This is such a beautiful coffeeshop! The foldover I had tasted incredibly well, the coffee was stellar and the atmosphere was welcoming. I thought I was going to just stop in to get some work done but I ended up staying in the space because I didn’t want to leave. I will definitely be back when I can.
I come through Shasta when I'm driving between Washington and LA and last year I needed a few extra Christmas gifts. I got a few bags of coffee which were a little more expensive than my usual beans but reasonable for a small, mountain-town coffee roaster. They ended up being everyone's favorite gift last year so this year I got eleven bags. Definitely recommend stopping in when you're in Mt. Shasta. They also have dog treats for customers 💖
Theory is fantastic! If you’re looking for a coffee shop in the area, definitely pick this one. My partner reported that the coffee was great, and I had the best tea I’ve ever gotten at a coffee shop. They clearly put a lot of thought into what makes a good experience for a tea drinker. They only filled the teapot with as much water as would fit in the cup they gave you, so you don’t end up with the tea leaves steeping for ages while you drink the first cup. And they give you a timer so you know when it’s ready! The environment is also delightful. The staff were all so kind and friendly. The seating is thoughtfully laid out and created an ambiance that’s bustling but not overwhelmingly loud.
Usually fancy coffee shops with white walls, plants and wooden accents are not supportive to people studying/working/staying for long periods of time etc. I was really surprised at Theories diverse array of comfortable seating and outlets everywhere! The staff were also super down to earth and it felt like a family operation.
This coffee shop was beautiful! The pastries looked insane, and they did have some gluten free options! I was just driving through Mt Shasta and so glad we stumbled upon this place. Coffee was great, service was friendly, and the vibe inside was awesome!
Went to the new Theory Coffee Roasters location in Mount Shasta this morning and was thoroughly impressed! Beautiful space (in spite of the missing tables 😊 that haven’t arrived yet) serving up perfection in a cup alongside fresh-baked pastries that had us drooling as we waited in line! The staff was quick, friendly, and proficient. I got an oat milk latte that was as delicious as it was beautiful. And the sausage foldover was puffy, fresh, and flavorful. I also sampled my friend’s monkey bread that was a perfectly caramelized treat! Bought a bag of beans & an enormous cinnamon roll to take home to the hubby. He said it was amazing. Looking forward to visiting again & often!
I won't go into a lot of detail about this amazing coffee shop in Mt. Shasta. Others reviews have covered it all. I will say that the Double Latte I ordered this morning is possibly the best latte I have had in my memory. North or south, east or west, from one coast to another, my first sip stunned me and made me wonder what I've been missing all theae years. Big, big, BIG shout out to Violet, the barrista artist who made me a morning coffee I will not forget! I am only here for a few days of hiking, but I know where my first destination will be every morning at 7 AM.
Stopped here for a coffee and treat mid-road trip - what a great spot! Latte was fantastic and the cinnamon roll was delicious as well (I always appreciate a generous helping of frosting on top of my cinnamon rolls!). Not too far off I-5 either, so it made for a convenient little stop on our route.
Perfectly crafted latte with a velvety taste and beautifully served too! We shared a cinnamon roll that was - wow!!! So good. Love the clean and open vibe with accents of wood and greenery. Nice seating options from stools to sofa to booth to tables. Look for Theory on the corner with a view of the mountain just up the hill.
Great Latte and amazing ceremonial grade Matcha 🍵 cinnamon roll and Gruyère were also very good. Bathroom was real nice and clean. Highly recommend Theory Coffee!

Such a cute and spacious cafe! Espresso smooth and favorable, latte foam perfect. Bear claw super crispy and delicious. It did take quite a bit of time to get my order 20 min or so. No complaints.
Excellent Mt. Shasta branch of this Redding based third wave coffee shop. It's part of a new looking hotel, adjacent to the hotel lobby I believe. Huge, open, modern space to sit in, coffee was very good. Pastry was amazing, and I just want to say, my whole life the "bear claw" pastry has been an afterthought, like, where does one even find a "good" bear claw and what would that even be. Well, this was by far the best and only really good bear claw I've ever had. Flaky and delicious. It makes sense that a 🐻 country third wave coffee shop would have an amazing 🐻 claw pastry.
This was my 3rd time visiting while traveling through Mt Shasta. This coffee shop far exceeds my expectations. Great coffee, impeccable service and the atmosphere is top notch! My only request is to bring back the affogato ☺️

Very cozy modern minimalist design interior. Nicely roasted coffee. Interesting coffee selection. Nice selection of pastries to go with coffee. Many tables and booths for folks to sit, relax or work. WiFi was good. Sat here for couple of hours to get work done.

Nice place to get a really good coffee and sit down for a bit. Staff is very friendly and they really know how to make good coffee! I like they have real honey to sweeten my latte ;)
This place has the best scones we have eaten! The savory cheese and chive scones were so perfectly prepared. The edges were slightly crisp and balanced the soft and “moist” inside. Yes, they are not dry!! The maple pumpkin bars were also an amazing treat. They were super moist, sweet and when warmed up were phenomenal. The coffee was good too! Theory coffee has the standard modern interior, plants, comfy seats, and plenty of places to work. They seemed dog friendly and had lots of space to sit and enjoy the deliciousness. So happy we found this place, as we pass by regularly!

I love that Shasta finally has an actual coffee shop as I can them. Perfect coffee shop vibes. I legit want to just live here. The only thing I'd say is a con is that there's no real food options for someone intolerant to dairy or vegan. I wish there was a hardy food option. Like an egg or tempea in a corn tortilla with greens and onions and a side of orange or berries or even a glass of OJ instead. Otherwise I have to eat before I go and leave when I'm hungry. Also depending on the barista, you might find the best London Fogs you've ever had.
Between the 41st and 45th latitude on the west coast of North America, it is difficult to find decent micro-foam coffee drinks. Some of the coffee shops don't even use barista oat milk. It was a real treat when we drove past Mt. Shasta to be able to stop at Theory Coffee Roaster for some oat milk drinks. They have a modern space, and part of this space double up as the 'living room' for customers staying at the Summit Lofts Boutique Hotel. Look at the picture and see whether the micro-foam is thick enough. It's certainly notches below Verve Coffee. But what they lack in foam they make up in atmosphere.
Café has modern interior design. Great coffee. Took on star off as they made semi dry cappuccino with too much milk.
This place was obviously popular, as we had to wait in a significant line prior to ordering. During our wait in the line, I watched as all of my desired pastries disappeared before I got to the front of the line. However, I did get a banana chocolate chip muffin, which surpassed my expectations. It was very fresh, moist and flavorful. The coffee was good and strong. The staff, who were all friendly, were really hustling to keep up. I think one dedicated person on the register would have helped, as I saw most people multi-tasking between register and food/drink preparation. I would return, but earlier, because I want to try more pastries.

The coffee and pastry here is really good! I got a peppermint mocha, and it was not too sweet; I could actually taste the coffee. Overall price range for coffee drinks is about $6; the cups look to be about 12 - 16oz, and they do really cute latte art. The pastry is super tasty; I got a bearclaw and split it with my mom. The flaky pastry was good, nice and crispy, and actually had layers in it. Unfortunately when I went they didn't have tables yet so seating is a 3/5. The atmosphere is great, I like the decorations. They didn't play the music too loud either. Overall, pretty good!

Nice place with great indoor spaces to sit and during summer outdoor tables. Coffee more fruity than I am used to but did the trick. Good quality breakfast sandwiches
Nice atmosphere, average coffee (Flat White and cappuccino), long wait. I asked to use the dine in mugs, was told ok during order, but when it was made they refused to do it. The baristas seemed very stressed this morning.
I just don’t understand almost $4 for a smallish cup (medium at best) that’s not even organic. Still better than Starbucks so giving it 3 stars instead of 2.

When I ordered, I asked the cashier if the matcha is strong as I am going request an extra scoop of matcha if needed. The cashier said it was strong, so I just ordered as it is. The lavender latte was delicious, and the scent of lavender is strong, which I like a lot. The matcha latte is sad. The drink was very watery. I went back to ask if they can give me an extra scoop of matcha powder in my drink, and they were very kind to re-make my drink. It came out better than what it was, but still a bit weak. I will just order lavender latte next time.

Owner? was rude and condescending and tried to embarrass us because we asked for a white chocolate mocha .. suggested we should go to Starbucks if that's what we were looking for, she said she could tell Starbucks people. Which we are not. Workers had no sense of urgency even though the line was out the door. Honestly don't understand how this got so many good reviews, must be the pastries

Not fit for those with food allergies. Have really enjoyed going to this coffee shop while visiting over the years. Unfortunately, the staff baristas were extremely rude and the service has gone downhill. They didn’t end up making my original latte order. Highly recommend going to other coffee shops in the neighborhood instead.
I don't have anything good say about this place. Went in for a Danish and a coffee. What pour choices, so I ordered a white mocha, sorry no white chocolate, so a regular mocha it was. 35 minutes later I received my coffee and it wasn't even very good. So if you have all day please stop by and eat what ever they have in the case, then sit back and relax while you coffee beans are delivered from Costa Rica, then enjoy.
