Un ristorante di grande qualità, che si distingue per la cura con cui vengono realizzati i piatti e per la genuinità dei sapori. La proposta culinaria è sempre coerente e ben eseguita, con preparazioni che riflettono attenzione, competenza e un approccio autentico alla cucina. Ogni visita conferma lo stesso elevato livello e lascia pienamente soddisfatti. La gestione merita una menzione speciale: i proprietari sono professionali, cordiali e disponibili nell’accompagnare il cliente nella scelta delle portate più adatte ai suoi gusti. We booked in advance to spend December 31st. The owner, Uncle Mauro, was very kind and helpful. When I asked for the menu, he sent me everything they were preparing via WhatsApp. A vast array of appetizers, various first and second courses, and a decent selection of desserts with six options. We chose to try the pepper flan with hazelnuts and cheese, the Russian salad, and the cotechino with lentils. Everything was sooooo tasty, with generous portions. We cleaned our plates by mopping up the bread. I had opted for the agnolotti with roasted tomato sauce, but at a nearby table they had brought tajarin with white ragù, which not only looked beautiful but also had a deep aroma. My companion instead opted for the blue toma cheese risotto with leeks and crispy onion. The risotto, with every forkful, was a blast of flavor, definitely the best dish we tried. The tajarin also tasted excellent. Now full, we opted for dessert. I chose the panettone served with zabaglione, followed by a crème caramel. I don't like crème caramel, so I can't judge it, but the panettone was a bit too warm. Overall, it was a wonderful experience; we'll definitely be back to try other dishes. In short, with three appetizers, two first courses, two desserts, two pampering pastries, one coffee, and one water, the bill didn't come to €60, so I'm more than satisfied with having chosen the mathematical bivouac. I hope they continue in this direction.
A truly exceptional restaurant! The food is always excellent and the flavors are authentic; you can taste that everything is made by them with passion and attention. Every time I go, I'm completely satisfied. The owners are fantastic: knowledgeable, welcoming, and always ready to offer the best recommendations. A place I recommend to anyone who loves good, authentic cuisine! 🍷🍝✨
This place is surreal, and not eating here is a crime. It says it all to find, in a remote corner like Usseglio, a place full of gems and curiosities about mathematics and climbing, explained with enthusiasm by the young and charismatic Francesca. Different specials every week, all rigorously made with top-quality products and indescribably delicious. How can you be sure of this? Uncle Mauro, the chef, comes out after each service to explain everything about his dishes and his products, with anecdotes and laughter. What's more, the prices are very fair and the formula is clever: with a €17 trio, you can try three different dishes from the entire menu. As for the service, it's true that they're slow—you eat about 40 minutes after arriving—but that's the way it should be: everything is cooked fresh, and the atmosphere is relaxed, so enjoy this too. Amazing.

We stopped by chance on our way back from Pian Benot, drawn by the great reviews. We had a great time, and the food was truly delicious! We ordered two "tris" of our choice, choosing from all the options on the menu. Everything was truly exceptional: the Gorgo, zucchini, and saffron risotto was excellent, the agnolotti spectacular... We were truly satisfied with everything we ordered. And the dishes served at other tables were also very inviting. The prices were very fair; we spent €50 for two: two tris, two soft drinks, water, coffee, and desserts (the latter to take away, because after the two tris we were quite full!). The place is quite intimate and cozy, the waitress was friendly and very welcoming, even with our four-legged friend. It will definitely be our regular stop when we're in the area. In summary: a great discovery, highly recommended!

July 14, 2025 - Monday (4 of us) The 'Bivacco Matematico', recommended to us by the managers of the Usseglio Museum, was a delightful surprise. The young owner offered a fantastic and warm welcome, attentive and enthusiastic: the trios, each of us choosing our own, were delicious. The bread, wine, and homemade 'brutti ma buoni' desserts, which we were able to purchase from their deli, were excellent. They were available to make our day an unforgettable memory, and the price was very fair. Unmissable. We'd love to return! Before heading to Malciaussia, we highly recommend stopping at the 'Bivacco Matematico'! A restaurant run with passion and originality. THANK YOU!
I always enjoy returning to Bivacco Matematico because Francesca and Mauro are so welcoming and the food is excellent. The bread is a true specialty, lovingly kneaded with sourdough starter and a select selection of flours. The ingredients are top-quality, and the dishes are meticulously prepared, an experience that gives me the pleasure of watching Mauro entertained and hard at work in the small open kitchen. The selection of wines, some of the best, and liqueurs is extensive. But Francesca's desserts are truly surprising. Yes, the desserts are a lovely surprise, and I'll leave the discovery to you. The delights of this place are countless, yet here so many things matter because mathematics is not an opinion but an intriguing passion...
We tried this place almost by chance during the 2019 Valliadi. We returned today, and I can assure you we're leaving even more enthusiastic. A place that feels like home, with furnishings ranging from kitchen, mountain, and mathematics objects. The restaurant is located on the first floor, and the atmosphere is very refined and clean, with an open kitchen. The first courses with roast meat sauce, tagliolini or agnolotti, are exceptional. The tongue with green sauce is fabulous. The excellent dishes prepared by chef Bivacco are brought to the dining room by the charming host, the mathematician. You can tell they both put heart, love, and a great deal of professionalism into what they do. It's definitely a place we'll return to.
The quality of the ingredients is excellent; the chef modestly says his only job is to not ruin them. There's a lot of research behind every single ingredient, and you can sense a great deal of passion for cooking. The dishes vary from week to week, and you can always find more traditional dishes alongside the occasional more innovative one. It's definitely one of my favorite restaurants, and it's always a pleasure to return. Oh, and I almost forgot, the prices are very fair! I've attached some photos taken during the various dinners.
We ate well and felt at ease. The restaurant is simple yet elegant, with an open kitchen. Traditional Italian dishes are well-prepared and flavorful. I stumbled upon it by chance, looking for a place to have lunch, but the entrance isn't clearly marked. Only by entering a door leading to the stairs and hearing dishes clattering did I realize the restaurant was open, which was a pleasant surprise. The place is small but cozy, with a fireplace. The owners are kind and friendly, and they're happy to stay after the meal to chat with the tables. The food is refined and excellent, offering unusual dishes, like pigeon, which is actually part of typical Piedmontese cuisine. For €15, you can choose the trio platter with generous portions and leave feeling full. The prices aren't high for the quality of the food. However, it's best to book at least the day before, otherwise it's difficult to find a table. Highly recommended

Almost opposite the Usseglio town hall, on the first floor above the shop. Small (24 seats) but welcoming, it makes you feel right at home. The staff are very friendly and helpful. A la carte menu, set menu, or a trio, with your choice of appetizer, first course, second course, or three appetizers, etc. For me, the trio is enough. I'll be back. Reservations are recommended.
