This place is FIRE!!! I’ve been in search of great Texas BBQ since I moved here, it’s been a long search but I found it at Steadfast Barbecue! (Before y’all think in lying I did have Franklins in Austin and I was tryna match that initial experiece, and this spot definitely did it. And if you still don’t believe me, try it yourself!) The brisket was moist, succulent, with a perfectly crisp crust from the bark that was well seasoned. And if you need an extra kick or something to brighten up all the great bbq you’ll be scarfing down, the in-house BBQ sauce had a great kick of acidity, adding balance and another depth of flavor to an already great piece of Brisket. My only gripe is that I did not order MORE! Guess I will have to come back!

This is Texas barbecue at it's finest. The brisket is perfect, ribs are outstanding, turkey is super moist. I loved all the sides, especially the street corn and the pickles made in house. The staff are all very friendly, great music and decor. Will definitely be back!

Was super excited to hear a new BBQ joint was moving in to this spot, stopped by today whilst they’re doing something of a soft launch and was not disappointed! A friendly welcome and the Brisket and Turkey were both top tier, just melted in your mouth! Will be visiting again soon to try the ribs because I was too slow getting there on this occasion.

Best BBQ I've ever had, the pit master said he worked at Franklin's before opening here. But in my opinion his BBQ was WAY better than what I had at Franklin's, with way less wait time.

Best BBQ I've had in Texas and that's saying something. Queso Mac n Cheese is bomb and you can't beat the prices and atmosphere. Def stop by but get there early because once they sell out that's it.

Welcoming environment like you were getting served by an old friend. Fantastic ribs. Tried both and couldn’t decide which one I liked better.

Friendly, welcoming and pleasant people and environment. The brisket on their menu is the type of brisket that makes you stop and savor the moment of each bite but makes you want more than your body can handle, no doubt the best brisket I have had in many years. The sausage was seasoned just right and with just the right amount of moisture along with coleslaw that was fresh and crisp. Last but not least for dessert, the banana pudding reminds me of home, just like my mother's, that is priceless. I am thankful for this place we ran across during our travels. We will be returning on our way back through on our next adventure.

Stopped by on a whim and happy we did. The food was absolutely delish! The brisket was moist and flavorful crust. I told my husband it’s the best brisket I’ve had. And I was blown away by the sides. We had street corn and Mac and cheese and both were treats. Don’t drive by without stopping. You won’t regret it! Unfortunately we forgot to take photos because we gobbled it up so quickly.

Roadhouse was busy so I decided to try Steadfast next door. So glad I did. I had the best smoked turkey I’ve ever had and the pulled pork is excellent too. I’ll be back to try the brisket very soon! The spicy beans with beef are so good that I’d come back just for that. I took my food to go but next time I’ll eat there so I can enjoy a beer at the really cool bar.

Went today and found out they were doing a sort of soft opening and were about to close up, but still had some brisket and a couple sides available! We got some moist brisket and some lean, both were absolutely fantastic and the loaded potato salad was delicious! I also loved the BBQ sauce! The owner and the gal working the counter were so sweet and you could tell they genuinely cared about the quality of the food. So happy to have a new bbq place in Bastrop and I will definitely be back! Can’t wait to try everything else they have to offer!

Brisket was very tender and delicious. Their homemade sausage is delicious, but too hot for this old chick!! FYI My Son-in-law says I am a disgrace to all Latin American women...LOL! So....what's hot for me may be just right for you!! My daughter loved the beans and brisket side and the broccoli rice casserole was good!! Large servings were given and loved the rustic/homey atmosphere!!!! Great Job, Guys!!!

Hands down, best bbq I’ve had!! The meats were cooked to perfection and that brisket….YUM! 🤤 plus the sides are delicious! The staff is very kind and welcoming. Highly recommend. This is my new favorite spot and I will definitely be back.🙌🏼

Brisket was excellent!! Owner was very cool to talk to and without a doubt really cared about the quality and taste of their brisket! I enjoy a heavier thick bark and deep smoke ring and this brisket had a great balance of both most people will love! Glad to finally see a legit bbq in this location I’m sure they’ll do well!

None were “great.” Steadfast Barbecue has quickly earned the title of “great” here in town for me. The flavor and quality of the smoked meat (all of it, turkey to pork ribs) is superb.

Amazing Texas BBQ!! The brisket had a flavorful peppery bark and both lean and moist cuts were very tender and juicy that just melted in your mouth. The ribs were also very tender and succulent. You can tell the pitmaster has mastered his craft. Will definitely be back to try more and more.

The brisket was phenomenal, it was so juicy, Turkey was amazing, and I was so happy with the the loaded mashed potatoes and queso mac as my sides. The food is very reasonably priced for bbq! I took forever to choose my sides and the people working there were were very nice and patient with me! I strongly recommend stopping here, phenomenal food and nice people working there! :)

The ribs were so good! The brisket was good but we should have specifically asked for moist because it was a little dry for us. The green beans and banana padding were delicious! Super nice and friendly staff! I always look for places that are off the main road a little bit and I’m glad to have found this place! We will definitely be back!
