First off, delicious brisket.. highly recommend!! Overall, the food was extremely flavorful and fresh. Other than the brisket, I particularly enjoyed the Mac N cheese and the blueberry cobbler for dessert.. yum! The staff was caring and quick… all were very attentive. The atmosphere is family friendly and welcoming.. yet also has a great bar. Give this place a try, I know I will definitely be back!!

Passing through from Houston for a bite to eat and came across this absolutely esthetic restaurant ! Incredibly delicious BBQ! We had a “brisket stuffed tater” and a brisket plate with potato salad and cream corn as sides. Every item was finger licking good! Lastly had the roughneck cobbler and it was too delish! 🤤 We will definitely be back!!! Thank you Republic Bbq for your outstanding hospitality and service! 10 stars!

This is an upscale/modern BBQ place - very good but not quite what I wa expecting in small town Texas. I was not super hungry so tried the chop salad. It was a very nice, huge salad. Fresh lettuce, tomato, onions, bacon and brisket, along with some house made ranch dressing (it comes with blue cheese but I ordered without that). I've seen a few reviews that the brisket was dry, but I did not find that you be the case. It was not fatty and greasy at all, though, so if you prefer a greaser meat maybe ask for moist as it appeared the cutter cut off the fat (which I would have done myself). My husband had the turkey sandwich and greens, both of which were great. Note: I took the Pic after eating about half the salad.

Delicious food, generous portions, we had the burger and the meat was thick and juicy! Nicely remodeled restaurant, nice clean restrooms! Will definitely be back again and again!

I had no idea what to expect, so it wasn't hard to exceed my expectations. It was great atmosphere, food was delisious. Service was spot on. All around a great place to grab some stick to your ribs food.

Nothing like great service and great food during a training lunch break! Close to.our location...no traffic! Great service and quick plate of food on our table. Well worth the calories around the belly. Definitely will return...if ever I'm in this neck of the woods

I’m a Construction Manager on a site in Sweeney, Tx……8 miles from Republic Bar-B-Que. Called Republic and ordered a catering spread that did not disappoint! Sausage and brisket were juicy and very tasty. Owner Tim, and their staff were professional and very helpful. I will be ordering from them again! Highly recommended.

I dined at Republic BBQ for the first time this past weekend. My friend and I were concerned because this restaurant doesn't have the strong bbq pit smell. Upon entering, I noticed that the restaurant was very clean. The meals and reasonably priced and they have a bar with some good selection of adult beverages. Customer service was superb! Thank you! The potato salad is the best potato salad that I've ever eaten at a restaurant! I was not expecting it to be so good. It actually tasted like my family made it. Lol. The peach cobbler was very good. The brisket was cooked to perfection and tasted really good. Everything was good except the baked potato and this is the reason for 4/5 stars. Nonetheless, I will dine here when I'm in town again.

New BBQ joint in a locale that hardens back to the Republic of Texas era. Likewise, it is aptly decored for such a great spot in Texas. Quintessential Texas Que is available accept beef ribs. Skip the sauce and savor the meat. Sides are great but the okra and mac&cheese reign supreme. Service is already spectacular but there are few kinks to work out as Republic BBQ has been open less than a week. Definitely worth a drive from Htown to try out and visit the 1st Capitol building just a block away or Austin's place of passing just a mile away, or the historic museum across the street.

We're Fun

The brisket I'm not going to judge because I've ruined myself by making my own the way I like it. I will say it was cooked properly. Just needed a little salt to make it pop. Get the point (wet). I prefer a lot more smoke flavor myself and a thick crunchy bark from seasoning. I couldn't even tell you what wood this was smoked with, but it was smoked. The smoke ring was evident. The ribs though, those were dang good. Cooked right, not "fall off the bone" which is overcooked to death, but instead has a good bite that pulls off clean. Sausage had decent snap and a light smoke but "jalapeno" they are not. Creamed corn was good, really wish they had a jalapeno cream corn it would be perfect. Tater salad was ok, but the real star of the show and reason to go back was the ribs.

Good food and a friendly staff. I had a smoked turkey sandwich and a side of coleslaw. The sauce had a nice zing. My only criticism was that the portions were a bit small. A few more slices of turkey and double the serving of slaw would be a five-star for me.

If you like sweet brown sugar honey flavored bbq sauce this is the place. Great atmosphere and good food. $75 for 1 three meat plate, one kids grilled cheese and a stuffed potato and 3 drinks.

Brisket grilled cheese would be good I think but the ratios of bread, cheese and brisket seem off. The cheese on the brisket nachos was not very good otherwise I think those would be good because the brisket, guacamole and pico were good. Fried pickles were pretty standard. The restaurant has a great atmosphere and the staff were really nice. We’ll give it another try maybe sticking to the standard BBQ dishes next time.

Updated review***This was our 2nd time here. We made a post about our first time. It was the first day, so we took a lot of things in stride and understood that some things were not up to par. This being our 2nd time, things have not improved. Honestly, I feel like some things have gotten worse. I didn't take any pics like I usually do. I was honestly just shocked that they sent food out looking like it did. Pics would definitely have improved understanding as to why I changed the original rating. The first time, the onion rings were on point. This time, the onion rings were onions with the crust falling off or not even on the onion. We ordered jalapeño sausage, and when it got to the table, it did not look or taste like jalapeño sausage. The waiter asked for a piece of our sausage so that he could ask the kitchen. He didn't even know what it was. The kitchen said it was regular sausage and not what we ordered. There were 2 waiters, and it just seemed like one was doing all the work, and the other was walking around trying to look like he was doing stuff. I really was disappointed in this second experience. I was hoping that with some time, things would improve. I don't think we will be back unless we just absolutely need BBQ in a pinch. The pics in the review are from our first visit during their grand opening.

The O-rings have thick dense breading and would be good if not over cooked and cold. The baked pot...was all around good; M&C also cold... We sat in the high top tables and were mostly ignored by the wait staff. We didn't recieve our drinks until after they brought our plates. We will give them another try in a few weeks or so.

As we ate, we both, almost at the same time, said this brisket has no flavor! And the outside was so thick and hard that it was hard to chew. The meat was like a roast. The sides were good. The service and staff were great but we’ve had brisket FAR BETTER than what they serve here.

Paid $7 for a small scoop of Mac n Cheese. Their food was okay, but not $90 for basically 2 plates. I thought I would give them a shot because I love bbq and it’s close to home, but I will not go back here again.
