If heaven on Earth is possible I think it may exist in the brisket at Barbs B Q in beautiful, historic Lockhart. Moist, tender, perfect char. There is absolutely no need to use BBQ sauce. Eat the brisket as God intended. The ribs, perfection. A tangy sauce, the meat falls off the bone. The sides...the green spaghetti with poblano peppers and cream as the sauce. Excellent. The potato salad and charro beans were also top notch and the corn bread. Wow. Everything is great and I will come back. The nearly 90 minute queue felt easy, with free Lone Star beer provided and the staff is warm, caring and seem to love working there.

Barbs BBQ absolutely blew us away. The brisket and ribs were amazing, and that green spaghetti? Unexpected and yum. Every bite was worth the hype. That said, the ordering process was tough. We got in line right at 12:00 on a Sunday and didn’t sit down with food until 12:40 — and there were only eight orders ahead of us. Like many BBQ spots, the line feels like a long and somewhat unnecessary process. With a more organized system, they could serve so more people (and make a lot more money) without sacrificing quality. The food is outstanding — truly. But it would be hard to commit to that line again.

Holy molly!!!! I came with the very high expectations and Barbs-B-Q went above them!!!! The food we ordered :Brisket, Pork Ribs, Turkey, Green Spaghetti, Pork Stew, Potato Salad, Maxican Chocolate Pudding, cornbread. ALL GOT 100/100! How could you do that? You guys are amazing. Brisket melt in your mouth, pork ribs is exceptional and had secret lime zest, all sides are perfect and completely compliment the meats The pitmaster - owner was very very sweet, she took time to have light conversations with us. I got to take pics with her too. Another partner (I think) was very nice and proud about their food! Despite the place is small, the staff were attaintive. They arranged all seatings so that you get seats right away after ordering To negative people: I don't understand why people complain about long line, or small place. This is one of the best BBQ experiences in your life. Also making BBQ is a tough job, please open your mind about it.

WOW!! I took 4 relative BBQ novices with me to try Barbs BQ. Unfortunately, none of us live even remotely close to Texas, if we did we would be regular visitors. The food ranged from great to excellent. The ribs were outstanding and were our favorite bite of the day (we went to another Lockhart staple). Do not miss the green spaghetti what a delicious and innovative dish! The turkey was the moistest and best turkey I have ever had in my life (and at 64 I have a few turkey meals). The sausage was really well balanced. The owner/pitmaster was gracious and welcoming and the other staff were very kind and checked in on us. The ribs alone were worth the drive from San Antonio and everything else was a big bonus.

We had heard about Barb's but had not tried it yet. On a Saturday morning we got in line 30 minutes before they opened. About 15 minutes before opening an employee came out and explained to everyone what they had to offer and how everything was going to work Once they opened at 11:00 the line moved slowly but efficiently because everything is weighed to order. We ordered at 11:35 and dove in to the most delicious tray of meats and sides. The lamb chops were so well seasoned as well as the chicken, brisket and jalapeno cheese sausage which had great smokey flavor. The charo beans were actually black beans with bacon, hotdogs, and onions. The signature green spaghetti is also a must try. We were too stuffed for dessert and took home some leftovers for the next day. The brisket had a great bark and was the perfect blend of moisture and tenderness. It lived up to the hype for sure. Well worth the wait.

I've been wanting to checkout Barb's for awhile so we stopped on the way to Corpus on Friday. It was less crowded than expected but probably because the bbqfest was two days later. We got there at 10:30 and were about 20 in the line. We got our food at 11:30 and got to briefly meet the owner Chuck as she was at the main/chopping location. Everyone was super friendly and welcoming before, during, and until we left. We decided to get the Tray for two to make it easy and because it was a good deal and included everything we wanted, plus some. Its 1/2 lb of each turkey, brisket, and pork ribs, with 2 sides and a dessert. We got the green spaghetti and upgraded to a bigger size and then the pork stew and the cobbler. The pork ribs, pork stew, and cobbler are spectacular. Brisket/turkey/green spaghetti are pretty good, in my opinion. The green spaghetti was actually really good leftover too, better than fresh. The only thing I didn't really care for was the sauce. Its sweet and I didn't care for the flavors either. It's in my top 10 and I'd like to come back and try the beef rib sometime when they have it.

One of the trays of bbq I think back and drool about is my last visit to Barbs. I came early today and waiting in line as the whole line until about 1hr to open. Even tho I might not had needed to be THIS early, I don't regret it at all. Today I got All the meats plus 1. Brisket, turkey, ribs, sausage, lamb chops, chicken, and 1 experimental sausage. The brisket here. The flat beats out so many slices of point I think back on tasting around the US. The point here is mind blowing but the lean cut has no business being this good. There is a slight sweetness to the bark that I enjoyed. That or some of the rib glaze got in it hahaha actually thus probably it. Because they are some my favorite of all time. Just the ribs are cooks perfectly. The chili sweet glaze on top of that . . . Perfect. Then the lime zest on top of that. What is above perfect? Godly. What I love about the lamb and turkey is they have a really herby crust. Very refreshing bite each time. Speaking of, the experimental sausage was very herby as well. A really forward flavor of green onions among the various greens. Made me feel like I was eating a salad in meat form lol. Whatever that means but that's how I feel. It had a high water content but the juices kept my mouth watery between salty bites. I got this sausage for free and said she is still working on it but I would totally pay money for it. The green spaghett is a total must. A creamy sauce with the wonderful poblano peppers a slight tingle of spiciness that envelops the noodles. The pork stew that I might crave every time I'm sick and want something to warm me up. It's like a warm blanket at your childhood home. Oh and the choco pudding. The Cookie crumble on top adds another element of sweet and salty with a nice crunchy texture from the bits of cookies and pretzels. And the choco pudding is this custard that is not too sweet with a couple bitter notes from the cocoa. It was so good I had to get another but with strawberries instead so I re-waited in line. I preferred the cookie crumble but walking around Lockhart while eating this pudding felt wonderfully relaxing and refreshing with the slices of fruit after that meal.

Speaking of which, be prepared for a substantial wait—the line started forming around 10:00 AM on a Saturday! They show genuine hospitality, though, by offering free coffee and beer to those waiting, a thoughtful touch that eases the patience required. Pitmaster Chuck Charnichart and her small team are clearly running a tight ship, proving that quality triumphs over capacity. Barbs B Q keeps its menu short and simple, focusing on the traditional Texas Trinity with the unique addition of lamb chops. The culinary artistry on display confirms why they were a 2024 James Beard Award finalist for Best New Restaurant and received recognition from the Michelin Guide (including a Bib Gourmand). 🔥 The Meats: A Masterclass in Smoke The barbecue here is truly outstanding, starting with the star: • Brisket: Without a doubt, this is the best brisket I’ve tasted in a long time. It was heavenly. The bark was perfect, and the tenderness was flawless in both the lean and moist cuts. Absolutely phenomenal brisket, full stop. When Chuck unwrapped it and plopped it on the board she said, "Oooo, this is a good one, I'm glad for you guys!" Great bark, super moist - even the flat - and great beef flavor. Intending to bring leftovers home to vacuum pack, we also got the traditional fajita sausage and their experimental "no name" herb-forward sausage. Both were fantastic. We're not fans of lamb, but took a chance on the chops - very nice hints of smoke, great bark, and just the slightest tinge of gaminess to remind you you're eating lamb. I like these lamb chops a lot. The pork ribs were perfectly cooked, good bark. They were vinegar forward, with a touch of sweetness on the backside. I usually don't like ribs that I don't cook, but these are good. We rounded out the protein with small portions of turkey and chicken, not being big fans of smoked poultry. However these, and especially the chicken, struck us as what smoked poultry should be. The sides were all good. Chef's kiss to the charro beans - maybe the best I've ever had. The poblano sauce spaghetti was fun. The potato salad was very good. The pork stew kind of brought up the rear, but in the face of all that other truly excellent food on the table it's probably fine as a stand alone. Service was excellent. We got there on a Friday at about 10:30am and there were about 15 people in front of us. Staff said Saturdays and Sundays are significantly busier.

Waited an hour or more in line during the TM BBQ Festival. When we got to the front Barb was there herself slicing meat for orders. I don’t know where to start because everything we tried was wonderful. We had Barb’s plate (Brisket and mojave ribs + 1 side) and we added the Fajita sausage and pineapple upside down cobbler. We had the poblano spaghetti as our side. The sausage was juicy and flavorful and unlike anything I’ve ever had. This was my favorite. The ribs had a unique glaze with a zest of lime and was my wife’s favorite. The brisket was juicy and flavorful with a great bark and well rendered fat. All the meats were winners. The sides…oh man, try the poblano spaghetti. Different and flavorful and complimentary to the meat. Topping it off was the cobbler. They have home made whip cream to add to it and we loved it. I can see why Barb earned a spot in TM top 50 this year!

Lived in Central Texas my whole life and been to Lockhart countless times for bbq. The pitmaster and gals at Barbs are producing some of the best bbq I've had in recent memory. I had the brisket, ribs, lamb ribs and 2 sausage links (one their regular and the other a special edition). Each meat was classic but had enough personal touch and attention to flavor balance to elevate it above the surrounding spots. While pricey, so is meat the grocery store right now, so its easily explained by current market prices. Can't recommend enough. Go support these local gals and enjoy the next legendary must-have bbq.

We got in line around 10:40am, ordered ate and was done by noon. Service, flow, attention to detail, all stellar. A truly unique bbq experience that rewards the endeavors of those that make the trip. Lockhart alone is a gem of a town that smells rich of bbq just walking down the streets, and this place elevates the cultural value of its surroundings. The decor and vibe was one of a kind. The best looking and tasting brisket I’ve had in a while. We ordered the tray for two. Came with everything we wanted. Had an ambitious plan to try other places as well, but wasn’t able to follow through after stuffing ourselves here. The lamb is simply to die for. (Added that one.) Might have been the best ribs I’ve had, there’s just so much to experience and be left in awe, I’ll just say that everyone whom loves bbq should try it with an open heart. Haven’t had a culinary revelation like this in a hot minute. Wife and I fought each other over the green spaghetti. The only regret we had leaving was that we should have gotten a quart container of it. We witnessed a few people doing exactly that before us. There was wisdom in that maneuver. No room for pretentiousness, just a genuine Texas bbq experience leaving you buzzing for the rest of the day. Everyone on the staff side was so nice. The photos don’t do justice once again to share just how pretty the plating was on the tray.

One word, unbelievable. This place is special, the food all of it just phenomenal. The brisket is as good as any I've ever had, the ribs are unique, the best flavor I've had. The green spaghetti, unreal!!! The beef ribs, perfect!!! The desserts are great. All of it was great. Turkey is perfect, I'm not a lamb guy but that was also great, my wife said it was her favorite thing. My 7 year old said it was bussing. This place really has something here, i have had the top 3 on the Texas monthly list, this is my favorite so far. This to me is the best BBQ I've ever had, honestly. I got there at 8 was first in line, could've gotten there at 9 and would've had a really great spot. As I am writing this review I heard my 7 year old tell his brother it was the best BBQ he's ever had, the staff was so friendly which is unique in itself. The guy that was coming outside you could tell had pride in this place and was so friendly. Great job team, chuck cooks keep it up. Can't wait to be back

Me and my 2 daughters ate there on 11/14/25 the day before Texas plays georgia (football). I always barbecue for the Texas games my daughters say they love my barbecue. After eating at Barbs B-Q, my barbecue will never be good enough. Barbs B-Q was Awesome in every way.

We had heard about Barb's but had not tried it yet. On a Saturday morning we got in line 30 minutes before they opened. About 15 minutes before opening an employee came out and explained to everyone what they had to offer and how everything was going to work Once they opened at 11:00 the line moved slowly but efficiently because everything is weighed to order. We ordered at 11:35 and dove in to the most delicious tray of meats and sides. The lamb chops were so well seasoned as well as the chicken, brisket and jalapeno cheese sausage which had great smokey flavor. The charo beans were actually black beans with bacon, hotdogs, and onions. The signature green spaghetti is also a must try. We were too stuffed for dessert and took home some leftovers for the next day. The brisket had a great bark and was the perfect blend of moisture and tenderness. It lived up to the hype for sure. Well worth the wait.

One of the trays of bbq I think back and drool about is my last visit to Barbs. I came early today and waiting in line as the whole line until about 1hr to open. Even tho I might not had needed to be THIS early, I don't regret it at all. Today I got All the meats plus 1. Brisket, turkey, ribs, sausage, lamb chops, chicken, and 1 experimental sausage. The brisket here. The flat beats out so many slices of point I think back on tasting around the US. The point here is mind blowing but the lean cut has no business being this good. There is a slight sweetness to the bark that I enjoyed. That or some of the rib glaze got in it hahaha actually thus probably it. Because they are some my favorite of all time. Just the ribs are cooks perfectly. The chili sweet glaze on top of that . . . Perfect. Then the lime zest on top of that. What is above perfect? Godly. What I love about the lamb and turkey is they have a really herby crust. Very refreshing bite each time. Speaking of, the experimental sausage was very herby as well. A really forward flavor of green onions among the various greens. Made me feel like I was eating a salad in meat form lol. Whatever that means but that's how I feel. It had a high water content but the juices kept my mouth watery between salty bites. I got this sausage for free and said she is still working on it but I would totally pay money for it. The green spaghett is a total must. A creamy sauce with the wonderful poblano peppers a slight tingle of spiciness that envelops the noodles. The pork stew that I might crave every time I'm sick and want something to warm me up. It's like a warm blanket at your childhood home. Oh and the choco pudding. The Cookie crumble on top adds another element of sweet and salty with a nice crunchy texture from the bits of cookies and pretzels. And the choco pudding is this custard that is not too sweet with a couple bitter notes from the cocoa. It was so good I had to get another but with strawberries instead so I re-waited in line. I preferred the cookie crumble but walking around Lockhart while eating this pudding felt wonderfully relaxing and refreshing with the slices of fruit after that meal.

Barbs B Q keeps its menu short and simple, focusing on the traditional Texas Trinity with the unique addition of lamb chops. The culinary artistry on display confirms why they were a 2024 James Beard Award finalist for Best New Restaurant and received recognition from the Michelin Guide (including a Bib Gourmand). 🔥 The Meats: A Masterclass in Smoke The barbecue here is truly outstanding, starting with the star: • Brisket: Without a doubt, this is the best brisket I’ve tasted in a long time. Lived in Central Texas my whole life and been to Lockhart countless times for bbq. The pitmaster and gals at Barbs are producing some of the best bbq I've had in recent memory. I had the brisket, ribs, lamb ribs and 2 sausage links (one their regular and the other a special edition). Each meat was classic but had enough personal touch and attention to flavor balance to elevate it above the surrounding spots. While pricey, so is meat the grocery store right now, so its easily explained by current market prices. Can't recommend enough. Go support these local gals and enjoy the next legendary must-have bbq.

Waited an hour or more in line during the TM BBQ Festival. When we got to the front Barb was there herself slicing meat for orders. I don’t know where to start because everything we tried was wonderful. We had Barb’s plate (Brisket and mojave ribs + 1 side) and we added the Fajita sausage and pineapple upside down cobbler. We had the poblano spaghetti as our side. The sausage was juicy and flavorful and unlike anything I’ve ever had. This was my favorite. The ribs had a unique glaze with a zest of lime and was my wife’s favorite. The brisket was juicy and flavorful with a great bark and well rendered fat. All the meats were winners. The sides…oh man, try the poblano spaghetti. Different and flavorful and complimentary to the meat. Topping it off was the cobbler. They have home made whip cream to add to it and we loved it. I can see why Barb earned a spot in TM top 50 this year!

One word, unbelievable. This place is special, the food all of it just phenomenal. The brisket is as good as any I've ever had, the ribs are unique, the best flavor I've had. The green spaghetti, unreal!!! The beef ribs, perfect!!! The desserts are great. All of it was great. Turkey is perfect, I'm not a lamb guy but that was also great, my wife said it was her favorite thing. My 7 year old said it was bussing. This place really has something here, i have had the top 3 on the Texas monthly list, this is my favorite so far. This to me is the best BBQ I've ever had, honestly. I got there at 8 was first in line, could've gotten there at 9 and would've had a really great spot. As I am writing this review I heard my 7 year old tell his brother it was the best BBQ he's ever had, the staff was so friendly which is unique in itself. The guy that was coming outside you could tell had pride in this place and was so friendly. Great job team, chuck cooks keep it up. Can't wait to be back

If I could rank this higher than five stars I would. From the presentation to the quality of the meat, barbs is hands down the best BBQ I’ve ever experienced. We showed up around 10:15 and there we were third in line.

Absolutely phenomenal brisket, full stop. When Chuck unwrapped it and plopped it on the board she said, "Oooo, this is a good one, I'm glad for you guys!" Great bark, super moist - even the flat - and great beef flavor. Intending to bring leftovers home to vacuum pack, we also got the traditional fajita sausage and their experimental "no name" herb-forward sausage. Both were fantastic. We're not fans of lamb, but took a chance on the chops - very nice hints of smoke, great bark, and just the slightest tinge of gaminess to remind you you're eating lamb. I like these lamb chops a lot. The pork ribs were perfectly cooked, good bark. They were vinegar forward, with a touch of sweetness on the backside. I usually don't like ribs that I don't cook, but these are good. We rounded out the protein with small portions of turkey and chicken, not being big fans of smoked poultry. However these, and especially the chicken, struck us as what smoked poultry should be. The sides were all good. Chef's kiss to the charro beans - maybe the best I've ever had. The poblano sauce spaghetti was fun. The potato salad was very good. The pork stew kind of brought up the rear, but in the face of all that other truly excellent food on the table it's probably fine as a stand alone. Service was excellent. We got there on a Friday at about 10:30am and there were about 15 people in front of us. Staff said Saturdays and Sundays are significantly busier.

We got in line around 10:40am, ordered ate and was done by noon. Service, flow, attention to detail, all stellar. A truly unique bbq experience that rewards the endeavors of those that make the trip. Lockhart alone is a gem of a town that smells rich of bbq just walking down the streets, and this place elevates the cultural value of its surroundings. The decor and vibe was one of a kind. The best looking and tasting brisket I’ve had in a while. We ordered the tray for two. Came with everything we wanted. Had an ambitious plan to try other places as well, but wasn’t able to follow through after stuffing ourselves here. The lamb is simply to die for. (Added that one.) Might have been the best ribs I’ve had, there’s just so much to experience and be left in awe, I’ll just say that everyone whom loves bbq should try it with an open heart. Haven’t had a culinary revelation like this in a hot minute. Wife and I fought each other over the green spaghetti. The only regret we had leaving was that we should have gotten a quart container of it. We witnessed a few people doing exactly that before us. There was wisdom in that maneuver. No room for pretentiousness, just a genuine Texas bbq experience leaving you buzzing for the rest of the day. Everyone on the staff side was so nice. The photos don’t do justice once again to share just how pretty the plating was on the tray.

If you told me I’d drive to Lockhart at sunrise to eat green spaghetti and lamb, I’d say you’ve been sniffin’ mesquite too long. But here we are. Full, happy, and questioning every brisket-based decision I’ve ever made. TL;DR: Barbs B Q ain’t playin’ around. Lamb chops are spiritual. Green spaghetti is some sort of smoked Tex-Mex sorcery. I didn’t get a bite of dessert. This was stop #30 on the passport and may have altered my BBQ belief system. Saturday morning hit like a freight train of smoky dreams. My oldest daughter, the passenger princess of this particular meat mission, jumped in the pickup with me and we made the pilgrimage to Lockhart, Texas BBQ HQ. Why? Because I needed stamp #30 in my Texas Monthly Top 50 BBQ passport, and Barbs B Q was calling louder than a coyote on a caffeine bender. We rolled into town at 9:30 AM. The line was already curling around the building like a smoked sausage on a hot pit, but we came prepared. Chairs unfolded. Shade claimed. I had my eyes on the lamb chops like a hawk at a tailgate. At 10:30 sharp, out comes the crew; smiling, chatting, telling us about the menu, the sides, and the specials like we were long-lost cousins at a family reunion. One of the staff even gave us the insider scoop: “Get the green spaghett and don’t skip dessert.” Challenge accepted. By 11:30 we were at the counter, and there stood Chuck (and you thought her name was Barb), cool as a brisket queen in command. While she masterfully sliced brisket for the folks ahead, I locked in my target. “Two lamb chops, please” I said. She smiled and tossed in a bonus chop like a BBQ fairy godmother. Respect. We also grabbed a bucket size of green spaghett, a choco pudding with strawberries, and some swirl bread that looked like it came from a dessert dream baked inside a meat fantasy. The lamb? Perfectly rosy, deeply seasoned, kissed by smoke and herbs. Absolutely my favorite! But let’s talk about that green spaghett. I don’t know what was in it, creamy poblano? jalapeño wizardry? but it was rich, slightly spicy, and absolutely addictive. When I told my wife about it she said, “Don’t come home without some.” I didn’t. Now, about the dessert. I thought I ordered a chocolate pudding with strawberries for us to share. But my daughter, BBQ road trip co-pilot and dessert bandit, took one bite, declared it “the best,” and stashed the rest for the drive home. I was left holding a spoon and a memory. She says it was life-changing. I’ll never know. We sat family-style next to new BBQ brethren, swapping stories and sauce preferences. It’s not just a meal at Barbs B Q, it’s an encounter. A barbecue experience worthy of its place on the square in the most sacred smoke-soaked town in Texas. Merch? Purchased. Stamp? Inked. Heart? Full. Barbs B Q isn’t just a must-visit, it’s a must-repeat. Between the masterfully smoked lamb, spicy green noodles, and dessert that disappears faster than my patience in I-35 traffic, this one’s cemented in the top tier. That was stamp #30. Twenty left to glory. My belt might not make it, but my soul’s all-in. Final Dad Line: Next time I’m ordering two desserts, one for the ride home, and one to defend with my life.

Family of 5 visiting with friends. Mom Dad three kids including an infant dined just fine. They were accommodating with the kids which was very helpful. Brisket was tasty, a new personal fav for some. Sausage turkey and chicken all great. Chicken mole was a nice surprise! Fun swirling bread, pickles and potato salad. They sold out of stew before we could try it. They def don’t need a sauce so I didn’t try it until the end and wish I had soon because it’s now my fav sauce! Dress accordingly as it can be warm. It’s July and while there is ac, it’s still warm with folks in and out. They could also use a changing table for the littles in the bathroom. Otherwise very happy with our visit and will make the hour drive trip again!

Barbs might be the next Texas Monthly #1 bbq, you heard it here first. I’ve grown up in Central Texas and have had all the greats. I was shocked at how perfect Barbs was - from the perfect cook to the small touches that make it stand out and make it unique; Barb is on to something here and this is a must try. Take my little one’s experience to heart - it ain’t good until you get some on you, and boy is Barbs good.

We arrived 9:30 AM Sunday morning, were the first in line and others started arriving shortly after. We had the brisket, ribs and sausage. My favorite was the ribs, the lime zest really takes them to another level. We also got the green spaghetti, beans and potato salad, all were good.

Amazing BBQ. Could not recommend enough. The green spaghetti was a very unique and worthwhile side as was the stew/calabacita. All the meats were cooked to perfection but felt the lamb may have been the only meat over-seasoned. Was not disappointed overall. Their brisket held its own against the other local legends which is saying A LOT. Wait wasn't terrible, got there at 10:15am and we were one of the last people to find a seat. There may have been 20+ folks ahead of us? The one knock on Barb's is the atmosphere, it's simply too small for its popularity, but because it's only open on the weekends, she (presumably) doesn't want a larger footprint.

Fantastic bbq. Free Lone Star beer in a yeti and very caring staff. The brisket was some of the best I've ever had. The poblano noodles were excellent and noodles cooked al dente. The sauce was amazing and asked if I could buy some. They said they didn't sell it but could give me some to go. I was expecting a few 2 oz cups, but I received not 1 but two 8 oz deli containers. That was a very kind gesture and i can't to come back.

The customer service alone is worth the wait! The bbq - WOW! 🤩best pork ribs I’ve ever had, and I’m a born and raised austin, tx girl. Meaning, I grew up with the best bbq in the world between austin and Lockhart. And these ribs take the cake! They had just ran out of lamb when I got to the front. Also have the brisket! Well seasoned. Not overly salted (which i appreciated) the bbq is quite unique! And the stew side, I couldn’t get enough of!

Took a detour on my trip to San Antonio, and it was 100% worth the stop. The owner and workers are the sweetest people! Got the tray for two, lamb, an extra half pound of turkey, fajita sausage, and the pork stew as an extra side. Everything was delicious. The biggest standouts for me were the pork ribs, turkey, and green spaghett. The pork ribs were to die for. Zesty, moist, and flavorful. I usually don’t enjoy pork ribs, but this was the best bbq pork ribs I’ve ever had. Turkey is not my usual go-to at a barbecue place either, but the turkey here is very herby and moist. The green spaghett was something I’ve never had before. A strong punch of flavor from the poblanos and cilantro in their signature creamy sauce. Pasta is cooked Al dente and not too mushy. I can see why this side is so popular and well known. 10/10 would go here again. FYI when I arrived at 10:10am, I was the 30th person in line. So plan accordingly if you don’t want to wait too long. Fortunately, the line moves quickly, but keep that in mind if you want to get any lamb which is more limited in quantity.

I fully expect Barbs to be Top 10 in the next Texas Monthly rankings. The turkey was the best I've ever had. The pork ribs, brisket, & beef rib were all at least top 5 for me. The spaghetti was unique but needed a little something, maybe a touch more salt & a bit of garlic? Overall, it was well worth the wait & I can't say enough about the great job these ladies have done.

We enjoyed the bbq here the brisket, turkey and ribs are delicious, fajitas sausage is good. Sauce is also delicious. The only problem was, we were 15-16 in line, (got there at 9:50 Saturday), and they ran out of the lamb ribs which really sucked. Hope they really start making at least a few more racks in the future. That’s the whole reason we went, for the lamb ribs. They also ran out of bread, again we were 15-16 in line.

Drove from the Victoria area to check out the new BBQ craze in Lockhart, Barb's BQ. It did not disappoint! All the meats and sides were delicious and complementary to one another. Barb's staff were warm and welcoming. Chuck is very talented, beautiful and is already a fast rising star in the BBQ world. Her flavors and ingredients combine the best of Mexican influence to her take on BBQ. Chuck's Green Spaghett is also a must try. I highly recommend Barb's BQ as your next stop for amazing BBQ!

Had all the bbq available in Lockhart and I thinks Barbs B Que has the best BBQ in town. The sauce is amazing and the green spaghetti is super tasty. I took it to go and reheated it hours later and it was still juicy and tender. The staff was super friendly and the prices were good too. Cheaper than either Blacks and way better too. The food here is worth ALL the hype. James Beard in 2024 and I wonder how the Michelin people missed this one when they were giving out stars in Austin. (This is better than the one Austin BBQ that is on the list and that we have had a chance to try. ) The place is cute, the staff is friendly and knows their menu, and waiting on a very cold TX morning was well worth it. We were surprised by the excellent cinnamon swirl bread which paired very well with everything and I think this might be the best brisket that I have ever had. The ribs, sausage, chicken mole were also fantastic. In line at 10:30, 6th and 7th, but it was misty and 34 degrees out. Not a normal Saturday Thanks for the warm welcome Jo - and for the recommendation, we really liked Bread and Thorn!

Brisket 7 points out of 10 available Very tender, beautiful smoke ring, flavor was decent but not mind blowing Pork Ribs 15 points out of 10 available I'd walk barefoot through a mile of broken glass in the Sahara Desert in August for these pork ribs. I can't definitively say they're the best I've ever had, but I also can't remember better. BBQ Sauce 9 points out of 10 available Probably a mustard based sauce. Delicious. Green Spaghetti 6 points out of 10 available It's decent. Good flavor. Unique. Something different. I'd choose a good thick mac n' cheese over it. I was unsure about the spaghett, but I tried it and was genuinely impressed. You should give it a shot too. Best little BBQ spot in Lockhart. Got a pound of every meat, a pint of every side and both desserts. Wow! The burnt ends were heavenly and the brisket just melted in the mouth. The sausage had a nicely melted cheese and jalapenos inside. It was amazing with the mustard based BBQ sauce. I wish they were serving their beef ribs. Will have to try that next time.

A newish ( almost 2 years) BBQ place in the Texas Capitol of BBQ, Lockhart that you should not pass up. If you want some of the best food in town you must get there early (10:45 am) at the latest but it is so worth it. All the meat was perfectly tender and flavorful. I tried the turkey, brisket, Molotov ribs and fajita sausage, they are all amazing in their own but a dab of Barb's tangy BBQ sauce elevates everything on the plate. Believe the hype about the green spaghetti, I didn't know what to expect, it has a good kick to it and I could not stop eating till it was all gone, very delicious. The dining area is small but well laid out. We took our tray for two to go. I'd recommend dining in so you can enjoy it at its freshest. Lastly their Choco pudding is incredible. We will be back for more soon!

As a Texan who loves BBQ, this was hands down some of the best I've ever had. I can say confidently that this was the best ribs, turkey, brisket, and lamb chop I've ever had!!! The fajita sausage was very good! The sides were phenomenal as well. I'm gonna parakeet and say the spaghetti is a must order. Get there early if you want lamb because they don't make much. I got there at 9am and was 1st in line, so the wait isn't terrible compared to Snow's and other well established places. 10/10 will be making the trip back.

This BBQ spot lives up to the hype. The food was amazing and the staff was super friendly. Had some great conversations with other patrons while waiting in line. I highly recommend this spot. I ordered: Brisket = Perfect bark and smoke ring, tender and soft Turkey = Super moist and well flavored Sausage = Excellent flavor and very juicy Green Spaghet = 💚 Absolutely amazing!

The brisket is some of the best I’ve had. I’d say it beats out Black’s, Terry Black’s, and Hutchin’s to name a few. The Molotov pork ribs could have been a touch more tender for more taste but were still incredibly well done. The fajita sausage lacked what I expect in terms of snap and smoke ring but made up for that with flavor; it could have definitely used a bit more of a kick for my taste though. I was skeptical of the green spaghetti at first, but in many ways, it’s the thing I liked best. It’s a very well-executed dish which, while not what you’d expect from a BBQ joint, works incredibly well with the rest of the menu. Another pleasant surprise was the sauce. Barb’s is definitely unique, and really a breath of fresh air compared to the usual bbq joint’s sauce. The staff were incredibly efficient and very friendly. The next time I’m in Lockhart, I will definitely be going back!

Barba B Q was the highlight of our trip to Austin. We tried several bbq joints during the weekend and Barbs is the best one we tried no doubt. The staff is super nice, line wasn’t that long and they were giving away beers at 10.30 in the morning. Now getting to the food: pork ribs cooked perfectly, amazing flavor, and the line zest touch was unexpected but perfect. Brisket spot on, nothing to say. But the lamb chop stole the show. Cooked perfectly to medium rare, melted in our mouths, and spectacular seasoning. Also, incredible attention to the details on how the tray was prepared. Just wish we didn’t pre-ordered another round somewhere else so that we could eat more at Barbs. We will definitely be back! Keep it on!

First time at Barbs. Everything was great. It was worth the 3 1/2 hr drive. The lamb chops and green spaghetti are worth the hype. Jalapeño sausage was some of the best I’ve ever had. I was first in line to get the whole experience. I recommend getting there early. The whole crew was amazing. Say hi to Diego. Chuck is doing something special there.

Incredible bbq and the kindest staff! We arrived around 10:30 (they thoughtfully have water & cold brew outside while you wait) and ate around 11:30…everything was delicious- we had the brisket, pork ribs, turkey, sausage, cacti de gallo and green spaghetti (sooo good). The lime zest on top is different & so tasty. They were already sold out of the lamb so we’ll have to try next time. The pineapple upside down cobbler was incredible too for dessert! Can’t wait to come back!

This was an amazing culinary experience. The brisket and smoked turkey were flavorful, juicy, and tender. The ribs in my mind were a highlight. The molotov ribs had the perfect mix of sweet and zesty along with the smokiness of the meat to set these ribs number one on my list.

It was worth the wait, which wasn’t too long. I really appreciate the customer service where it didn’t feel like they just wanted people in and out of the line. The owner made sure our meats were exactly what we wanted. The sides were good, but the brisket and ribs were the best I ever had. The seasonings and the tenderness made them stand out.

I saw a YouTube documentary about this place. I had to see it for myself, and what a treat for us it was. We did arrive a little late, and their brisket was sold out. I did try the ribs, the sausage, and the green spaghetti. Wow, the chunk was awesome, and the lady in pink hair was so cool. My apologies for not getting her name. I have to admit the rib were to die for , I mean, the flavor was unique, and i will be coming back.

we arrived around 9:40 and were about 15th in line. Bring chairs or something to sit on while you wait! there isn’t much seating in there but there was a lady helping everyone shuffle in and get to tables after ordering. the green spaghetti changed my life, I could brag about the meats because wow that pork rib but it’s the poblano spaghetti I’ll be thinking about forever. Nicest employees, cute space! I will say, this isn’t the place to hang around and visit with each other. Strictly business- eat delicious food and gtfo so other people can sit and eat delicious food.

Absolutely incredible BBQ! Stars of the show for me were the pork rib and lamb chop but everything was excellent! The sides were fantastic too, really worth a visit to Lockhart. Our group arrived early on a (rare) cold and rainy day, waited about 40 minutes until open, then sat down with our food at about 11:35.

Talk about getting lucky. Popped in about an hour and a half before close and there was barely a line. Everyone that was working was great and friendly. Met the legend herself and what a treat that was. Came in with a friend and got the platter for 2. My only regret was not coming in earlier to get the lamb that was sold out. Worth the drive from anywhere you're coming from.

The pork ribs were served with hand squeezed lime, and lime zest. Unequivocally they were the best pork ribs we have eaten. We have already set up a trip back with friends. 5 stars!

So many bbq joints in Lockhart Tx but only at Barbs BBQ will you find a brisket, turkey, ribs and jalapeño sausage so tender and full of flavor, once your lips touch and savor that bbq goodness you will never want to eat bbq elsewhere. Also their sides are amazing, you gotta try their poblano spaghetti and potato salad. God bless Texas and God bless Barbs bbq!!!

Amazing. It's a great restaurant that sells a lot of BBQ, not a BBQ restaurant. The BBQ *is* fabulous, but if they were sold out of the headline meats I'd happily just get the sides. Spaghett, beans, chicken, brisket, pork ribs, all very very good. On the Saturday we were there, they started running out of dishes around 1230, major outages by one. Waited about an hour to order. Staff was very friendly. Worth the drive.

Incredible. I've had the best BBQ the state has to offer, and this may be the new #1 once the next top 50 comes out. Brisket is as good as Goldees, the Turkey is so moist I'm calling it wet, the sausage is incredible and perfectly rendered...but the ribs. Oh my god the ribs. They'd be amazing on their own, but the fresh grated lime zest just elevates them into another world. On top of that, Chuck and her team are amazing and so kind. A+ service! Get there early - they run out fast. The wait in line is worth it. Try it before you have to camp out to eat there. Fully expect to see them challenging Goldees for #1

Just tried barbs b q for the first time and wow. I think the owner was cutting up the meat and taking ordered, she was so friendly and inviting m, it was amazing. Shout out from Harlingen. The food, awesome, now typically I’m not a bbq person, been eating it my whole life. The brisket was so tender and the fat was melting like butter, ribs were awesome, sausage was special. The green spaghetti was different, and I liked it. Now the root salad! That was great, a perfect meal for someone who is fit and wants a cleaner meal would be a root salad and a half pound of turkey. This is great bbq to put on your bucket list. The service is outstanding, they make a huge effort to make sure their guests happy and wanting to come back for more. The ribs are amazing, highly recommend getting those and the green spaghetti. It is a very unique take on bbq, like none other that I have had before. There is a line starting early, so get there early bc they do run out! I am not usually one to wait in lines for food, but it’s worth it.

Probably some of the best bbq you'll ever have. Meats: - Brisket was juicy with a great bark. Phenomenal. - Pork ribs were incredibly tender, but still had a nice bite to it. Exactly how you'd want it. A different sauce than your typical, generic rib sauce. Plus, they hit it with some lime, which was 🤌🏼. - Beef ribs were better than most I've had. Not overly salty like some other places - Lamb was cooked perfect. Not gamey, but still had a distinct flavor. - Turkey was moist. I'm not a huge turkey person, but theirs might have changed me. - Sausage had wonderful bursts of pepper and cheese. Sides: - Green spaghett has such an interesting taste to it. It's creamy and quite enjoyable. Also, the noodles are made al dente, which makes all the difference. I'd recommend it. - Root salad is fresh with a nice crunch. Pairs well with all the meat. Dessert: - Choco pudding with strawberries was not overly sweet. Nice chocolate flavor and the strawberries go great with it. - Smoked pecan cobbler was fantastic. Again, a nice amount of sweetness. It's soft, has some crunch, and the smoke adds the right amount of complexity. Verdict: It's worth every penny and the drive, wherever you are. I'd recommend arriving around 9:00-9:30. If you get here when the doors open at 11:00, you're probably gonna wait 1-2 hours. Might as well front load the waiting time. That way, you'll get to try everything on the menu. I got there around 9:30 on a Saturday and was maybe 12th in line. Apparently, some other reviewer was 15-16th and they didn't get lamb or bread. Oh yeah, they make their own bread. It's good. <3

We arrived an hour early and comfortably awaited the opening. Location was convenient and walkable to downtown shops. Brisket was flavorful and tender. A touch of lime was added to the ribs complimenting the zesty sauce. Don’t skimp on the sides and dessert. The green spaghetti was intriguing, and everyone commented on the taste. Barbs will be revisited next time we’re in the area.

Top Bar-B-Q experience. Excellent service, quaint dine in area. Iconic location. Everything on this menu is outstanding. But the star are the ribs. Spent 3 weeks in Texas on BBQ road trip. Went to 18 Top BBQ places incl. Goldees, Burnt Bean, Leroy & Lewis etc... This rib was the best BBQ bite of the trip. If you told me I’d drive to Lockhart at sunrise to eat green spaghetti and lamb, I’d say you’ve been sniffin’ mesquite too long. But here we are. Full, happy, and questioning every brisket-based decision I’ve ever made. TL;DR: Barbs B Q ain’t playin’ around. Lamb chops are spiritual. Green spaghetti is some sort of smoked Tex-Mex sorcery. I didn’t get a bite of dessert. This was stop #30 on the passport and may have altered my BBQ belief system. Saturday morning hit like a freight train of smoky dreams. My oldest daughter, the passenger princess of this particular meat mission, jumped in the pickup with me and we made the pilgrimage to Lockhart, Texas BBQ HQ. Why? Because I needed stamp #30 in my Texas Monthly Top 50 BBQ passport, and Barbs B Q was calling louder than a coyote on a caffeine bender. We rolled into town at 9:30 AM. The line was already curling around the building like a smoked sausage on a hot pit, but we came prepared. Chairs unfolded. Shade claimed. I had my eyes on the lamb chops like a hawk at a tailgate. At 10:30 sharp, out comes the crew; smiling, chatting, telling us about the menu, the sides, and the specials like we were long-lost cousins at a family reunion. One of the staff even gave us the insider scoop: “Get the green spaghett and don’t skip dessert.” Challenge accepted. By 11:30 we were at the counter, and there stood Chuck (and you thought her name was Barb), cool as a brisket queen in command. While she masterfully sliced brisket for the folks ahead, I locked in my target. “Two lamb chops, please” I said. She smiled and tossed in a bonus chop like a BBQ fairy godmother. Respect. We also grabbed a bucket size of green spaghett, a choco pudding with strawberries, and some swirl bread that looked like it came from a dessert dream baked inside a meat fantasy. The lamb? Perfectly rosy, deeply seasoned, kissed by smoke and herbs. Absolutely my favorite! But let’s talk about that green spaghett. I don’t know what was in it, creamy poblano? jalapeño wizardry? but it was rich, slightly spicy, and absolutely addictive. When I told my wife about it she said, “Don’t come home without some.” I didn’t. Now, about the dessert. I thought I ordered a chocolate pudding with strawberries for us to share. But my daughter, BBQ road trip co-pilot and dessert bandit, took one bite, declared it “the best,” and stashed the rest for the drive home. I was left holding a spoon and a memory. She says it was life-changing. I’ll never know. We sat family-style next to new BBQ brethren, swapping stories and sauce preferences. It’s not just a meal at Barbs B Q, it’s an encounter. A barbecue experience worthy of its place on the square in the most sacred smoke-soaked town in Texas. Merch? Purchased. Stamp? Inked. Heart? Full. Barbs B Q isn’t just a must-visit, it’s a must-repeat. Between the masterfully smoked lamb, spicy green noodles, and dessert that disappears faster than my patience in I-35 traffic, this one’s cemented in the top tier. That was stamp #30. Twenty left to glory. My belt might not make it, but my soul’s all-in. Final Dad Line: Next time I’m ordering two desserts, one for the ride home, and one to defend with my life.

They put free coffee and water out for people who wait in line. My wife and I got the tray for two. I'm so glad because I normally wouldn't order the pork ribs. The pork ribs are OVER THE TOP amazing. I've never had anything even close. Molotov is the right name because it is an explosion of flavor and juices. I figured my wife would eat the turkey... because that's her thing. But instead, she fell in love with the brisket - and she normally doesn't like brisket. I was shocked by how great the turkey was. Everything is amazing. Can't recommend Barb's enough.

For me, the creative approach to BBQ made the food memorable and delicious, but if you're looking for a super traditional experience, this might not be the spot for you. We tried the brisket, pork ribs, sausage, and pollos asados and loved it all. The potato salad here is great and I loved the green spaghetti too. The staff was super kind and accommodating, you can tell they love what they do and care deeply about the restaurant. There was a bit of a line when we got there but they did a good job moving people through the restaurant. My only complaint is that a few items were sold out by the time we got there- but that's just an excuse to come back another time!

Family of 5 visiting with friends. Mom Dad three kids including an infant dined just fine. They were accommodating with the kids which was very helpful. Brisket was tasty, a new personal fav for some. Sausage turkey and chicken all great. Chicken mole was a nice surprise! Fun swirling bread, pickles and potato salad. They sold out of stew before we could try it. They def don’t need a sauce so I didn’t try it until the end and wish I had soon because it’s now my fav sauce! Dress accordingly as it can be warm. It’s July and while there is ac, it’s still warm with folks in and out. They could also use a changing table for the littles in the bathroom. Otherwise very happy with our visit and will make the hour drive trip again!

Barb’s is worth all the hype and more. I’m a sides girl, through and through, but the pork ribs and brisket are so amazing that (twice now) we end up taking them home. The lamb is great. The turkey is delicious. The sausage is something I’d normally skip but here, you shouldn’t. Don’t miss the green spaghetti or the chocolate pudding with cookie crumble. I ate this all at just a few hours ago but I’m already ready for more! The staff is also SO wonderful and friendly. Basically, I’m obsessed with Barb’s.

I've been there a few times already and Barbs never disappoints! The service is fantastic and their food is exceptional. I'm a huge fan of their brisket, ribs, turkey and the green spaghetti, everythime I'm there these items must ne on the plate. Keep an eye open for the specials on the menu like chicken mole! In my opinion Barbs is still underrated and would deserve a spot on the top 10 list!

I’m so glad we came across Barb’s BBQ. 🍗 I have been to Smitty’s a number of times and always thought their brisket and ribs would be hard to top. Barbs did though!! Their Molotov ribs were absolutely some of the best, most flavorful ribs I have ever had. They had a nice, zesty flavor and just melted in your mouth. Also worth mentioning were the green spaghetti and smoked pecan cobbler. Everything seemed to be TOP NOTCH and the service was excellent as well!

Delicious barbecue and worth the trip of heading out to Lockhart. Love the atmosphere and vibe of this small business. The brisket was delicious and we made it in time to get our portions as well. The green spaghetti was the surprise as the side. A neat addition to the other regular sides. Overall, loved the experience and will definitely go there the next time. Friendly advice - while it doesn’t have a really long queue, it would be advisable to reach there early and get in line. If not, you might risk not getting the brisket, which sells out quite fast!!!

Arrived at 1010 and we were served about 12:15. Full menu still available. The turkey was incredibly moist with hints of earthy spices, one of my favorite bites. The Molotov Ribs were outstanding and the acidity from the lime was a perfect accent on the sweet roasted red pepper sauce that coated them. The brisket was well seasoned throughout with the central Texas salt/pepper flavors you’d expect to go along with a great bark and tender pull. Fajita sausage was a welcome contrast to the typical jalapeño cheese offerings you get from other places with a great bite and snap. The green spaghetti is a delicious and unique side dish that really stands out and will make you wish you ordered more. Wonderful people, delicious food, and a great experience. A must stop for anyone traveling to central Texas in search of great bbq or food.

This place is special! In my top 5 bbq restaurants, for sure! Came here for my birthday trip and was able to try a little bit of everything! (Except the beef rib) Lamp chops melted like butter, perfect flavor! Pork ribs were amazing and tender! Zested with lime after being cut on the line! Juicy brisket is very flavorful. Turkey was great and super moist! You see so much juice left on the tray after eating the turkey and brisket! Fajita sausage had the snap in the bite and were Big sized sausage! Special was pork stew, which we all devoured, corn, rice, pork celery, etc. So good. And don't let the deserts fool you! They are fantastic! Also, can I just say that everyone behind the counter made the experience so much fun and was all smiles the whole time!

I went to Lockhart to go visit Barbs B Q. Service was a 10/10. Very attentive to all of the customers. Atmosphere was very laid back. It felt fun and positive going into the restaurant. Food was amazing! We ordered the full house: brisket, pork ribs, turkey breast, espagueti verde, potato salad, charro beans, fajita sausage, and two desserts. I would definitely go again. Barbs is a small bbq spot right on the square in downtown Lockhart. We arrived right around 10 on a Saturday and were about 10th in line. The had free coffee out and then free beer. The staff were all great, they came out and gave a rundown before opening. Inside they have seating for about 30. Overall, I wouldn't put Barbs in my top 5. The highlights were probably the ribs and sausage. Both I'd give a 9.5/10. The ribs were slightly different with a slight vinegar tang and lime zest. The turkey was also good. However, both the turkey and lamb had a strong herb flavor, if that is not your thing. The brisket was a bit of a let down. It did not have a ton of flavor and some pieces were pretty chewy. The beef ribs also was nothing special. The chicken is relatively new and while pretty good seemed very expensive at over $30 a pound. For sides, all four of them were good but not great. The potato salad and spaghetti would probably be the two we'd recommend but both were like a 8.5/10 to us. The pineapple cobbler was really good 10/10, while the chocolate pudding was probably a 6/10.

First: We ordered 2lbs of brisket (half lean/half moist), 1lb of ribs, choco pudding, pineapple upside down cobbler, pint of green spaghett. I arrived at 11 and was about 40+ in line. The line took about 1.5hrs before I got to order. The bark was a bit lacking on my brisket. I think it might have been that brisket because our table neighbor had a much nicer looking brisket slice. I did still enjoy the brisket. These molotov ribs though were delicious! I would highly recommend these! The green spaghett was a nice treat and break between pieces of bbq. I wish they had the beef rib but didn't have any. Also they were out of lamb chopis by the time I made it to the counter. The service was friendly.

My family and I recently made a two-hour drive to try out Barb’s B Q for my dad’s birthday, and it was definitely worth the trip! We wanted to get the most out of our experience, so we splurged on the “Full House” and added several extras. The line was out the door, and once we tasted the food, we understood why. The meats were tender, juicy, and bursting with unique flavor. Truly amazing job, Barb! When my parents were placing our order, they actually had the chance to speak with Barb herself. She was full of smiles, so kind, and even wished my dad a happy birthday! As a Hispanic family, we love to see the success of other Hispanic people, and it was beautiful to see her thriving and interacting with her guests. That said, I do want to offer a bit of constructive feedback. I have a large family (there are seven of us), and naturally, we were concerned about seating. When we walked in, we noticed a couple of open seats and I approached an older woman with purple-tipped hair, who appeared to be assisting guests with seating and supplies, to ask if we could reserve them or needed to wait. Before I could finish my sentence, she cut me off with a sharp “No, it’s first come, first serve”. I let it go (working in food service myself, I understand moments of stress and snappy behavior). However, throughout our meal, this woman gave us several unpleasant looks, which my brother also noticed. Then, when we finished eating, my mom politely asked for butcher paper to wrap our leftovers (something another employee had offered earlier). The woman hesitated, responded with an “Okay” and proceeded to hand us aluminum foil instead. There was no explanation, just a quiet refusal to provide what we’d asked for. We weren’t upset- just a bit confused and slightly put off by her demeanor. While this interaction didn’t ruin our experience, it did make us feel a little unwelcome which was unfortunate given how far we traveled and how much we enjoyed the food. I hope the team reconsiders who they put in guest-facing roles. Just one person’s energy can really shape the tone of a visit. Our overall experience was a positive one that we wont forget! Can’t wait to see how Barb’s B Q continues to grow!

Visiting from out of town and was waiting to check in for a wine walk. I noticed people lining up around 9ish and the place doesn’t open until 11. My immediate thought was it must be a good place if there is a line already. It is a place where they got it until it’s gone. The pork ribs and the green spaghetti were good. Ribs were tender. Spaghetti as a side seems unusual but I’m not in the business so, I guess. The place is small and cozy. Service and atmosphere were good.

We were driving from Houston to New Braunfels on a Saturday and decided to stop here for lunch and see what all the fuss was about! They opened at 11am and we managed to get there at 11:15 to get in line. The line didn't seem super long and the weather was nice so we were happy to wait. We did not make it to the the inside of the restaurant until 12:45 and then another 20-25 minutes before we could order. The couple in front of us got the last link of sausage which was pretty disappointing. We ordered the brisket, turkey, pork ribs, green spaghett and the charro beans. Food was great! Specifically the green spaghett was super unique. Creamy and spicy at the same time and it managed to be relatively al dente even though they were not cooking it to order. The seating area inside was quite small which explains why the line moves as slowly as it does. Overall we really loved the food, but, for me personally, it just wasn't worth a two hour wait in line.

Green spaghetti (10/10): I’d give this a 11/10 if I could. Every so often I come across a dish that presents a combination of flavors and textures that I never knew I’d love so much. Today at barbs b q, the green spaghetti did that for me. It takes the green salsa from your typical taqueria, and combines that with mouthfeel and eating experience of authentic Italian pesto. The tanginess and mild spiciness of the poblano peppers is subtly perceptible. And yet it feels oddly creamy without being too heavy. This side deserves entree status. Easily the highlight of my meal here. Brisket (8/10): The brisket was cooked well, but it felt like the seasoning didn’t penetrate the meat much. The bark was a little overly salty when compared to the interior of the meat. The bark was also a little too soft. I think they would do better with better quality beef too. When I sink my teeth into a really good brisket. It’s supposed to feel like biting into a gelatinous pudding with meat fibers dangling about for structural support. That gelatinous feeling was lacking at barbs b q. Pickled onions (10/10): I usually don’t review condiments. But the picked onions here were something special. Pickled onions are my favorite condiment to go with barbecue. But not many bbq spots offer it. Stiles switch is the only other spot I know that provides customers with pickled onions. The pickled onions here gave me the acidity I needed to balance out the fattiness of whatever I was eating, while not being overly biting. The added oregano (I think) was a nice touch that only added another dimension to the flavor profile of this condiment and elevated it to a whole other level. Pork ribs (9/10): The pork ribs were tender, and they almost fell off the bone. The seasoning was great, and the added lemon zest at the end was great. However it was lacking a good bark. Sausage (9/10): I feel like sausages are really hard to mess up flavor-wise. What I liked about these sausages was that the casing wasn’t so hard. Usually the casing ends up being quite hard to chew through and that ruins the eating experience. These sausages were a pleasure to bite through. Overall, I have to award this place 4 stars even though it breaks my heart. The green spaghetti was phenomenal and the pickled onions were so good! But I’ve had better brisket elsewhere and here in Texas brisket makes or breaks a bbq place. ——@eddythefoodcritic

Barbs is a small bbq spot right on the square in downtown Lockhart. We arrived right around 10 on a Saturday and were about 10th in line. The had free coffee out and then free beer. The staff were all great, they came out and gave a rundown before opening. Inside they have seating for about 30. Overall, I wouldn't put Barbs in my top 5. The highlights were probably the ribs and sausage. Both I'd give a 9.5/10. The ribs were slightly different with a slight vinegar tang and lime zest. The turkey was also good. However, both the turkey and lamb had a strong herb flavor, if that is not your thing. The brisket was a bit of a let down. It did not have a ton of flavor and some pieces were pretty chewy. The beef ribs also was nothing special. The chicken is relatively new and while pretty good seemed very expensive at over $30 a pound. For sides, all four of them were good but not great. The potato salad and spaghetti would probably be the two we'd recommend but both were like a 8.5/10 to us. The pineapple cobbler was really good 10/10, while the chocolate pudding was probably a 6/10.

Pork stew was the best of all the items we got. The green spaghetti differentiates this place from other bbq spots in terms of sides. Like LA BBQ, the restroom is 🕺🛸

Lots of hype around this bbq spot. We visited on Oct. 17th. We ordered the 2 person special for $60.00. 2 meats (brisket, ribs added turkey) , 2 sides ( beans and potato salad)+ 1 dessert (chocolate mousse). Brisket was moist, good balance of fat & lean, great traditional bbq taste. Ribs had a lime glaze + added lime zest that was not a good choice for the meat and was overpowering. The turkey was moist , again, not a fan of the very herby rub. Our table mates asked us to sample the sausage link they chose , and tell them what the very different flavor was in the sausage. Not a clue, so we asked staff- much to our surprise it was a mint based addition. Mint … in sausage ??!!?? I get it - bbq masters all over are looking to elevate their flavor profiles and attract more non traditional bbq eaters. NO! BBQ is not meant to be treated with culinary herbs or citrus that just don’t compliment the meat. Mint is an aromatic and just did not enhance the sausage taste. The beans had cut up wieners and brisket … ok, not traditional, but dang it, it worked!!! Potato salad was tasty. Overall, will head to Terry Blacks next time.
