Very Fresh Noodles—Not Every Long Line is Worth It. This One Is. I’ve been to Chelsea Market a few dozen times and that Very Fresh Noodles line was always there to greet me…the kind of crowd that makes you wonder if some celebrity is handing out autographs inside. I always moved on, but this day the line was manageable, so I finally made my pilgrimage. Watching those noodle masters work right in front of you is worth the price of admission alone — this place runs like an air traffic control tower, every move calculated and nothing left to chance. I bravely tackled the Seaweed Salad first and those long rubbery strips put up a mean fight against my feeble chompers and my chopsticks. This experience was more like navigating an obstacle course than a side dish. I did not enjoy the texture of this offering and the spice level was not for the common man. Then the La Mei Taiwanese Beef Noodle Soup landed and completely reset the table. Slow-braised beef shanks, hand-pulled noodles, pickled mustard greens, bok choy, scallion — all swimming in one of the most deeply layered broths I’ve encountered in this city. This broth has a memory — the kind that stays with you long after the bowl is empty…I found myself slowing down just to make it last. Full stop. Some lines in this city aren’t worth the wait. This is not one of them. I would gladly queue up any day of the week and twice on Sunday.
Very Fresh Noodles is awesome. Yes there will be a long line of people waiting, yes make the line, it will be worth it. I had the La Mei Taiwanese Beef Noodle Soup, and it was just delicious! Spicy, beefy, warm and prefect for the cold weather, the noodles are freshly made and they were just perfection. This place is 10/10 when it comes to the food. It will be hard to find a place to sit but again, totally worth the hassle.
Stopped into Very Fresh Noodles for lunch today while running through Chelsea Market, and it was the perfect choice for such a freezing cold day. There was a bit of a line, but it moved quickly and wasn’t too bad. I ordered the spicy Taiwanese beef noodle soup and damn, did it hit the spot. The hand-pulled noodles were perfect and you can really tell the difference. Generous cuts of beef, bok choy, fresh cilantro, and a broth with great spice and depth brought it all together. For a simple lunch on a cold day, I couldn’t have asked for more.
Fresh Noodles delivers exactly that fresh delicious noodles. Watch them prepare your noodles in front of your eyes while you wait. I tried the "dry" cumin lamb noodles. Chewy texture on the noodles and overall a tasty dish. You may have to look around a bit for seating as Chelsea Market can be busy.
Loved both the beef noodle soup and Dan Dan noodles. The Dan Dan was super spicy but was full of flavor and the pickled cucumber added a nice crunchy and acidic twist. The beef noodle broth was bold and deep, may be one of my fav beef noodles soups in NYC!

Tucked into a small nook inside Chelsea Market, this vendor always seems to draw a line before opening — especially compared to many other stalls in the market — which speaks to how many regulars it has. Watching the chef knead and hand-pull the noodles right in front of you is both impressive and genuinely fun, adding to the overall experience. We ordered the tingly and spicy noodles with beef, opting for the soup version because the broth is so flavorful (though you can also order it “dry” if you want to focus purely on the noodles). The broth is consistently savory with a deep umami richness, and the noodles are delicate yet pleasantly chewy — soft, fresh, and incredibly satisfying. Combined, it’s the ultimate comfort food, especially on a cold day. Portions are generous, particularly with the beef, and service moves fairly quickly given the popularity. This easily ranks as one of the best dishes we’ve had at Chelsea Market, and it’s a place we’ll happily return to again.
Located within the Chelsea Market, this noodle spot is a favourite for tourist and locals alike. The Taiwanese beef noodle soup - is indicated on the menu as best seller, and I can see why! The soup base is a rich broth full of flavour, it can be ordered mild or spicy. I choose mild and it was spot on. There is plenty of beef and the fresh hand stretched noodles as excellent topped with coriander, and spring onions. Highly recommend! This was a perfect dish.

The noodles are so thick and have so much texture when you bite into it, I absolutely loved it. The spiciness was perfect and definitely numbs your tongue with each bite. Then comes the extremely tender lamb and herbs on top to brighten up the dish. Would definitely recommend stopping by this place in Chelsea market!
Enjoy a quick meal while shopping at Chelsea market at evening time. It‘s crowded and long queue to order but ordering process is quick. We had Tingly and spicy cumin lamb soup and La Mei Taiwanese beef noodle soup. The noodles are think and freshly made, chewy and satisfying with the spicy flavour. Holy smokes that was very spicy. They say it in the menu but you don't get to ask for it mild. Most of the options are spicy or make it a soup and it won't be spicy. The cashier said the cucumbers were just a little spicy as were the eggplant... I'd hate to try the spicy if that was "just a little spicy". We couldn't finish the cucumbers or eggplant. The vegan duck soup was delicious! The atmosphere was cool sitting right in front of the guy making noodles. Selection overall is minimal.

Concept and branding were on point. The food presentation was impressive, and the menu had a lot of great options. I tried the Taiwan beef noodle soup and the flavors were solid—the beef was cooked perfectly, the broth was on point, and the handmade noodles were fresh (a bit tough on the chopsticks, but still enjoyable). I also ordered the chicken wings as an appetizer. Everything would have been perfect, but the wings just didn’t hit the mark—not really worth the calories. I’d recommend skipping them. Overall, aside from that, everything was delicious.
Whent on a short food crawl here and I couldnt resist the smells at this place. We ordered the Cumin Lamb Noodles and the fried and glazed Eggplant (cant recall the exact name). The noodles very enjoyable but a tad more spicy than I expected; sauce is well balanced and the noodles were very soft yet bouncy. I enjoyed the food but I wished they had tossed the noodles and the sauce before serving. I frankly did not enjoy the eggplant; which was a shame cause it was fried perfectly but the sauce was too sweet for my liking. Place is a no nonsense place to get a bite so dont expect too much in the way of service or experience.
We stumbled upon this place when it was almost closing time. We ordered the spicy vegan noodles with broth. They mention the dry order is better but I was in the mood for some soup. The soup broth was surprisingly pretty good and hearty. Definitely recommend trying the food here when you visit Chelsea Market.
Hey I’m walking here. In New York super cool Place Chelsea market. A lot of people, super crowded but none the less still pretty cool. Went with a few friends. You get to see them making the noodles. They come out relatively fast and they taste pretty good. The noodles are soft but still have some chew and the spice is not super spicy. Kinda of oily but what can you expect from soup like that. Overall great spot, definitely one of the better spots in Chelsea market. My Beli have it a 7.5 I think and I’d say that’s somewhat accurate. More like a 7.4 ish but pretty much the same. Great spot!

The spice level wasn’t flavorful — it was just harsh heat that burned without adding any real depth to the dish. The pork and vegetables were coated in grease, and everything felt heavy and unpleasant to eat. Even the wrappers and chopsticks got soaked in oil, which says a lot about how excessive it was. I couldn’t finish it — I actually had to throw most of it away, which I almost never do. If you’re sensitive to spice, salt, or oily food, I would stay far away from this dish. For me, it was a complete waste of money and a very disappointing experience.
