Miller’s Smokehouse is easily one of the best BBQ spots I’ve ever visited. The moment you walk in, you’re hit with that amazing smoky aroma that lets you know you’re in the right place. The brisket is the star of the show — tender, perfectly smoked, and full of flavor. It has that ideal balance of bark and juiciness that makes each bite melt in your mouth. The sausage is just as impressive, with a great snap and rich, seasoned flavor that pairs perfectly with their homemade sides. Another aspect that really sets Miller’s apart is the staff. Every person I talked to was friendly, genuine, and seemed to truly care about making sure everyone has a great experience. You can tell they take pride in what they do, and it shows in both the food and the atmosphere. Whether you’re a local or just passing through, Miller’s Smokehouse is absolutely worth the stop. Great people, great food, and a true taste of Texas BBQ done right.
Food was amazing, service is outstanding. Atmosphere was not great because someone had a over abundance of perfume on, so it unfortunately made it impossible for me to sit where the counter lady had tried to put us. The counter lady found us another table quickly. My husband and I have tried a lot of BBQ places here in central Texas. This one without a doubt is the best one.

It’s massive, soft, and dripping with just the right amount of icing — sweet, buttery, and baked to perfection. You can tell it’s made from scratch and not something pulled from a freezer. Pair it with a cup of their coffee, and you’ve got a breakfast worth driving out of your way for. Between the quality, the friendly service, and the cozy atmosphere, Millers Smokehouse nails it every single time. Breakfast here isn’t just good — it’s unforgettable.
⭐️⭐️⭐️⭐️⭐️ This barbecue spot was absolutely amazing! The meat was smoky, tender, and full of flavor — cooked to perfection. The sides were just as good, especially the Mac and cheese, and everything tasted fresh. The service was friendly and fast, and the atmosphere was warm and welcoming. Easily one of the best barbecue places I’ve ever been to. I can’t wait to come back and try more from the menu. Highly recommend!
Their menu says "Start your day with caffeine and protein" so I did, kinda. I got coffee and biscuits and gravy. Texans take biscuits and gravy seriously but in my opinion, they ought to be taking drip coffee more seriously because it seems to be an afterthought these days. Not at Miller's Smokehouse. I had three cups because it was the best drip coffee I've had in forever. Miller's imports their own beans and roasts their coffee right down the street. Typically, a square biscuit means it's made in house. I assume that's the case here but two biscuits with a glossy white gravy and sausage is the perfect pairing for their coffee. If you've got a long day of college football ahead of you, this is the perfect order to get your game day started, Texas style.
Miller’s Smokehouse is where Texas road trips turn into Texas triumphs. TL;DR: Pulled over in Belton, scored brisket, sausage, and a key lime pie that made the angels sing. Added stamp #11 to the BBQ passport of destiny. Cruising north from Austin with the sun setting behind me and the promise of dinner ahead, I made a calculated, high-stakes maneuver. I took the Belton exit for Miller’s Smokehouse, a decision guided by instinct, hunger, and my undying loyalty to smoked meat. Rolled up at 5, crowd humming inside, only one person in line. The employees were serving deliciousness that would make your grandmother jealous. I ordered brisket and sausage, pure and simple, no distractions. But then it happened. My eyes locked on a key lime pie sitting in the dessert case, glowing like a beacon of citrus hope. That pie wasn’t a dessert, it was destiny. It rode shotgun all the way home. Back at the house, my wife, the Side Dish Queen herself, joined me for the feast. That homemade sausage snapped like a Texas flag in a summer breeze and delivered a smoky, juicy bite that reminded me why I chase these stamps like a man on a mission. The brisket was tender, rich, and packed with flavor that could only come from serious pit dedication. We crowned the meal with that pie, and let me tell you, the sweet-tart perfection made the world a better place for a few glorious minutes. Miller’s Smokehouse delivers exactly what a Texan road trip demands: elite meat, no nonsense, and pie that can win over the toughest critic. Stamp #11 secured, and the journey continues. Unfortunately, I was so ready to dive into the brisket and sausage, I didn’t think of taking a pic till it was gone!
I really appreciated their system — you order at the counter, get assigned a table right away, and your food comes out to you when it’s ready. No long, slow-moving lines like at so many other barbecue places. The food was great across the board. The brisket, sausage, and mac and cheese were all really good — but the potato salad was the star of the show. Absolutely delicious! Great food, smooth experience, and plenty of parking.
The only negative thing about this place is it's so popular, they run out of food fast! Seriously though, Great food, fast and friendly service, and a clean establishment. They have some of the best barbecue I have eaten in Texas, and even their sodas are gourmet! A definite 'must visit' anytime you're in the Temple/Belton area.
We had an excellent meal at Miller’s Smokehouse and would highly recommend it to anyone craving great barbecue. We tried the brisket, regular sausage, pulled pork, potato salad, and mac and cheese—everything was flavorful and cooked perfectly. The brisket was especially tender, and the pulled pork had just the right amount of smoky richness. For dessert, we had the key lime pie and banana pudding, both of which were delicious and the perfect way to finish off the meal. The atmosphere was laid back, quiet, and clean, making it a comfortable spot to relax and enjoy good food. If you’re in the mood for quality barbecue in a welcoming setting, Miller’s Smokehouse is definitely worth a visit.
Just found out about this place thanks to Texas monthly. What a great find, just a few minutes off I 35 in Belton. The service was super friendly, restaurant was comfortable but most importantly the brisket was excellent with great bark. Was looking for a nice ride to get out of Austin during Memorial Day and love BBq so wanted to give this place a try. Glad I did, the entire experience was amazing. A great place to sit down with family and friends, very clean and has a large staff that is keeping up with the hustle and bustle. I had a medley of food to include Ribs, brisket, wings, cheeseburger, fries, chocolate cheesecake for dessert and a cold brew coffee and unsweetened tea. I absolutely loved everything I had but I’ll say this…the wings are up there as some of the best I’ve had ever. The fries were seasoned perfectly. The ribs were outstanding and the brisket had a nice smoke ring and flavor. Tea was good but the cold brew was outstanding with a nice flavor with chocolate notes and smooth. If you’re in the area, come out and support your local restaurants and avoid the chains.
A friend and I had brisket chili, and it was delicious. A bit of a kick, but not too hot. Be forewarned, there are beans. (gasp!) The service was friendly with a side of witty banter. For dessert, we had a cornbread muffin with sweet butter and nearly as rich as cake. Clean, comfortable dining area with a sunny view of the street.
Everything here is bursting with flavor and cooked to perfection. The staff is friendly and helpful. The atmosphere is industrial and clean. Absolutely worth a detour or special trip; whether or lunch or breakfast you honestly can't go wrong (and that's not something I'd generally say). Their brisket is a highlight, but their pulled pork, biscuit, breakfast bacon ribs, breakfast tacos, and when pancakes are noteworthy. Speaking of which, don't skip the banana pudding which is worthy of a stop on its own. This place has the second best BBQ we've had (just behind Franklin in Austin) but with reasonable prices, a coffee bar, no crowds, and deliciousness that extends beyond just BBQ, this is the overall top pick in my book.
By far THE BEST bbq we've ever had! We were just driving through and happened to come across this place, and boy were we thankful we did. The brisket was impeccable - not only the seasoning, but the quality of the meat was undeniably superb also. Loved the sides (green beans, mac n cheese and cornbread) as well. My husband and I ordered our food for pick up (never have tried this place before) brisket, chicken, mac and cheese and cornbread. Instead of cornbread we were surprised to see 3 pieces of white bread…even though we paid for cornbread. Also didn’t come with the pickles & onions on the side.
