This is a diamond in the rough. You need to book a table as it is almost like an an exclusive experience. Ignacio was a superb host. Now the food.... The Foie Micuit is exquisite the accompanying fig jam 👌 The Fried Squid with Lemon Jam and Parsley Oil was done to perfection. Both were accompanied by a Ramón Bilbao Crianza Rioja. The next course was the Iberian Bacon (Sous Vide) with Orange and Carrot Cream. I took Ignacios advice and had it cooked at the chefs style. Thank you for the ecperience

We had a great time! Even though we weren’t that hungry, we still managed to push ourselves to enjoy some amazing food. The staff were very helpful and knowledgeable. My favorites were the roasted octopus with Romesco sauce and the crema catalana. The Ramon Bilbao Crianza is a red wine we definitely recommend.

Nice spot in Carmen on Bolseria. The service was very friendly and the dishes were very good. Of course. Meat is a focus and it is well presented and perfectly prepared. It is a bit pricey, but the quality is excellent and portions are sizable.

Hidden gem in Valencia old town. We had the tasting menu for €52 with 4 starters, the main, and a dessert. It was delicious from the start, we particularly enjoyed the Ham Timbale and Cod Fritters from the starters. The main Iberian Pork cheeks was melt in your mouth beautiful. Finally we went for a blueberry cheesecake and the Crema Catalana, all tasty. Just be prepared to be stuffed, it was a lot of eating!

We stumbled upon JamónJamón in the buzzing El Carmen district of Valencia’s old town, and wow, what a find. Maybe it was the chilly February air or just to keep things a bit mysterious, but we had to ring a bell to get in. Then the curtain parted, the door swung open, and we stepped into this cozy little spot that absolutely nails the art of good food. Starters? We kicked off with their quirky take on Patatas Bravas—crisp and bold—and the Foie Micuit, this silky duck liver soaked in sweet Valencian Mistela wine, served with fig jam and toasted artisan bread. Unreal. For the main event, we went with two dishes: the Tender Iberian bacon cooked sous-vide, paired with a velvety orange and carrot cream, and the Slow-cooked Iberian pork cheek in a rich Valencian red wine sauce, sitting pretty on roasted pumpkin purée. Both were delicious, but that sous-vide bacon? It melted in our mouths like butter—it was next-level. We ate like royalty here, and honestly, we’d tell anyone to check this place out. JamónJamón is a must-visit!

If you're reading this and you don’t speak Spanish, here’s a heads-up: the translated menus have the same dishes but are organized differently under “To Share/Starter” and “Main.” It’s a good idea to double-check whether a dish is meant as a starter, sharing portion, or main course. The restaurant is stylishly decorated and well-insulated from the noise of the (busy) street outside. Everyone has to ring the bell to enter, which keeps the door from opening every five minutes, an added touch that makes the experience more comfortable. The service was outstanding, very friendly and attentive staff. For a place named “JamonJamon,” the menu is surprisingly varied. Some highlights: the foie gras is excellent, as is the “Iberian Bacon” and the “Galician Beef Sirloin Steak Tartar.” On the downside, the “Pink Tomato Salad” didn’t impress us at all, lots of volume but not much flavor. I’d recommend skipping it to save room for better dishes. One note of caution: check your bill at the end. We were overcharged (€42 instead of €27) for the wine, even though the name of the wine on the bill was correct. I’m sure it was just a simple mistake, but it’s always good to double-check.

To end the meal, we indulged in the blueberry cheesecake, which was creamy, smooth, and a perfect finale to our culinary journey. The service was outstanding—attentive without being intrusive, and the staff clearly took pride in ensuring every detail of the evening was perfect. Jamon Jamon is a must-visit for those seeking delicious food, impeccable service, and a romantic dining experience in Valencia. Highly recommended!

Absolutely beautiful restaurant, the food is amazing, we had the duck shared stater and beef and pork mains and shared a dessert, it was all perfect and the wine, I could have drank a lot more of that no problem. But the best part of the whole experience was the service, Oscar was our server and he is the most friendly and polite guy ever. I highly recommend adding this restaurant to your plans if visiting Valencia.

Buen sitio donde ir a comer/cenar. Ambiente recogido y tranquilo y buena calidad/cantidad de la comida. Dos cosas a mejorar: el aire acondicionado no ayudaba a hacer una estancia agradable. Por suerte tienen dos mesas donde no te da. La otra, el precio, un poco caro para lo que es.

Un restaurante con ambiente agradable, decoración interesante y excelente servicio en inglés. Elegimos el menú degustación: de los aperitivos, nos encantaron el jamón con salsa y el queso de cabra, aunque el calamar tenía demasiado rebozado. El plato principal, carrilleras de cerdo con puré de calabaza, estuvo delicioso. En los postres, la tarta de queso estaba bien aunque el jarabe era muy concentrado, y la interpretación del tiramisú no nos convenció. En la planta baja estaba algo cargado hasta que encendieron el aire acondicionado. En general, buena comida, excelente servicio y ambiente agradable.

Un ambiente interesante con una cocina innovadora que a veces puede sorprender muy gratamente y otras dejarte algo frío. No obstante, la torrija del postre me pareció la mejor que he probado en mi vida. El servicio excelente, gracias a Fran el murciano, un tipo amable, simpático y atento.

Entramos por probar, sin tener referencia alguna, y nos dieron mesa sin haber reservado ni nada. La atención nos pareció muy correcta. La comida está bien y tienen alguna propuesta tradicional pero con toques oroginales, sello del restaurante. Me encantó el tiramisú de naranja que probamos de postre.

Comida muy buena con platos excepcionales como su panceta y su torrija. Una experiencia muy recomendable y nos atendió Fran el murciano que hizo la noche más agradable

La comida esta buena, aunque los platos son algo caros. No os fieis de unas imágenes que hay viejas en las reseñas de la carta y entrad en el menú web. El ambiente aunque es pequeño es bueno con luz teneue y buena música de fondo. El servicio no fue muy bueno. Un camarero pone muy poco en las copas de vino (no llegaban a la curvatura de la copa), los platos tardaron mucho en salir y atendieron a gente que llegó más tarde, al terminar no nos preguntaron si queríamos postre o café. Un sitio preparado para turistas.

He ido a realizar una prueba en una hora y media me he encontrado una cucaracha en un cubo de huevos cocidos y a una compañera cayéndose de tres bandejas medcrálicas en la cabeza y el encargado de la cocina el encargado del restaurante más que darme una respuesta positiva o negativa lo que han sido ha sido bloquearme del whatsapp más que un restaurante esto parece un circo poquísima poquísima profesionalidad creo que opiniones que no sean solo de clientes sino también de trabajadores o personas que van a trabajar en el núcleo de la cocina que es realmente de dónde sale todo y realmente las personas van a comer comida y es súper importante saber sobre la higiene creo que es buenísimo evaluaciones como esta si estás viendo este esta opinión te doy como consejo de un profesional que no vayas a comer aquí esto no hubiese sido puesto si con forma responsable el encargado de esta cocina me hubiese dado una respuesta tanto positiva como negativa pero dado el trato recibido me veo obligado a poner esta opinión gracias
