We are staying at the Grand Hyatt Vail for 4 nights. Before arriving we had planned to eat outside the hotel every night, but after eating at Gessner the first evening, we actually decided to eat here most nights. The atmosphere is clean, modern, and uplifting and the service attentive. The food is actually creative; the smoked trout dip was a highlight. Definitely with the trip even for those not staying at the hotel.

The experience here was truly amazing. I’m very thankful for all the support Cristina gave us; she was available around the clock whenever we needed her. The food, the service, and every detail were outstanding. I’d also like to thank Patrick for checking in and being involved. It’s wonderful to see the hotel staffed with such dedicated individuals. Amazing dining spot inside the Grand Hyatt Vail! This place is perfect for a relaxed meal with a view you can dine while enjoying stunning mountain scenery or the peaceful sound of the nearby creek. We ordered the Elk sandwich and the Mushroom wrap with Caesar salad both were flavorful, fresh, and beautifully presented. The portion sizes were generous, and the ingredients tasted high-quality. The staff were incredibly friendly and attentive, making the whole experience even better. Highly recommend if you are staying at the resort or just visiting Vail.

We stayed at this hotel and had breakfast and dinner a few times at this restaurant, and our experience has been great—food was always delicious and environment was pleasant, though sometimes the service in the morning was kind of slow. Not sure why it has low ratings, but I would say it is just as good as many other high-rating restaurants in Vail Village or Lionshead Village if not better.

Visited last week with my sister and friends and had lunch at the bar to kick off our trip, and truly had the best time. Wayne made our time so wonderful. Best dirty martini with blue cheese stuffed olives I have had in MONTHS! He was lovely and personable and made sure each of us was taken care of. Can’t complain about the food at all compared to some of the reviews I’m reading, we all thought their lunch offerings were great! Thank you Wayne!

Located inside the Grand Hyatt, we were greeted warmly and ushered to our seats. From the time our waiter Travis introduced himself the service and experience exquisite. He was informative and friendly and made awesome recommendations. The food came out absolutely delicious. From the squash salad , Pretzels bread , Lemon Thyme Chicken with lentils and butternut squash to the cherry tart with cream cheese ice. Just amazing. 💯💯💯💯💯🥂🥂🥂🥂🥂Thank you Travis for the amazing service . ❤️👌👌👌

Between drinks, the food and the dessert, it was a pretty penny but a really nice experience as well if you don't eat out often. P.s. they hand you the most expensive/bougie menu first, ask for the bar menu if the expensive menu makes you feel like a foreign alien who suddenly doesn't understand English.

I stayed at the hotel for 3 days and I had some drinks and appetizers there, the service was amazing one of the nights I remember Isabella was very nice and gave us some good recommendations, carajillos are top! And the burrata is delicious

We stayed at Grand Hyatt and, based on reviews, I tried to avoid going here. Since it was convenient for check-out day we had breakfast here. Food was amazing! I wish I hadn't avoided it. Our server, Carlos was PHENOMENAL!!! I'm not sure we'll get him again on a return visit but we will be back to the restaurant on future stays.

Vail, Colorado, feels like it’s straight out of a romance novel—snowy peaks, charming streets, and a magic that lingers in the air. I’d hoped to go for my birthday, but we booked it later, and it was worth the wait. Our room had a terrace overlooking the mountains, and stepping out into the frosty air was like walking into a dream. Wrapped in a THICK cozy sweater, I brought my laptop outside, the crisp scent of pine and distant fireplaces filling the air. Taking a break from my work at Novel House Publishing, I poured my heart into Forgiven, my newest book. The serene beauty of Vail wove its way into every word. We will be going back soon ! 🙌❤️

Overall our experience was mixed, but in the end Chef Dan proved himself competent and we enjoyed our dinner. Because we stayed at the Grand Hyatt Vail, we looked into it’s restaurant, Gessner. In very plain language, the “About” tab of this restaurant on Google says enjoy “vegetarian to vegan options,” so we were excited to try it out. My wife and I made reservations, put on some nice clothes, and went to celebrate the anniversary of our engagement. Things started to go sideways when our server, Rafael, told us there were no vegan items on the menu. I politely encouraged him to ask the kitchen if they could put together something for us, and he refused. He told me that this was a steak restaurant, and if I wanted vegetarian food I should go somewhere else. Obviously I found this sentiment extremely off putting, and I felt very embarrassed and unsure if I should just ask for a bill for my drink and leave. I tried once again to smooth the situation down and try to convince Rafael to ask the kitchen about what accommodations could be made, and he went very reluctantly. Well, in the end he returned with some options for us, and we also were introduced to server Doug who checked up on us a few times that night (we also had the pleasure to see him again several times in the Fireside Lounge over the course of the trip). Our food was good, and we were very pleasantly surprised that Chef Dan prepared a special off menu dessert for us and served it to us himself. This is a battle of restaurant paternalism vs customer autonomy, and Chef Dan’s willingness to be flexible to please us as customers is the only reason we had an enjoyable evening. I have never been asked to leave a restaurant before in my life, and although Rafael didn’t say “Get out,” he effectively did communicate that message to me when he told me I should try to eat somewhere else. Honestly baffling behavior considering we were two of the 4 or 5 people in the entire restaurant.

My boyfriend and I ate here last night while staying in vail. Nice to have the valet parking at hotel entrance. The food was delicious! We had the goat cheese appetizer. The local goat cheese and honey was perfect. Only complaint about the appetizer is that the bread was too burnt. For dinner we both had the steak entree. I LOVED the steak. Perfectly tender and cooked well. Great cut of meat. The dessert was to die for. Had the chocolate mousse cake. Great wine, and our waitress was very nice.

The Gessner in Vail was absolutely phenomenal. We had two full families staying together, and it could not have been a better experience for everyone. The food was incredible every single day, and the service was just as impressive — attentive, friendly, and consistently top-notch. From start to finish, the entire team made us feel welcome and taken care of, and the atmosphere was perfect for a fun, relaxed, multi-family trip. We truly appreciated the thoughtfulness and quality throughout the stay. It was a memorable experience for all of us, and we’re already looking forward to coming back.

Ate breakfast a few times at the Gessner Grill during my stay at the Grand Hyatt. I can only speak to the breakfast, but everything my spouse and I got during our stay was great. The potatoes were very well seasoned and notable and the French toast was fluffy and just the right amount of sweet. Service was excellent!

Very nice staff, Jhon was our server. He went the extra mile for our table. Our table arrived close to closing time and he was magnificent, and accommodating. The food was spectacular, and convenient for us staying at the grand Hyatt

We've been to this place severeal times during our stay at the Hyatt—for lunch, dinner, and drinks—and every visit has been a great experience! The service is consistently friendly, welcoming, and attentive. We've tried several dishes, including the grilled chicken breast, chicken wings, bison chili, and beet salad—and everything was full of flavor and cooked perfectly. The real standout, though, has to be their signature cocktails—each one we’ve tried has been expertly crafted and absolutely delicious. You can tell they put care into both the food and drink menus. Highly recommend if you're looking for a spot with great food, excellent drinks, and a relaxed, welcoming vibe!

Me and my family visited Gessner last weekend for dinner while staying at Grand Hyatt. The ambiance is really nice, very classy with those mountain views, but the food was a bit hit and miss :( We ordered the chicken breast, which I was really looking forward to. The meat quality was good, no doubt, but it was lacking that punch of flavor. it felt a bit bland, like they forgot to add something. My wife got the pesto pasta, which was better, but still too dry for our liking. It had good flavor, but needed more sauce to make it perfect. Service was excellent. The presentation of dishes was nice, though, and the place is super clean and fancy. Overall, it was above average.

The breakfast was delicious and satisfying. I particularly enjoyed the fresh combination of eggs Benedict topped with asada meat—a unique and intriguing blend of flavors. (If you're vegan, the eggs Benedict wouldn't be an option, of course.) The potatoes served alongside had a generous amount of seasoning, which made me cough a bit. The omelet was pretty standard. The coffee was good, and the orange juice tasted freshly squeezed, which was a nice touch. While it's not an "amazing" restaurant, the staff were incredibly friendly, and the interior design was beautiful.

This restaurant is located within the hotel I stayed in. We went down for breakfast and had a good meal. The service was excellent, with a very friendly and attentive staff. Everything about this restaurant and hotel is worth going back to. The breakfast was delicious with a great view!

I think 4 stars is more than fair! I had dinner and breakfast here during my stay at the hotel. Martini was very good; Food is "okay" and for the price, I would not eat here again. The service and atmosphere are super good.

The food is really amazing. Cocktails were Ok and the kitchen was a little slow that evening. My girlfriend and I had black bean tornado and trout entrees which were way tastier than we expected. Management was very apologetic and professional for the slow kitchen that evening. I recommend checking it out.

Breakfast is great. Dinner is eh. They don’t speak English. Ordering over the phone is impossible. So kiss the room service idea goodbye. This is no cheesecake! They charged me $15 for this fulgazi! Also they give you no silverware. Better service at McDonalds.

When my family came here for breakfast, the staff, though friendly, was clearly overworked (raising the question, why can’t this establishment get and retain good talent?). I ordered the carnitas Benedict; my carnitas were excessively salted and lacked any other seasoning. Because the restaurant was so understaffed, basic details were overlooked—my oatmeal didn’t come with a spoon, my father’s coffee was not refilled after two requests. Everyone working was diligent and doing their absolute best, but the mediocre food and lack of attention to detail is not what I expect from a Hyatt restaurant, especially for the price.

The hit was the burrata. The bison chili was unfortunately bland and watery. The braised short short rib (and especially the polenta) was underwhelming. Friendly customer service. Ideal location.

This would've been a good restaurant if it wasn't for the service. We had breakfast here and the food was good, as we were staying in the Grand Hyatt Vail. However, the last day the service was HORRIBLE. It took over AN HOUR to get our food order, and the amount of hostility assured us we would rather eat in the marketplace. I don't recommend.

We came here for restaurant week. The decor was very, very nice. Ideal for a stylish date night or business meeting. Wait staff was mostly professional. Setting was clean. The dinner was just really disappointing. The restaurant week entree ended up being 2 chicken tenders, a smear of mash potato and an undercooked slice of of sweet potato. The chicken was underseasoned and lacked sauce. For the appetizer the onion soup was legit pretty awesome, as was the bread pudding. Wine was very good. The cocktails were not made correctly and were massively overpriced. The drink should have been shaken with ice and strained but instead the bartender just poured a warm cocktail, no ice and no this was not a whiskey drink. I switched to coke but the fountain drinks were flat. Stick with the water. Overall i was just really disappointed, for restaurant week I’d love to see the skill of the kitchen rather than just bland chicken tenders.

Very disappointing dining experience in Grande Hyatt. Expected much better food in such high end hotel in Vail. Food quality was worse than any other average restaurants. - Over and Under salted dishes. Wings too salty and pasta no salt at all. - Fish undercooked. Cold inside. Couldn’t even cut through. The source for the fish was too salty. - Mediocre Wagyu beef burger. The only OK dish was the half chicken.

The staff are hard working and lovely, unfortunately the kitchen efficiency is unacceptable. We chose to eat at 5:30 because we had three small children 21/2 hours later, our food was delivered. The steaks were rare, when ordered medium well and needed to be sent back. At this point, half of our party had to leave. If you want people to consider leaving the village to come to Cascade then you need to prepare the staff to accommodate room service, bar service and table service - or limit your menu to meet acceptable standards. But please do not throw your employees under the bus because of poor management.

I cannot express the extent to which the service in this restaurant made me so frustrated. Not only does it take 30 to 40 minutes for just a check to arrive, the same routine falls with the food as well. The servers, as well as a restaurant is very unorganized as everything is very clustered around and all the servers are confused about where they need to be and what they need to do. The unorganized route has come to the point where even napkins and water are not present of the table without having to ask for it. Even after asking for water and napkins, it was at least 20 minute wait for this to arrive. The restaurant is not very packed, so it is unsure as to why there is such a long wait for such a simple task. If you are in Vail, this is a restaurant I would not recommend attending.
