If you're looking for a fast, healthy, tasty, reasonably priced meal, this is your spot to stop into (they even have a drive thru window option!). Locally farm sourced ingredients with buns made in house, you can tell how much care goes into the food and experience. The owner and staff are friendly and helpful. The restaurant is spacious and clean. Tallow is a special and unique place. Instead of paying the same amount for fast food that makes you feel junky afterwards, stop into Tallow.
First time eating at Tallow, had the smash burger with bacon and fries. Everything I ate was delicious and I had no digestive issues or feeling heavy, which always occurs when I eat heavy food or eat out.
Met Austin & had a great chat, as well as a tasty burger, fries & burrata peach salad. Yum!! Definitely will be returning.
Exceptional service, food and ambience. I’ve come 3 times within the past couple weeks bc of how good the food is. Every server has been very welcoming and helpful. The food is great and so are the smoothies but the best part abt this restaurant is they cook and fry everything in tallow which is incredibly hard to find these days. I try to avoid seed oils for my health so this place has quickly become one of my fav spots in upstate ny. 11/10

We were on the way to the beach and stopped in on the whim. Great short rib sandwich and fries!! We will try it again soon!
Had a wonderful lunch after riding 15 miles on the nearby rail trail. I had a delicious burger and the wife had a grilled cheese short rib that she loved. I have a real respect for restaurants that offer more than just ordinary fries and this place nailed it. I presume it was from frying them in tallow, Great lunch spot that had us sitting outside under an umbrella.
We popped into Tallow and tried a couple of their unique offerings: the Steak and Egg, Blueberry Smoothie and the Bacon, Egg, and Cheese. The Steak and Eggs were impeccable, our teenager has high standards when it comes to this meal and this did not disappoint. My hubby went for the Bacon, Egg, and Cheese was a solid choice. It hit all the right notes for a comforting and satisfying breakfast sandwich, well-executed and reliably tasty. I went for a lighter but insanely tasty option of the Blueberry Smoothie. It hit the mark made with quality ingredients and a light refreshing taste. Overall, Tallow offers an interesting take on breakfast fare, with some traditional options alongside great healthy, LOCAL, ingredients. We chatted with the owner for a bit who mentioned the history of the building. It felt really nice to support a place run by local folks with the local community in mind. Food was delicious and tasty, the servers were super nice and attentive. They also had various games which was super entertaining! The quality to price range was superb. Overall the atmosphere was just very friendly. Would 100% recommend, even if travelling with kids.
Nice spot for a burger and fries. Above average smash burger, with excellent pickles. The fries were the real show stealer, though. Probably top 3 fries I’ve had in my life (maybe higher, but I’d have to give that more thought). They were fluffy yet crispy and perfectly salted. Highly recommend for the fries alone.

We love tallow! We live locally and we go to tallow frequently. Love the burger and fries. We’ve tried almost everything on the menu and it’s all fresh and fabulous! The steak is so good! Best steak we’ve had in a long time! The service is wonderful we love seeing the guys that work there and they remember our names! This place is worth a drive if you live far away. Check them out! You will be pleasantly surprised and satisfied with the quality of the food!
Came here this evening with my mom, and we both had the smash burgers. Very good flavor! I also really liked the fries! We grabbed a menu on our way out. More than likely I’ll be back again soon to try some other things as well. It’s a nice place to grab a quick burger, and it’s nice knowing it’s a healthier version of most regular ‘fast food’ places.
Great new spot for locally sourced and creative comfort food - grass fed beef, tallow fried french fries, bone broth, house made buns, hot sauce, ice cream, etc. A happy place where you feel good about what you’re eating - and it’s delicious! As former restaurant owners and current foodies, we really appreciate the commitment and effort that’s been made here. We will definitely be regulars!
Came by Tallow twice while in the area. The food was fantastic. The patty melt is wonderful - juicy, crispy, melty, just what you want. Fries are great. The dining room is really nice and there’s a shaded outside patio as well. On top of good food the service was exceptional. They were so friendly and went out of their way to make us comfortable. Absolutely stellar experience, well worth a visit.
Tallow is the absolute bomb. I’m so happy they opened up so close to me! It’s hard to find such good quality food at such fast service!! Shoutout to Bill for always being so accommodating! I love “ the bird” and the fries are absolutely addicting. Also tried their breakfast today and the Bacon Egg and Cheese and parfait did not disappoint! Highly recommend. Definitely worth the drive from CT! Also love the fact that they have a drive thru- so cool.

Everything was spotlessly clean, and the open kitchen gave us a front-row seat to the cooking process—a reassuring touch that emphasized transparency and quality. And then—the menu! Bone broth and French fries, together? Yes please. It’s a surprising combination that somehow works, like a collision of nourishment and indulgence. Every item we tried was bursting with flavor and clearly made from thoughtfully sourced, local ingredients. Nothing felt mass-produced—everything felt made for you. Tallow is the future of "fast" food—quick, nourishing, local, and created with love. Kudos to Austin and the entire team. I’ll definitely be back.
We tried Tallow tonight for the first time! We had a great experience from ordering to enjoying our meal! The melt was fantastic as were the fries! The Chef even brought us ice cream on the house as we finished ☺️ We will absolutely be back! GREAT job guys!!

While on a spur of the moment road-trip with my wife, we ended up 2 hours from home and starving. We are so pleased that we stumbled across TALLOW. What a great surprise! We both got smash burgers and we both loved them. The staff was super pleasant and the over all vibe of the restaurant was nice! My only complaint is that this really great restaurant is 2 hours from my house!
Great experience! We ordered the burger, chicken sandwich, and kids grilled cheese and a bone broth. Everything was so fresh, flavorful and organic. Impressive that buns are made in house as well. Most of the time when I go out to eat I am left disappointed and unsatisfied because I know most places use seed oils for everything or get most of their stuff from Sysco. This is a great alternative! Hoping in time you guys get milkshakes.
Finally a clean, healthy place to get fast food! No seed oils, and their meat and ingredients are organic and come from small local farms. I have been waiting for a restaurant like this in the area and I’m so happy it finally exists! Food was incredible, and you don’t feel yucky or slow after because it’s such good quality and ingredients. Don’t walk here, run here. You won’t regret it.
The smash burger is the best in Dutchess County in my opinion. The tallow fries, delish! We had the dessert special, blueberry bread pudding with poppyseed crème anglaise…💥. The bone broth was a cozy treat on a cold day. Super kind staff, thoughtful service! It’s a farm to table fast food restaurant with ‘stay as long as you want’ type of vibe. The aesthetic is clean, chic, minimalist… good taste to go with good tastes. And not for nothing, even the music tracks were 90’s, 00’s, 10’s hits, prompting us to hum along while feasting. Pure bliss.
I just nearly crashed my car on the way home I was so ravenously attacking the fries. Best fries I've had ever, anywhere. fluffy on the inside crisp on the outside, perfect amount of salt. If my mouth could have an orgasm it did. the rest of the food is aweseome too, the smash burger is an easy 10/10, mushroom melt is bangin. and the pickled veg is actually quite nice and refeshing, cauliflower, green beans and carrots. Very fresh pickle, either they quick pickle the veg or they had just made a batch that day either way delicious. It was legit so good I had to write a reveiw as im sitting here eating it. Compared to some of the other options in Millerton this is a Freaking Dime!
When this restaurant opened I was sad there were no vegetarian options. A few months later they’ve made some amendments and I am thrilled!!! We always need more restaurants around and this one is great. The mushroom melt was incredible but my favorite thing was the picked vegetables - vinegary and sour and a little spicy. 🥵 The staff was also so kind - thank you for the root beer! Will be back and definitely recommend
We had a wonderful day visiting Tallow for the first time. Very friendly staff and beautiful interior. The indoor outdoor fireplace is super super cool. And the food! Super delicious and perfectly portioned. My husband and I shared the Smash and the Bird, and our 8 month old daughter couldn't get enough of the bone broth (watered down for temperature). Since we went on mother's day, I was surprised with a delicious ice cream dessert. It was super tasty and super kind to receive. We'll definitely be back!
I love this place. Everything is delicious, ingredients are beautiful and locally sourced, even their ketchup is special. Burgers, chicken sandwich, and prime rib (reservation only), and fries are terrific! Thanks folks for making very tasty food.

Went in with my family of four. Two adults two kids. It was a fantastic meal, and afterwards we all talked about the cooking quality, how good we felt after eating here, and how you could taste that every ingredient was homemade and of the utmost quality. My wife and I are both local farmers, who grow organic produce and flowers for a Michelin stared restaurant in NYC. For us, seeing and tasting all local products is really such a treat! And as farmers, being able to feed my whole family here for a reasonable price is a huge plus. I gotta say, the food here tastes like the region. It highlights the local producers and what is currently in season! The quality of ingredients leaves you feeling energized. All of this without sacrificing the flavor of indulgence. Rather, highlighting how much better local, mindfully raised/grown products taste and feel!! Go eat here, support this place and help them grow!!! I’m excited to come back and taste new and exciting things, and to get a fantastic smash burger anytime!!
We got The Smash, The Bird and Tallow fries, they were sooo good! You can taste the quality of the ingredients, highly recommend if you’re craving fast food but care about what you’re putting in your body! And the service was great, the owner is super nice - they even split our burger on the cute smaller plates because we were sharing!
The tallow fries are incredible! I'm salivating just thinking about it. We got a chocolate banana smoothie and dipped the fries, WICKED GOOD! The buns were soft and fresh, the burgers were cooked perfectly The vibe was great, good music, they have mason jars with all the spices, everything is fresh and local. We had been driving for 2+ hours, so we were ready to sit and eat, and it was a good spot, we will be back. My only negative is that some of the chicken was raw, but Laurie made us whole, and overall we enjoyed our experience
The food here is seriously good. I had the smash burger and tallow fries. My partner, a vegetarian, the squash soup and grilled cheese (with mushroom). Both were very well made. I particularly liked the care they took in preparing the food. It’s an open kitchen so we could see everything. They tasted a fry after it was seasoned. Same with the soup after heating it in a pot. The plate was wiped clean to ensure a good presentation. No of it seemed performative. The people being the counter are clearly well trained. My only regret is that the menu didn’t seem to stretch their skills or talents. Maybe it’s the local market.

Great spot to stumble upon while taking a visitor on a mini tour of NWCT & the surrounding area. Will certainly visit again & look forward to trying more of the menu/introducing it to others!

This burger absolutely smashed it. From the first bite, this smash burger had me rethinking every burger I’ve ever had. Perfection. The bun? Buttery, lightly toasted, and just the right size to hold everything together without turning into a soggy mess. If you’re looking for a burger that’s fast, flavorful, and freakishly addictive. The smoothie was fresh, light and sweet. The chicken sandwich was equally as amazing! The food didn't sit heavily on stomach, it felt light and like I was properly nourishing my body. I will definitely be returning for more.

This place rocks and genuinely has the best french fries I’ve ever had in my life. Like, it’s not even close. Nate and Will+Bill are super cool and nice. Good beer selection. I got the standard smashburger, everything on it, and it was an incredible burger. 10/10. Love these guys.

Anyone who can eat McDonald's or Chick-fil-A, you have a strong stomach because I feel terrible after. Tallow does "fast food" but when you're done eating it, you don't feel terrible about your impulsive eating decision. Everything is amazing, the staff remembered my name after my first order, and there is no seed oils, so you feel great after a burger and fries (that do not need ketchup) because the beef tallow flavor is incredible. They added a fried chicken sandwich that I just had for the first time and it is my new favorite.
Quality burger. The fries were outstanding. Star of the show. Had a cup of bone broth, love that they have that here. Ambiance is cool, great tame impala playlist going. Very very good service—attentive but not overbearing. Would definitely recommend if passing by.

This was our first visit to Tallow and cannot stop mentioning how great it is. From the second we walked in, the staff was very welcoming and friendly. The smashburger was juicy and on a perfectly paired bun. Their brisket melt was great as well, it came on a nice toasted bread with savory brisket inside and a white sharp cheddar. The steak that comes with the steak frites was so tender and barely needed to be cut. The garlic aioli on the side was delicious and great for the steak and fries. Their fries are a nice thick cut and have great dry seasoning on them. Wherever you are, make the trip and you will be coming back. We also got a lemon tart for the road and the oatmeal crust is great with tart.
Beefy! I had The Melt which had slow cooked short rib / brisket which had a rich beefy flavor, and was complemented nicely by the melted local cheese and sourdough bread. It was simple but rich, and tasted amazing. Paired with the salty hand cut fries, it was an appropriately sized portion given the richness. Service was friendly and efficient. Will definitely be back!

Artisanal burgers, steak and other delicious food. Friendly waitstaff and nice décor. Tables al fresco when in season. There is a gorgeous hearth but it was not in use during this review. Ample parking out front.

It was simple but rich, and tasted amazing. Paired with the salty hand cut fries, it was an appropriately sized portion given the richness. Service was friendly and efficient. Will definitely be back!
Finally a clean, healthy place to get fast food! No seed oils, and their meat and ingredients are organic and come from small local farms. I have been waiting for a restaurant like this in the area and I’m so happy it finally exists! Food was incredible, and you don’t feel yucky or slow after because it’s such good quality and ingredients. Don’t walk here, run here. You won’t regret it.
Really good food, pleasant seating area and diligent service. Not terrifically expensive either. Shared a burger and a chicken sandwich along with fries. Relatively quick service although I could see it taking a little bit if they get busy. Burger was cooked pretty well and good quality. Ditto for chicken. I liked the purple slaw they used on the chicken sandwich. Nice vinegar zing. Tallow fries were good if not spectacular. They had an ice water dispenser on the counter which was really nice. I took that and my partner got some Harneys ice tea. I think this is a new place so it’s nice to see this sort of fast casual food making it to the northwest corner. Fast, simple, clean, reasonable prices and good service. A decent share of the existing local joints are good but far too many seem a bit grubby. On the other end of the spectrum are nice places that are too pricey or slow to make the regular rotation. Anyway, we both left full without being stuffed. Spent about $40 on two people. Definitely will be in the rotation here forward.
I just nearly crashed my car on the way home I was so ravenously attacking the fries. Best fries I've had ever, anywhere. fluffy on the inside crisp on the outside, perfect amount of salt. If my mouth could have an orgasm it did. the rest of the food is aweseome too, the smash burger is an easy 10/10, mushroom melt is bangin. and the pickled veg is actually quite nice and refeshing, cauliflower, green beans and carrots. Very fresh pickle, either they quick pickle the veg or they had just made a batch that day either way delicious. It was legit so good I had to write a reveiw as im sitting here eating it. Compared to some of the other options in Millerton this is a Freaking Dime!
The smash burger is the best in Dutchess County in my opinion. The tallow fries, delish! We had the dessert special, blueberry bread pudding with poppyseed crème anglaise…💥. The bone broth was a cozy treat on a cold day. Super kind staff, thoughtful service! It’s a farm to table fast food restaurant with ‘stay as long as you want’ type of vibe. The aesthetic is clean, chic, minimalist… good taste to go with good tastes. And not for nothing, even the music tracks were 90’s, 00’s, 10’s hits, prompting us to hum along while feasting. Pure bliss.
Tallow is a promising new addition to the Millerton dining scene that's still finding its footing. They already have my vote for the best fries in town. Their commitment to quality ingredients shines through. The hamburger patty, bacon, and pickles taste noticeably fresh and are apparently from local farms. The patties are what keep this from being a perfect score. Both patties we tried lacked the essential crispy edges that define the style. Instead, they fell apart as if they hadn't been properly pressed on the griddle. For comparison, local favorite Willa nails their patty technique at a similar price point, while Sundaze in Poughkeepsie remains the valley's gold standard at half the cost. That said, Tallow is worth visiting if you're seeking a more upscale burger. Be sure to check out their specials. The watermelon gazpacho was particularly delicious. Pro tip: substitute the cabbage for lettuce on your smashburger to improve the texture.
Finally got to try this new place! The burgers and fries were very good! The buns were my least favorite part of my meal. It feel apart and did not seem fresh. In addition please add a way to get ketchup instead of having to open those packets. The service and atmosphere of the restaurant were great. Congrats and welcome to the area!

The smashburger itself was pretty great, but unfortunately the bun was cold and seemingly not toasted or warm. I feel like a toasted/warm bun would have made the big difference. It’s a new place in Milton that changed names twice. Got a $36 steak. That was the size of a small hamburger. Another expensive restaurant in millerton is that will not last. Should have invested the money into a grocery store and kept the McDonald’s .
It's set up well, though in the winter figuring out the entrance and exit is difficult. Service was great, you order at the counter and food comes to you. My husband had a wonderful steak and my hamburger was a bit greasy. The winter cheese sauce on it was light and tasty.
I really wanted to give this place a 5 star review, but I just can't. I ordered the smash, the bird, and some tallow fries. The burger was just plain dry. I think the juices are all smashed out of it in the cooking process. Everything seemed to be lacking flavor. The tallow fries were soggy and greasy. I know everyone is different, but for me the tallow didn't sit too well and I burped for a good 6 hours tasting those fries over and over again. Things fried in vegetable oil sit much better with me. The guy working the counter was very friendly, the atmosphere was good, and the place was clean. Food presentation was good, but I wish it tasted as good as it looked.

When you’re paying restaurant prices, you want to know what you’re getting each time. Unfortunately, the recent name change also adds a bit of confusion. The old name had recognition, and switching things up makes it feel like the restaurant is still trying to figure out its identity rather than building on what was already working. Overall, it’s a decent spot with friendly service and flashes of greatness. If they can lock in consistency and settle into a clear brand, this could easily become a local favorite. The smash burger was not a smash, it's a pass. We got one made with all the suggested toppings, as offered, and one that was just a burger with cheese. They were equally terrible, and the plain one made it easy to figure out why. The rolls were mis-proofed and tasted both bitter and sweet, while feeling old, tough, and stale, and the beef had no seasoning. None. The fries, absolutely amazing. Crispy, dense, yet fluffy. A masterpiece if you like huge fries. Not worth the trip for just fries, and not worth the money for their signature food staple, so, it's a pass from us. Sorry. Also, it's clearly an old fast food joint, and feels like one. Replace the floor.
Saw ads on FB, read reviews and saw reviewer photos - time for a food adventure! Sadly disappointed. Wish I took a picture of my smash burger - it was mostly bun despite the 2 patties. Originally thought I should get a single because all the photos made the original smash look so big. A single must be essence of meat. The fries were great. For a semi-self serve (you order at the counter, they bring your food, you bus the table) it is expensive when the 15% tip shows up automatically and if you’re not careful, is added to the bill. There is also a tip jar for the more astute who just wants to throw a couple of bucks. People were nice. Disappointed.
They ran out of fries! C'mon. Maybe it was an off day, because the burger was nothing to write home about. Overall, quite disappointing. I really wanted to like it. Yes, you did run out of fries. The person at the counter took our order, then after telling us about burger and chicken sandwich explained that you'd run out of fries and were prepping for the dinner crowd. Felt like something you'd want to tell customers upfront. He said you'd have fries in a few hours if we wanted to come back. We were hungry so made do without fries. Your team member even told us to tag you on Instagram if we post photos. Overall, really disappointing and not much effort made to make it right. It felt more like 'oh well' than 'we are sorry.' I write this in hopes that you learn. Everyone there looked pretty young and honestly I know you could do better. As I said before, I really wanted to like it.
