We went to old Hickory for my birthday dinner while we were staying at the resort and we had the most amazing experience. Thanks to our server Nick. He definitely made the whole experience so special, he went out of his way and above and beyond. He is one of the best servers we’ve ever had. We also had the most amazing food. He made sure to go out of his way to explain all of the different items on the menu to help us select our Choices. Everything is high-quality and can tell that there is effort put into the meals. If you’re looking for either date night or a birthday celebration or anything like that, I highly recommend this restaurant.

This place was great. We went on a busy night so the host put us on the last two seats of the bar. Rhe atmosphere was good with that great low level steak house lighting. They had neat tables of all types to sit at. I recommend a reservation before coming but they seem to have enough bar seating. The bartender Adam was very helpful! Thanks for making our experience amazing! I would definitely recommend, however the lobster i felt was a bit over priced so stuck with a 24oz steak.

Par excellence in Chula Vista! The Old Hickory Steakhouse inside the Gaylord Hotel is truly a gem sparkling bright. The meal was superb, highlighted by a rich duck confit, a perfectly prepared pork chop, crispy fingerling potatoes, and tender roasted broccolini. We finished with a phenomenal lime panna cotta dessert that was bright and refreshing. Impeccable service and an unforgettable atmosphere!”

Attentive and friendly service. Delicious food that tastes like it was prepared with care from the kitchen. I can't recommend the duck confit enough. It was a delicious mix of tender and crispy, and apparently the chef's favorite. The one demerit is when the server asked if I wanted bread. I assumed complimentary bread like in most places, but what came out was a twelve dollar sourdough. Pretty shady to not be upfront about price when offering bread. However, the bread was delicious and I did not regret ordering it.

Exceptional Service from Rasheeda – Made My Birthday Unforgettable! We chose this restaurant last minute for my birthday, and I’m so glad we did. Our server, Rasheeda, gave us the most amazing experience! Wow.. The tartar and cheeseboard were both incredible apps. Great variety of aged cheeses and delicious honeycomb too. I had a bite of the duck, it was crispy on the outside and juicy on the inside. For myself, I ordered the cowboy ribeye rare, was cooked perfect. I gave it my best attempt but couldn’t finish the steak, it was so big. The Server and hostess were super sweet and attentive too, looking forward to going back!

Food was excellent. I got the 21 day aged cowboy ribeye and it was cooked perfectly. Make sure to get the oxtail sauce. Service was also excellent. Mack was extremely freindly and attentive, providing a welcoming atmosphere. Finished with the Panna Cotta which was different than I have had in the past but still very very good; it had was seemed to be a white chocolate crust which added the perfect snap and smoothness to the dessert. Drinks were spot on. I am a bit of a drink conusiere and these were perfectly balanced (boulevardier, old fashioned, Manhattan). Overall it was a little pricey but worth it. Would come here again. If your looking for a great dinner than make sure to come here.

We came for our anniversary! Man do they deliver ! The meat was perfect. The potatoes were so buttery! We order the chefs special, it was 3 steaks. Each one was phenomenal! We had the wedge salad and the Brussels. Their dinner rolls with herb butter. It was all so delicious! The meat was aged to perfection!

I had an absolutely amazing experience at Old Hickory Steakhouse. Since our party was larger than four, I couldn’t book through the OpenTable website, so I called directly to make a reservation for six—and the process was smooth and welcoming from the start. We were celebrating my dad’s birthday, and the attention to detail from the moment we arrived was outstanding. The staff surprised him with a handwritten birthday card, which was such a thoughtful and personal touch—it immediately set the tone for the evening and made the occasion feel extra special. We started with a round of fresh oysters, which were delicious—perfectly chilled, flavorful, and beautifully presented. Most of us ordered the porterhouse steak, and it was absolutely incredible—cooked to perfection, tender, and full of rich, bold flavor. The drinks were fantastic as well. There was a moment when my sister didn’t like her cocktail, and the staff was more than happy to replace it with something she’d enjoy—no hesitation, just great hospitality. Later in the evening, after a few drinks and lots of laughter, I didn’t realize I had left behind the card I used to pay. To my surprise, the staff called me and left a voicemail to let me know and hold it for me. That level of honesty and care says so much about the kind of team they have—professional, attentive, and genuinely customer-focused. From start to finish, everything about our night was memorable: the service, the food, the drinks, and the little moments that made it all feel personal. I’ll always carry a great memory of this night and I’ve already recommended Old Hickory to several friends. Whether you’re celebrating something special or just want a top-tier dinner experience, this place is a must.

Old Hickory was an amazing experience. I went opening night on the 15th and am going again tonight! The plates were beautiful and unique and the flavors were out of this world. My friends were extremely happy with their steaks and I ordered the duck and halibut which was a hit with everyone at the table. The few bad reviews below seem harsh for opening week and were certainly not reflective of my experience. This is a top notch restaurant that I will return to again and again and easily recommend to anyone.

As CV natives, we've been eyeing this place since it opened. Last night we went for our daughter's birthday per her request for a steak dinner. The staff was helpful with recommendations and the server was very attentive but not overwhelming. We ordered a couple appetizers, cocktails and wine. The entrees and kid's filet came out perfect. This is a great option for staying local and avoiding the downtown steak scene. Prices were a little high but I wouldn't hold that against them as it's at a resort. Pro tip: If you self park, they validate and if you choose to valet, they comp part of the total.

My husband surprised me with dinner at Old Hickory Steakhouse last night and it did not disappoint. We found easy parking along the hotel that was free until 1030 p.m. but did see valet for 0-2 hours was $30 as an FYI. He had made a reservation on Open Table and we were greeted promptly by the kind hostesses. They welcomed us and seated us immediately at a table that had a lovely view of pool area and sunset. From there we were introduced to our awesome server, Moses! Moses was friendly, knowledgeable and prompt in his service, not to mention he made fantastic recommendations for sides/desserts that did not disappoint. First we had the little wedge salads and it was light and flavorful and the Parker house roll that came with a delicious herb butter and sea salt spread. For our dinner, we ordered the dry aged ribeye and the 8oz filet mignon with the rigatoni Mac (SO GOOD) and cheese and the duck fingerlings (yummy but it’s a lot so recommend only if a table of four IMO). The steaks were cooked perfectly, the plating was beautiful. We enjoyed beer and a glass of Willamette Valley Pino Noir. Along side Moses was Christian who assisted and always kept our water full and table clear. For dessert, not sure how we had room but the chocolate one was incredible! Some type of chocolate poppers with the sea salt ice cream and foam - a pleasant explosion of flavors that I am still thinking about. Bathrooms are very nice, clean and private stalls. They also have their own in house dry age room under the restaurant! I wish I took photos of the food, but I was so delightfully present in the moment of enjoying our meal and exceptional service! Thank you to Moses, Christian, kitchen staff and the team of runners who made our dinner memorable. We will absolutely be back. This was our experience after them only being open two weeks, can’t wait to see the growth as they get more time under their belts - they have a great starting place!

We have visited many Gaylord Marriotts and have dined at many nice steak restaurants. We felt this was one of the best!

We just finished one of the best meals we’ve ever had here at Old Hickory. Our service was phenomenal — we felt special the whole way through. I ordered the grilled maitake mushroom and my friend got the Mary’s Farm duck. We also ordered the sourdough boule — which was so good! Both of our dishes were delicious and surprisingly light, which was perfect since we wanted something nice before heading to bed. If I’d been hungrier, I might’ve ordered something more filling, but the bread and butter honestly stole the show, I could’ve easily eaten another loaf! For dessert, we shared the raspberry dessert, which was unique and so good — not your typical sweet but really flavorful and refreshing. We didn’t have reservations, but they offer open seating. The server was so kind and let us know a high-top would open soon, so we waited about 20 minutes. It was worth it, he even helped us move once the table was ready. Overall, everything was amazing, great service, delicious food, and such a nice atmosphere. I’m not sure if I’d go back soon, but I’m glad we tried it.

Had dinner here with my wife a few nights ago. The food and service were outstanding. Our server Nick had excellent customer service. He was attentive and knew everything about the menu. I had the dry aged ribeye and my wife had the duck, both were amazing. We also had the big prawns and a cheese plate as an appetizer, delicious!

Went there for a birthday dinner. First time there. We read some "hit-and-miss" reviews on Open Table about the food, so we were a little nervous. However, we had a great experience. Rubin was our waiter and he did a great job, and knew the menu well. I had the 8oz filet mignon and my friend had the bone-in New York steak. Her steak was cook well done (her request), but she felt it was a bit dry in the middle. My filet (medium rare) was cooked perfectly and had a lot of flavor. I've been to several higher-end restaurants and this was the best steak of them all. I guess other reviewers have had lack-luster experiences with the steak at this restaurant, but mine was amazing....with every bite. I even asked Rubin to compliment the chef for me. Our side dishes were asparagus and mac & cheese. This is where the 4 stars with the food comes in to play. I wish the mac & cheese was cheesier. When you make it at home it's nice and cheesy and that seemed to lack a bit, but still good. The asparagus was great, and they're huge! I usually never eat the stems, but they were soft and edible throughout, and topped with a fermented black garlic sauce which was a nice touch. I've never had that before. My 8oz filet was $70 and her bone-in New York strip was $99. No drinks or soda, just water. They offer a free dessert since it was my friends birthday. We had a choice between about 5 items and chose the Lime Panna Cotta which was good, and had a red coin-sized piece of chocolate that says 'Happy Birthday' on it (see photo). The 4 stars for the atmosphere part is due to the restrooms. They could have been cleaner, but that's due to other patrons using them. They weren't dirty per se - just water spots on the ground and a bit of tissue on the ground in the ones we used, so they could have been attended to a little bit better. The bathrooms are unisex and there's about five or six of them. They're individual bathrooms, not stalls per se - I did enjoy that part. They also have power outlets in the bathrooms which I've never seen before, and they offer free tampons as well. The bathrooms are nice though. Here was a big surprise to us - it's a no cash hotel. That said, you can only pay (for anything in the hotel) with a card. They do have cash-to-card machines where you put cash into the machine and it will dispense a debit card for you to use throughout the hotel. We didn't see any signs to inform people of that (not that we were looking since that's not a normal business model for a hotel), so we didn't know till Rubin told us. Since we chose to be minimalists with what we ordered to keep the overall dinner cost lower, our bill was about $200, plus tip. We will go back in the future.

Went for Anniversary Dinner, was not expecting much. tl;dr Great Steakhouse where almost all the food is on-point (Steak 100% perfect.) Ambiance is a little too "casual." I believe hotel restaurants, no matter how expensive, will be "mid" at best. This place exceeded. Walking in and greeted with fantastic customer service. Initially saw the bar area and I was like, "yikes," looks like a sports bar. Went in to the restaurant... not really that much better... Bright (though the dimmed the lights 10 mins in, but still too bright) and too, "sterile?" for a steakhouse. My expectations were lowered. Our server, Moses, was perfect in everyway. Ordered some starters. Bread was, well, mid. Getting worse. Then came the Dungeness Crab Salad and the 'Sea'-cuterie board. WOW! The salad with the cauliflower panna cotta and hunk of crab with dill was SOOOO good! 'Sea'-cuterie was perfect!! Loved EVERYTHING here. Things are looking up!! Main Course, 21-Day Dry Aged 22 oz Cowboy Ribeye (and Smoked Bearnaise) with Brussels Sprouts, Noble Bacon and Yukon Gold Potato Puree. The steak was PERFECTLY dry-aged. Great notes, of well, "funk." Smoked Bearnaise perfectly accented it (if me alone, would get the blue cheese, but my wife hates that! lol). I wanted to lick my plate!! As for the sides...Potatoes were perfect, I detected some cheese in there... Sprouts were gross... drenched with maple syrup, ruining any balance between bitter and sweet. Dessert, Chocolate and Caramel, to die for. Moses provided amazing service and (mostly) the food is top tier (and more importantly, worth the price) They need to hire an new group to re-imagine the restaurant ambiance with the menu. Right now, diner environment is...odd. But yes, go here.

Food was prepared perfectly. Service was just ok, not outstanding. Waiter left me with an empty drink glass during the main course. Very bright and loud atmosphere. With the bright sun coming into the restaurant, some patrons had to wear their sunglasses while eating.

Old Hickory Steakhouse is a truly beautiful restaurant in the new Gaylord in Chula Vista. Ambiance is bright and open, which contrasts other dark enclosed steakhouses. I base my reviews on value - my expectations for a $5 meal are very different from a $50 meal. So with that in mind, Old Hickory is okay but not yet great. It is very new, so there are a few details missed, but I’m confident these rough edges will be smoothened out over time. The food was really good. We started with the Parker House Rolls and Spanish Octopus - both were delicious and didn’t disappoint. For entrees we ordered the 32 oz Tomahawk, 3 oz A5 Japanese Wagyu, and 8 oz Filet Mignon. Steaks were all delicious, but served a tad over the desired temperature (Medium instead of Medium Rare). We also ordered the Duck Fat Fingerling Potatoes, but these were the only disappointment. I would avoid this side dish as it was nothing special. Service was pretty good and attentive. Ava and Eddie were on point and took good care of us. They helped celebrate my early birthday with a complimentary Chocolate and Caramel dessert which was delicious. There were some hiccups, where we had to request new plates and silverware. There was a big gap between apps and entree. Small inconveniences. Overall, this is a good spot which will be great. Looking forward to revisiting.

I stayed at the resort and tried old Hickory steakhouse. The ambience was very nice and the hostess was friendly and polite. We ordered their sourdough bread, steak tartar, appetizer served on a beef shank with tallow and the shrimp appetizer. All were pretty good. The tartar was the shining star. I ordered a 30 day old dry aged ribeye, which was good, but nothing special. My biggest complaint was the Wine list. First off there is no Somm there to help direct your journey. Our server tried his best, but you could tell his Wine knowledge was subpar. The entire wine list was 99% California Wine. All Bottles you can find it any groceries store. I asked about some Bordeaux selections and the Server said he would come back to me, but just offered me a big jammy bottle of Napa Cab. We spent $1000 between four of us at that steakhouse and I would really like to see the Wine list evolve into more old world selections. Maybe even some with Age on them. Overall, the steakhouse was fine. Food was good, but nothing extraordinary. Just work on the Wine list.

From the moment we walked in the atmosphere was elegant and inviting. We were immediately greeted by a smiling and very friendly hostess. After some pleasant small talk we were sat down at a spacious table that was set up perfectly. The wine menu is extensive, and looking at the walls filled with floor to ceiling wine coolers, it's easy to see why. The cocktail and food menu was the perfect size at about a page long. We ordered an Ember & Oak old fashioned and a Barrel Aged Boulevardier. They were made quickly and tasted great. The chef presented us with a ribeye and strawberry relish appetizer the was fairly decent (can't complain about free). For main dishes we ordered 8 oz filet mignon with Wagyu chimichurri sauce accompanied by noble bacon brussel sprouts as well as a 14 oz bison ribeye with black butter sauce and accompanied by rigatoni macaroni & cheese. Most items tasted fine, but for the price I expected to be amazed. I will also say that the macaroni & cheese tasted like a wooden log and nothing like cheese (most likely just overdone with the smoking). To finish off our meal we were given a complimentary choclate and caramel dessert that was delicious. In the end the total was about $320. All in all for the price I will not be going back as the quality at other establishments are just better. But big props to this hotel restaurant as it did add a fancy feel to our already great stay at the Gaylord resort.

While I understand they just opened, here are a few things that stood out for me: Service staff were putting a lot of effort, but to a fault - stepping on each others toes, asking me the same questions giving me the impression there wasn’t much communication between staff or if each staffs roles wasn’t clearly defined. At times Staff seemed more anxious than enthusiastic and calm. When they poured my wine, they didn’t have me sample; which for me is fine, but for wine-people could be an issue. Bread was grocery store quality in texture (like the Hawaiian rolls from a bag but not sweet). As a tone setter, fell short. The food that followed made up for it. The server was considerate when I asked if there were any dairy free desserts, from which he said he will ask but will get it done. While they did bring one, they never confirmed with me what I would be getting, so I never was given the opportunity of choice. Steak was a good value price (22oz dry aged). I would’ve liked the brussel sprouts to have more crisp/texture. I would have liked a French fry option verses the mini potatoes. Tried the Zero-proof old fashioned, and would not order again. Tasted like old fashion flavored water (think watered down cola, no fizz) Overall I can tell they are trying to achieve a fine dining experience, and maybe in a few months they’ll be able to get there.

What a disappointing evening. Went to celebrate a birthday and an anniversay. Ordered 2 appetizers. Sea food tower was good but the quantity was ok. Ordered a bread and that was tasty. Ordered a sea food entree and the rest were steak entrees. It took soooooo long to get our order after placing. Ordered med rare steaks and they were well done and very chewy. We were 8 of us and our total bill was $2000+. Not worth the price. Will not go again and would not recommend. Parking after valudation was $35. Total rip off. Better steak options in down town.

It's not as good as the other Gaylord locations. Did not even have a regular ribeye. Only a dry aged $100+ version. You'd think there would be the standard selection for an upscale steakhouse. Had an 88 dollar NY strip that wasn't the best either. Brussel sprouts were mediocre, your think they'd char them, tasted steamed. Felt taken advantage on price being a captive audience at a hotel with no walkable off-site restaurants. I was the one that chose the place in advance and made the reservations for a large group. Disappointed.

My wife and I dined at Old Hickory on the second day that the resort was open. I sent this below letter to the general manager of the resort after the experience. A physical letter, stamped and mailed. I never received a response, just ignored. My wife and I really care about this resort since it is right next to us, and we intend to spend a lot of time there. The exterior landscape, grounds, and pool area, along with the interior landscaping, lighting, and design, are nothing short of fabulous. As residents of Arizona, with a boat docked in the marina next to the resort, we visit the area about twice a month and plan to frequently enjoy your resort’s rooms, pool, spa, and dining options. We dined at the Growler Sports Bar and Tap Room on May 15, 2025, your grand opening day, and had a delightful experience. However, our dinner at The Old Hickory the following evening, May 16, fell short of expectations, especially for a $410 bill, including tip, for two. The appetizers, including refrigerated Parker House rolls and lukewarm seafood chowder broth, were disappointing. The mashed potato puree side was also nearly cold, though the cowboy ribeye and field mushrooms were highlights. Service felt inexperienced. A busser removed our last piece of bread without permission, and our waiter did not address it when asked. Most concerning was a wine pricing error: we requested a $60-70 Cabernet Sauvignon, agreed to an $80 bottle, but were charged $128 for a $250 Cakebread Cellars 2021, which the waiter admitted was his mistake. We understand the challenges of a new opening, but these lapses in food quality and service were significant. We’d appreciate a response to discuss how this can be addressed and to ensure future guests, including ourselves as frequent visitors, have the exceptional experience your beautiful resort promises. I had the lobster in a heavy bed of quinoa layered with micro greens. The flavors from the microgreens gave a pungent taste that overwhelmed the palate. I informed the waiter and still when I got Desert it too was also decorated with edible flowers with more of these disgusted tasting greens. I picked out the greens and was able to enjoy its flavor. I asked for coffee and was told the machine was down. Lastly the bathrooms had no paper towels. I reported all this and many apologies was extended and was give a whopping $256 Bill.

Was disappointed in the food quality, service, and overall atmosphere. Food came out before the drink. No steak knife provided. Spinach was under cooked. Presentation was lacking. We just expected a lot more for a steakhouse. Several areas for improvement.

I recently visited a steakhouse in Chula Vista and had a pretty disappointing experience. The service was good , our server was friendly and attentive. However, the food quality was very bad. My husband ordered a medium-rare dry-aged ribeye, but it was served well done, and my bison steak was very chewy. We were very excited for having a good steak house in Chula Vista, and not having to drive downtown, but we left the restaurant very disappointed! BTW we paid closed to $300 ,which is normal for a good steak house but this one was a joke.

Such a disappointment. Came here to celebrate a 30th bday for my gf and if I could sum up this experience in one phrase, it would be: a McDonald’s wrapped in a steakhouse. From start to finish, this was one of the most disappointing and overpriced meals I’ve had in a long time. First, the service was abysmal. We had to flag down multiple servers just to get basic attention. Our actual server was running around like a chicken with her head cut off, which made simple requests unnecessarily difficult. For a restaurant charging premium prices, the level of professionalism was shockingly low. No high end steakhouse standards of service anywhere. The two martinis we ordered (the same drink, mind you) arrived looking and tasting completely different one of them barely even half full. At this price point, consistency and attention to detail should be a given, not a luxury. Then came the food. We ordered the “wagyu steak tartare” only to be served a cooked version, which completely defeats the purpose of tartare. Either the kitchen doesn’t know what they’re doing, or they assume the customers don’t. Either way, not great. We ordered the sourdough, and after 15/20 mins of waiting they came back to tell us they were out. We got the Parker rolls instead and it seemed like Hawaiian rolls thrown in a pan and salted. However, even those came out cold in the middle and had to send them back. To top it all off, the entire place had a vaguely fishy odor lingering, which was not only unpleasant but also totally unappetizing — especially for a steakhouse. For the prices they charge, this spot should be delivering a refined and memorable experience. Instead, it felt like a sloppy, confused attempt at fine dining. With this place being so new they have time to hopefully fix things but for now I’d strongly recommend looking elsewhere if you’re seeking quality food, good service, or anything remotely worth your money.

A kids not friendly, over priced tasteless food (especially the salmon and mac & cheese) with staff that insisted I ordered beet salad instead of Salmon, and rushed to take the plates away as we were still eating... Would not recommend at all especially for a family dinner...

This is now the second time we’ve hosted a dinner at Old Hickory where no AV was provided, despite this being a speaking event where AV is non-negotiable. After raising this issue previously, I honestly can’t believe it happened again. This isn’t just a small oversight, it’s a complete failure in planning and execution. It put unnecessary pressure on our speakers, disrupted the flow of the evening, and left our guests with a subpar experience. For a venue that markets itself as upscale and event-friendly, this is frankly embarrassing. We expected professionalism. What we got was disorganization, lack of accountability, and a total disregard for our needs — even after clearly stating them in advance. If you’re considering this venue for any event, please THINK TWICE! Old Hickory has proven itself unreliable, and unless there’s a serious shift in management and communication, I can’t recommend it to anyone. I requested direct contact for management and they ignored my email.

I’d called 2 days in advance of our dinner plans. I’d explained that we wanted high-end dining like our favorite restaurants, Island Prime & Mr. A’s, that we frequent for special occasions. I wanted to make sure we had a great table with a great view, as we tried this new Restaurant Old Hickory. The menu is hard to find online, and limited compared to other locations. We still wanted to be adventurous for our 30th Anniversary. We showed up on time for our 6:00 p.m., reservation, only to be told that they didn’t have a reservation for us. The man at the front, offered to help us/accommodate us, left us standing in wait, while he went over what just happened with his welcoming staff. It didn’t look crowded in the restaurant compared to the bar area. When I came back to him to see if he was able to arrange a table… he was courteous, but, just words, he offered a table in the bar, that wasn’t a dinner table, it was an entry table with a flower display on it. Winging it, in this soft opening IS what they are doing there. We decided to call Island Prime and explained our reservations were lost at old hickory, on our big Anniversary night, can they help us ladies? They apologized for this restaurant and said, come over, we’ll make it happen for you!!! We had a wonderful $500 meal, wonderful meal, great staff (Karrie), awesome bottle of wine (En Route Pinto Noir) and we have a great picture with Chef Debra Scott!!!! It worked out for the better!!! We’ll stick with our favorite restaurants, they won’t let us down like we were at Old Hickory!

Extremely disappointed. Brought the family here and expected a great meal. Instead it was burned steak, flavorless appetizers, and one of us got sick. No need to mention this took 3 hours. No drinks refilled. All in all a total disappointment.
