Had brisket plate for supper (arrived about 30 minutes before closing and ribs were sold out, darnit!) Brisket was good, not a huge amount of smoke flavor but their sauce makes up for it. Brisket sliced right when you order it, so it was tender and juicy. Good meal!

I ordered a stuffed potato with chopped beef. It could have been a little hotter but it was good. No need for BBQ sauce. Good BBQ doesn't need any. The manager gave me a piece of sausage to taste and it was awesome. Great flavor! Just might get some for the drive home.

Great BBQ. Stopped in on our way to Houston from Austin. Got there when they opened and within 15 minutes people kept coming in (always a good sign) Not fancy but BBQ made from the heart. We always like to try a little of everything. Ordered Pork ribs, brisket, turkey breast, sausage and potato salad. All were very good..

Too hot too cook tonight so decided to try Billies. What a great decision! For our 3 meat plate we chose brisket, ribs and turkey. All of the meats were tender, moist and delicious and they even threw in some of their home-made beef sausage for us to try. The sides of beans and potato salad were tasty, as well. Definitely a must stop for great BBQ!

As a native Texan, you come to learn what a good BBQ place is from the looks of the place. Billy's def looked the part and didn't disappoint. Upon walking in, you get that Texas hospitality with multiple staff greeting you. The service was great and they even gave me a sample of sausage that was so good, I added it to my order. There is only one type of brisket which is in the middle between lean and moist but leaning more to lean. It was above average. The STL pork ribs were exceptional with perfect tenderness. The bbq sauce is more watery and vinegar based but was just right in terms of flavor. The sides were also delicious. If you like creamy Mac & cheese, and potato salad, they nail it. The coleslaw was just like the way we like it, wet and heavy mayonnaise based. The cream corn was the sole let down. It def was not creamy so that could use some improvement. Def worth the stop if you are in the area and looking for a local spot versus the commercialized modern Southside market location close by.

My first time to eat at Billy's BBQ. The brisket was tender and moist. The flavor was so enticing that it didn't need any sauce. The ribs also were flavorful and tender and moist. The coleslaw was the best I've had in a while. (Except mine). The potato salad was a mayo/ mustard recipe that was quite nice. I had buttermilk pie for dessert. It was awesome. Homemade by some lady in Smithville. Very very glad I stopped at Billy's for dinner. They have many more items, but I had no more room. I plan to return for sure! Oh, and they are cheaper than other BBQ restaurants in town! Double bonus!

This place is probably the best bbq in this town heck its better than the bbq in Lockhart the only reason I didn't give it a 5 star was the blonde young lady behind the counter. Like always I walked up they asked what would I like i said chopped brisket with sliced sausage. She looked at me and said we don't make it that way it only comes sliced brisket. I responded no yall make it with chopped also she said no we don't then proceed to tell me how much brisket is a pound like i cant afford to have it made the way I asked. Well the other girl that always well not always but has made my sandwich before made it the way I wanted so I looked at the blonde girl and said see it can be made. I just found her to be rude telling me that I cant have it the way I like it and that's not the way its made. Other than that this place is amazing as always

Billy’s is a local barbecue place, nothing fancy, but good meats. The sides were average, and I wish that the chopped beef was a little bit less salty. The barbecue sauces were good and this is a place frequent by locals, as just about everybody inside, seem to know each other.

Tried a variety of meats and sides and minus the greens beans, everything was so good. I spoke with one of the owners and she gave me a little background on the restaurant. She was very sweet. I'll definitely be recommending this place to my friends!

Great brisket (sliced) ans sausage. I found the shredded beef way too salty. The sides are well sized for you to finish. The Mac and cheese is really really good - soft and creamy. Overall a pretty good pit stop if you are nearby.

I have always eaten at Billy's and its always been very very good. The other day I went there and got what I always get. Brisket. It was awful. Very tough and chewy. I went and told them and wanted a refund but she said no its not chewy its tender. Then she gave me some more and I went and sat back down, tried it and it didn't taste good and was still not tender and good like it always was, but I didn't want to go back up there and have the girl argue with me again and refuse to give me a refund. So I just walked out. I was very unhappy with my experience there with the food and the woman's attitude so probably won't be back anytime soon. Didn't eat the food and didn't get a refund.

I really wanted to like Billy’s Pit BBQ in Bastrop, but my first visit will also be my last. I ordered brisket, sausage, beans, and coleslaw, and unfortunately the only thing that stood out in a positive way was the coleslaw. Brisket – Lacked flavor, had an unpleasant smoke taste, and was overcooked. Sausage – Dry, bland, and way overcooked. Beans – Very plain; nothing more than basic beans. Coleslaw – Fresh, slightly sweet, and honestly the best thing on my plate. I’m not trying to be overly critical, just honest. For me, this was a very disappointing BBQ experience.
