Fantastic modern new wave Mexican food, the flavors were delicious. We had the chips and salsa, the California burrito, and the taquitos, all of these were quite tasty and well portioned. We attempted to make a reservation online but it was lost, the hostess took mercy on our pitiful situation and still found us a table at lunch time. Service overall was excellent, staff were efficient and friendly. The interior decoration design was impeccable, there is also a full bar with a myriad of options. Prices were high but to be expected in SLO.
Fish Gaucho calls it's menu "California Mexican" and it's a perfect description. We had the swordfish. Perfectly grilled (medium rare), moist, flakey, and set on a bed of charred corn and a slightly spicy pea sauce. We eat a lot of seafood, this was delicious. The Tablas Creek was a perfect pairing. Super cool chandelier made of colored glass fish. Nice outside dining. Wait staff seemed a little stiff, but overall a great experience. Hope to come back.
We went to Fish Gaucho in Paso Robles excited because of several recommendations, but not really knowing what to expect, and it turned into one of those nights that just kept getting better. From the moment we walked in, everything felt intentional, warm, and thoughtfully done. It felt like more than just dinner, it was an experience. *Service: the service was outstanding. Alex, our bartender, was extremely knowledgeable, friendly, and genuinely helpful. He custom curated an extra añejo tequila flight for us that was incredible. He explained the tequilas, the aging, the flavor profiles, and the details behind each one, which made it fun, educational, and one of the highlights of the night. Our server, Rebecca, was fantastic. Super knowledgeable, down to earth, and warm. Talking with her felt like talking to a friend who just happened to know everything about the menu and the restaurant. Every person we interacted with was kind and clearly cared about our experience. *Food: the food was spectacular. Period. The aji tacos were unbelievable. Four street-sized tacos absolutely loaded with chilled, fresh, clean-tasting fish. The crema was rich and smooth, the tortillas were warm, soft, and chewy, the cabbage and greens were fresh and crunchy, and the pickled onions added the perfect tartness. We went with avocado instead of cilantro and it was flawless. Easily a five out of five, maybe six out of five. The green chili short rib was phenomenal. Butter-soft meat that cut with a fork, creamy mashed potatoes, and the farm fresh egg with the soft yolk made everything silky and rich. The green chili added just the right amount of tartness and smokiness to balance it all. I’d eat this dish every day if I could. We also ordered the chips and salsas, a huge basket of warm homemade chips with three scratch-made salsas, and they were excellent. *Ambiance: the space felt open but warm, cozy, and comfortable. Western-historic with a modern flair. A little loud, but not overwhelming. The massive wall of tequilas was stunning and really added to the atmosphere. *Value: for the quality of the food, the portions, the service, and the overall experience, the value felt more than fair. I left feeling like everything was absolutely worth it. *Overall: this was an exceptional dining experience. Spectacular food, warm and knowledgeable service, a fun tequila flight experience, and an atmosphere that made the whole night feel great. Fish Gaucho delivered on every level for me, and I’d go back in a heartbeat. Highly recommended.
If you’re in Paso and looking for dinner, there’s honestly no better spot than Fish Gaucho. Audrey, our server, was incredibly kind, attentive, and had spot-on recommendations. We started with the shrimp ceviche, nachos, and some amazing tequila cocktails, then moved on to the cod tacos, carnitas tacos, and the short rib tacos (!!!). Fish Gaucho is a local favorite for a reason, and I can’t recommend it enough. Huge thank you to Audrey for the outstanding service—wow!
I have been going to Fish Gaucho for years, and the food and service never disappoint. It is my absolute favorite restaurant in Paso Robles. Their drinks are also the best around. When I am not in the mood for an alcoholic beverage, I love their mocktail options. The four is always so good! Tonight I had the best ahi tacos! The owner Troy is on-site all the time, ensuring quality control and greeting everyone with a friendly smile.
Every time I’m in Paso Robles I make it a point to eat at Fish Gaucho. It’s one of my favorite restaurants! The staff that helped us were extremely courteous and polite, offering great recommendations and accommodating our requests with a wonderful attitude. One of the best features of this restaurant that really sets the quality of their dishes and drinks apart is that all ingredients are prepped fresh for the day, which really does make a difference. Everything we had was fresh, flavorful, and an amazing experience. Highly recommend you make a reservation when you plan to visit since this is a popular restaurant in the city and the standby tables can run out fast.
This was our first meal in Paso and it did not disappoint! We ordered a couple of cocktails, the ahi crudo, mango cod tacos, the porkchop, a side of elote, and the flan for dessert. Food was delicious, but we were blown away by the porkchop. Definitely joining our unofficial top 3 list of porkchops we've ever had (the other 2 are Penny Roma and Kothai Republic in SF). Josh was our server and he was great! This will be another spot we have to return to when in the area.
First time at Fish Gaucho and it blew us away. I had the short rib enchilada and it was hands down the best I’ve ever had. My wife ordered the tuna tacos and loved them, and our son enjoyed his quesadilla. The atmosphere is lively, the service was friendly, and the food quality was top notch. We’ll definitely be coming back the next time we’re in Paso Robles!
So many friends and locals recommended this place and it lived up to the hype! Great seafood and the short rib tacos are delicious too. The oysters were a great deal and so fresh! Some of the best that I’ve had! Also would recommend the Ceviche de Dia. Delicious chunks of fish that were marinated perfectly and so flavorful! For drinks, the Mach 1 was the standout — a bit spicy and spirit forward! Service was friendly and helpful. Great space that is lively and full of cool decor. Also check out Tiki Cane next door for some great tiki drinks!!
Fish Gaucho served innovative fresh Mexican food. Don’t miss the chicken burrito. Great tequilas. But that said, please stop charging me extra for a small bowl of salsa to accompany an entree I already paid $33 for. It leaves a bad taste in your mouth. That said, I would return for the quality of the food.
I have been wanting to try Fish Gaucho for a while. We live in the bay, but are in SLO most weekends and don't get a chance to stop in Paso. Today, we stopped in for a quick bite on our way back to the bay and I couldn't be happier. The wagyu tartare and ahi crudo were excellent! Fresno chilis with the tartare added an element to the crudo I otherwise would not have realized it needed. I cannot wait to come back to try other dishes. This is definitely worthwhile!
Outstanding food. The enchiladas were my favorite! We also loved the shrimp ceviche and nachos. Friendly wait staff and food came out quick! One suggestion is to be more upfront about the cost of bottled water, they have complimentary water…but I felt it was a little sneaky about how it was framed at the start.
Amazing Mexican restaurant! Food was fresh and delicious with plenty of GF & vegetarian options. The mezcal craft cocktails were also excellent! The staff is very attentive and friendly. Of note, the patio is dog-friendly. We highly recommend this restaurant and would definitely return.
Absolutely flavorful delicious food & great cocktail mixology. Service is excellent, I love the way, even when another waiter walks by, they pick up what’s finished, even if not on there tables. Fabulous team work & training, with has to be excellent management. Everybody is so ☺️ young and they work so hard.

Wanted to have some new wave Mexican based on the reviews. Food was OK but pricey. Would've been great to get free chips and salsa to accompany the meal vs $14 price point. Our server was helpful choosing the enchilada slow cooked beef. Salsa for the fish taco was flavorful but needed more fish. Decided to get dessert somewhere else.
Fish Gaucho has good food and large portions—but let’s talk about the prices: absolutely ridiculous. It’s the kind of place where you pay for chips and salsa, and everything feels a very overpriced for the vibe. That said, the food itself was solid. Fresh, well-prepared, and flavorful. The margarita was fine—not bad, but definitely not worth the premium price. Minimal pour, minimal booze, maximum cost. Overall: it’s good enough that we’d come back, but the pricing makes it feel more like a splurge than a casual Mexican spot.
Open all day so great for families with small children who want/need to eat dinner earlier than anyone else. We walked up to the restaurant at 4:30pm and it already had a small line of people outside. We got a table on the patio without having a reservation. Patio is dog friendly. Restaurant is also somewhat baby friendly (they have high chairs but no changing tables in the restrooms). Service is great, front of house and waiters are all very attentive. Food is pretty good but not great. The halibut tacos were good and tasty but fish was not seasoned. The aguachile was too sweet. They are known for their tequila and mezcal selection but the drinks they mix with them are not amazing. The Paloma is ok.
Had our second dinner there November 2025 and it was very good. Indoor and outdoor seating, tho we were inside on a cold night. Crowded, but not crazy. Staff did a nice job with our large group. Great vibe here; fun on a Saturday night.
Met some local friends while passing through Paso Robles and they recommended this place. We enjoyed the great service, the pleasing atmosphere, and the delicious food. I have to knock a star off, though, because the table was unpleasantly sticky. I think this happens when varnished wood tables are cleaned with the wrong type of cleaner? Also, there was no salt on the table and the freshly made chips needed salt. These nit picks are really just for the purpose of making an excellent place even better. Another suggestion: please note that the fish in many of the fish tacos is deep fried. I should’ve asked, but just didn’t think of it. I just assumed that it would be grilled fish. So I was disappointed to find that both my taco choices were deep-fried. That being said, they were scrumptious. Especially the pineapple salsa and the pickled red onions.
Excellent halibut tacos - among the best I've eaten. Then why knock off one star you ask? This time it's for value... An order of 4 tiny soft tacos $36 and at that price, a tiny cup of hot sauce (again excellent) jabbed and additional $2. Really? Remember - they open at 3 pm on weekdays - it took us months to finally drive through Paso Robles at a time when they're open!

I was pleased with the quality of the food — the dishes were well-prepared, flavorful, and clearly made with fresh ingredients. However, the service delay was notable and quite uncommon based on my experience. At the end of the meal, I ordered a dessert, but the check arrived before the dessert was even served. It took approximately 15 minutes for the dessert to be brought to the table, which disrupted the overall flow and closing of the dining experience. With more efficient service, the level of hospitality could truly match the quality coming out of the kitchen.
