The only drawback I found is that it does not have valet parking, it is difficult to find, it has a very small sign at the entrance, the service, attention and food are impeccable, excellent flavor, it is a chef's tasting menu with 5 courses that change every 15 days, they do not have the a la carte option, the menu costs 1,200 without drinks and 1,850 with pairing, I ordered with pairing and it is delicious, I highly recommend it, it is a small place, I recommend making a reservation, the atmosphere of the place at night is incredible, an excellent option.
We chose the perfect place to celebrate 43 years of friendship. From the first course of the tasting menu, it was a spectacular experience! Mussels with chimichurri, pork rinds, and macadamia nuts... Whoever wants to enjoy VALIENTE KITCHEN, get in line, it's a resounding success!
This is my second visit and I could eat here a thousand times. The menu was excellent; the combination of flavors and the different courses all coordinated and were harmonious on the palate. The gnocchi, the braised beef with risotto, and the dessert were the highlights, although the other courses were also very good. The cocktails were a delight; we ordered the New Spring and Get Lucky—it was a great choice!
We had an amazing experience at Valiente. Every single drink is crafted meticulously to just be absolutely perfect. We were honoured to try the fall/winter menu and it totally blew our minds. The texture, the colours, and the taste of every dish was superb. You can truly taste the innovation combined with the tradition and flavours of Cholula Puebla, with a combination of European high end cousine. Excellent service, and the Chef Eduardo and all his team totally impressed us providing an incredible night. Valiente is a hidden gem in the heart of Cholula.
Went here with my husband for early dinner. The first question they asked was if we had any allergies and my husband explained that he was gluten, dairy, grain free. We got the “menu de temporada.”…
Valiente stands out from the start for its meticulously curated and thoughtful interior design. The interplay of heights, the warm and focused lighting, the materials, and the judicious presence of natural plants create a balanced and clean atmosphere, with a welcome sense of calm and freshness. It doesn't feel tropical or cluttered; on the contrary, the space breathes, feels harmonious and well-balanced, even in areas like the bathroom, where the details reinforce this sense of purity and lightness. As for the gastronomic experience, the seven-course tasting menu with wine pairings is correct and well executed. The flavors are balanced, and the pairings are well-chosen, but overall, there weren't any dishes that truly surprised or inspired me. Some courses felt repetitive in texture, with a consistent inclination towards creaminess, and in certain dishes, I missed a bit more juiciness or a better balance of acidity. The liquid dessert made with atole was interesting and creative, although for a menu of this format, it felt like a somewhat light ending. Overall, it's a solid and well-executed fine dining experience, albeit conservative. I would give it a second chance mainly for the space and the concept, which are undoubtedly among the best in the area.
As for the food, it was flawless. Everything was delicious, with flavors quite different from what you usually find in Puebla. The presentation of the dishes was excellent. The seven courses flowed together beautifully. And the ingredients were of good quality. Regarding the ambiance, it was a very welcoming place, with a moderate to quiet noise level, an elegant atmosphere, and even a touch of romance. Ideal for couples or small groups of friends. Regarding the service, I wasn't entirely satisfied. Initially, they took a long time to bring our drinks. The first course arrived about 30 minutes after we arrived. I mentioned when making the reservation that I didn't drink alcohol, so my menu wouldn't include wine pairings. On several occasions, they kept offering me wine and cocktails, but didn't give me many options for non-alcoholic beverages. They charged us for water (113 pesos), which is usually not a standard charge in fine dining establishments. And when it was time for dessert, both the waiter and a mixologist approached us to offer drinks to accompany the pre-dessert and the dessert. We asked if they had coffee (for me) and if they had any suggestions for my husband. They said they'd let us know what they had, and when we saw them, they brought us two alcoholic coffee drinks (I repeat, I don't drink, and it was about the fourth time they'd insisted on alcohol). They didn't even ask if we wanted them; they just brought them. When the bill arrived, it was 390 pesos plus those drinks. So we paid an extra 503 pesos for drinks we didn't order, drinks they weren't even sure we'd want, and for a bottle of water that was only enough for two glasses. This, I think, was a poor choice by the service. Aside from that, they were friendly.
1. Offense > They don't publish prices to try to be exclusive. This is illegal according to PROFECO (Mexican Federal Consumer Protection Agency). I will file a complaint on the next business day. 2. Very good atmosphere. 3. I came early to see how ready my friends were for lunch, not dinner. 4. The cosmo with Bombay was well prepared, with a good balance between citrus and sweet. 5. The catch of the day, first course. The ingredients didn't blend harmoniously. A mayonnaise flavor with chipotle (a cheap ingredient) predominated. See photo. 6. The baby squid tempura in green batter was crispy. Not bad, but there was something that didn't quite convince me. I still don't know what it is. 6.1 Of the three white wines they brought me, two looked very bad. I will perplex them to give a better opinion. 7. The third course was better in terms of flavor (it seems they're not used to having customers so early). But I was expecting something like Cosme or at least Pujol. It's far from that. Bottom Line: Maybe my expectations were too high based on previous reviews… hence my harsh opinion. The place is good, one of the best in Cholula and Puebla. Definitely. It's naive to compare it to Pujol or similar restaurants. Level: La Leche, the first branch in San Pedro, Nuevo León (years ago). PS: Some of the plants look sad and withered. (See photo)
The service was good. The food included some very good dishes and some average ones, with flavors that offered a different twist than what you're used to seeing in Puebla. We ordered the set tasting menu and left the place feeling bittersweet. At no point did any of the staff tell us that the "pre-dessert" wouldn't be served, nor did they mention any changes to the dessert, and yet we were charged the full amount for the menu. It's no longer a question of money; in a fine dining establishment, I think these kinds of errors shouldn't happen, and even after discussing it with the waiter, the manager didn't even attempt to propose a solution.
Unfortunately, my experience at this establishment fell far short of expectations. The chiles en nogada, which should have been the jewel of the season, were completely lacking in flavor: a characterless filling and a flat nogada sauce that failed to bring out any nuances. The service was another weak point: the staff, although polite, were constantly distracted and excruciatingly slow, making the wait overshadow any attempt to enjoy the evening. In short, a gastronomic offering that honors neither tradition nor the palate.
