Loved it. Everything was so fresh and the students do a great job of executing a fine dining experience. My favorite course was the escargot. The garlic sauce dipped in the bread was amazing. The salt on the butter was delicious. My duck was very tender and the sauce was just right not too sweet. My creme brulee had delicious bits of vanilla. Overall a great lunch. I would recommend to try. It was also very casual which was a plus.
My goodness the flavors! Above and beyond. Great mix of rustic French countryside meals and subtle, sophisticated meals. Pleasant setting, lots of windows, good lighting, comfortable chairs. The service was attentive and prompt, very well done. Recommended

It was such a beautiful place and experience. The restaurant is inside The Culinary Institute of America . This is in Hyde Park, Dutchess County in NY. We went for my twin cousins birthdays. We really really enjoyed it. The wait staff is culinary students . Tbey are sooo polite and gentle and very professional as they are being trained and getting ready for the real world. Even though you could say they already there by the way they know so much . They have to learn a new menu every day of the week. They have to work alot of hours and not getting paid because they are students in a learning process. They all have to learn to work as a team ( which they did beautifully. When my whole family were watching how they do everything kind of like robots it reminded us. They are kind of being the the movie "The Menu" it was really amazing. So I asked one of the waiters if he knew the movie and he said ," yes , it's very similar except for the gruesome stuff." Our waiters were all so kind . Any questions we had they were so polite and answered all of them . We had alot of questions. The food was out of this world . Very very good . We all got something different and we all said how good it was. I loved my lamb. I loved the different cheeses I ordered. My cousin ordered the fancy soup she loved that. I'm sorry don't remember names of things . The meal we had for that night was all French. Soooo good. I didn't pay so I can't tell you the price, but. For what you get in such fancy food it was great I was told. You do have to make reservations way ahead of time . I would love to cone back to The Bocuse Restaurant. Just walking through the hall way was beautiful and interesting. Thank you gentlemen for making our evening so beautiful. My cousins really enjoyed their birthday. We enjoyed our dinner.. please if you go be respectful to these young students as they work very hard. Do bring your entitled ways to them . Think if it were your kid. Thank you. They are on their feet for almost 12 hours.
Fun and elegant experience. This is located in the Culinary Institute of America in Hyde Park NY. Myltiple restaurant choices available. All of the students are working the restaurant and giving you their all best service. Would definetly be going back! Reservations are required though.
Had 3 course prix fixe lunch with 4 friends. Food was exceptional. Had salmon, lobster souffle for an appetizer, duck confit bourgionon for the entree, and butter poached apples with saffron ice cream for dessert. The students at the CIA are the wait staff and were attentive and informative. A special treat and worth every penny. Had a small banquet table in the corner where we were able to converse easily. Not too noisy in a large room that was fully booked.
ABSOLUTELY AMAZING. I will dream about the Halibut with beurre blanc sauce for as long as I live. We visited this area just to eat at the CIA restaurants, and it was fantastic: two dinners at Bocuse, two at American Bounty, two lunches and one breakfast at Apple Pie Bakery, took the tour, too. Bocuse was my favorite. Beautifully designed restaurant. I had PEI mussels in coriander-lemongrass broth, bok choy and lime; slow roasted halibut with potato puree, roasted cauliflower, smoked roe (SO GOOD), and beurre blanc (this sauce brought to the table by two servers in a copper cup, ceremoniously poured over my halibut!! beautiful); dessert Butter Poached Apples with Pink Peppercorn Rose Meringue, Brown Sugar Cremeux, Warm Caramel Sauce (SOOOO GOOD), Tawny Port Wine Gel, Toasted Almonds, Parmigiano-Reggiano, and Saffron Ice Cream (this dessert was AMAZING). Second dinner: charcuterie appetizer with duck liver pate (I usually don't like pate, but this was EXCELLENT!), Aged Hudson Valley Rohan Duck, Parsnip puree (piped inside a crepe!), baby beets, black trumpet mushrooms, Duck Jus (also brought to the table by two servers and poured over my duck - loved it!); dessert a selection of three cheeses with fig and grapes, fig bar, honeycomb, almonds, house-made crackers. YOU WILL NOT BELIEVE this restaurant. To boot, the students are fantastic: they are friendly, they know what they are doing, and they are jazzed about their school and their future. A memorable experience.
If you would like to feel that you have left this country for a continental travel to Europe. Well this is about as close to getting on a plane. The food was so very chic and delicious I am ashamed for putting this grand fest off for as long as I have. It was my wife's birthday and we enjoy French food, I booked this months in advance. The CIA. Will blow a foodies mind. The Bocuse, French and if you are of another mind of American or Italian and take away food. You are in luck. Go, just go.
We had an outstanding meal last night at Bocuse, one of the three student run restaurants at The Culinary Institute of America. The fact that Students waited on us, served us & prepared every aspect of the meal makes it that much more special. I was blown away by the teamwork we got to witness through the glass as we watched the kitchen work. The attention to detail and presentation were impeccable, the staff was extremely attentive and the food was absolutely delicious! I look forward to many many more meals like this!
Wow. Everything about this experience was excellent. The food was all incredible and you are left more than satisfied by the end of your meal. Every staff member we encountered was extremely polite and friendly, and it's fun getting to watch the chefs work through the glass window. At the time we made our reservation they asked if it was for a special occasion, to which we said it was our anniversary. Throughout the night many staff members made sure to wish us a happy anniversary, and we were given a card signed by the staff. It was a very sweet touch that made the experience that much more special. It was a 3-hour drive for us and we look forward to coming back!
Excellent experience!!! The cuisine and service at The Bocuse Restaurant were impeccable. Highly recommend this wonderful restaurant. It was lovely to feast your eyes upon and then devour the beautiful dishes these students created for us. Wishing them all the best in their future careers as the fantastic chefs they already are! It was one of the most memorable dining experiences we have ever had 😍😋❤️
Wow! The flagship restaurant of the CIA run by the Senior Students. Great looking restaurant with a view of the kitchen and Wine 🍷 Cellar. Immaculately clean facility. Great staff. Reasonably priced. Card payments are accepted. I recommend going a few weeks into the semester, the students have ironed out all the kinks by then. Menu changes frequently. Table side ice cream 🍨 was awesome. My halibut was the star. Our server’s Mike and Deron were great! We will definitely be going back.
Just went here last night. It was lovely and lively. We got seated a large table with a booth. The food was unique and well presented. Delicious flavor and good portions. The bread and castilla de canena olive oil combo is to die for. The students and teachers are professional and maintain a down to earth presence and always with a smile. 😊 they were so kind and always were able to accommodate to our needs and wants
My first time eating at the CIA was an amazing experience!! The staff at Bocuse are so well trained & attentive. The food exceeded all of my expectations. Everything I tried was truly a masterpiece. I highly recommend Bocuse for any special occasion. I can’t wait to come back and try the other restaurants, keep up the great work everyone!
The Bocuse Restaurant at CIA: A Culinary Experience with a View We recently had the pleasure of dining at The Bocuse Restaurant at CIA and were thoroughly impressed. Although the restaurant is located within the CIA campus, finding it can be a bit challenging for those unfamiliar with the area. Tip: Look for the parking signs leading to the restaurants. The Bocuse is located in the tall building above the parking. Upon entering the building, we were warmly greeted and promptly seated. The restaurant's ambiance is elegant and inviting. While the servers and staff are students, their enthusiasm and dedication to providing excellent service were evident. The highlight of the evening was undoubtedly the food. Each dish we tried was a masterpiece of flavor and presentation. The pear merengue dessert was simply divine. Overall, our experience at The Bocuse Restaurant at CIA was exceptional. We highly recommend it to anyone seeking a memorable culinary experience.
Amazing service and food! The staff/students were so polite and had great attention to detail for the food and guests. Highly recommend the duck breast for entree and chocolate for dessert. They added a wonderful touch for my husband's birthday. Absolutely loved it here and will be visiting again. Make sure to stop by the Apple Pie Bakery Cafe to pick up some to go desserts and pastries! We went during the winter deal. An incredible price for a fine dining experience!
This place deserves a 10 star. AMAZING food, perfectly cooked meats, balanced flavors for all three courses. Outstanding pricing for such good food ($59 for three course dinner!). Waiters/students are so adorable, their diligence is reflected with the service we got today. I'd like to shout out especially to the main courses. We ordered the maple leaf duck breast, beef short ribs, and market fish. The meats were cooked to such perfection, it was astounding that students made them (well, of course under the instructions of a well known chef, but still surprising). The temperature spread across the meat, the tenderness, the timing, all resulted in meats that were neither overcooked nor undercooked, not even slightly. Flavors were also on point, and there's always something on the plate to counterbalance the main flavor (for example, the sourness of the veggies complements the sweet and savory duck so well). Just wow. And can we talk about how adorable the waiters/waitresses are (all are supposedly CIA students, so around 18-22 years old?). Some of their actions are slower and feel more inexperienced than the typically older waitresses at high end restaurants, but the way they gently put down the plates/ sets the bread, and how a waiter confused the direction of the utensils and then briskly walked back to reset them, add such satisfactory details to this dining experience. It's cool to not just eat and enjoy, but witness the students LEARN through cooking and serving each customer.
Update: we were back few months later. Had to make a reservation few months in advance. When we came at around 7:40pm they unfortunately were out of a lot of things. Yet everything we ordered was delicious!! The last 4 photos are from our second visit. My husband and I had a great experience at the restaurant the other day. We had three courses. Everything was delicious! The service was so professional and attentive to all the details. We enjoyed our time there and the food. From the appetizers to the desserts everything was great! Chocolate cake was melting in my mouth! The portions were big, I had to take some of the risotto home as I was full after the appetizers and I still wanted to try the dessert.
This is a great place to visit. Young chefs try various ways before becoming real chefs. I strongly believe it depends on who's cooking your meal The results could be different. The reason why I didn't score Bocuse at 5 was my soup was not hot and my ice cream was more like a cream taste wise and consistency.
Great price/value. Beautiful space.. slightly hard to find w/poor signage. This is definitely a teaching restaurant... so I understand & give lots of grace. With that in mind my constructive feedback. The octopus salad was really rubbery...not just chewy. The duck was overdoneon the ends, but ok in the middle. A+ for presentation of all dishes.
Update: I received a call from a manager and they made it right. Original review below. For the Bocuse restaurant. Food was delicious. But have no choice but to give it 1/5 due to the overwhelming downsides. -2.5 hours for 3 course meal is unacceptable. 1 hour 15 minutes just for our first course. - we had trouble communicating with one of the waiters -manager proactively came to us because the meal was taking so long and apologized. She said she will “take care of our lunch.” I took that to mean the meal was going to be comped. In the end it wasn’t and we received a discount. I’m okay paying for the food but that wasn’t the expectation after what the manager said to us. -someone asked me if I would like more bread and I said “yes please.” The bread never came. -I had a glass of white wine first followed by a glass of red wine. They poured the red in the same glass as the white. Overall the staff was really nice. I know they’re learning. Very pleasant people. But between the poor service and how things were handled, I would not come back. I regret saying that because the food was delicious.
