Amazing find at the North Pole Expo in Trussville , Alabama. The owner let me try a sample of the Spinach Articheaux, this had good flavor from the spinach and a nice crunch. I decided on the Jamblaya. The dish had it all, great flavor, rich base and just the right amount of heat to keep the proteins as the star. I also indulged on a piece of Southern Kin Cheesecake. Smooth and not too sweet this dessert was an additional hit. I think they might be opening a brick and mortar in Birmingham. If im ever back in the area, I will find Roll Cajun Boudin.

The food came out so quick! And it was DELICIOUS! They have a restaurant coming in the Spring and I already know my boyfriend and I will be a regular. While we were eating the owners came out and talked to us and had great conversation. Some of the nicest people I’ve met, I’m so excited for this to come to our Birmingham city!!!

My first time trying, i have been missing out. The food was great. We had the crawfish bisque. Chefs kiss. The customer service was exceptional. We got a history lesson on cajun food by the owner. Super nice guy. I highly recommend. 10 out of 10

Roll Cajun Boudin is seriously some of the best food I’ve ever had. I’m legitimately going to be thinking of the egg rolls for the rest of my life. Matt is a great guy and you can really sense the pride and love he puts into his recipes. My only regret is that I have to go back to my home state and wait who knows how long to eat it again. Thanks Matt! I appreciate you more than you’ll ever know. As good as your food is, you’re an even better person brother.

Wife and I got the Trinity, had the boudin, jambalaya, and tendies and my word it was magnificent. Flavorful, spicy, just an absolutely fantastic food experience. You owe it to yourself to have their food, you will not be disappointed I assure you. Lovely humans making and serving it as well. No notes, just great all around!

So here’s the deal… I’m wandering around Furnace Fest, starving. And as I’m seeking nourishment I see a beaming light from god. Immediately I could smell Cajun smell that was undeniably better than the mosh pit I endured at the shed. I began to tremble as I ordered the yard bird and artichoke egg rolls. I could feel the alligator and chicken featured in the new sticker picking me up and saying, “hey buddy, this is where you belong.” At that point I muttered to myself…. This is damn good.

The food was incredible—the chicken was perfect and the lobster bisque was unforgettable. What really stood out was the customer service. I was genuinely surprised and felt like part of the family. Truly a place that makes you feel cared for. Such a fun experience!!!

The truck was at the Homewood park back to school party at patriot park. I got spinach artichoke egg roll. It was perfect amount of crunchy. The sauce on it was a little too spicy for me but I wiped it off. That helped!! The nice owner was so pleasant & nice. He even gave my grandson a hat that he was begging for! He didnt have to do that but he so graciously did!! Overall a great food truck experience!

I can't begin to describe how delicious everything is here! See photos to see what we tried - gumbo, bisque, EGGROLLS (LIFE CHANGING), cheese cake, boudin balls - ALL HOME MADE Not your typical food truck either - it felt like we were on a restaurant patio. There's nothing like it in Bham! If this truck is near you- go try it and honestly worth the drive if it's not! YUM.

Matt & Roll Cajun served my school (Hueytown Middle School) today for our monthly faculty/staff food truck day. The ambiance/theme of the food truck is great! The food is awesome! Matt is very personable and I appreciate that! He promised it would be and pleasant experience and he delivered. I have been stalking Roll Cajun Boudin food truck for a while thanks Kamesha for the recommendation. Finally caught up to him and his food will make you think you're in New Orleans in the French Quarter. I love, love boudin and he did not disappoint. Now I liked the Voodoo Jack over the Yardbird for the spice but they were both good. We ordered the Crawfish, Yardbird and Voodoo Boudin Balls. I was in heaven. Another star dish was the Chicken & Sausage Jambalaya seasoned to perfection. My sonShine loves a bisque so I ordered the Crawfish Bisque to go. Glad I had it at the truck because son wasnt sharing. It was that good! After all we ate there he has his menu packaged where you can take it home and cook it yourself. I'm in my first foodie-ship and Im in 💜🤣. I also have to mention his customer service 10 out of 10! I now have to talk my friends into ordering this Alligator.

yummy yummy!! I called Matt right before the 4th of July & he took care of all my requests for me, I had family coming to town & wanted us to all experience this place together! he was so sweet & personable, I felt like we'd been friends forever! EVERYTHING was delicious! I enjoyed the stuffed mushroom by myself for a little selfish indulgent dinner (b4 folks arrived the nxt day)! giggles and on the 4th oh my lawd tons of food & our Roll Cajun items were a huge hit everything was fresh & delicious (even though it was frozen it wasn't old frozen - if you know what I mean) like extremely fresh flavorful & delicious! Will definitely return can't wait to get my yardbirds!! Thank you Matt may you & your family continue to be blessed! 💜

For their first night as a brick and mortar establishment on a Fat Tuesday - they knocked it out the park! Walked in and was able to get a seat at the bar in under 20min and our bartenders were the nicest I've ever encountered... Tanya and the 2 other girls behind the bar made sure we were taken care of with food and sweet tea all the way to Amy running our food. There's definitely some first order of kinks to smooth out but I do hope this will be a frequent stop for us :)

Atmosphere was great; giving slower side of bourbon street vibes. Waitress was on point communicating and checking our needs. Only complaint we have was the wait time from the kitchen. We sat and waited a good 30+ minutes for our food; a shared appetizer and and entré each. Please know that it wasn't what I would consider busy for a Saturday evening with live music; despite the rainy weather. When the food came out, it was served within 5 minutes of each other, served on a table for two. It was a bit tedious for us to manage all of the plates/bowls on that size table. The food was hot and delicious, despite the wait. *Adult* drink menu was somewhat limited due to having just acquired their liquor license. We will give them another try in about a month to give them time to further get their bearings and will update review then.

Took forever to get service, sat there for 45. Minutes before my drink and appetizer order was even taken and that was by the bus lady. The 2 young waiters were too busy talking to each other up by the bar. Food, the boundin link was okay at best, I don’t know why it’s $15 for one single small link. Gumbo was the high point of it all, very good depth of flavor. Entree had jambalaya basically looked like gumbo dumped on top of rice was still good though. The Mac and cheese was not good nor was the sweet potato gratin and for a price of $23 for a main and two small lukewarm sides very disappointing . I’m assuming they still think off food truck ideology and have big trays of prepped food back there because both of those sides were actually borderline cold. They just plopped a big scoop in the little bowls. Unfortunately because of how bad the service was I won’t be coming back. I understand the place is new but knows the time to make a good impression. If anyone wants good gumbo come here. The rest you can get at other places in bham much cheaper and much better.

Not ready for primetime. I'm a big fan of the truck. Their food is amazing. But the experience isn't translating to a brick and mortar location. We waited 90 minutes for appetizers and they never showed up. How does a Cajun restaurant known for their boudin balls not prep enough balls for the weekend? We left after 90 minutes and never saw appetizers or entrees. Everything was handled well by the staff and I want them to improve. But right now I can't recommend this place.

The staff was really friendly and welcoming, and I truly appreciated the great customer service. However, as a Louisiana native, the food was nowhere near authentic Louisiana cuisine. We ordered the 6-pack appetizer and unfortunately, we were not fans. The boudin balls had no seasoning at all, which was really disappointing. I also ordered the gumbo, and there was no real roux or broth it was mostly rice and meat, almost like it was trying to be jambalaya instead of gumbo. My husband ordered the “swap” sandwich, which was basically like a spaghetti po’ boy, and that wasn’t good either. I had the shrimp po’ boy, and the remoulade sauce completely overpowered and messed up the sandwich. Overall, great staff, but the food just didn’t deliver authentic Louisiana flavor.
