FANTASTIC. My coworker and I went to Tia Carmen on a whim because we wanted to treat ourselves. We’ve never had fine dining like this so we were nervous that we’d be hungry after and made plans to have In-n-Out after. We were blown away by the experience and our fantastic server, Yolanda, who made our night. She was incredibly knowledgeable and helped us navigate the menu. Every dish blew us away AND we weren’t hungry after eating!! We really thought we’d be starving but it was so good. This was a meal we won’t forget and hope to come back to!!
From the umbilical cord, to the nipple, to that first spoonful of solid food, when you take that first bite at Tia Carmen, you will realize that you've never truly tasted food. The plates look like they've been skillfully decorated by the likes of Pablo Picasso, feeding your eyes first. The heavenly aromas speak to what is about to elevate your palate, with the first bite leaving you craving for the next. Please, come here and eat for the first time.
My fiancée and I evacuated from the LA fires to Long Beach for a night, and then to this hotel the following day. We crawled over to Tía Carmen because it was close to our room, and we were so tired and hungry. We basically just stumbled in and didn’t even realize we were about to have a fine dining experience. The food, flavors, ambience, and service were not only a surprise for us, but rivaled any fine dining experience, tasting menu, or Michelin starred dinner we’ve had anywhere in the world. I don’t leave reviews often, but this place, and especially our server Yolanda - who made us feel truly at home after an exhausting 48 hours of what felt like running for our lives - moved me to come and leave a review. Mostly just to say thank you. Thank you for the delicious cuisine, for the humanity, and for making us feel normal and taken care of, even for just a night.
We had such a great experience dining at Tía Carmen. Great ambiance, service, and above all, food. Thanks to Chef Angelo and his team. We will definitely be back - so many other dishes to try!
Great special place! Expect to be there for two hours enjoying a food experience! This is definitely Michelin star quality! 1. Cheese bread with honey and chestnut butter (reminded us of Brazilian bread) 2. Shrimp tostadas. 3. Purple yam mole (came with a sachet of herbs and on fire for a unique smell) . 4. Fried egg dressing salad. 5. Fluke and banana Agua chili (the smoke is liquid nitrogen). 6. Bass with Israeli Cous Cous. 7. Lamb belly with caviar and the accompaniments for sesame leaf tacos (with pineapple slices). 8. Desert “Jewelry Box” of nopal macaroon, Dulce de leche short bread cookie, and mojito marshmallow(the marshmallow was not our favorite-maybe good to do a s’mores take on it) and 9. Manchego flan (looks like cousin it, delicious)
Excellent food, beautiful restaurant, and service was great as well. We both got the steak with mole and it was delicious. Highly recommend the flan with manchego as well - very unexpected but good pairing. If you’re staying at the Hyatt definitely check this restaurant out! I would not have expected a restaurant this good in a hotel UPDATE - this review is for dinner only, we also went for breakfast and would not recommend that
Chef Angelo Sosa "A Genious" Every dish was a masterpiece , refined, delicate, full of flavor, and simply unforgettable. Chef Sosa and his crew are experts crafting an experience that engages the senses, evokes emotions, and connects diners to his culture, his family and his own expertise.
Possibly the best restaurant we have ever been to. This restaurant is unparalleled in quality and presentation of food, enhancing the experience even further with the waitress’ full explanations of the flavors of the food prior to eating it. Our waitress was so incredible and her knowledge of the flavors of the food and ingredients within it is impressive. The food is miraculous and it’s a must try to sample it all! We had the “snack,” the wagyu kebab for appetizer, the lamb and the steak for entrees, and the yucca potatoes as a side. They were even so kind to present us with a complimentary dessert for my birthday! Breakfast is also incredible but is self-serve and more relaxed, whereas the dinner was a more intimate and romantic atmosphere.
Super nice service and delicious food! The $28 hibiscus cocktail was not worth it at all but everything else was super yummy. Very nice ambiance as well.

Two great meals at Tia Carmen’s during our stay: dinner and then breakfast. Two kids with it who loved their meals. Staff was terrific with both kids and made us feel comfortable. Food was outstanding both meals. Space is very stylish and not too loud. They spaced the tables well. Really enjoyed it.
We truly had the most amazing meal in service. Every single course was top notch. The overall atmosphere and decor is stunning inside and out. We tried something from each section of the menu and already cannot wait to come back and try more. Do not skip out on the romaine salad and the flan dessert, still dreaming about it. So good! Todd and Yolanda took the most amazing care of us and helped us with our ordering suggestions.

Finding this level of service in the Coachella Valley is rare, and Yolanda’s exceptional care made our evening unforgettable. We will definitely be returning—and we’ll be sure to request Yolanda again!
Everything about this dining experience was superb. The service was over the top amazing. Almost as good as the food. We tried a lot of different dishes and each one was unique, flavorful and beautifully presented. Between the tuna soaked and in coconut broth to the steak smothered in bone broth butter to the caramel flan, we walked away saying this was the best meal we’ve probably ever had. I normally don’t leave reviews but I feel like this place deserves all the boasting. We celebrated our anniversary there and were touched by how well they treated us for our special day. This was an unforgettable experience. I would recommend this place time and time again. And we will be going back to try the breakfast in a couple of days.
Everything we ordered here was incredible. This is a celebrity chef restaurant where each dish tells a story – something I was skeptical about at first, but it totally works. We tried the pan fritos, fluke + banana, purple yam, octopus, lamb barbacoa, uni stew, yucca brûlée, and native rice, and I don’t regret a single item. The octopus was the standout for me – probably the best I’ve had, perfectly tender and not the least bit chewy. The Black Forest cake dessert was gorgeous but skippable. Overall, an unforgettable dining experience!
Tonight we had a group of friends who ordered several dishes to share. The food was unique and flavors were wonderful. Everyone in our group was delighted with each course. The service was so thoughtful and caring. Thank you Chef Angelo and our server Sylvia!
Excellent fine dining restaurant worth the price. Mind blowing dishes: LAMB BARBACOA + CAVIAR: The fusion of flavors is nothing that I have tried before and it meshes really well together. Fig / gelato tart(forgot the exact name). The homemade gelato is excellent on its own. When combined with the figs and the tart it’s extraordinary. Other dishes: We also had the ELOTE ASADO and DENVER STEAK as well. Both were very good. If you’re craving steak, I actually preferred the steak next door at Carmocha. The steak at Carmocha has an excellent charred flavor.
This restaurant just jumped on my top places ever to eat at. It is amazing. The food is unique and tasteful. Service was exceptional. Yolanda, our waitress, made the night remarkable. She was knowledge and paired our food with wonderful dishes. The wife and I are going back tonight I believe :) Must try this place if you havent!!!
I took my wife for her Birthday to Tia Camen's. This was our 1st time eating there. Miguel was our server and he was correct when he said that our meal would more than just a dinner. It was indeed more than just dinner, it was an amazing experience to have on such a special occasion. The food was unique, authentic, and served with the utmost excellence Miguel took his time to explain every segment of our meal. We both started out having the Pan Frito which was incredibly delicious I had the New York Strip coupled with a special mole which was a Class of its own, second to none My wife had the Chicken Guisado toppled with their special rice which was an absolute Homerun in her eyes This made her Birthday a one of a kind We will definitely be back and request Miguel once again If you're looking for an Amazing experience and not just a meal, go to Tia Camen's in the Hyatt Resort.
Make a reservation RIGHT NOW. Having traveled the world and dined in many michelin starred restaurants, we are blown away that this place exists in a hotel in the desert. The food, service and cocktails are beyond. Can't wait to come back. Ask for Yolanda, she is top notch!
The wagyu steak with marrow butter was the best steak I have eaten!
Had a date here on sunday. I highly recommend making a reservation in advance. We went at 11:15 am and got there in time for breakfast. The buffet breakfast was phenomenal. It is extremely reasonable. Total billl for 2 people was $79. You do have to pay for parking. All of the staff was very friendly and knowledgable.
Best tomahawk steak ever. Great sides. Great Kids menu. Our waiter Kevin was fantastic.
Amazing food and ambience. The patio was dog friendly and had heaters to keep you warm and cozy. Our server, Yolanda was a delight. She was very helpful and had great recommendations.
Every dish we tried was outstanding! The Bronzino and Short Ribs were the absolute highlights — perfectly cooked and full of rich flavor. The Rib Eye and Octopus were also good. The dessert was phenomenal — the perfect sweet ending to a wonderful evening. Highly recommend!
This place is SPECIAL! 10/10 The best food and service in the Desert. Every dish is unique and absolutely delicious with amazing presentation and perfect portion. During a family vacation with my mom and two daughters, we had the pleasure of dining at Tia Carmen, and it was quite an experience! From start to finish, this restaurant exceeded all expectations. The food was creative, beautifully presented, and packed with flavor. The girls stepped outside of their comfort zones and tried dishes they’d never even considered before. A special shoutout to our waitress, Yolanda, who made our experience even more enjoyable. She was not only friendly and attentive but also extremely knowledgeable, especially when it came to accommodating dietary restrictions. Both my daughter and I have a gluten allergy, and Yolanda took such great care in ensuring our meals were completely safe. I appreciated her attentiveness and it was nice to enjoy a meal without worrying about our allergy. The cherry on top, however, was getting the chance to meet Chef Daniel Arias. Yolanda arranged a meet-and-greet, and the girls had the unique opportunity to chat with him and even take a private tour of the kitchen. As if that wasn’t enough, we were treated to gluten-free macarons, presented to us in an elegant jewelry-box case. It was pretty magical! But the surprises didn’t stop there. Chef Daniel himself came out to our table and created a special dessert just for us, right before our eyes. Watching him work his magic in front of us was nothing short of mesmerizing, and the dessert was absolutely delicious. It was an experience that went above and beyond anything we could have imagined. I’m not sure what we did to deserve such exceptional service and hospitality, but we are truly grateful. This meal and the incredible people at Tia Carmen will be a memory we’ll treasure forever.

We had an amazing experience at this restaurant from start to finish. The Hostess Alyssa was friendly and welcoming and helped explain the menu and the experience we could expect. Our server Yolanda was knowledgeable and offered amazing recommendations that did not disappoint. We had the Pano Frito and the Fluke & Banana to start and we were disappointed when they were gone and wanting more. The Tomahawk steak and the market fish were both amazing and the flan with manchego cheese and the fig tart with honey and rosemary ice cream were to die for. Would definitely recommend for both the delicious food and the amazing staff and experience
TL; DR - Exceptional food. Exceptional service. Get the ribeye and the fluke. One of the best meals we have ever had! Our server, Yolanda, was so attentive and friendly. She also helped guide us on what to order and she was never wrong. The cocktails we had were outstanding - best I’ve had in years. We had the fluke crudo, chicken croquettes, romaine salad, and the ribeye with bone marrow butter and mole. The ribeye was easily one of the best steaks I’ve ever had. But it wasn’t just the food that stood out, the service was EXCEPTIONAL. The other server, Todd, pointed out something on our plate and we struck up a convo about heirloom beans. So he brought us a sample of an heirloom bean paste that they use for another dish. And then at the end of the meal, Yolanda poured us surprise glasses of moscato. We live an hour away and will absolutely be coming back as often as possible. ETA: we came back 12/2025. Yolanda is STILL the best. We had the fluke and the ribeye again. But this time added the tuna crudo - the tuna is incredible quality. We also had the yams - which while not the most surprising or interesting dish was so exquisitely comforting - it felt like a yam hug. We also had the Brussels sprouts which were solid.
Probably one of the best restaurants I have visited . The experience is so unique , I can’t believe it’s an hotel restaurant . Hands down the best chef restaurant I’ve been to. Miguel, our waiter, is an expert. Just let him order for you, he knows what u really need . I can’t explain this experience other than to tell you it’s phenomenal!!!
The food and service were amazing that we decided to go back twice during our 4 day stay at Indian Wells. The steak was the best we have ever had, and we've had our fair share of steaks! Also the uni tostadas were to die for!! A must have! I will remember it for quite awhile and will dream about coming back! Miguel our server took excellent care of us, including our 6 year old son. The staff also wanted to make sure we were seated comfortably while seated outside with the heat lamp. Wonderful place and I was telling everyone at the hotel how great the restaurant was. The only downside was for our first dining, we sat inside and it was a bit dark that I couldn't see the food. I like to see what I'm eating!

Our waiter, Miguel, guided us through the menu with incredible precision, sharing his deep knowledge of each dish and the inspiration behind them. The same level of expertise was reflected in Paula, who meticulously explained every dish as it arrived at our table. The attention to detail was extraordinary, both in presentation and taste, making each bite an explosion of flavor that was perfectly crafted. The evening was capped off by a personal introduction from Chef Daniel Arias himself. His passion for his craft was palpable, and hearing him speak about his creations added an even greater appreciation for the meal we had just enjoyed. The entire “experience” at Tia Carmen was outstanding. Miquel and the entire team treated us like we were family eating at their home. The quality of the service and the food were top notch. Each dish had its own unique spin on South West flavors. I would highly recommend the experience! Don’t overlook this gem inside the Grand Hyatt Indian Wells.
My wife and I had breakfast here before checking out of the resort. While the food selection wasn’t as diverse as I had hoped, there was still enough variety to feel satisfied. I appreciated the wide selection of beverages, which were all included in the price, making it easy to enjoy without extra costs. The service was very friendly and attentive, adding to the pleasant experience. Overall, it’s a nice spot for a simple and satisfying breakfast before heading out!
Hubby and I have been to Tia Carmen twice now. We are happy to report that both experiences were consistently amazing, delicious, food with innovative flavors and presentations, a comfortable, elegant ambience, and a professional and passionate staff. Like in fine dining establishments in Europe, we were able to talk to Chef Sosa about his creations and vision, and on our second visit we talked with Chef Ed, both were delightful to talk with about their passion for food. Service is professional, however, if you are able to sit in Miguel's section, please do so, he is an exceptional gem, attentive, personable, knowledgeable and also passionate about the food and experience that Tia Carmen is providing. Our second visit was to celebrate our 26th wedding anniversary and Miguel, Chef Ed and team helped to make our special evening extraordinary. We are foodies who have dined in amazing places all over the world and Tia Carmen is a brilliant addition to restaurants providing delicious food and exceptional experiences.
Simply delicious, very interesting and high quality ingredients and great great outcome. Amazing wine menu as well. Would repeat every single time while in Indian Wells as they keep changing the menu. The Chef and Yolanda and are amazing.
we had our nieces in town so we decided to go to the new restaurant at the grand Hyatt called Tia Carmen. There was seven of us. They sat us at this beautiful table in a lovely setting. Our waiter was excellent. The food was outstanding and the service was beyond comprehension. You are in for a wonderful surprise. A must it you are in town.
Kevin was our waiter. He was so nice and attentive. His suggestions for our dishes was spot-on! Everything was delicious! The Pan Frito, the corn dish, the vanilla flan was soooo good! Wish we lived here so we could come back here all the time. Delicious food in a great ambience with superior service!
Our first time at Tia Carmen's restaurant inside of the Hyatt Regency was an enjoyable and delectable experience. Our server Yolanda explained the different flavors and delicious foods available. We will happily return with more friends and family.
Tía Carmen completely blew us away. The food is Michelin-level creative, yet the prices are shockingly reasonable for the quality and experience. Every flavor came together beautifully. Our server, Yolanda, was warm, attentive, and spot-on with her recommendations. We loved everything about this restaurant, truly a standout dining experience.
Fluke appetizer was off. Fish was not fresh at all. Tuna was ok, fresh. Branzino was really good, cocktails where good, liked the wine selection. Tomahawk Steak was ordered Rare + and was served well done, too over cooked. Despite the feedback no response from the server to make it better, basically just said “ok”. Desert was ok.
My family had New Year Eve dinner here, we were expecting a good dinner and good time here, but the food was terrible! Fish over burned, lobster pasta was cold, wagyu filet smells. Desserts all cheap stuff. Totally Ruined our New Year Eve. If you are looking for a place to celebrate or want to enjoy a nice evening, don’t come here!
The food and ambiance are ok. Beware of the surcharge to “balance minimum wage”. They shouldn’t do it without customer agreement. It is not reflected anywhere and they add it to your bill. Not nice or fair.
Just been there for Christmas Feast or whatever. Subpar food and excessive tip requested. Never recommend.
There is ample opportunity for improvement at the Grand Hyatt Resort, Indian Wells, CA on site restaurant Tia Carmen. My spouse and I made reservations for Sunday March 16th at 5:30 pm with a fond expectation of an excellent dining experience. We were seated after waiting 5 minutes at the hostess station and were surprised that only one table had somebody dining while another table had a couple sharing a romantic moment. Our waitress visited our table and enquired if we were “locals” to which we responded no, she then asked again if we were “locals” to which we responded we were guests at the Hyatt. She then enquired if we would like some bottle or tap water, we replied still ice water. She frowned then departed and returned with a single glass of warm water to which we replied ice water please, she departed and returned with a glass of ice. She then enquired if we would like cocktails, we replied no, we would have wine with dinner. She then removed my spouse’s wine glass and walked away. She returned to take our dinner order and my spouse ordered the Denver Steak rare, to which the she responded “it’s a thick cut of meat and it will be tough”, my wife asked for it rare again and I asked her to cook the steak the way my spouse wants. I ordered a bottle of wine from the wine list and the Lamb Barbacoa for dinner, however, before I could ask for it medium rare, she departed the table and I again asked for a wine glass for my spouse. She returned again to inform us the bottle of wine we ordered was unavailable, however, she would “give us a similar bottle”, I requested to see the wine list and she contemptuously thrust the wine list directly in front of my face and departed the table. The dining experience had become very uncomfortable and we canceled our order and departed the restaurant. While we were waiting for the valet to get our vehicle a women appeared indicating she was the manager demanding to know what was wrong at Tia Carmen and we responded “extremely poor service” at which point she became very animated and commenced to argue. When our vehicle arrived we informed her we were departing for dinner and please let us pass, she declined and we walked around her. The attempted dining experience at Tia Carmen, which is supposed to be a 5-star restaurant, is the Worst experience we have ever had.
Poor service. Food is fine. They are understaffed for the price they demand. It’s subpar to the typical Hyatt dining experience.
