure” standing sideways and walking off so quickly without verifying the order, and it showed later. He had to come back after the appetizers to ask what our main dish orders were. He missed all the requests like salad instead of fries and the temperature of the salmon. -I ordered a beer and they brought me a completely different kind without telling me, substituting a Pilsner for the hazy juicy IPA. When I pointed it out, the waiter just walked away. The manager said what I orders wasn’t on the menu. I had to ask for the menu again and pointed out again what I had ordered. The manager then told me they don’t have it. Eventually the waiter told me he made the substitution. The whole thing was strange like they were too rushed to care about the type of beer ordered. Thankfully they didn’t charge me. I was thirsty and they left my water glass empty from the time the food was served until I was almost done eating. Many waiters were walking around but none looked our way as I was desperately searching for eye contact to ask for water. Everything took so long. We were ready with our order immediately but we ended up spending over 2 hours there for a simple order without desert or drinks (other than the silly Pilsner I didn’t order.) This restaurant was well rated last season, all I can think is this is all new staff and they are having trouble keeping up with the training. The location and decor are lovely. We would go here frequently if they could pull it together.
Don’t eat here if you have a gluten allergy. I have a gluten allergy. The people I was with do not. I ordered the gluten free French dip. The menu said this had a vegetarian option that was made with mushrooms and there was also the gluten free French dip version. I told the waitress I needed gluten free. She didn’t ask if it was an allergy. Our food order got royally screwed up with everyone’s order being incorrect. We were overly nice about the whole situation when we brought it to the waitress’ attention. Our waitress was kind, but the royal screw up had me concerned so I asked her to confirm the sandwich I received was gluten free. She was adamant that it was the gluten free mushroom version (notice this only meant it was vegetarian according to the menu, and also not what I ordered). She didn’t check with the kitchen. I took a bite and just felt it wasn’t gluten free, so when the manager came over I let him know. A while later he came out with the French dip on different bread, this time gluten free bread. The original meal I was given was not gluten free. When celiacs get glutened this means days or weeks of agony. Had I eaten the whole sandwich I wouldn’t be able to get out of bed. Even with one bite I am feeling some consequences. The restaurant gave us a round of free drinks to make up for screwing up our meals, but I’m pregnant so didn’t drink. They offered a free dessert, which is kind, but we didn’t want dessert. Our waitress handled the order screw up situation well, but not the gluten situation specifically. I’m nervous for the next person with a gluten allergy to order the French dip. Overall, the food was good. I truly feel that if you serve someone non-allergy friendly food after they ask to double check because of an allergy they shouldn’t have to pay for it because they’ll pay in other ways, but I also understand this is a business. Our drinks took forever to get. The service seemed extremely unorganized. Overall, skip. The food isn’t worth the hassle. TLDR: All orders were screwed up. I was served a gluten meal when I asked for gluten free. Asked waitress to confirm and she didn’t. Had to get manager to correct order to gluten free. Charged full price for it.
Worst dining experience of my life. Food did not arrive 2 hours after ordering despite repeated requests (and we are staying at the hotel). Requested kids food first and that took an hour and fifteen minutes to arrive. Requested to speak to the manager and they never came till third request and 30 mins later. Please skip this place; a terrible experience.
Slow service. Out of everything on the menu. The menus were so filthy the pages stuck together. Took 38 mins for our drinks to arrive. Awful all around.
Very poorly operated restaurant Upon arrival, the hostess was dismissive and immediately stated that we needed a reservation—despite the fact that we had one. We were then told the food would take a long time because the restaurant was very busy. We were fine with that and agreed to wait. After being seated, we waited over 15 minutes without being greeted by a server or offered water. I eventually returned to the hostess stand to ask whether a server had been assigned to our table. At that point, we were finally given water and told that a manager would come speak with us. The manager arrived about five minutes later—just as we were getting up to leave. We never saw a server. We fully understand that restaurants in Vail are extremely busy this time of year and had reasonable expectations going in. However, I would recommend not accepting more reservations than the restaurant is able to service within reason. I’ll never consider returning. The resort which appears to be nice should be ashamed of this operation.
The food was absolutely horrible—disgusting and completely not worth the price. The service was even worse; our server left in the middle of service to go sing a song, which is just insane. I have never experienced something so unprofessional in a restaurant, especially one recommended by the hotel concierge. It’s shocking that a high-profile hotel would recommend a place that operates at such a low level. The management clearly has no control or standards. Such a beautiful location, yet ruined by awful workers and terrible food. This was a complete waste of money. I strongly recommend not coming here.
Avoid at all costs! I’ve been coming to vail for 10 years and this is by far the worst meal I have ever had. For starters, we sat down only to find out all the food we had planned to have ( we looked online) were out. No problem though, we ordered and let me tell you… the food took forever to come. The appetizers were quite underwhelming. When the mains came out, feeling like eternity, I was disappointed to find out the chicken in my Caesar salad was tiny! When it tried it, my throat felt like the Sahara. Not only that, my two companions order steak with the power bowl, only to find out it was well down to stay the least. Definitely more I mean they really killed that cow. The problem was the waiter never asked them what temp they wanted their steak, odd but we assumed it would be medium rare since that is the industry standard. Even if it was well done that would have been better than whatever they did to that poor cow. Upon telling the waiter this, she made an obnoxious comment saying “I’m only one person”. Lastly we had order a portion of fries with our meal, which came quite late, almost like they thought we wanted fries with desert! Overall I can not recommend, from the poor service to the food this restaurant is a nightmare!
What a disappointment! Food marginal and service terrible -- We were looking forward to dining at Revel, and unfortunately it was a very bad experience. We had no waitress assigned to us so after waiting 15 minutes we asked the hostess what was up. She apologized and after searching for a waitress, said that she can take our order. After ordering dinner, still no waitress so the hostess took our drink order. My wife's vegetarian dish was good - but my fish was dry and tasteless. 1/2 way thru my fish I asked the hostess (still no waitress) if it was really trout -so she checked with the manger. The manager came over to apologize they served me Halibut (don't order it - it's tasteless). He offered to cook a trout but my wife was already finished with her meal and I was not hungry enough to eat another fish so we declined. He offered a flourless chocolate cake but I don't really like those. So the bill came (hostess delivered, still could not find a waitress) and they still charged us for the trout they did not provide! I didn't say anything- just paid the bill and figured we would never go back there! Pretty place though.
Very disappointing! We had tremendously high hopes for Revel. The decor is beautiful and the menu looked appetizing. We ordered a salad, butternut squash soup, a filet, and shrimp. The salad and the soup were excellent. The steak arrived cold and cooked medium even though I ordered medium rare. I notified the server and she took it away and said they would replace it immediately. It took 30 minutes before a new steak arrived. It was cooked medium rare and was a decent steak, not great, but not worth $70. The shrimp were downright awful. They looked like the were taken off the Ryan’s Steakhouse all you can eat buffet. The restaurant did comp the steak and the shrimp, thank goodness and our server was very nice. Bottom line, I would avoid Revel for anything other than apres until their kitchen radically Improves.
To start, the food was good. However, there were several errors with my experience that I feel others should be aware of. For starters, on the dessert menu, there was a dessert that in the description was listed as containing "candied peanut butter"; however in the list of allergens for that dessert, peanuts were not listed, only dairy and I believe soy. While peanut butter was in the ingredients list directly above the allergens list, I feel it is important for allergen lists to be correct. The other issue was that the pricing on the menu was not accurately reflected in the bill. The sea bass was priced at $50 on the menu but $60 on the bill, and we were told the special was $40 but on the bill it was charged as $50. Additionally, the gnocchi was shown to be $38 on the menu but $40 on the bill. The menu stated that a gratuity would be charged for parties of eight or more, we were a party of six. However, on the bill, we were charged a 20% gratuity. The staff corrected the bill to accurately reflect the prices on the menu, as well as noted they would fix the allergen mistake. Just be sure if you dine here to check your bill and the ingredients if you have allergies.
