Three highly professional women run this restaurant with care and excellence. We tried the paniscia, which is unmatched in the provinces of Novara and Vercelli. The atmosphere is refined and welcoming, the staff kind and attentive. The gelato al carrello is an absolute must-try; I garnished it with nougat and zabaglione... Spectacular!!!!! I leave feeling enriched and amazed at how the ingredient "LOVE" enhances the flavors and spirit. THANK YOU SO MUCH
I've been traveling around Italy for years, but I've rarely found anything like this. If I called it "food heaven," I wouldn't be blaspheming...it's really close. Plus, the excellent and friendly service makes you want to return. Kudos to everyone who works here, true professionals.
What a wonderful restaurant! Found it by chance on the recommendation of the newsagent near the post office, welcomed with open arms by three wonderful women, whom I greet and thank for their professionalism, kindness, and expertise. They pampered and spoiled us like no other. The plin was incredibly elegant. Perfect! Nebbiolo, my favorite single-variety wine of 2023! The mix of Piedmontese appetizers was incredible. Every bite was a symphony for the palate. Every smile from these three beautiful women was an unforgettable plus. Thank you all from the bottom of my heart. We'll be back soon.
I came to Novara to hold a workshop for the Libellula Foundation. At the end of the workshop, I asked where I could eat some typical specialties, and they recommended this place, less than 10 minutes from the station, right in the city center. I ordered the traditional gnocchi for which the place is famous, and the pudding. Everything was very good. The place is elegant and the staff is friendly.
This small restaurant doesn't look very good from the outside. It consists of two small rooms, each seating about 20 people. We stopped in for lunch without a reservation on a weekday and found a table. It offers excellent traditional local cuisine, with good menu options. We luckily found the Paniscia on the menu, which was very good and worth trying. All the desserts are homemade.
After a stroll around the beautiful city of Novara, we headed to Trattoria Cavallino Bianco. Luckily, we had a reservation because the place was fully booked. The trattoria offers traditional Piedmontese dishes such as: 🥒 Vegetable flan, Gorgonzola cream, and a crispy wafer; 🧀 Novara-style appetizer: salami from the duja, fidighina, Gorgonzola, lard, and their pickled vegetables. • A delicious appetizer with quality local products that didn't fill us up too much and allowed us to fully enjoy the typical dish of this part of Piedmont: 🍛 Paniscia: a risotto enriched with local products, such as salami from the duja, a typical cured meat from this part of Piedmont that is covered in lard and preserved in glass jars. Another characteristic of paniscia is the broth used to cook the rice, which is made with pork rinds, beans, and cabbage scraps... and finally, lard, a must-have in peasant cuisine. • 🍾 All accompanied by a good bottle of Barbera Monferrato red wine.

Trattoria with a typical/traditional Piedmontese menu. Attentive service, a quiet restaurant with two dining rooms and limited seating. Small dishes, well-prepared with quality ingredients. Located in the pedestrian area, there's no nearby parking, but it's easy to find within 400 meters. Worth a visit.

The menu is irrelevant: too many of the items listed on the menu aren't included. The same goes for the 5-cheese tasting menu and its brochure: in reality, the types don't match at all, not even in number (4 pieces). The highlight is the honey served in a squeeze bottle. 😞 We know full well that quality ones exist, but the tool, unfortunately, resembles a supermarket one. So the whole thing conveys a lack of attention to detail, starting with the calling card: the smile. The undeniable quality of the food is undermined by the overuse of cured meats, used as a decoration on every dish. The crispy pancetta overwhelms the delicate aroma of Cervere leeks. The tagliatelle with Zola cheese are excellent and don't need much salami...come on! The meat is top-quality. The desserts alone are worth the trip and save the day, making us leave with a smile.
The cuisine was good, simple but well-prepared. The service could be improved. We found the owner to be very courteous and friendly, but the other person serving was really unpleasant and had a manner that made you want to leave quickly. The portions were small and inconsistent with the Price.

Distracted, forgetful, and lacking the basic principles needed to welcome diners, there's also a certain arrogance and never a single apology for all the shortcomings we experienced during our lunch. It starts with unreasonable waits, forgetfulness of bread, wine, and coffee, and above all, no timid apology when we decided to go pay and drink coffee at the nearest café. During lunch, we witnessed two tables give up and leave, and waiting nearly two hours for two courses is inexcusable. It's a shame, because the dishes are excellently prepared and deserve equal service.
