Excellent! I ordered some soft tacos because of a toothache, and to my surprise, the meat was very good and tender, so it wasn't a problem to eat. I would definitely return.
It is very delicious and the girl who served me in the kitchen was very kind.
Thank you to the young lady who served us. Food and drinks were great, unpretentious local taste. We ordered Torta Ahogada de Carnitas, Aquachiles Negro (didnt realize this is like mexican raw shrimp ceviche), Sangria and Chavelas. would go back next time we are at Tlaquepaque. Ps. music was a little loud but they turned it down halfway through. perhaps some other guests gave feedback. we didnt mind since it was just 2 of us so we could hear each other alright.
We had a great dinner at Chimbombos. The staff were so friendly and helpful (muy servicial). We ordered a molcajete (not on the menu) and it was excellent. We will return. Try it out!

This review is meant to be read at your leisure, perhaps even while enjoying some of the best tortas in Tlaquepaque. If you're wondering whether it's worth going there, I assure you, you won't regret it. Fourteen years ago, I started writing about Mexican food, back when very few people were doing it, and I didn't even know where to begin. A lot of time has passed, and blogs, vlogs, influencers, critics, and so on have emerged. I'm only now starting to dust off the photos I've saved all these years, and I want to share with you that the first picture I took to document my conversation with the person preparing the food is this one. It shows me with the man who, 14 years ago, welcomed me so warmly, explained everything about tortas ahogadas, and witnessed my desire (even back then) to write about Mexican food, primarily. A lot has happened, and somewhat steadily. I write as a 'Local Guide' for Google, I've published a couple of articles for a blog in the USA, I continue posting on my Instagram, I had two children, I finished my culinary degree, and I'm already setting up my blog so that stories like this one I'm sharing with you can appear there. I'm sharing all this so you know that even after 14 years, I haven't given up on the idea of writing, and that I still have the first photograph, which is this one, where I appear with the gentleman (forgive me, but I don't remember his name) whom I respectfully and affectionately call Don Chimbombo. I hope to find him the next time I return to Tlaquepaque to try his tortas and tell him how everything has turned out. The taste I remember from that afternoon I visited, in the sweltering heat and amidst the sounds of a nearby patron saint festival, has become a reminder that in Mexico we have small places brimming with flavor, thanks to the skill of great cooks who have preserved original recipes passed down through two or three generations. I will always return to Chimbombo because one returns to their roots and never forgets them, as an act of hope and joy, a reminder that all good things will always be there. The burgers used to be really good; they'd give you baby potatoes with cheese and Parmesan, just like the menu said. Now they gave me some half-heated potato wedges and a burger that was supposed to be a "forged" burger with bacon and cheese, but it wasn't. They gave me a classic burger and charged me for a forged one. The burgers aren't worth it anymore—expensive and not good at all. It's a shame because they used to be good.
I went to the stand in the garden on Sunday and the spicy food was spoiled and to hide the smell they put a lot of vinegar in it. The person who makes the sandwiches there will fit in and serve it without washing his hands.
I was actually surprised, as my first impression upon entering the place was that it was a pub-type bar, and I thought the food wouldn't be good. But the torta ahogada and the tacos were quite good. Although there isn't much variety in the meat, the flavor is good. But after this lovely story, I got sick to my stomach. I was sick for at least a day, which is why I'm giving it one star.
